In this paper, the work was mainly studying influence of pH on Fenton reaction and gingerol scavenging hydroxyl radical. The antioxidant activity of gingerol was characterized by the scavenging hydroxyl ratio and scavenging hydroxyl ratio was analyzed by the spectrophotometry. Hydroxyl radical was produced by Fenton reaction. In the experiment pH and buffer solution have influence on the scavenging hydroxyl radical and Fenton reaction. Gingerol exhibits a strong scavenging radical activity for hydroxyl radical (OH.). The scavenging hydroxyl radical of different extractions of ginger oleoresin is different.

AbstractIn this study, an aqueous extract of leaves from Melothria maderaspatana was tested for in vitro antioxidant activity. Free radical scavenging assays, such as hydroxyl radical, hydrogen peroxide, superoxide anion radical and 2,2-diphenyl-1-picryl hydrazyl (DPPH), 2,2’-azinobis-(3-ethyl-enzothiazoline-6-sulfonic acid) (ABTS) radical scavenging, and reducing power assay, were studied. The extract effectively scavenged hydroxyl radical, hydrogen peroxide and superoxide anion radicals. It also scavenged DPPH and ABTS radicals. Furthermore, it was found to have reducing power. All concentrations of leaf extract exhibited free radical scavenging and antioxidant power, and the preventive effects were in a dose-dependent manner. The antioxidant activities of the above were compared to standard antioxidants such as butylated hydroxytoluene (BHT), ascorbic acid, and α-tocopherol. The results obtained in the present study indicate that the M. maderaspatana extract could be considered a potential source of natural antioxidant.

Background: Protocatechuic acid (PCA) is a natural phenolic acid widely distributed in plants and is considered as an active component of some traditional Chinese herbal medicines such as Cibotium barometz (L.) J.Sm, Stenoloma chusanum (L.) Ching, Ilex chinensis Sims. PCA was reported to possess various pharmacological effects which may be closely correlated with its antioxidant activities. However, the antioxidant of PCA has not been investigated systematically yet. Methods: In the study, the antioxidant activities of protocatechuic acid were measured in vitro using various antioxidant assays including 1,1-diphenyl-2-picryl-hydrazyl (DPPH•), 2,2’-azino-bis (3-ethylbenzthiazoline-6-sulfonic acid) (ABTS+•), superoxide anion radicals (•O2-) and hydroxyl radical (•OH) scavenging activity, ferric ions (Fe3+) and cupric ions (Cu2+) reducing power, ferrous ions (Fe2+) and cupric ions (Cu2+) chelating activity, compared with the positive controls Trolox or BHT.Results: In all assays, PCA along with positive controls exhibited dose-dependently antioxidant ability. Comparing to a standard antioxidant Trolox, the relative antioxidant activity of PCA (i.e. the ratio of IC50(Trolox)/IC50(PCA) ) was calculated as 2.8, 2.3, 3.7, 6.1, 4.2, 1.0, 2.7, 1.5, respectively, for DPPH, ABTS, reducing power (Fe3+), reducing power (Cu2+), superoxide anion radical-scavenging, hydroxyl radical-scavenging, chelating ability (Fe2+) and chelating ability (Cu2+). Conclusion: Comparing to Trolox, PCA shows much more effective antioxidant activity in vitro in both lipid and aqueous media. Hence, it could therefore be used in pharmacological or food industry as a natural antioxidant. It may exhibit antioxidant activity by both chelating metal transition ions as well as by scavenging free radicals via donating hydrogen atom (H•) or electron (e).Keywords: Protocatechuic acid, antioxidant, reducing power, free radical-scavenging, chelating ability.

 Introduction: Chromolaena odorata Linn (Asteraceae) locally known as “Banmara” has the reputation of being used as a medicinal herb in Nepal. A systemic search for drug research in now considered to be a rational approach. Therefore in the present study an effort has been made to evaluate the antioxidant activity of the leaves of the above mentioned plant. Methods: In the present research work the ethanolic and methanolic extract of leaves of the plant C. odorata Linn was assessed for free radical scavenging and antioxidant activity. In this work the ability of the extract to scavenge nitric oxide, hydroxyl radical and 1,1-diphenyl-2- picrylhydrazyl (DPPH) were used to assess its free radical scavenging potentials. Results: The DPPH radical inhibition (%) was 59.10, 52.13 and 81.12 for ethanolic extract, methanolic extract and ascorbic acid respectively. Similarly ethanolic and methanolic extract  also showed significant free radical scavenging action against nitric oxide and hydroxyl radical. Conclusion: Against the backdrop of many known medicinal properties of this plant its ethanolic and methanolic extract of leaves reveals significant antioxidant properties. Lipid oxidation in foods can be retarded by the addition of antioxidants. Certain plants rich in compounds with antioxidant activity manifest an increasing interest in food industry because they retard oxidative degradation of lipids. Sea buckthorn (Hippophae rhamnoides), alcoholic extract was investigated for antioxidant activity. Sea buckthorn fruits were extracted with ethanol using a Soxhlet extractor and the crude extract was analyzed in order to establish total soluble phenolics and the antioxidant activity. The alcoholic extract of Sea buckthorn was found to contain phenols with antioxidant activity. The extract was studied for 1,1-diphenyl-2-picrylhydrazyl radical (DPPH), superoxide anion and hydroxyl radical scavenging activity. The extract was also studied for lipid peroxidation assay by thiobarbituric acid-reactive substances (TBARS) method. The results indicated that Sea buckthorn annihilates free DPPH radicals, the superoxide anion and the hydroxyl radical and it has an inhibitory effect upon lipid peroxidation process.

