Abstract This research was conducted to examine the effect of slaughter age and sex class to carcass characteristic from Red Brahman Crossbred Cattle. The research materials were 126 heads (grouped by slaughter age (<1,5 years, 2-2,5 years, and 3 years) and sex class (bull and steer)) with taken from KASA Company, rested for 12-24 hours, and slaughtered in AM FARM abattoir with halal MUI slaughter methods. The research method was used field experiment. The data of research were analysis by using Complete Randomized Factorial Design (2X3) and Duncan Multiple Range Test if there were differences. Parameters of carcass characteristic were slaughter weight, hot carcass weight, dressing percentage, carcass components percentage (meat, bone, fat), MBR, MFR, rib eyes area, and 12th fat thickness of ribs. The results of this research showed that slaughter age and sex class has significantly (P<0,05) affect to slaughter weight and hot carcass weight. Interactions of slaughter age and sex class has significantly (P<0,05) affect dressing percentage, bone and meat percentage, MBR and MFR, and has not significant (P>0,05) rib eyes area and fat thickness. From these results, it can be concluded that slaughter age and sex class affect carcass characteristics of Red Brahman Crossbred Cattle.

This paper aimed to identify and evaluate the effects of sire breed on temperament and productive traits of different cross-breeds between Nellore (NE), Tabapua (TB), and Brahman (BR) bulls mated with Angus cows (AN), as well as the relationship between temperament and productive traits. The productive traits measured in this study include slaughter weight and post weaning weight gain. Temperament was assessed by flight-speed (FS). Carcass data collected in this study include hot carcass weight, hot carcass percentage, cold dressing percentage, carcass length, initial pH, ultimate pH, subcutaneous fat thickness and carcass longissimus muscle area. The sire breed effect was greater for slaughter weight. Hot carcass weight was not affected by the sire breed. The longissimus muscle area was larger for AN x TB and AN x NE crossbreeds than for AN x BR crossbreeds. Subcutaneous fat thickness and cold dressing percentage were not affected by sire breed. The offspring of NE, TB, and BR sires mated with AN cows had similar carcass measurements, except for the longissimus muscle area, which was smaller for offspring sired by the Brahman breed. The temperament trait was not influenced by sire breed.

Abstract. Aim of the study was to investigate comparatively the slaughter and carcass characteristics of Gokceada, Maltese and Turkish Saanen suckling kids. Eight suckling male kids at 80–90 days of age from each genotype were used in the study. The kids were collected from dairy goat farms and slaughtered after lairage of an overnight period. Although the kids were at similar age and sex, the slaughter weight and chilled carcass weight of indigenous Gokceada kids were lower than those of Maltese and Turkish Saanen kids (P<0.001). Chilled dressing percentage calculated according to empty body weight was 48.97 % in Gokceada, 51.32 % in Maltese and 52.35 % in Turkish Saanen kids (P<0.001). There were not statistically significant differences among the breeds in terms of neck, shoulder, ribs and long leg percentages, musculus longissimus dorsi (MLD) section area and back fat thickness (P>0.05). While there were significant differences between breeds in terms of muscle, bone and fat weights in half carcass on the side of Turkish Saanen and Maltese kids, the differences between the genotypes were not significant for percentages of muscle, bone and fat. The carcass structure of suckling kids was small and meat production was low, however, they had very little fat in the carcass. It was concluded that Maltese and Turkish Saanen kids were favourable than Gokceada kids in terms of suckling kid meat production.

In this study, canonical correlation analysis was applied to estimate the relationship between body measurements and carcass traits of 28 male cross bred rabbits of about 12 weeks of age, reared under semi intensive system. Four body measurements, pre-slaughter weight (PSW) , body length (BL), chest circumference (CC), and ear length (EL) as predictor variable while dressing percentage ( DP) , hot carcass weight (HCW) and cold carcass weight (CCW) as criterion variables. Pre-slaughter weight and body length had significant (P<0.001) simple correlation coefficients with the carcass traits except for dressing percentage. The three canonical variate pairs ranged between .99 to .42 and only the first pair was significant (P<0.001). From the analysis pre-slaughter weight and body length can be regarded as the main factors as live measurement traits, while dressing percentage did not have pronounced effect on the emerged criterion variables.

