Fatty acid composition in local and international food products available in the Maldives

Background: Consumption of food high in saturated and trans fatty acids is a risk factor associated with non-communicable diseases such as overweight, obesity and cardiovascular diseases. Till to-date, no study has been carried out to analyze fatty acid contents in the food products available in the Maldives markets. Aims and objectives: The aim of this study was to assess the fatty acid contents in the food products available in the Maldives supermarkets that are both locally produced and imported into the country. The objective of the study was to collect local and imported food products from the three island markets of the Maldives (Hdh Kulhudhufuish, Naviyani Fuvahmulah and Male’), and analyze the collected food samples for fatty acid composition. Methods: A purposive sampling was used to collect fatty food products from the markets of three major islands of the Maldives, Male’, Kulhudhufushi and Fuvahmulah. Total 180 samples were collected and analysed in an accredited laboratory situated in Sri-Lanka, SGS Lanka Laboratory Pvt Ltd. Results: The results revealed that 92% of the analyzed products did not detect trans fat and only 7% of the product contained trans fat in the range between <1 to 1.64%. The lowest and highest saturated fatty acids found were in Gulab jamun (0.18 ± 0.03%) and GRB Ghee (62.26 ± 0.68%), respectively. The total fat, mono unsaturated fatty acids, and polyunsaturated fatty acids ranged between 0.45 ± 0.07% to 99.9 ± 0.00%, 0.075 ± 0.01% to 73.58 ± 1.08%, and 0.02 ± 0% to 57.04 ± 0.16%, respectively. Conclusion: The food products available in the Maldives supermarkets contained polyunsaturated fatty acids and monounsaturated fatty acids, which are healthy for the human body. However, the food products also contained saturated fatty acids and trans fats, which may contribute to non-communicable diseases in excess consumption. However, the finding of this study did not provide the total intake of trans fat and saturated fatty acids by individuals. Thus, it is recommended to conduct a dietary survey to assess the fatty acid intake level of the population and to develop and regulate the dietary guidelines based on the dietary survey findings. Based on the findings of this study, it is suggested to conduct awareness programs on the importance of reducing the consumption of trans fats and saturated fatty acids.

Age-related alterations of fatty acid composition in liver and brain of AKR mice was investigated. The effect of savory essential oil (Satureja hortensis L.), added with drinking water on fatty acid composition in these organs and the processes of lipid peroxidation in erythrocytes were estimated. It was found that during aging the percentage of saturated fatty acids and polyunsaturated fatty acids decreased while monounsaturated fatty acids increased. The development of leukemia was accompanied by the increase of saturated and polyunsaturated fatty acids percentage and a decrease of monounsaturated fatty acids amount. In the liver aging caused the increase in the percentage of saturated fatty acids, the decrease of monounsaturated fatty acids, while the amount of polyunsaturated fatty acids was not changed. Leukemia (after 8 month) was accompanied by the increase of percentage of monounsaturated fatty acids and the decrease in the amount of oleinic and docosohexaenic acids. The intake of savory essential oil was accompanied by intensification of polyunsaturated fatty acids synthesis in mice liver and reduction of lipid peroxidation products content.

While a wealth of data on the fatty acid composition of mature human milk has been published, limited information is available on the quantities of individual fatty acids supplied to the suckling infant with maternal milk, through the whole first year of life. Our aim was to qualitatively and quantitatively evaluate the fatty acid composition of human milk from Italian mothers, throughout extended lactation with particular emphasis on the long-chain polyunsaturated fatty acids. We have thus measured the total fat content and the concentrations of major fatty acids by quantitative GLC in pooled breast hindmilk collected from all feedings over 24 h at colostrum, 1, 3, 6, 9 and 12 months in ten mothers recruited after delivery of full-term infants. Total saturated fatty acids progressively increase and total monounsaturated progressively decrease as percentage levels, while among long-chain polyunsaturated fatty acids, percentages of arachidonic acid and docosahexaenoic acid decrease from colostrum up to the third month. Hindmilk total lipids (mg/dl) rise more than twofold up to 3 months, and then remain stable. The amounts (mg/dl) of linoleic acid and α-linolenic acid progressively increase, following the trend of total fat, while arachidonic and docosahexaenoic concentrations (mg/dl) remain stable throughout the whole nursing period. Assessment of the intakes per kg body weight shows different trends for the individual major long-chain polyunsaturated fatty acids supplied to the infant from hindmilk during exclusive breast-feeding (3 months). This information may be useful for the evaluation of infant intakes during extended lactation.

Recommendations to improve the UK diet suggest an increase in the ratio of polyunsaturated to saturated fatty acids (P:S ratio) and a higher consumption of n-3 polyunsaturated fatty acids (PUFA). Ruminant meats have a poor P:S ratio, approximately 0.1 compared to the recommendation of 0.4-1.0 for the whole diet. However, the ratio of C18:2 n-6/C18:3 n-3 (the n-6:n-3) is well within the recommended value of <4.0 at approximately 2 and ruminant muscle also supplies longer-chain n-3 PUFA. By feeding lipid in a formaldehyde cross-linked protein matrix, rumen biohydrogenation can be avoided and the tissue PUFA level increased but with potential effects on oxidative shelf-life, colour and flavour of the meat. This trial investigated the fatty acid composition and quality of meat produced by feeding a protected lipid supplement (PLS).

