Data on 99 young bulls, which were the progeny of matings of either double muscle bulls and normal cows (DMx) or normal bulls and normal cows (N) born over three calving seasons, were analyzed to compare the carcass characteristics and lean yield of yearling DMx and N bulls. DMx carcasses had larger (P < 0.001) ribeye areas and cutability but smaller (P < 0.001) grade fat and average fat thicknesses than N carcasses, when the data were adjusted to either constant slaughter age (395.7 d) or constant carcass weight (304.7 kg). Muscle:fat and muscle:bone ratios and percent muscle in the 10th-11th-12th rib joint were higher (P < 0.001), while percent fat and percent bone in the rib joint were lower (P < 0.005) in DMx compared to N carcasses, when the data were adjusted to either constant grade fat thickness (10.0 mm) or constant rib joint weight (4871.4 g). The magnitude of the observed superiority of DMx over normal carcasses in lean yield was not the same across carcass grades. For A1 or A2 carcasses, rib joints from DMx carcasses had 8.8 and 5.7%, respectively, more (P < 0.05) muscle than those from N carcasses. Abstract This research was conducted to examine the effect of slaughter age and sex class to carcass characteristic from Red Brahman Crossbred Cattle. The research materials were 126 heads (grouped by slaughter age (<1,5 years, 2-2,5 years, and 3 years) and sex class (bull and steer)) with taken from KASA Company, rested for 12-24 hours, and slaughtered in AM FARM abattoir with halal MUI slaughter methods. The research method was used field experiment. The data of research were analysis by using Complete Randomized Factorial Design (2X3) and Duncan Multiple Range Test if there were differences. Parameters of carcass characteristic were slaughter weight, hot carcass weight, dressing percentage, carcass components percentage (meat, bone, fat), MBR, MFR, rib eyes area, and 12th fat thickness of ribs. The results of this research showed that slaughter age and sex class has significantly (P<0,05) affect to slaughter weight and hot carcass weight. Interactions of slaughter age and sex class has significantly (P<0,05) affect dressing percentage, bone and meat percentage, MBR and MFR, and has not significant (P>0,05) rib eyes area and fat thickness. From these results, it can be concluded that slaughter age and sex class affect carcass characteristics of Red Brahman Crossbred Cattle.

The aim of our study was to assess the dynamics of the characteristics in pig carcasses as affected by the season and year of slaughter. A total of 106 027 carcasses of growing-finishing pigs of commercial production, slaughtered in the same abattoir in 2014 and 2015 were included in the study. The carcasses were classified using UltraFOM 200 device, as the characteristics controlled were back-fat thickness at two locations and the depth of m. Longissimus dorsi. These measurements were used to further determine the lean meat percentage. The results of the study showed significant differences in the dynamics of changes of carcass characteristics during the seasons and the years. The highest lean meat percentage was found in summer (56.48%), followed by spring (56.34%), autumn (56.29%) and winter (56.10%). On the other hand, the pigs slaughtered in winter displayed highest carcass weight and back-fat thickness at both locations.

Objective: This study was conducted to determine early hereditary endowment to establish a short-term feeding program.Methods: Hanwoo steers (n = 140) were equally distributed into four groups (35/group) based on genetic meat yield index (MYI) viz. the greatest, great, low, and the lowest at Jukam Hanwoo farm, Goheung. All animals were fed in group pens (5 animals/pen) with similar feed depending on the growth stage. Rice straw was provided ad libitum, whereas concentrate was fed at 5.71 kg during the growing period (6 to 13 mo) and 9.4 kg during the fattening period (13 to 28 mo). Body weight (BW) was measured at two-month intervals, whereas carcass weight was determined at slaughtering at about 31 months of age. The Affymetrix Bovine Axiom Array 640K single nucleotide polymorphism (SNP) chip was used to determine the meat quantity-related gene in the blood.Results: After 6 months, the highest (p<0.05) BW was observed in the greatest MYI group (190.77 kg) and the lowest (p<0.05) in the lowest MYI group (173.51 kg). The great MYI group also showed significantly (p<0.05) higher BW than the lowest MYI group. After 16 and 24 months, the greatest MYI group had the highest BW gain (p<0.05) and were therefore slaughtered the earliest. Carcass weight was significantly (p<0.05) higher in the greatest and the great MYI groups followed by the low and the lowest MYI groups. Back-fat thickness in the greatest MYI group was highly correlated to carcass weight and marbling score. The SNP array analysis identified the carcass-weight related gene BTB-01280026 with an additive effect. The steers with the allele increasing carcass weight had heavier slaughter weight of about 12 kg.Conclusion: Genetic MYI is a potential tool for calf selection, which will reduce the slaughter age while simultaneously increasing carcass weight, back-fat thickness, and marbling score.

