Consumers associate a bright-cherry red color of beefwith freshness and wholesomeness. Any deviation from a bright red color leadsto a discounted price or beef is discarded. Limited data is currently availableon the economic losses due to retail beef discoloration. Therefore, theobjective of the study was to estimate economic losses, the amount of beefdiscarded, natural resource wastage, and environmental impact due to beefdiscoloration. One-year data of total beef sales, total beef discarded, and discountedsale values were collected from two national retail chains and one retailstore. The two retail chains were located throughout the US, and the one retailstore was located in Southern US. The US beef system life cycle parameters frompublished literature were used to calculate the impact of discarded meat on waterand energy use and greenhouse gas emissions. The data from three stores weremodeled to calculate annual loss due to discoloration from the US retail beefsales. The data indicated that total beef sales from two major retail chainsand one retail store was 1.1 billion pounds of steaks and ground beef for theone-year period. This amount of beef corresponds to approximately 6.5% of totalretail sales of steaks and ground beef in the US. The amount of beef discardedfrom two major retail chains and one retail store corresponds to 29.7 millionpounds. Based on modeled data, the amount of beef discarded annually due todiscoloration within the US retail beef industry corresponds to 429 millionpounds, with another 1.8 billion pounds sold at a discount. The results indicatethat the US beef industry losses $3.745 billion annually due to discoloration. Thetotal amount of beef discarded per year in the US corresponds to 429 millionpounds, which represents wasting 780,000 animals and the associated naturalresources used in their production. A 1% decrease in discolored beef in the UScould reduce natural resource waste and environmental impacts by 23.95 billionL in water, 96.88 billion mega Joules in energy consumed, and 0.40 million tonsof carbon dioxide equivalent emission along the beef upstream value chain.Therefore, novel technologies to improve meat color stability could improvebeef production’s sustainability and limit wastage of nutritious beef.

Beef quality is the first deciding factor for consumers to consider before purchasing. The aim of this study was to evaluate the effects of suspension and aging time on beef quality. We compared the differences in pH, drip loss, cooking loss, color, shear force, myofibril fragmentation index (MFI), and electron microscope of three muscle tissues between Achilles tendon (AT) and neck-arm restraint (NR) suspensions during seven aging periods (days 0, 1, 2, 3, 7, 14, and 21) after slaughter using the carcasses of six Xinjiang brown cattle. We found that NR suspension could significantly increase the water loss rate and MFI, as well as reduce the shear force compared to AT suspension. The muscle fiber structure with NR suspension was more severely damaged. The proteomics of longissimus dorsi was checked for the post-mortem days 1, 7, and 14. We detected 50, 26, and 29 differentially expressed proteins between NR and AT suspension at post-mortem days 1, 7, and 14, respectively. These proteins were involved in metabolic and muscle structure associated pathways and contributed to a comprehensive understanding of suspension-dependent meat quality regulation by proteins in beef cattle. To conclude, NR suspension can accelerate the aging time of beef carcasses, which will reduce the cost of carcass suspension and bring more benefits in the beef industry.

Heavy tick burden on beef cattle account for huge economic losses globally, with an estimated value of US$22-30 billion per annum. In Australia, ticks cost the northern beef industry approximately A$170-200 million. Methods to evaluate and predict tick resistance would therefore be of great value to the global cattle trade. Exosomes (EX) are small extracellular vesicles (EVs) of ~30-150nm diameter and have gained popularity for their diagnostic and prognostic potential. EX contain, among other biomolecules, various types of RNA including micro-RNA (miRNA) and long noncoding RNA (lncRNA). MiRNA specifically have been validated as therapeutic biomarkers as they perform regulatory functions at the post-transcriptional level and are differentially expressed between divergent groups. The objective of the present study was to evaluate the miRNA profiles of EV and fractionated exosomal samples of high and low tick-resistant beef cattle to highlight potential miRNA biomarkers of tick resistance. Cows (n = 3/group) were classified into high or low tick resistant groups according to a novel scoring system. EVs and EX were isolated and fractionated from the blood plasma of high and low tick resistant cattle using established isolation and enrichment protocols. The resultant EX and non-EX samples were processed for next generation miRNA sequencing. Offspring of the cows in each high and low tick resistant group underwent the same processing for blood plasma EX, non-EX and miRNA analysis to evaluate the heritability of miRNA associated with tick resistance. A total of 2631 miRNAs were identified in EX and non-EX fractionated samples from high and low tick-resistant beef cattle. MiR-449a was highly expressed in maternal high tick-resistant EX samples. Of these, 174 were novel miRNAs, and 10 were differentially expressed (DE) (FDR < 0.05). These 10 DE miRNAs were also present in EVs, and three miRNAs were highly expressed: miR-2419-3p, miR-7861-3p and miR-2372-5p. Although 196 novel miRNAs were identified in fractionated samples of offspring, no miRNA were differentially expressed in these animals.

