The present study was aimed to evaluate the effect of dietary supplementation with Lactuca serriola leaves on growth performance, carcass characteristics, meat quality, and its antioxidant stability of Japanese quails. A total of eighty growing quails (1-week old) were distributed into 2 equal groups consisting of 40 birds (5 replicates of 8 birds each). The first group was fed a basal diet without Lactuca serriola leaves (0 g.kg-1 diet) and the second group received diets containing 20 g.kg-1 Lactuca serriola leaves. At age of 6 weeks, quails were slaughtered for meat and carcass examinations. The growth performance for the quails fed with Lactuca serriola leaves diet was similar to that of a control group. Carcass measurements, physical properties, and chemical composition of quail breast meat did not differ between the control and experimental group. However, the inclusion of Lactuca serriola leaves significantly increased the omega-3 polyunsaturated fatty acid content and improved breast meat lipid stability during postmortem refrigerated storage compared to the control diet. In conclusion, dietary supplementation of Lactuca serriola leaves can improve the performance of Japanese quail enrich its meat with an omega-3 polyunsaturated fatty acid, and reduce lipid oxidation during storage.

We evaluated the effects of a rumen-protected microencapsulated supplement from linseed oil (MO) on ruminal fluid, growth performance, meat quality, and fatty acid composition in Korean native steers. In an in vitro experiment, ruminal fluid was taken from two fistulated Holstein dairy cows. Different levels of MO (0%, 1%, 2%, 3%, and 4%) were added to the diet. In an in vivo experiment, eight steers (average body weight = 597.1 ± 50.26 kg; average age = 23.8 ± 0.12 months) were assigned to two dietary groups, no MO (control) and MO (3% MO supplementation on a DM basis), for 186 days. The in vitro study revealed that 3% MO is an optimal dose, as there were decreases in the neutral detergent fiber and acid detergent fiber digestibility at 48 h (p < 0.05). The in vivo study showed increases in the feed efficiency and average daily gain in the 3% MO group compared to the control group on days 1 to 90 (p < 0.05). Regarding meat quality, the shear force produced by the longissimus thoracis muscle in steers from the 3% MO group was lower than that produced by the control group (p < 0.05). Interestingly, in terms of the fatty acid profile, higher concentrations of C22:6n3 were demonstrated in the subcutaneous fat and higher concentrations of C18:3n3, C20:3n3, and C20:5n3 were found in the intramuscular fat from steers fed with 3% MO (p < 0.05). Our results indicate that supplementation with 3% MO supplements improves the growth performance and meat quality modulated by the omega-3 fatty acid content of meat in Korean native steers.

ABSTRACT The objectives of this research were to evaluate the effects of commercial probiotic and chitosan as food additives on the quality and meat composition of 36 New Zealand White rabbits (57 ± 8 days old and 1,648 ± 0.194 kg) and on the fatty acid profile of caecotrophs. The treatments were CT (diets without inclusion of additives), PRO (inclusion of 4 g / kg of commercial probiotic) and CHI (inclusion of 4 g / kg of chitosan). The additives increased triglycerides and decreased urea compared to the control group, as well as increased oleic and linoleic acids, Ʃ unsaturated, Ʃ monounsaturated and Ʃ polyunsaturated in caecotrophs. CHI animals showed a decrease in myristic and palmitic acids compared to PRO. CHI decreased the meat's crude protein and the meat's fat. In addition, there was a decrease in omega-3, omega-6 and the relationship unsaturated and saturated fatty acids for the CHI group and an increase in erucic acid and a decrease in the rate of hypocholesterolemic acids. As a conclusion, the data showed that the animals that ingested probiotic had better meat quality, for having better fatty acid profile and hypocholesterolemic index, compared to the treatment with chitosan. The additives improved the caecotrophs fatty acid profile.

The present study aimed to investigate the effects of dietary supplementation with powdered peanut skin (PS) as natural antioxidant and growth promoter on growth performance, carcass characteristics, serum metabolites and meat quality of Cobb broiler chickens. A total of 240 unsexed Cobb 500 1-week-old broiler chicks were randomly assigned to four treatment groups with six replicates. The dietary treatments consisted of the basal diet as control and PS groups (1.0, 2.0, and 3.0 PS g/kg). Results showed that the highest values (P < 0.01) of live bodyweight and bodyweight gain were observed in the control group at 3 weeks of age and during the period of 1–3 weeks of age, respectively compared with all levels of PS. During 1–3 weeks of age, feed intake per day chicks fed the diet containing PS levels decreased numerically (P > 0.01) with increased levels of PS compared with the control. Supplementing 1.0 or 3.0 g/kg of PS insignificantly enhanced feed conversion ratio at 1–6 weeks of age. Dietary treatments significantly depressed giblets (P = 0.002), thigh (P = 0.0.027) and abdominal fat percentages (P > 0.0.1), however, increased (P = 0.004) breast percentage of broiler chicks at 6 weeks of age. The lowest value of serum creatinine and urea achieved by chicks fed diet contained 3.0 PS g/kg diet. Also, high density lipoprotein cholesterol in addition to triglycerides were significantly (P < 0.05 and P < 0.01) decreased with increasing level of PS supplementation. It can be concluded that PS as a phytogenic additive could be used as a supplementation to broiler diets to lower abdominal fat in carcass and cholesterol, creatinin and urea in blood. Sensory characteristics were not affected except that appearance was improved. Water-holding capacity was also improved.

The experiment was conducted to investigate the effects of dietary supplementation with Puerarin on meat quality, muscle antioxidant ability, and muscle fiber characteristics of beef cattle under a hot environment in summer. Thirty-two 15 ± 1.5-month-old Jinjiang bulls (291.65 ± 8.84 kg) were randomly divided into four groups with dietary Puerarin at 0 (control), 200 (Pue200), 400 (Pue400), and 800 (Pue800) mg/kg in the feed concentrate (n = 8). The feeding trial lasted for 60 days after a 10-day adaptation period (July 1–September 8); the average values of temperature, relative humidity and temperature, and humidity index were 30.68°C, 68.05%, and 81.81, respectively. The growth performance on day 40 of the experiment period was calculated. After 60 days' experimental period, four Jinjiang cattle per treatment from the control group, Pue400 group, and Pue800 group were slaughtered. Compared with the control group, the Pue400 and Pue800 groups improved the growth performance of beef cattle; the Pue800 group elevated the activities of superoxide dismutase, total antioxidant capacity, and glutathione peroxidase in the M. longissimus thoracis (LT) muscle. In the control group, the cell membrane was incomplete, and most of the mitochondria were elongated and in a fission state, while in the Pue400 and Pue800 groups, the cell membrane was clear and complete, and the mitochondria presented with round and oval shapes. Compared with the control group, the Pue400 and Pue800 groups reduced the shear force of the LT muscle, and the Pue400 group decreased the muscle fiber diameter and the myosin heavy-chain (MyHC)-IIb gene expression. Furthermore, the Pue400 and Pue800 groups decreased the ratio of AMP/ATP, the Pue800 group reduced the AMP-activated protein kinase α2 mRNA expression, and the Pue400 group improved the nuclear respiratory factor 1 mRNA expression. These results indicated that dietary supplementation with Puerarin might be beneficial to the meat quality of heat-stressed beef cattle by improving muscle antioxidant ability and reducing the MyHC-IIb muscle fiber composition. Based on the results of this study, we recommended 400 mg/kg Puerarin in the feed concentrate of beef cattle (~300 kg) for mitigation of heat stress.
