Berries are grown worldwide with the most consumed berries being blackberries (Rubus spp.), blueberries (Vaccinium corymbosum), red raspberries (Rubus idaeus) and strawberries (Fragaria spp.). Berries are either consumed fresh, frozen, or processed into wines, juices, and jams. In recent times, researchers have focused their attention on berries due to their abundance in phenolic compounds. The current study aimed to evaluate the phenolic content and their antioxidant potential followed by characterization and quantification using LC-ESI-QTOF-MS/MS and HPLC-PDA. Blueberries were highest in TPC (2.93 ± 0.07 mg GAE/gf.w.) and TFC (70.31 ± 1.21 µg QE/gf.w.), whereas the blackberries had the highest content in TTC (11.32 ± 0.13 mg CE/gf.w.). Blueberries had the highest radical scavenging capacities for the DPPH (1.69 ± 0.09 mg AAE/gf.w.), FRAP (367.43 ± 3.09 µg AAE/gf.w.), TAC (1.47 ± 0.20 mg AAE/gf.w.) and ABTS was highest in strawberries (3.67 ± 0.14 mg AAE/gf.w.). LC-ESI-QTOF-MS/MS study identified a total of 65 compounds including 42 compounds in strawberries, 30 compounds in raspberries, 28 compounds in blueberries and 21 compounds in blackberries. The HPLC-PDA quantification observed phenolic acid (p-hydroxybenzoic) and flavonoid (quercetin-3-rhamnoside) higher in blueberries compared to other berries. Our study showed the presence of phenolic acids and provides information to be utilized as an ingredient in food, pharmaceutical and nutraceutical industries.

Many imported honeys distributed on the Polish market compete with local products mainly by lower price, which can correspond to lower quality and widespread adulteration. The aim of the study was to compare honey samples (11 imported honey blends and 5 local honeys) based on their antioxidant activity (measured by DPPH, FRAP, and total phenolic content), protein profile obtained by native PAGE, soluble protein content, diastase, and acid phosphatase activities identified by zymography. These indicators were correlated with standard quality parameters (water, HMF, pH, free acidity, and electrical conductivity). It was found that raw local Polish honeys show higher antioxidant and enzymatic activity, as well as being more abundant in soluble protein. With the use of principal component analysis (PCA) and stepwise linear discriminant analysis (LDA) protein content and diastase number were found to be significant (p < 0.05) among all tested parameters to differentiate imported honey from raw local honeys.

Blueberries are one of the most popular and widely consumed berries, they are usually consumed fresh, dried or processed into juice. During the production of juices large quantities of berry press residues are generated, which are an industrial by-product and they accumulate as food waste. Optimal management of this industrial fruit by-product could help in utilising berry press residues with the purpose to valorise and add economic value. Blueberry press residues consist of skins and seeds which hold valuable compounds with antioxidant activity –polyphenolics. To facilitate the objective of bioactive compound release, the cell walls must rupture. Pectolytic enzymes could be used to degrade the structural polysaccharides of the berry skin cell wall, thus releasing the contents of the cells into the extraction medium. The physical characteristics of berry skins allows the use of pectolytic enzymes for the disruption of cells; however, the effects of enzymatic hydrolysis could be further improved using ultrasound. In this study the combined effects of enzyme and ultrasonic treatments were evaluated and optimised using the Response Surface Methodology approach in order to increase the release of polyphenolic compounds (especially anthocyanins). The optimised method was further tested to evaluate the application potential of enzyme and ultrasound treatment to prepare blueberry or lingonberry juice with increased antioxidant activity and more vibrant colour. The obtained results provide an optional method of berry press residue valorisation to produce higher quality juice or extract bioactive compounds from this type of food-waste.

The objective of this study was to apply a HPLC methodology for qualitative and quantitative analysis of the six anthocyanidins present in fruits and to analyze the anthocyanin and anthocyanidin content of blueberries cultivated in Southern Brazil. The samples used belong to highbush blueberries (Vaccinium corymbosum) cultivars. Total anthocyanin content was determined by the pH differential method and an HPLC gradient elution system with C18 column and UV-Vis detection at 520 nm were used for separation and quantification of the anthocyanidins. Total anthocyanin content was of 128 ± 3 mg per 100 g of fresh pulp. Blueberry pulp presented 55 % of delphinidin, 8 % of cyanidin, 3 % of peonidin and 34 % of malvidin. Pelargonidin was not identified in the sample and petunidin was below the limits of quantification. The results were similar to those reported in studies using North American and European blueberries.