The COVID-19 pandemic has brought impacts on the food system in several ways, such as on the supply and demand of food or changes in consumer preferences. However, little is known yet about these effects but needs to be analyzed to define actions and policies for crisis mitigation and achieving food system resilience and food security. In this article, we estimate the effect of the COVID-19 lockdown on changes in food consumer preferences in Colombia, applying a logit model approach for seven attributes, namely animal welfare, environmental sustainability, information on the origin and manufacturing of food, food appearance, food price, fair payment to the producer, and food packaging. In addition, we provide an analysis of changes in beef consumption during the lockdown, since the beef industry is among Colombia's most important agricultural activities and is heavily affected by substitution effects. Our results show that consumer beliefs regarding these attributes remained mostly stable, but that income is a determining factor for the decision to consume certain types of food, such as beef, rather than for possible changes in beliefs. This means that income ends up being decisive for the consumption of food such as beef and that, for its part, it does not have a greater weight in the change of beliefs of the people surveyed. The results will help the food system actors in defining interventions for achieving food security and resilience.

Ce travail passe en revue les résultats des travaux de recherches sur l’amélioration génétique des zébus locaux (Goudali, White et Red Fulani) par voie de sélection et de croisement avec les races exotiques (Holstein, Montbéliarde, Brahman américain, Jersiais, Tarentaise, Limousine et Charolaise). Ces travaux ont été conduits depuis 1952 dans les Centres de Recherches  Zootechniques de Wakwa et Bambui par l’Institut de Recherches Zootechniques (IRZ, aujourd’hui connue sous le nom de l’Institut de Recherche Agricole pour le Développement) du Cameroun, en système d’élevage semi-intensif dans les zones des hautes savanes guinéennes et des hauts plateaux de l’Ouest Cameroun. Les données proviennent des rapports d’activité et de consultations, des publications scientifiques et des entrevues. L’objectif est de ressortir les résultats saillants utiles pour les décideurs politiques, les chercheurs et les éleveurs. Les principaux résultats montrent que le potentiel laitier des croisés est généralement supérieur (>4 litres) à celui des races locales (>3,5 litres). Les génotypes ayant moins de 75% de sang exotique sont les plus performants en lait et viande. Les causes de mortalité par ordre d’importance sont nutritionnelles (36,8%),  accidentelles (29,6%), pathologiques (21,1%), parasitaires (7,7%) et reproductives (4,8%). Par rapport aux autres produits de croisement, les croisés Holsteins ont été plus lourds à la naissance (34,75 kg) avec une vitesse de croissance plus élevée (0,46 kg), une production laitière plus élevée (5,47 ± 0,17 litres), plus précoces (40,87 mois) et moins susceptibles au stress   Nuenvironnemental. Pour la filière bovin-à-viande, les performances de viande de la race synthétique Wakwa sont légèrement supérieures à celles des zébus Goudali sélectionnés dans le cheptel local. Cependant, le taux de susceptibilité à la  dermatophilose est estimé à 71,0%, 34,4% et 5,0% chez le pur, ½ et ¼ sang Brahman, respectivement. La sélection massale du zébu Goudali (variété Ngaoundéré) et la race synthétique Wakwa a permis d’obtenir des progrès génétiques significatifs, soient, respectivement, 8,60 kg et 20,40 kg. Cependant, les corrélations génétiques négatives entre les effets directs et maternels montrent que le progrès génétique serait davantage plus important si la sélection était concentrée sur les performances  directes et maternelles. Les expériences d’insémination artificielle menées à la SODEPA et à « Tadu Dairy Cooperative Society»montrent que l’industrie laitière est une entreprise rentable avec un rapport bénéfice-coût de 4,21. This work reviews the results of research on the genetic improvement of local zebus (Gudali, White and Red Fulani) through selection and crossbreeding with exotic cattle breeds (Holstein, Montbeliard, American Brahman, Jersey, Tarentaise, Limousine and Charolais). This work was started since 1952 by Institute of Animal Research (IRZ, now known as the Institute of Agricultural Research for Development) at the Wakwa and Bambui Research Centers, under semi-intensive management conditions in the  high Guinea savannah areas of the Adamawa Plateau and the highlands of West Cameroon. Data were obtained from activity and consultation reports, scientific publications and interviews. The objective is to highlight salient findings that are useful for policy makers, researchers and livestock producers. The main results show that the milk potential of crosses is generally higher (>4 liters) than that of local breeds (>3.5 liters). Genotypes with less than 75% exotic blood had the best milk and meat  production performance. The reported causes of mortality in order of importance are nutritional (36.8%), accidental (29.6%), pathological (21.1%), parasitic (7.7%) and reproductive (4.8%). Compared to the others crosses, Holstein crosses were found to be relatively heavier at birth (34.75 kg) with a higher growth rate (0.46 kg), higher daily milk production (5.47 ± 0.17 liters), earlier maturing (40.87 months), but more adapted to the breeding conditions and less susceptible to environmental stress. For the beef industry, the meat performance of the synthetic Wakwa breed is slightly better than that of the Gudali zebus selected from the local herd. However, the susceptibility rate to dermatophilosis was estimated at 71.0%, 34.4% and 5.0% in pure, ½ and ¼ blood Brahman, respectively. Individual selection of the Gudali zebu (Ngaoundéré subtype) and the synthetic Wakwa breed has resulted in significant genetic progress, 8.60 kg and 20.40 kg, respectively. However, the negative genetic correlations between direct and maternal effects showed that genetic progress would be more important if selection was concentrated on direct and maternal performance. Artificial insemination experiments conducted at SODEPA and Tadu Dairy Cooperative Society showed that the dairy industry is a profitable enterprise with a benefit-cost ratio of 4.21.