Objective: This study was conducted to determine early hereditary endowment to establish a short-term feeding program.Methods: Hanwoo steers (n = 140) were equally distributed into four groups (35/group) based on genetic meat yield index (MYI) viz. the greatest, great, low, and the lowest at Jukam Hanwoo farm, Goheung. All animals were fed in group pens (5 animals/pen) with similar feed depending on the growth stage. Rice straw was provided ad libitum, whereas concentrate was fed at 5.71 kg during the growing period (6 to 13 mo) and 9.4 kg during the fattening period (13 to 28 mo). Body weight (BW) was measured at two-month intervals, whereas carcass weight was determined at slaughtering at about 31 months of age. The Affymetrix Bovine Axiom Array 640K single nucleotide polymorphism (SNP) chip was used to determine the meat quantity-related gene in the blood.Results: After 6 months, the highest (p<0.05) BW was observed in the greatest MYI group (190.77 kg) and the lowest (p<0.05) in the lowest MYI group (173.51 kg). The great MYI group also showed significantly (p<0.05) higher BW than the lowest MYI group. After 16 and 24 months, the greatest MYI group had the highest BW gain (p<0.05) and were therefore slaughtered the earliest. Carcass weight was significantly (p<0.05) higher in the greatest and the great MYI groups followed by the low and the lowest MYI groups. Back-fat thickness in the greatest MYI group was highly correlated to carcass weight and marbling score. The SNP array analysis identified the carcass-weight related gene BTB-01280026 with an additive effect. The steers with the allele increasing carcass weight had heavier slaughter weight of about 12 kg.Conclusion: Genetic MYI is a potential tool for calf selection, which will reduce the slaughter age while simultaneously increasing carcass weight, back-fat thickness, and marbling score.

The study carried out at Dort Mevsim Meat Integrated Facility in Susurluk district, Balikesir province, Turkey. In each genotype, there were 20 male lambs. Suffolk and German Mutton Merino lambs were subjected to fattening for 70 days. At the end of the trial, 6 male lambs from each genotype were slaughtered. Slaughter weight, ADG, concentrate feed efficiency, hot carcass weight, chilling carcass weight, hot dressing percentage and chilling dressing percentage were 43.9 kg, 301 g, 3.44 kg, 23.18 kg, 22.24 kg, 52.80 % and 50.66 % in Suffolk lambs; these values were 43.1 kg, 296 g, 3.86 kg, 21.85 kg, 20.89 kg, 50.70 % and 48.47 % in German Mutton Merino lambs, respectively. Hot and chilling carcass weights of Suffolk and German Mutton Merino lambs were significantly different (P>0.05). The findings of the current study showed that Suffolk lambs tended to have higher hot and chilling carcass weights, although there were no statistical differences between the two genotypes in terms of slaughter weights, average daily weight gains and other slaughter traits. These results also indicate that the carcasses for retail sale from the Suffolk lambs were more in quantity when compared to German Mutton Merino lambs.

Data on 42 halothane-sensitive pigs (HSL, nn-genotype), 169 Lacombe pigs (LAC, NN-genotype), 41 crossbred pigs (XBD, Nn-genotype), and 72 Yorkshire pigs (YRK, NN-genotype) representing 145 gilts and 179 castrates, were obtained over the liveweight range from 74.0 to 134.5 kg (average 105 kg) to examine the effect of genotype, gender and slaughter weight on the composition of the four lean cuts (ham, loin, picnic and butt). Gilts had a greater proportion of dissectible lean from lean cuts than castrates (557 ± 2.8 vs. 525 ± 2.6 g kg−1). The HSL pigs had the highest and LAC pigs the lowest commercial dressing percentage, increasing respectively from 85.3 to 86.0% and 79.7 kg to 82.6% as slaughter weight increased from 80 to 130 kg. Corresponding figures for XBD and YRK pigs, were 82.5 to 85.4 and 80.6 to 84.6%, respectively. Dissectible lean from lean cuts from 65-kg carcasses was 606, 525, 536 and 575 g kg−1 for HSL, XBD, LAC and YRK pigs, respectively. Corresponding figures for 85-kg and 105-kg carcasses were 574, 525, 515, and 555 g kg−1 and 542, 525, 494, and 535 g kg−1, respectively from HSL, XBD, LAC and YRK pigs. LAC and YRK pigs, each with exclusively NN-genotypes but differing in composition of lean cuts, maintained their relative differences in composition over the weight range studied. Heterogeneity of slopes for changes in proportion of lean in the lean cuts with increasing weight among the HSL, XBD and LAC pigs implied a genotype × weight interaction that could best by explained by an apparent increase in the dominance of the halothane gene with increasing carcass weight. Data on 99 young bulls, which were the progeny of matings of either double muscle bulls and normal cows (DMx) or normal bulls and normal cows (N) born over three calving seasons, were analyzed to compare the carcass characteristics and lean yield of yearling DMx and N bulls. DMx carcasses had larger (P < 0.001) ribeye areas and cutability but smaller (P < 0.001) grade fat and average fat thicknesses than N carcasses, when the data were adjusted to either constant slaughter age (395.7 d) or constant carcass weight (304.7 kg). Muscle:fat and muscle:bone ratios and percent muscle in the 10th-11th-12th rib joint were higher (P < 0.001), while percent fat and percent bone in the rib joint were lower (P < 0.005) in DMx compared to N carcasses, when the data were adjusted to either constant grade fat thickness (10.0 mm) or constant rib joint weight (4871.4 g). The magnitude of the observed superiority of DMx over normal carcasses in lean yield was not the same across carcass grades. For A1 or A2 carcasses, rib joints from DMx carcasses had 8.8 and 5.7%, respectively, more (P < 0.05) muscle than those from N carcasses. Production of high-quality carcass and meat from goat kids may contribute to an increase in goat farming profitability. The aim was to compare carcass and meat quality traits of Saanen goat kids raised under natural (NR) and artificial (AR) rearing systems and slaughtered at 80 days and 120 days of age. The AR kids were separated from their dams immediately after birth and were fed with a commercial milk replacer, while the NR kids suckled their mothers. The rearing type did not affect the average daily gain, slaughter weight, hot carcass weight, empty body weight, commercial dressing percentage, subjective conformation and fatness scores. In parallel with the increase in slaughter age, the slaughter weight, hot carcass weight, empty body weight and subjective carcass conformation score increased. The rearing type had no effect on instrumental meat quality traits, except for meat Lightness (L*) and Hue values. Meat from NR kids had higher L* and Hue values 1 h and 24 h after cutting than those of AR kids. Warner-Bratzler shear force value increased with the slaughter age, but the meat lightness decreased. The ultimate pH was generally high in all groups, ranging between 5.94 and 6.10. The panellists evaluated the meat from NR kids to be more tender and juicy and also gave the highest tenderness scores to the meat obtained from the kids slaughtered at 80 days of age. As a conclusion, the slaughter age may be more determinant than the rearing type in the occurrence of carcass and meat quality characteristics.

