Effects of Caesalpinia sappan L. extract on the color stability, antioxidant and antimicrobial activity in cooked pork sausages during cold storage

The antioxidant and antimicrobial activity of Juniperus communis L. essential oil (JO) in cooked sausages was examined. Sausages with different concentrations of JO (0.15.0 µl/g) and a control were prepared. Instrumental parameters of colour (CIE L*a*b*), TBARS values, DPPH scavenging activity assay, microbial profile, and sensory panel scores have been assessed. Batches produced with the JO addition were darker and redder compared to the control. Sausages with the addition of 1.0, 2.0 and 5.0 µl/g JO showed the significantly (P < 0.05) lower TBARS values compared to the control. The addition of JO decreased radical formation and reduced the growth of total aerobic mesophilic bacteria. The flavour of sausages produced with the addition of 0.1 and 0.5 µl/g JO was slightly/moderately and significantly (P < 0.05) different from the control. This study demonstrates the significant antioxidant and antimicrobial activity of Juniperus communis L. essential oil, as well as the potential of its utilisation in the production of cooked pork sausages to enhance quality.

The objective of the current study is represented by the determination of silica and a phytochemical screening of phenolic derivates of some Equisetum species. The antioxidant and antimicrobial activity for Equisetum pratense Ehrh.,, Equisetum sylvaticum L. and Equisetum telmateia Ehrh. (sin. Equisetum maximum Lam.) were also investigated. The concentration of silicon (Si) in plants was determined by the spectrophotometric method using previous treatment with NaOH 50% both for the stem and the nodal branches [1]. Results obtained varied from 95.12 to 162.10 SiO2 mg/g dry plant which represents 4.44% to 7.58% Si/100g dry sample. Two types of total extracts were obtained using different solvents and were subjected to qualitative and quantitative chemical analysis considering total phenolic content [2]. The highest concentration of investigated compounds was found in the methanolic extract, E. sylvaticum, 196.5mg/g dry sample. Antioxidant activity was monitored spectrophotometrically and expressed in terms of IC50 (�g/mL) [3]. Values gathered ranged from 261.7 to 429.5 �g/mL. The highest capacity to neutralized DPPH radicals was found in E. sylvaticum. In vitro antimicrobial activity was determined using difusimetric method [4]. Testing was performed on four microorganisms: three strains of bacteria and one species of fungi. Different effects were noticed against the bacteria, furthermore the methanol extract appeared to be most efficient. All extracts showed significand antimicrobial activity against Staphylococcus aureus (ATCC 25923) and Candida albicans (ATCC 90028) and weak to no activity against Pseudomonas aeruginosa (ATCC 27853) and Escherichia coli (ATCC 25922).

Nowadays, there is a growing interest in finding new coloring molecules of natural origin that can increase and diversify the offer of natural food dyes already present in the market. In the present work, a B-phycoerythrin extract from the microalgae Porphyridium cruentum was tested as a food colorant in milk-based products. Using spectroscopy and colorimetry, the extract was characterized and gave evidence of good properties and good stability in the pH range between 4.0 and 9.0. Coloring studies were conducted to demonstrate that samples carrying the pink extract could be used for simulating the pink color of marketed milk-based products. The staining factors, representing the amount of pink protein to be added to reproduce the color of strawberry commercial products, ranged between 1.6 mg/L and 49.5 mg/L, being sufficiently low in all samples. Additionally, color stability during a short period of cold storage was studied: it demonstrated that the three tested types of dairy products remained stable throughout the 11-day analysis period with no significant changes. These results prove the potential of the B-phycoerythrin extract as a natural colorant and alternative ingredient to synthetic coloring molecules.
