The study objectives were to test ready-to-eat food from the retail market in the Czech Republic for the presence of L. monocytogenes and, based on typing methods, to investigate probable causes of contamination. A total 2180 samples of ready-to-eat food (meat, dairy, fish, delicatessen and confectionery products and fresh fruit and vegetables) were analysed qualitatively and quantitatively. L. monocytogenes isolates were characterised by serotyping and macrorestriction analysis after digestion with the restriction enzyme AscI. In 2004–2008 L. monocytogenes was most often detected in delicatessen (5.2%), meat (3.4%) and dairy products (1.8%). In the analysed samples, L. monocytogenes was mostly present at counts lower than 102 CFU/g. Only in 2004, higher counts of L. monocytogenes were found in two heat-processed meat products (103 CFU/g). The obtained macrorestriction patterns helped in tracing the source of contamination and routes of the spread of L. monocytogenes in the manufacturing plant and retail market.

The aim of the paper is to evaluate the development of the Czech foreign trade in milk and milk products and specify the typical features and consequences within its territorial and commodity structure using a specific system of indicators intended to show a relevant image on the topic. The analysis covers the period between 1999 and 2015 and are interpreted in the context of changes of the business environment that have occurred in the last two decades, particularly in relation to the Czech Republic’s entry into the European Union. Throughout the studied period, the Czech Republic revealed a positive balance of trade in milk and dairy products, as well as favourable values of TC index (value of coverage of import by export). The dynamics of the territorial structure of export and import is embodied in the overall trade dynamics between the Czech Republic and countries of EU-28. The Czech Republic’s entry into the EU common market, however, led to a change in the trading milk product structure. As a negative is regarded the fact that the structure of Czech export to the EU countries has changed and that is mainly concentrated on basic raw milk or dairy products of the first phase of processing with relatively low added value.

A study was conducted to review on pathogenic bacteria Listeria monocytogenes, the detection and the sequencing gene methods isolated from meat products, compare selected methods that detect the presence of Listeria monocytogenes in selected raw and processed meat products. Results indicate that Listeria monocytogenenes (originally named Bacterium monocytogenes) is a gram-positive, non-sporeforming, highly mobile, rod-type, and facultative anaerobic bacterium species. It can grow under temperatures between -1.5°C to 45°C and at pH range between 4.4 and 9.4, with the optimum pH of 7. Rapid methods (PCR based and VIDAS-LDUO®) detected Listeria monocytogenes faster than the conventional method. It was also gathered that Phenotypic identification and Genotypic identification are two types of confirmation test for Listeria monocytogenes. Listeria monocytogenenes can be found in raw meat and meat product because of environmental contamination, cross contamination or error process.

The paper focuses on the Material Flow Cost Accounting method (hereinafter the “MFCA”). It presents an application of the MFCA within a manufacturing plant of the largest manufacturer of ceramic tiles in the Czech Republic – the company Lasselsberger. It shows the importance of data acquired from the MFCA system as well as their application for an optimization of manufacturing processes for specific conditions of a manufacturing plant of the company.

ABSTRACTListeria monocytogenesis a ubiquitous bacterium that may cause the foodborne illness listeriosis. Only a small amount of data about the population genetic structure of strains isolated from food is available. This study aimed to provide an accurate view of theL. monocytogenesfood strain population in France. From 1999 to 2014, 1,894L. monocytogenesstrains were isolated from food at the French National Reference Laboratory forL. monocytogenesand classified according to the five risk food matrices defined by the European Food Safety Authority (EFSA). A total of 396 strains were selected on the basis of different pulsed-field gel electrophoresis (PFGE) clusters, serotypes, and strain origins and typed by multilocus sequence typing (MLST), and the MLST results were supplemented with MLST data available from Institut Pasteur, representing human and additional food strains from France. The distribution of sequence types (STs) was compared between food and clinical strains on a panel of 675 strains. High congruence between PFGE and MLST was found. Out of 73 PFGE clusters, the two most prevalent corresponded to ST9 and ST121. Using original statistical analysis, we demonstrated that (i) there was not a clear association between ST9 and ST121 and the food matrices, (ii) serotype IIc, ST8, and ST4 were associated with meat products, and (iii) ST13 was associated with dairy products. Of the two major STs, ST121 was the ST that included the fewest clinical strains, which might indicate lower virulence. This observation may be directly relevant for refining risk analysis models for the better management of food safety.IMPORTANCEThis study showed a very useful backward compatibility between PFGE and MLST for surveillance. The results enabled better understanding of the population structure ofL. monocytogenesstrains isolated from food and management of the health risks associated withL. monocytogenesfood strains. Moreover, this work provided an accurate view ofL. monocytogenesstrain populations associated with specific food matrices. We clearly showed that some STs were associated with food matrices, such as meat, meat products, and dairy products. We opened the way to source attribution modeling in order to quantify the relative importance of the main food matrices.

The paper is focused on dairy sector with the emphasis on the development of consumption of milk and dairy products, including cheese, curd and other dairy products, in the last 15 years in the Slovak Republic and in the Czech Republic. The aim of the paper is to identify the level of milk and dairy products consumption, as well as to identify the main determinants affecting the consumption. Paper is also aimed at milk production with emphasis on the main problems that may affect future development on the dairy market. The primary data are obtained by consumer survey and survey aimed focused on producers of milk and dairy products. Based on the results we have identified that the milk and dairy products consumption by Slovak consumers is lower compared to the Czech Republic and the quality and price are considered as the main determinants influencing the consumption. We also found out that milk and dairy products producers are adapting their production to demand, but it is important to point out the barriers related in particular to the introduction of new technologies into production, rising input prices or growing consumer disinterest in the consumption of milk and dairy products.

In this paper, a thermal process for the surface pasteurization of ready-to-eat (RTE) meat products for the reduction of Listeria monocytogenes on such products (turkey bologna, roast beef, corned beef, and ham) is described. The process involves the passage of products through a “tunnel” of heated coils on a stainless steel conveyor belt at various treatment times relevant to the manufacture of processed meat for the surface pasteurization of RTE meat products. Two inoculation procedures, dip and contact inoculation, were examined with the use of a four-strain cocktail of L. monocytogenes prior to heat processing. With the use of radiant heat prepackage surface pasteurization, 1.25 to 3.5-log reductions of L. monocytogenes were achieved with treatment times of 60 to 120 s and air temperatures of 475 to 750°F (246 to 399°C) for these various RTE meats. Reduction levels differed depending on the type of inoculation method used, the type of product used, the treatment temperature, and the treatment time. Prepackage pasteurization (60 s) was also combined with postpackage submerged water pasteurization for formed ham (60 or 90 s), turkey bologna (45 or 60 s), and roast beef (60 or 90 s), resulting in reductions of 3.2 to 3.9, 2.7 to 4.3, and 2.0 to 3.75 log cycles, respectively. These findings demonstrate that prepackage pasteurization, either alone or in combination with postpackage pasteurization, is an effective tool for controlling L. monocytogenes surface contamination that may result from in-house handling.

In the past ten years, meat and meat products consumption has changed dramatically. It has been caused by price and non-price factors. This article gives a brief recapitulation of the development of the consumption of meat and meat products and identifies the key factors which, in the past ten years, have had a major impact on this development. This article presents results of the secondary data analysis and the results of an inquiry into meat and meat products consumer behaviour carried out in the late 2004.