The aim of this study was to analyse three commercial beef categories of the ‘Serrana de Teruel breed’ to define the appropriate commercial option. Twenty ‘Serrana de Teruel’ male calves at 9 months were assigned to the commercial beef categories (young bulls, bulls and steers), slaughtered at 12, 22 and 22 months of age, respectively. The in vivo ultrasound backfat thickness was greater than the dorsal fat thickness, and the young bulls and steers had a similar fat thickness, that was greater than the bulls in both areas. The slaughter weight and cold carcass weight were significantly different between the commercial categories. However, the differences were not sufficient to modify the dressing percentage, carcass conformation and fatness degree between the young bulls and bulls. The maximum stress of the muscle at 7 d of ageing was lower in the steers than in the young bulls and bulls. In general, the lightness of the meat in the bulls was lower than that in the young bulls and steers. The subcutaneous fat of the bull carcasses had a vivid colour and stored more carotenoids than that of the young bulls and steers. Hence, bulls produced heavier and better conformed carcasses with more edible meat and less fat than the other categories. However, steers are recommended to produce large carcasses with more trim and cover fat than the other categories. Finally, it seems that bulls are the most suitable commercial category to ‘Serrana de Teruel’ breed.

Abstract. This study was conducted to investigate effects of slaughter age and gender on carcass characteristics of indigenous Hair goat kids reared under an extensive production system. A total of 60 Hair goat kids (30 females and 30 males) slaughtered at 3, 6, 9 and 12 months of age was used as the material of this study. In the study, the cold carcass weights of kids at 3–12 months of age were between 6.15 and 10.83 kg. The cold dressing percentage was determined as 47.04–52.65 %. The effect of slaughter age on these traits was statistically significant (P<0.001). The cold carcass weight and the cold dressing percentage increased with the slaughter age. The effect of kid gender on the cold carcass weight was statistically significant (P<0.001). The mean value of this trait in males was higher than the females. The percentages of omental-mesenteric fat (P<0.001) and kidney-knob and channel fat (P<0.01) significantly increased with slaughter age. Subcutan, intermuscular, total fat and muscle/ bone percentages of the left half carcass significantly increased with slaughter age (P<0.01). However, bone (P<0.05) and muscle/total fat (P<0.01) percentages significantly decreased with slaughter age. The female kids had significantly higher values than males in terms of omental-mesenteric fat, kidney-knob and channel fat, subcutaneous, intermuscular and total carcass fat percentages (P<0.001). In conclusion, it is recommended that Hair goat kids should be slaughtered at 9 months of age under extensive management system to result in more edible meat production.