This study was carried out to estimate the variance components, heritability, and genetic correlations between the carcass traits and primal cut yields in Hanwoo cattle. Carcass traits comprising 5622 records included back fat thickness (BFT), carcass weight (CW), eye muscle area (EMA), and marbling score (MS). The 10 primal cut yields from 3467 Hanwoo steers included the tenderloin (TLN), sirloin (SLN), striploin (STLN), chuck (CHK), brisket (BSK), top round (TRD), bottom round (BRD), rib (RB), shank (SK), and flank (FK). In addition, three composite traits were formed by combining primal cut yields as novel traits according to consumer preferences and market price: high-value cuts (HVC), medium-value cuts (MVC), and low-value cuts (LVC). Heritability estimates for the interest of traits were moderate to high, ranging from 0.21 ± 0.04 for CHK to 0.59 ± 0.05 for MS. Except genetic correlations between RB and other primal cut traits, favorable and moderate to high correlations were observed among the yields of primal cut that ranged from 0.38 ± 0.14 (CHK and FK) to 0.93 ± 0.01 (TRD and BRD). Moreover, the estimated genetic correlations of CW and EMA with primal cut yields and three composite traits were positive and moderate to strong, except for BFT, which was negative. These results indicate that genetic progress can be achieved for all traits, and selection to increase the yields of primal cuts can lead to considerable profitability in the Hanwoo beef industry.

This paper presents the results of a study of social sustainability in the U.S. beef industry with a focus on the pre-harvest, cattle ranching portion of the industry. Using an integrative literature review and interviews with fifteen thought leaders in the field, we synthesize key indicators of social sustainability and provide a framework to be used in analyzing social sustainability in the pre-harvest beef industry. We identify six themes that are critical to social sustainability: human health; learning/adaptation; community relations; equity and inclusion; land ownership, tenure, and succession; and industry structure. However, our results also indicate that social sustainability as a term is insufficient for representing the positive futures desired by ranchers and that quantifiable indicators and metrics are not able to capture some of the subjective qualities of social sustainability. There is a need for future research that builds on these ideas and explores alternative future scenarios for the U.S. beef industry by engaging more diverse perspectives.