Growth, carcass characteristics and meat quality of the steer and heifer progeny of autumn (AC: March–April) and winter (WC: June–July) calving cows following weaning in January in each of 3 years (2003–05) were measured. The cows were mated to sires with a high estimated breeding value for either retail beef yield (RBY), intramuscular fat (IMF) or both RBY and IMF. After weaning, the progeny entered one of three growth paths until slaughter at an average steer liveweight of 500 kg: (i) fast – fast growth from weaning on a high concentrate feedlot diet; (ii) slow – slow growth from weaning (~0.6 kg/day) to 400 kg liveweight followed by growth at over 1 kg/day on high quality pasture; or (iii) comp. – 10% weaning weight loss, immediately after weaning followed by compensatory or rapid growth of over 1 kg/day on high quality pasture. Steers on the fast growth path had higher (P < 0.001) P8 fat thickness than those on the slow or comp. growth paths whereas heifers on the fast growth path only had higher (P < 0.001) P8 fat thickness than those on the slow growth path. Animals on the fast growth treatment had higher (P < 0.001) levels of IMF% than the slow animals which were higher (P < 0.001) than the comp. growth treatment. AUS-MEAT and US marbling scores were not different among growth paths. Animals finished on the fast growth path had a lower (P < 0.001) RBY% than those on either the slow or comp. growth paths. The RBY-sired progeny had higher (P < 0.001) finishing liveweight and hot standard carcass weight than either RBY and IMF or IMF-sired animals. IMF-sired progeny had higher (P < 0.01) rib fat thickness than either RBY or RBY- and IMF-sired animals. There was also a similar trend for P8 fat thickness but the effects were not significant. The RBY-sired animals had lower AUS-MEAT marbling scores (P < 0.01), US marbling scores (P < 0.001) and levels of IMF% (P < 0.01) than either of the other two sire treatments. RBY-sired animals also had higher (P < 0.001) estimated RBY% than those from the IMF sires while those by RBY and IMF sires were intermediate and not significantly different from either. Calving time had little influence on most carcass characteristics. However, WC animals tended to be fatter and have higher marbling scores than AC animals. The IMF% was higher (P < 0.01) in WC animals from RBY and IMF sires than in the corresponding AC animals. Heifers had lighter slaughter liveweight, carcass weight, were fatter and had higher marbling scores than steers. Heifers also had lower (P < 0.001) RBY% than the steers. Ossification scores for heifers were higher (P < 0.001) than for steers by ~30 units in AC calves and by 20 units in WC calves. The results of this experiment confirm the effectiveness of using sires with high estimated breeding value for the required characteristics in producing the desired improvements in the progeny. The absence of any interactions of sire type with growth path indicates that differences between sire types will be similar regardless of environmental conditions. Animals raised on a faster growth path after weaning produce carcasses with more fat and more IMF% than those grown on slower growth paths.

