The effects of cultivar, harvest date, and production year on the soluble solids and antioxidant phytochemical levels of 22 strawberry (Fragaria ×ananassa Duch.) genotypes grown in a winter annual hill (raised bed) production system were investigated. Fruit harvested in Jan. 2003 and 2004 were characterized by low polyphenolic content, but high concentrations of soluble solids and ascorbic acid; whereas fruit harvested in Feb. 2003 and 2004 generally had elevated polyphenolic concentrations, but lower levels of soluble solids and ascorbic acid. Annual variation in soluble solids and phytochemical composition was also observed among nine strawberry genotypes, which was likely attributable to variations in solar radiation and air temperature. `Earlibrite' was among the highest for soluble solids concentration on three of the four harvest dates, while `Carmine' was noted for its high phytochemical concentrations across harvest dates and years. The breeder selection `FL 99-117' emerged as a promising selection in terms of producing fruit with high concentrations of soluble solids and antioxidant phytochemicals.

Kiwifruit is very perishable especially at 20 °C. The quality of kiwifruit with 1-MCP treatment stored at 20 °C in modified packages was investigated. Three different polyolefin films, including 0.03mm thickness polyethylene (PE), 0.03mm and 0.05mm thickness poly (vinyl chloride) (PVC) films, were used as packaging films. Kiwifruit were fumigated with 1-MCP to delay ripeness and then packaged with the three films and control (air). O2 and CO2 concentrations in the packages, flesh firmness, soluble solids concentration (SSC), titratable acidity (TA) and ascorbic acid were measured. MAP treatments could postpone the increase of TTS, inhibit the reduction of TA, and avoid the decrease of flesh firmness. Kiwifruit packaged in 0.05mm PVC obtained 33% TA more than control fruit and approximate 25 % retention of initial firmness. However, MAP didn’t maintain more ascorbic acid content of kiwifruit. In conclusion, MAP using polyolefin films combination 1-MCP treatment, especially 0.05mm PVC, might be more effective for preserving the quality of kiwifruit.

Supplemental calcium supplied foliariy as Ca glutarate, soil incorporated as gypsum, fertigated as CaNO3, in 3-way combination, or none at all, had no effect on fruit firmness, as measured by shear, reduced fruit decay by as much as 23%. over controls (1986-1988), and generally improved fruit Ca levels only in the combination treatment of 904 kg/ha. Fruit raw product quality (pulp pH, acidity, soluble solids concentration, and Hunter color values) were not consistently affected, although there were significant interactions between cvs Fern and Cardinal, harvest dates, holding time, and years. Supplemental Ca reduced fruit size, but tended to increase yield. In 1988, individual fruits were partitioned into upper/lower, dermal/interior, and upper/lower seeds (6 parts), Ca was the third most abundant mineral nutrient in receptacle tissue, but most abundant in seeds. Highest Ca levels were found (descendingly) in the seed, dermal, and interior pulp tissue, Ca was higher in the upper (stem) end. Differences in fruit Ca levels between cvs were found in the seeds and not the receptacle. No clear relationship was observed between fruit firmness, decay, and Ca level.

Several intermittent 13C warming treatments were applied to `Primofiori' lemons (Citrus limon Burn) stored at 2 or SC. Fruit stored at 13C were treated with 10%, 2090, or 30% CO2 for 24 hours at weekly intervals. Reduction in decay and physiological disorders was best with two cycles of 2 weeks at 2C and 2 weeks at 13C and relative humidity >95 %. Under this storage condition, soluble solids concentration, pH, titratable acidity, and reducing sugars did not change relative to values at harvest, but the concentration of ascorbic acid increased and that of nonreducing sugars decreased in relation to harvest values. Carbon dioxide treatments did not prevent the development of alternaria (Alternaria citri Ell. & Pierce) rot and red blotch disorder, but effectively prevented the development of membranosis, rind pitting, and oleocellosis.

