1. It may be shown by means of cells of the flowers of a hybrid Rhododendron which contain a natural indicator, by means of starfish eggs stained with neutral red, and by means of an "artificial cell" in which living frog's skin is employed that increased intracellular alkalinity may be brought about by solutions of a decidedly acid reaction which contain ammonium salts. 2. These results are analogous to those previously obtained with the CO2-bicarbonate system, and depend on the facts: (a) that NH4OH is sufficiently weak as a base to permit a certain degree of hydrolysis of its salts; and (b) that living cells are freely permeable to NH4OH (or NH3?) and not to mineral and many organic acids, and presumably not at least to the same extent to ammonium salts as such.

Abstract This work presents the hydrolysis of a water-soluble protein, bovine serum albumin (BSA), for the production of both amino and organic acids under the sub-critical water condition in the temperature range of 200–300°C. The products of the reaction were a water-insoluble solid phase, an aqueous phase, and an insignificant gas phase which was neglected in this study. Results have shown that BSA passes through an aggregation step, followed by a gel formation process which results in the formation of insoluble solid aggregates. Then, such formed solids unfolded with releasing polypeptides as an intermediate product then finally hydrolyzed to produce low molecular mass products such as amino and organic acids. It was found that there were insignificant amino acids produced in the temperature ranges of 200–225°C within 2 min and 275–300°C within 0.5 min. However, by extending the reaction time, the protein transferred to both amino and organic acids.

The present study investigated the effect of salinity (Control: 1.8 dS/m, S1: 3.0 dS/m and S2: 4.5 dS/m) on the chemical composition and bioactive properties of three basil cultivars (Red Basil, Dark Opal Red and Basilico Rosso). Crop performance was not affected by increasing salinity in DoR and BaR. Fat, ash and carbohydrates content increased by salinity in DoR, whereas energetic value was negatively affected. Free sugars (total and individual compounds) increased under saline conditions (S2) in BaR, whereas reducing trends were observed for the main organic acids and tocopherols in all the cultivars. The major fatty acids were α-linolenic, linoleic and palmitic acids with no consistent salinity effects, while the richest polyphenols were sagerinic acid and eriodictyol-O-malonylhexoside. Finally, basil extracts showed moderate antioxidant and strong antifungal activity. In conclusion, salinity showed a genotype dependent effect on the chemical profile and bioactivities of the tested cultivars.
