The aim of the present study was to evaluate the possibilities for using date fruit from the Kingdom of Saudi Arabia in the formulation of a novel snack bar while replacing the used honey with date paste. The technological, textural, microbiological and sensory qualities of the obtained food products were evaluated during storage for 12 days after their production. Date palm fruit in the form of date paste was used as an ingredient in the composition of the new snack bars that also included nuts and dried fruits. Five formulations were prepared: a control bar, snack bar with 40% date paste, snack bar with 50% date paste, snack bar with 60% date paste, and snack bar with 70% dates paste. The resulting date paste’s textural characteristics supported the bonding potential of the food system and gave a sweet taste to the final product. The formulations containing 50% date paste presented the highest overall acceptability and were the formulation with the best sensory characteristics. Thus, the addition of date paste in snack bars would be a good option to develop a functional product that contributes to rational nutrition principles. The obtained values in the current study confirmed the technological and functional potential of date fruit as a product that can find adequate application in the composition of foods with functional properties.

Objective: The date palm (Phoenix dactylifera L) is one of the plants empirically used to increase fertility. The aim of this study was to compare the effect of ethanol extract of date palm fruit and propolis on fertility in female mice. Methods: 5 groups were assigned to 1 control and 4 experimental groups. The experimental group treated by oral administration of 100, 200 and 400 mg/kgBW of khalal date fruit extract and 200 mg/kgBW of propolis for 5, 10 and 15 days. Control groups received no extract. After 5, 10 and 15 days the mice were deeply anesthetized with anesthetic ether and sacrificed. Histological changes in ovary and uterine were measured. The data was analyzed by using two way ANOVA and Duncan test. Results: The results of the study of the effect of the dose and duration of the ethanol extract of khalal date fruit on the histology of ovaries and uterine mice showed that there was an increase in the number of primary, secondary, tertiary, degraaf, and corpus luteum follicles but did not affect the follicle of atresia and myometrial and endometrial thickness. in Propolis a dose of 100mg / kgBW increase occurs only in primary, secondary and corpus luteum follicles. Conclusion: Ethanol extract of khalal date fruit and Propolis can increase the number of ovarian follicles. Ethanol extract of khalal date fruit dose can increase the number of ovarian follicles higher than propolis.

The study was conducted on date palm fruit (Phoenix dactylifera L.) c.v. Ashrassi, wich included tow experiment: first one field study carried out during the growing season 2017 at Mandali date palm station/ Ministery of Agriculture, the second one was A laboratory experiment conducted at Post harvest physiology lab at the Department of Horticulture and Landscape Grading/ College Agriculture University of Diyala,9 trees were selected at 10 years old homogeneous in size and growth planted at 5x5 m, The experiment was designed as factorial experiment using Complete Block Designed (RCBD), with two factor: tryptophan spraying at 0, 100, 200 ml. L- 1 concentration five times one spray each month, at Hababok stage, the second factor: some artificial ripening method to promote fruit Ripening, included (heat treatment at 20ºC for 10 minutes, freezing the fruit at- 18 ºC for 42 hours, and soaking the fruit in ethephon solution at 1000, 1500 ml. L- 1. The results can summarized as follow, The interaction between tryptophan spray with 200 ml. L- 1 and freezing the fruit gave the highest values for fruit weight, length and total sugar percent, also the interaction between tryptophan spray with 200 ml. L- 1 and soaking the fruit in ethephon solution at 1500ml.L- 1 resulted significant increase in reducing sugar percent.