AbstractOxidative stress plays a key role in the pathophysiology of many diseases. Hydroxyl radical is the oxidative species most commonly causing damage to cells. The aim of this work was to optimize the method for antioxidant activity determination on a model lipophilic geranylated flavanone, diplacone. This method uses protection of plasmid DNA from oxidation by a hydroxyl radical generated by the Fenton reaction involving oxidation of metal ions using H2O2 and ascorbate. The method was optimized for lipophilic compounds using several solvents and co-solvents. It was found that (2-hydroxypropyl)-β-cyclodextrin (0.1 mass % aq. sol.) is the best co-solvent for our model lipophilic compound to measure the antioxidant activity by the method presented. Other solvents, namely dimethyl sulfoxide, Cremophor EL® (0.1 mass % aq. sol.), ethanol, and methanol, were not suitable for the determination of the antioxidant activity by the method described. Tween 80 (0.1 mass % aq. sol.) and a mixture of 10 vol. % ethanol and 9 mass % bovine serum albumin (aq. sol.) significantly decreased the antioxidant activity of the model lipophilic compound and thus were not suitable for this method.

This study is outlined to define the chemical composition and in vitro antioxidant activity of the extracts of aerial part and root of Eryngium campestre L. (Apiaceae) from Kosovo. Analysis of the chemical composition include determination of total ash, ash insoluble in hydrochloric acid, loss on drying and the content of water extract, as well as determination of flavonoids in aerial part and hemolytic activity of the root. The mineral composition (Zn, Fe, Cu, Mn, Ni, K, Co, Pb, Cd and Cr) in aerial parts and root has been studied using atomic absorption spectroscopy (AAS and ETAAS). Different part of E. campestre accumulate different amounts of investigated minerals. Antioxidant activity was determined by four various testing systems: DPPH assay, inhibition of production of hydroxyl radical, β-carotenebleaching assay, and inhibition of lipid peroxidation (TBA test). In DPPH system, ethanol extract of root of E. campestre exhibited higher radical-scavenging activity (IC50 = 0.72 mg ml-1) compared to the extract of the aerial part (IC50 = 1.14 mg ml-1). On the other hand, aerial part ethanol extract has exhibited stronger inhibition capacity on the production of hydroxyl radical in deoxyribose system than the root extract (50% and 45%, respectively). However, both ethanol extracts of E. campestre exhibited low antioxidant activity in β-carotenebleaching assay as well as, low capacity for inhibition of spontaneous lipid peroxidation in rat liver homogenate

The aim of this study was to estimate the content of polyphenols, flavonoids and tannins and to evaluate the antioxidant property and the antiulcer activity of the ethanolic extract of melon (Cucumis melo L. var. inodorus) pulp on ethanol-induced gastric ulcers in rats.  Ferric reducing power and hydroxyl radical scavenging tests were applied to evaluate the in vitro antioxidant activity. The polyphenolic and flavonoids contents of    melon extract were found to be 56.5 ± 2.49 mg GAE/g of dry extract and 0.43 ± 0.09 mg QE/ g of dry extract, respectively. Whereas the tannins content was 48. 30 ±  0. 9 mg ETA/ g of dry extract.  Melon pulp  extract exhibited  a good reducing potential   with  an  EC50 of  4.23 ± 0.08 mg/ml and high hydroxyl radical scavenging activity with IC50 of  1.83± 0.09 mg/ml. Oral administration of the melon pulp extract at doses of  200 and 600 mg/kg to rats  reduced gastric mucosal lesions  dose-dependently  with percentage protection of 56.56 and 93.79% compared to omeprazole (95.92 %) as reference drug. These results showed that the melon pulp extract had a good antioxidant activity and gastroprotective potential suggesting it use as an adjuvant in the treatment of gastric ulcer. Anthocyanins, which possess strong antioxidant activities, are abundant in purple sweet potato wine. In the present study, changes in the antioxidant activity of purple sweet potato wine during storage were investigated. The results showed that purple sweet potato wine had high 2,2-dipheny-l-picrylhydrazyl (DPPH) free-radical and superoxide-radical scavenging activities, which were stable during storage periods. Compared with these two scavenging activities, the hydroxyl-radical scavenging activity of purple sweet potato wine was concentration-dependent and only presented relatively obvious scavenging activity at high concentrations. This hydroxyl-radical scavenging activity was also stabile during storage periods. The results are valuable in purple sweet potato wine research and development.
