Based on the Beijing panel data from 1990 to 2019, this paper expands the traditional Almost Ideal Demand System (AIDS) model by introducing the nutritional needs indicators by age structure and quantitatively analyzes the structure and characteristics of household food consumption in Beijing. The study estimates and compares the income elasticity, price elasticity, nutritional demand elasticity of food consumption structure, and the per capita food consumption in Beijing is predicted. The results show that commodity prices and income are still the key factors affecting consumer demand. The change in the population's age structure also has a corresponding impact on the consumption structure. The consumption structure of Beijing is in the stage of optimization, and relevant departments should formulate relevant policies to increase farmers' income and stabilize prices.

Factors Affecting Consumer Demand for Cayenne Pepper in Denpasar City,Bali ProvinceCayenne pepper is one of the national leading commodities that is needed by thecommunity. Denpasar City, which has a high population density and per capita foodexpenditure, is a potential market for cayenne pepper production centers in BaliProvince. Consumer demand for cayenne pepper is sometimes uncertain due to theinfluence of various factors. This study aims to analyze the factors that influenceconsumer demand for cayenne pepper and analyze its demand elasticity in DenpasarCity, Bali Province. This research was carried out in Badung Market, Kreneng Market,Ketapian Market, and Sanglah Marketwhich were determined intentionally. Samplingused accidental sampling technique. The number of samples was determined by quotasampling as many as 50 respondents. This study used the Cobb-Douglas requestfunction which is transformed into multiple linear forms of natural logarithms (ln).Theresults showed that the factors that influence consumer demand for cayenne pepper inDenpasar City, Bali Province were the number of family members and tastes. Priceelasticity at D = 0 (not interested in cayenne pepper) and D = 1 (interested in cayennepepper) shows that the demand for cayenne pepper is perfectly inelastic. Cross elasticityat D = 0 (not interested in cayenne pepper) and D = 1 (interested in cayenne pepper)showed that large red chilies, tomatoes, and shallots are items that were not related tocayenne pepper. Income elasticity at D = 0 (not interested in cayenne pepper) and D = 1(interested in cayenne pepper) indicates that the demand for cayenne pepper wasinelastic to income.

The paper applies the travel cost method (TCM) to estimate the value that rural households in the Steelpoort sub-basin of South Africa place on river and collective tap water. While the TCM calculations are based on the opportunity cost of the time household members spend on water collection, the resulting welfare values are close in magnitude to the estimates obtained using a contingent valuation method (CVM) on the same sample. The paper shows that in the absence of price data, the TCM provides satisfactory estimates of benefits where direct estimation of demand elasticity would otherwise be impossible. According to both methods, households consuming river water attribute higher value to the resource than collective tap users. The income elasticity of the trip generating function is much higher than that of the opportunity cost of time (price), implying that household's water use behaviour would be more responsive to factors affecting household income than to price incentives. Comparing the estimated values with actual operating and maintenance cost of water provision in the study area suggests that policies promoting cost-covering water tariffs have a potential to succeed.

The article presents main trends in the changes of nutritional needs in Poland over the past dozen years. Main goal of the article is to determine the direction and scope of the changes in consumption patterns of Poles in progress in the first and second decade of the 21st century. Starting point of the analysis consists in presenting the methods for studying the pace of development of food consumption and the changes of its structure. Next, the prioritization of nutritional needs was presented basing on the analysis and assessment of average income elasticity factors for consumption for the years 2003–2015. The conducted analysis of the shaping of nutritional needs of Polish households reflects the growing level of satisfaction of the needs as well as quality changes, together with substitution processes within the analysed food groups.

Analysis of patterns of food consumption of carbohydrate-based society in the city of Bengkulu aims to determine the pattern of food consumption, identify factors - factors that affect carbohydrate-based food consumption in the city of Bengkulu and to determine the elasticity of consumption of rice and tubers at their own price, cross and income. This study uses analysis of almost ideal demand system (AIDS) and the elasticity of demand. The sample used in this study is the survey data SUSENAS (Socio-Economic Survey) In 2012 as many as 292 households. The results of this study were (1) Patterns of food consumption of carbohydrates in the city of Bengkulu showed that total rice consumption expenditures greater than the bulbs, which is USD 61.021,71 / week and tuber 26.617,43 USD / week. Factors affecting food consumption patterns of carbohydrate in Bengkulu city is the economic factor. The economic factor is the price of food consumed requirement itself. Price elasticity is performed on the combined restriction on both rice and tubers food sources are unitary inelastic, inelastic cross elasticity and income elasticity is unitary elastic. Keywords: consumption, carbohydrates, grains, tubers

The food-related industries important influence on the environment and the factors which caused food-related industriesenvironmental pollution was investigated by using the food-related industry data. The results showed that the variables measuring the quantities and structures of food consumption have an important influence on carbon dioxides discharge. In addition, the scale of economics and environmental control variables have the biggest influence. We can lead peoples food consumption structure to the environmentally friendly structure and strengthen the environmental control, then control the environmental pollution of the food industry effectively.