Clingstone peach [Prunus persica (L.) Batsch cv. Allgold] trees were fertilized once with 45 or 90 kg N/ha at budbreak or twice with 22.5 or 45 kg N/ha at budbreak and after harvest. A nonfertilized control was included. Fruits from all treatments were made into puree, and objective and subjective qualities were evaluated. Puree from the N treatments and the control did not show significant differences in Color Difference Meter (CDM) `L' and hue angle, pH, titratable acidity (TA), soluble solids concentration (SSC), SSC: TA ratio, viscosity, ascorbic acid, Ca, K, phenolic and nitrates concentration. Puree from the control and 22.5 kg N/ha applied twice had significantly lower CDM `a', `b', and chroma values than from the other treatments. The split applications of N significantly reduced levels of Ca and ascorbic acid. N rate and number of applications interacted for `a' and K. When N was applied twice at 22.5 kg·ha-1, `a' and K decreased, but this response was absent when N was applied twice at 45 kg·ha-1. Puree from the nonfertilized control was rated lower by panelists for sensory quality than that from the fertilized trees. Peach puree from trees fertilized once with 45 kg N/ha at budbreak had the best overall sensory quality.

A series of pre- and post-harvest experiments were conducted to enhance apple tree productivity and improve fruit quality and storage life by altering production system and post-harvest treatments in an organic orchard. Increasing the light distribution and carbohydrate uptake (summer pruning and covering the orchard ground with reflective textile) improved tree productivity, fruit color, content of anthocyanin, ascorbic acid, and total phenolic compounds and reduced incidence of fungal storage diseases. Optimal harvesting time could be determined from the starch index in some cultivars, whereas the Streif index [firmness (soluble solids concentration × starch hydrolysis score)−1] was more accurate for other cultivars. In yet others, titratable acidity and flesh firmness also produced important information. By contrast, soluble solids concentration and skin color are not useful as a result of their sensitivity to weather conditions and light intensity. Post-harvest fruit treatment with hot water (46 °C for 120 seconds) decreased fungal decay during storage in two cultivars, whereas spraying the fruit with 10% ethanol decreased fungal decay in all investigated cultivars. Optimization of storage conditions [cultivar-specific controlled atmosphere (CA) and ultra-low oxygen (ULO) storage procedures] maintained fruit quality and reduced the amount of fungal decay.

Tomato (Lycopersicon esculentum Mill.) is among the most widely consumed vegetables worldwide and an important source of certain antioxidants (AO) including lycopene, β-carotene, and vitamin C. Improvement of tomato for content of AO and overall antioxidant activity (AOA) could potentially benefit human health in many countries. We evaluated 50 L. esculentum and three L. pimpinellifolium (L.) Mill. entries for contents of lycopene, β-carotene, ascorbic acid, total phenolics, and two assays for antioxidant activity [anti-radical power (ARP) and inhibition of lipid peroxidation (ILP)] for 2 years during the same period in south Taiwan. We detected high levels of genetic diversity for the AO and AOA measured in this study. Group means of the L. pimpinellifolium entries were significantly higher than L. esculentum group means for ARP, ILP, lycopene, ascorbic acid, phenolics, and soluble solids concentration, suggesting that introgression of alleles from L. pimpinellifolium may have potential to improve cultivated tomato for these traits. Ranking of entries for ILP and ARP were consistent between years, particularly for those entries with the highest means and these assays could be adopted by tomato breeders. Results from ILP and ARP assays were highly correlated (r = 0.82**) and it would be unnecessary to use both assays for tomato. Lycopene, β-carotene, ascorbic acid, soluble solids, and total phenolics were all positively correlated with ARP. Among AO, total phenolics content was most closely associated with ARP (r = 0.90**) and ILP (r = 0.83**); this suggests that phenolics make a major contribution to AOA in tomato fruit. Fruit size was negatively correlated with ARP (r = -0.74**) and ILP (r = -0.71**), indicating that combining large fruit size and high AOA will be challenging.