Marbling score was assessed in 20 437 Canadian beef carcasses on a 10-point scale (1 = very abundant, 10 = devoid) in six provinces during the period August to November 1989. Heifer carcasses had a lower marbling score (more marbling fat) than steer carcasses, and both had lower marbling scores (more marbling fat) than bull carcasses. Marbling increased as Canada grade changed from B1 to A1 and from A1 through to A4, indicating that marbling fat increased with carcass fatness. The regression of marbling score on carcass weight and carcass 12th rib fat thickness, although significant, showed that these traits only accounted for 0.5 and 6%, respectively, of the overall variation in marbling score. The overall distribution of marbling scores showed that 20.6% of carcasses had small or more marbling, 57.9% had slight marbling, 20.4% had traces of marbling and 1.1% were devoid of marbling. Abstract The objectives of this trial were to evaluate the effects of levels of fiber in high-grain diets on carcass characteristics of feedlot lambs. Fifty-eight Dorper x Santa Inês ram lambs (initial BW 20.7 ± 1.19 kg and 75 ± 10.83 d old) were assigned to a randomized complete block design. The treatments were defined by the fiber (“Coastcross” hay) content in the diets (CP: 16,12% ± 0.92): 0F: no forage diet (NDF: 10.4%); 5F: 5% of forage (NDF: 12.1%); 10F: 10% of forage (NDF: 15.0%); 15F: 15% of forage (NDF: 15.5%); 20F: 20% of forage (NDF: 20.8%) and 25F: 25% of forage (NDF: 23.5%). The experiment lasted 89 days, at the end of this time, the animals were slaughtered (169 ± 10.83 d old) to evaluate carcass characteristics. There was a quadratic response for slaughter BW (0F: 46.3; 5F: 48.1; 10F: 49.4; 15F: 50.3; 20F: 48.5; 25F: 43.3 kg; P &lt; 0.01), hot carcass weight (0F: 24.8; 5F: 25.6; 10F: 26.0; 15F: 25.7; 20F: 24.3; 25F: 21.8 kg; P = 0.01), cold carcass weight (0F: 24.3; 5F: 25.1; 10F: 25.4; 15F: 25.1; 20F: 23.8; 25F: 21.2 kg; P = 0.01) and longissimus dorsis area (0F: 16.3; 5F: 16.5; 10F: 17.4; 15F: 16.5; 20F: 16.0; 25F: 15.1 cm2; P = 0.04). There was a linear decrease in the hot carcass yield (0F: 53.0; 5F: 53.3; 10F: 52.5; 15F: 50.9; 20F: 50.1; 25F: 50.2%; P &lt; 0.01), cold carcass yield (0F: 52.0; 5F: 52.2; 10F: 51.4; 15F: 49.8; 20F: 49.0; 25F: 48.9%; P &lt; 0.01) and body wall thickness (0F: 16.2; 5F: 17.0; 10F: 16.3; 15F: 16.3; 20F: 15.1; 25F: 13.6 kg; P = 0.01). There was no effect on subcutaneous fat thickness. In conclusion, the diet with up to 5% of forage allowed higher carcass yield; however, the heavier carcasses were produced by the lambs that received 10F diet.

Carcass characteristics of 3673 steers and heifers born over a 6-yr period 1973–1978 at Brandon, Manitoba (farm conditions) and Manyberries, Alberta (range conditions) were compared. Calves weaned at Manyberries were fed and evaluated at Lacombe. The progeny were out of 10 specific F1 crosses of dams mated to bulls of the Charolais (C), Simmental (S), Limousin (L) and Chianina (Chi) breeds. Dam crosses included the Hereford × Angus (HA) and crosses sired by C, S and L sires out of H, A and Shorthorn (N) dams. Breed of sire of dam effects indicated that progeny from S cross cows generally had the heaviest carcasses S = C > L, the greatest carcass weight per day of age S = C > L, the highest percentage of dissected bone of the round S > C > L and rib S > C = L, the highest proportions of brisket S > L > C and flank S > L = C, and carried more kidney fat (percent liveweight) S > C = L and average rib fat S > C = L. Progeny from Limousin and Charolais cross cows had the highest dressing percentage [Formula: see text] and rib eye area/100 kg carcass wieght L > C > S while those from Limousin cross cows had the highest proportion of long loin and the combined lean cuts (rib, round and long loin) a higher percentage of dissected lean in the round L > C > S and the highest lean-to-bone ratio L > C > S. Progeny from dams of Shorthorn breeding generally had the heaviest carcasses, the greatest carcass weight per day of age, the highest percentage kidney fat and at Brandon the greatest proportions of plate and brisket. Hereford cross dams consistently produced progeny with the highest percentage head H = A > N, hide [Formula: see text], feet H > A = N, percentage bone in the long loin [Formula: see text], round [Formula: see text], and rib [Formula: see text], and the highest percentage lean in the long loin H > N (Brandon) and chuck H > N (Brandon). The progeny from Angus cross dams carried the greatest average rib fat [Formula: see text], had the greatest rib eye area/100 kg carcass weight [Formula: see text], the highest percentage lean in the round [Formula: see text], and the highest lean to bone ratio A > H = N. ABSTRACTA comparison was made of the carcass characteristics of 73 Charolais-sired and 86 Murray Grey-sired cattle slaughtered at about 20 months of age. Six Charolais and 10 Murray Grey sires were used. At a constant slaughter age (597 days) the Charolais-sired calves had significantly heavier pre-slaughter live weight (36 kg) and carcass weight (24 kg) and significantly less fat over the m. longissimus (2·8 mm), but there was no significant difference in killing-out proportion. In the dissected half-carcass, the Charolais-sired calves had significantly more meat (9·3 kg), more bone (3·5 kg) and less fat (1·9 kg). At a constant carcass weight (233 kg), Charolais-sired calves had significantly more meat (1·8 kg) more bone (1·9 kg) and less fat (3·5 kg) in the dissected side. After making allowance for the higher calf mortality from birth to weaning of Charolais-sired calves (0·041), the advantage in carcass weight was reduced to 13 kg. It is concluded that the Charolais breed is superior to the Murray Grey as a terminal sire.

