The human body needs a constant flow of biologically active substances. Berry products, including raspberries, are a source of natural and affordable BAS. Raspberry berries contain a complex of BAS, in particular fructose, glucose, organic acids, vitamins A, B1, B2, C, P, E, essential oils, pectins, fiber, complex of polyphenols, copper salt, iron, potassium, folic acid, etc. Berries are salicylic acid and can for a long time maintain the beneficial properties of various processed products. Berries contain a lot of food fibers, it is beneficial for digestion. Berries contain betasitosterol and anthocyanins have anti-sclerotic properties, and coumarins normalize blood coagulation. Berries contain a lot of food fibers, it is beneficial for digestion. Raspberry berries contain coarse dietary fiber, β-sitosterol, anthocyanins and coumarins, these substances have a positive effect on digestion, have anti-sclerotic properties and normalize blood clotting. The purpose of the research aimed at carrying out a comparative characterization of the basic biochemical substances content and the quality of various berries and raspberry hybrids grown at the research field "Fruit and Vegetable Garden" of NULES of Ukraine. During the research the complex of international and state regulatory documents were used, in particular: the berries were selected in the state of technical maturity, in accordance with the state standard 7179: 2010; the sample size corresponded to ISO 874-2002; the determination of the components of the biochemical composition was carried out: the content of dry soluble substances were determined according to ISO 2173-2013, invert sugars – state standard 4954: 2008, titrated acids – state standard 4957: 2008, ascorbic acid – ISO 6557-2: 2014; organoleptic evaluation – according to the generally accepted methodology. Based on the obtained results, it was found that among the studied samples of berry varieties Babine Lito, Sontse Kieva, hybrids – Hybrid №4a, Hybrid №2 were characterized by the highest organoleptic and biochemical parameters, therefore it is expedient to use them both for consumption in a fresh form and for processing. The obtained results should be taken into account during the planning of raspberry planting and in further selective work during the creation of competitive varieties and hybrids of raspberries with a high content of biologically active substances in berries.

The concentration of recombinant human lactoferrin (rhLF) in the milk of 22 transgenic goats of different ages was studied: the average concentration of rhLF in the milk of goats-producers of the 4th year of lactation was 13.7% higher than that of goats of the 3rd year of lactation (6.07 and 5.24 g/l, respectively). It was found that the maximum level of recombinant glycoprotein was produced by the mammary gland of animals in the 2nd and 4th quarters of the studied year period. Protein’s concentration in milk measured in the 2nd and 4th quarters was 6.4 g/l and 6.33 g/l for producers of the third year of lactation and 8.14 g/l and 7.02 g/l for goats of the fourth year of lactation, respectively. The correlation between the season of the year and the content of the target protein in milk was detected (p <0.01), it was found that the most active rhLF production in goat milk occurred in late spring and winter periods. Variability in the content of the protein of interest in milk between individuals was noted. During the study a relatively low level of rhLF was established in animal №0747 - 0.11–2.52 g/l, while its maximum value was detected in the producer № 0403 - 4.52–9.06 g/l (more than 4 times difference). The range of individual variability in terms of rhLF content in the milk of goats of the third and the fourth lactation was 0.11–9.06 g/l. Milk of genetically modified goats contains 3 times more lactoferrin than human breast milk. Therefore, rhLF concentration testing in goat milk and tracking the dynamics of this indicator allows us to obtain data that can be used later for breeding pro-grams formation, milk production planning and also to improve the gene pool of transgenic animals.

<p>The results of determination of protein fractions, cortisol content in blood of rabbits, which further added to the feed of natural origin biologically active substances are presented in the article. As an antistressors and immunomodulators in pre-slaughter period are using of spleen extract biologically active substances were obtained with ultrasound application. The purpose of research — determination of changes of protein fractions, cortisol content in rabbits blood before slaughter and their correction of natural origin biologically active substances (spleen extract).</p> <p>Object and research methods. The experiment was conducted on 15 rabbits with standard diet. Three groups of rabbits five month of age (5 rabbits each) was formed for research. The spleen extract were using as an biologically active substances to the feed rabbits in pre-slaughter period (five days before slaughter). The extracts were applied to feed by aerosol method (70 °alcohol solution of spleen extract volume of 1.4 ml per rabbit) (group I). The rabbits (group II) received to the feed in the same way of 70 °alcohol solution in the same volume. The control group rabbits received the standard feed in the same volume. The feed eating by rabbits was exercised daily. The rabbits ate food completely. The rabbits slaughter was carried out in the morning. The blood plasma protein fractions separation was carried out by horizontal electrophoresis in polyacrylamide gel (PAAG).</p> <p class="Default">Mathematical treatment of the research results worked statistically using the software package Statistica 6.0 and Microsoft Excel for Windows XP. Probability differences was assessed by Student t-test and results considered likely at P ≤ 0.05.</p> <p>Results and discussion. We measured the ratio of blood plasma protein fractions of rabbits, which in addition to the feed fed of natural origin biologically active substances. As a result of research was found that aerosol introduction of the spleen extract to the rabbits feed increases the Prealbumin concentration in rabbits blood plasma of two experimental groups twice (P ≤ 0.05) and 2.8 times (P ≤ 0.01) compared to the control.</p> <p>Cortisol level in rabbits (which further added to the feed of spleen extract (I research group) blood plasma was reliable lower by 40 % (Р&lt;0.05) compared to control, that may to indicate decreasing of stress before slaughter. On the rabbits feeding final stage is necessary to consider a pre-slaughter stress and to apply of natural origin biologically active substances. The results which obtained can to use in researches of stress hormones, such as cortisol, on farm animals for organism resistance increasing, correction and avoid their pre-slaughter stress and improve product quality.</p>

In this work, soluble and solid phase immunoreagents, including recombinant human lactoferrin (rhLF), a complex of rhLF with europium ions, rabbit antiserum to rhLF, anti-rhLF immunoglobulin purified by antigen-affinity chromatography and the conjugates of this immunoglobulin with an Eu3+ chelate or horseradish peroxidase have been obtained by a combination of biochemical and synthetic methods using rhLF as an initial compound. Biospecific interactions of the reagents in four immunochemical systems were assessed by measuring the enzyme activity or time-resolved fluorescence. The study resulted in the development of fast and precise immunoassays for biologically active rhLF in transgenic goat milk and in protein fractions obtained in the course of pure rhLF manufacture, as well as in pharmaceutical preparations and food additives.