Research is needed to better understand the influence of cell volume and fertility on watermelon transplant size and field performance in order to determine the most economic production practices. `Jubilee' watermelon transplants were grown using a 4 x 4 factorial experimental design consisting of 4 cell volumes (30.7, 65.5, 147.5, and 349.6 cm3) and 4 fertility rates (0, 1/4, 1/2, and full-strength Hoagland's solution). Transplant shoot dry weight significantly increased as cell volume and fertility increased. Increasing cell volume linearly increased watermelon number/ha and tons/ha for early and total harvest in 1995. The average weight per watermelon significantly increased for early-harvested fruit but not for total harvest as cell volume increased in 1995. Soluble solids concentration linearly increased with increasing cell volume for early and total harvests in 1995. Cell volume had no significant influence on the harvest parameters measured in 1997. In 1995, increasing fertility linearly increased watermelon number/ha and tons/ha for early harvests. Increasing fertility increased the soluble solids concentration linearly for early-harvested watermelons in 1997 but not in 1995. Fertility rate had no significant influence on any of the other harvest parameters measured in 1995 and 1997. The growing conditions and disease pressure in 1997 reduced melons/ha, yield, and soluble solids content when compared to 1995 values. The half-strength Hoagland's solution produced the greatest number of watermelons/ha, tons/ha, and the highest soluble solids concentration in 1995 and 1997. Pretransplant nutritional conditioning had no significant effect on total `Jubilee' watermelon production in Louisiana for 1995 and 1997.

Commercially grown honey dew fruit [Cucumis melo (Inodorus group)] typically are harvested before abscission because fruit cut unripe have a longer storage life than fully ripe fruit. However, because fully ripe fruit contain higher concentrations of soluble solids (predominantly as sugars), an attribute that increases their preference among consumers, methods are being explored to extend the storage life of fully ripe fruit. In this study, fully abscised honey dew fruit were evaluated for tissue attributes and consumer preference following postharvest dipping in either chelated or nonchelated calcium (Ca) solutions. Calcium sources were an amino acid-chelated Ca, ethylene-diamine tetraacetic acid (EDTA)-chelated Ca, or calcium chloride (CaCl2), with each provided at three different rates. Fruit were evaluated at harvest, and after 14 or 22 days commercial storage. Evaluations were peel surface changes (color and disorders), hypodermal-mesocarp tissue Ca concentration, flesh firmness, soluble solids concentration, and consumer preference of the edible flesh. Peel color became yellowed and lighter during storage for all fruit, with higher Ca rates resulting in more intensely yellowed fruit. Hypodermal-mesocarp tissue Ca concentration was 0.90 mg·g-1 of fresh weight (900 ppm) at harvest, and declined in all fruit by 22 days storage. Peel disorders (disease and spotting) were none to slight for all fruit by 14 days storage, but by 22 days storage disease incidence ranged from none to severe, depending on the Ca source and rate. Fruit firmness declined in all fruit throughout storage, with the smallest declines measured in fruit treated with the amino acid-chelated Ca. Soluble solids concentration of fully ripe fruit was 12.3% at harvest, and showed either no decline or slight declines with storage among the treatments. Consumer preference was highest for freshly harvested fruit, but fruit were desirable even after 22 days storage across all treatments. Postharvest application of Ca at ≤0.16 m Ca in an amino acid-chelated form, versus EDTA-chelated Ca or CaCl2, slowed honey dew melon senescence so that after 22 days of commercial and retail storage the fruit were of high marketable quality, and there was no detrimental effect on consumer preference for the edible flesh.

The benefits conferred by a prestorage heat treatment on poststorage quality of apples (Malus domestics Borkh.) were measured on `Anna', a non-storing early cultivar, and `Granny Smith', a long-storing late cultivar. The major benefit was a decrease in rate of apple softening, both during OC storage and during simulated shelf life at 20C. Soluble solids concentration was not affected by heat treatment, but titratable acidity was reduced. Ethylene production after heat treatment and storage was similar to or higher than that of control apples, but respiration was lower. The optimum temperature and time combination for prestorage treatment of both cultivars was 4 days at 38C.