In this paper, the fatty acid composition of turkey meat sucuk (soudjuck), salami, and sausages were determined and compared with each other. The fatty acids methyl esters of each product were identified by capillary gas chromatography. Most of the fatty acids in sucuk (soudjuck) samples were monosaturated; however in salami and sausages samples most of were mono and di-unsaturated. Saturated fatty acids in sucuk (soudjuck) samples followed, having the palmitic and stearic acids as their major components and had a range of 229.7-385.2 g kg-1 and 87.6-215.9 g kg-1. In salami and sausages samples, unsaturated fatty acids, the oleic and linoleic acids were the major components and had a range of 170.0-542.0 g kg-1 and 151.5-353.0 g kg-1. PUFA (polyunsaturated fatty acids) were found for sausages in the highest amount with linoleic acids concentration. Turkey meat salami and sausages presented a higher content of unsaturated and polyunsaturated fatty acids than turkey meat sucuk (soudjuck).

The effect of administration of retinol (100,000 I.U. daily for 10 days) on the fatty acid composition of brain in rats has been studied. The administration of large doses of retinol to rats did not significantly affect the saturated fatty acids of brain, i.e. C 16:0, C 18:0, C 20:0, C 21:0, C 23:0, and C 24:0 as compared with untreated control. A significant increase in the concentration of brain oleic acid was found in hypervitaminotic A rats (27.9 ± 1.74%) as compared with the untreated controls (22.0 ± 2.70%). The concentrations of polyunsaturated fatty acids, i.e. C 20:4 and 22:6 were significantly reduced in hypervitaminotic A rats as compared with untreated controls.

Status of Mytilus galloprovincialis populations in the natural habitat is known to directly depend on development of Black Sea mussel at all its stages, including initial stages of larval ontogenesis, which are very sensitive to environmental pollution. Organic pollutants adversely affect mussel larvae by inhibiting their growth and development. Patterns of mussel reproduction are well studied, which makes it possible to obtain larvae from artificially fertilized eggs of this mollusc species in controlled laboratory conditions. In this work, the fatty acid composition of M. galloprovincialis larvae at the trochophore stage on the 3rd day in the control experiment and under artificial contamination with polychlorinated biphenyls (PCBs) in different concentrations is studied for the first time. The fatty acid composition of total lipids in the biomass of larvae obtained on the 3rd day of the experiment was studied by means of gas chromatography – mass spectrometry. Totally, 14 fatty acids were identified in the samples; 59 % of them were saturated fatty acids, 24 % were monounsaturated fatty acids, and 17 % were polyunsaturated fatty acids. Statistical analysis was performed using Statistical Toolbox of MATLAB software (version 8.2). The totals of monounsaturated and polyunsaturated fatty acids significantly differed in lipids of M. galloprovincialis trochophores in the experiment with different PCB concentrations. The totals of saturated fatty acids did not significantly differ. The major saturated fatty acids in all mussel trochophores studied were palmitic (C16:0) and stearic (C18:0) acids. Their concentration did not significantly change under the exposure to PCBs. The main monounsaturated fatty acids were oleic (C18:1ω9), palmitoleic (C16:1ω7), and vaccenic (C18:1ω7) acids. The fraction of monounsaturated fatty acids was twice as low when exposed to the PCB concentrations 0.1 and 1.0 μg·L−1. However, when the PCB concentration was 10 μg·L−1, the total of these acids did not differ from the control. Among polyunsaturated fatty acids having biological essentiality, it was possible to identify arachidonic (C20:4ω6), eicosapentaenoic (C20:5ω3), and docosahexaenoic (C22:6ω3) acids. The total fraction of omega-3 and omega-6 acids in mussel larvae in the control did not exceed 12.8 %. With an increase of the PCB concentration in the growth medium 0.1 to 1.0 μg·L−1, the fraction of polyunsaturated fatty acids increased 2.5-fold. At the PCB concentration 10 μg·L−1 and in the sample with pure acetone added, the total fraction of polyunsaturated fatty acids was comparable with that in the control. The results of the study indicate that fatty acid response is the highest when the medium is exposed to the PCB concentrations ranging 0.1 to 1.0 μg·L−1. At the PCB concentrations equal to 10 μg·L−1 or higher, biochemical processes in larvae seem to slow down. The results of this study will contribute to a better understanding of biochemical rearrangements that allow molluscs at larval developmental stages to adapt to environmental pollution with organic xenobiotics.