During the spring of 1981, 12 064 hog carcasses were randomly selected from the commercial kill of major abattoirs located within each of the major hog producing regions of Canada, namely the Maritimes, Quebec, Ontario, Manitoba, Saskatchewan and Alberta. Under abattoir conditions, warm carcass weight, maximum backfat thickness at the shoulder and at the loin, minimum backfat thickness over them. gluteus medius and the sum of maximum backfat thickness at the shoulder and loin were recorded for each carcass. Regional differences in the relative frequencies of carcasses in the weight and fat classes were observed. In the eastern provinces (Maritimes, Quebec and Ontario) slightly more than 25% of the sampled carcasses weighed between 81.5 ann 90.5 kg, whereas in the prairie provinces (Manitoba, Saskatchewan and Alberta) this percentage was reduced to 17.3—19.5%. Carcasses less than 72.5 kg represented a higher percentage (28.2–31.4%) in the latter region compared to a range of 16.3–18.3% in the eastern provinces. The data indicated that Manitoba produced proportionally the least of the 'fat carcasses' (fat classes 8–16) and the most of the 'average carcasses' (fat classes 5–7) followed by the Maritimes, Ontario, Quebec, Saskatchewan and Alberta. Despite finding proportionally more carcasses weighing less than 72.5 kg in Alberta and Saskatchewan, the relative frequency of 'fat carcasses' was higher than in any other province or region. The average index as determined under both the 1979 and 1982 grading regulations varied from region to region, with the lowest in Alberta and the highest in Manitoba. In 1984–1985 and 1985–1986 groups of 136 and 127 male calves were used to assess the effects of multiple implants (Ralgro and Steeroid), castration time (early and late) and castration method (surgical and chemical) on growth to weaning and feedlot performance and carcass characteristics. Ralgro increased calf rate of gain to weaning (P < 0.05) and adjusted weaning weight (P < 0.01) but did not affect rate of gain during the feedlot period. Although Ralgro increased (P < 0.001) weight at slaughter, it took longer (P < 0.05) for implanted cattle to reach Canada A1 than unimplanted cattle. Steeroid did not affect rate of gain to weaning but did increase (P < 0.05) adjusted weaning weight. Steeroid increased (P < 0.05) rate of gain relative to unimplanted cattle during the growing period in the feedlot and cattle implanted four times from birth to slaughter gained more (P < 0.05) than cattle implanted twice (birth and weaning). For the entire feedlot period, bulls receiving Steeroid gained faster (P < 0.05) than unimplanted bulls with no difference (P > 0.05) between implant groups (two or four implants). Ralgro implants increased (P < 0.05) carcass weight, rib-eye area and cutability while Steeroid increased (P < 0.05) only carcass weight. However, when rib-eye area was adjusted for carcass weight, the effect of Ralgro was not significant (P > 0.05). Bulls had greater (P < 0.05) shipping weight, carcass weight, rib-eye area, dressing percent and cutability than steers. Age at castration (early or late) had no effect on feedlot performance or carcass traits while method of castration (surgical or chemical) had some effects (P < 0.05) on ADG, liveweight, carcass weight and rib-eye area.