The pulp of Dacryodes edulis is eaten raw, cooked or roasted by West and central Africans. The aim of this study was to determine the fatty acid composition, type, variation and distribution among different accessions of D. edulis purchased from different locations of Eastern Nigeria, using GC-MS data. The results showed that D.edulis is rich in ω-3,6,9 unsaturated fatty acids. Saturated fatty acids namely, pentadecanoic, tetradecanoic (myristic), tridecanoic, hexadecanoic (palmitic), undecanoic and octadecanoic (stearic) acids were common to all accessions. Unsaturated fatty acids identified in the four accessions included, Oleic, linoleic, linolenic, linoelaidic and several other polyunsaturated fatty acids including brassidic and vacennic acids, and 19,19-Dimethyl-Eicosa-8,11-dienoic acid (6.83±0.37%) a derivative of oleic acid which was found only in Nsukka samples. Two novel polyunsaturated fatty acids namely; Methyl,9,12-Heptadecadienoic acid and 2,6,10,14-Hexadecatetraenoic acid were identified in the present study. The ratio of saturation to unsaturation was calculated to be approximately 1:2. The concentration of TSFAs fell in the range of 27.07±1.75-39.87±1.72%, while TMUFAs was 3.14±0.22-10.77±0.55%, and TPUFAs was 46.81±1.22-58.71±2.33% respectively. We concluded that, the presence of polyunsaturated fatty acids in D. edulis may provide cardio-protective benefits in terms of human nutrition and could be substitutes for olive oil in healthy normo-cholesterolemic human diets. We further concluded that the differences in fatty acid composition, distribution, variation and concentration between the locations studied may be affected not only by their biogenetic origin but also by soil type and climatic conditions.

Forages are a rich source of beneficialn-3PUFAs (?-linolenic acid; C18:3n-3) and may be a useful means of modifying the fatty acid composition of ruminant products. Altering the fatty acid composition of ruminant products is difficult due to the biohydrogenation action of rumen micro-organisms, which hydrogenate the PUFAs into monounsaturated and saturated fatty acids. Little information is available on biohydrogenation of PUFAs in forages hence this study investigated this in steers fed on perennial ryegrass, red or white clover silages or combinations thereof.

The hypothesis that hepatic lipase mediates the differential hepatic uptake of chylomicron remnants of different fatty acid composition, demonstrated in previous work from our laboratory, was tested by investigating the effect of antibodies to the enzyme on the uptake of remnants enriched with saturated or n-3 polyunsaturated fatty acids by the perfused rat liver. After perfusion of rat livers with polyclonal antibodies to rat hepatic lipase raised in rabbits or with rabbit non-immune serum for 15 min, [3H]oleate-labelled chylomicron remnants, derived from chylomicrons of rats given a bolus of either palm (rich in saturated fatty acids) oil or fish (rich in n-3 polyunsaturated fatty acids) oil, were added. The disappearance of radioactivity from the perfusate during 120 min and its recovery in the liver at the end of the experiments were then measured. Although the rabbit anti-rat hepatic lipase antiserum was shown to inhibit hepatic lipase activity by up to 90 %, and to bind extensively to hepatic sinusoidal surfaces when added to the perfusate, radioactivity from remnants of chylomicrons from rats given a bolus of fish oil as compared with palm oil disappeared from the perfusate and appeared in the liver more rapidly in the presence both the antiserum and the non-immune serum, and the differences between the uptake of the two types of remnants were similar. We conclude, therefore, that differential interaction with hepatic lipase is not responsible for the differences in the rate of removal of chylomicron remnants of different fatty acid composition from the blood.

The information on the structure of fatty acids is crucial for the production and promotion of goat and sheep milk in the manufacture of dairy products. The fatty-acid profile of milk fat can affect the nutritional value and market value of dairy products. The purpose of the research is to study the properties of fatty-acid composition of goat and sheep milk and its transformation in the process of yogurt production. The study of fatty-acid composition was performed using the method of gas chromatography. The milk of goats of Zaanen breed and sheep of North Caucasian breed, as well as yogurt produced from a mixture of goat and sheep milk in a ratio of 1:1 have become the objects of the study. It was found that goat’s milk contains 12% less saturated fatty acids than sheep’s milk. Oleic, stearic and palmitic acids are the main fatty acids found in the fat phase of milk and yogurt production. Changes in the concentration of individual fatty acids during milk processing and in the period of yogurt storage were noted. As a result of maturation and seven-day storage, the amount of saturated fatty acids in yogurt increased by 5% compared to the original milk mixture. The content of polyunsaturated fatty acids in yogurt decreased by 19.27 %. The highest ratio value of hypocholesterolemic and hypercholesterolemic fatty acids was noted in goat milk. It is proved that goat milk is characterized by the most acceptable fatty acid composition in terms of healthy nutrition and prevention of atherosclerosis and thrombosis. A tendency to reduce the amount of monounsaturated and polyunsaturated fatty acids, with a simultaneous increase in the content of saturated fatty acids is noted in the process of yogurt production and storage. It was found that the production of yogurt with the use of goat’s milk in the mixture allows reducing the values of atherogenicity and thrombogenicity indices. The results of the study provide an information basis for the production of qualitatively new fermented milk drinks with a fatty-acid profile favorable for human health.
