Introduction: Food insecurity (FI), defined as “limited or uncertain availability of nutritionally adequate and safe foods, or limited or uncertain ability to acquire acceptable foods in socially acceptable ways,” affects over 12% of US households. Embarrassment persists for patients with FI, and due to the potential consequences of FI, including increased utilization of the health care system, it is important to find causes and potential interventions for FI. The purpose of this project was to better understand FI from the patient perspective, including contributing factors, perceived health effects, and helpful interventions. Methods: Interviews (N=21) were conducted with suburban community residency clinic patients who screened positive for FI in the last 12 months. Six open-ended questions and a ranking question examined contributors to FI, effects of FI, perceptions of clinic intervention helpfulness, and ideas for novel interventions. Results: Patients identified lack of income (85.7%) as the primary issue they faced. Secondary identified issues were lack of transportation (38.1%), too much debt (33.3%), and food assistance programs not providing for all needs (33.3%). FI effects on patients’ health included difficulty adhering to specialized diets and the need to modify eating patterns due to lack of food. Surprisingly, 28.6% perceived no FI related-health effects. Patients felt that the most valuable clinic intervention was provision of urgent need food boxes, followed by FI screening and referrals to community food resources.  Conclusions: Frequent FI screening is in itself useful to patients. Screening paired with community food resource referrals and urgent-need food boxes are the most helpful interventions according to patients.

Food insecurity is a leading public-health challenge in the United States today. This is primarily due to the magnitude of the problem—about 50 million persons are food insecure—and the serious negative health and other outcomes associated with being food insecure. This chapter first defines the measure used to delineate whether a household is food insecure. The measure, the Core Food Security Module (CFSM), is based on 18 questions about a household’s food situation. From the responses, a household is defined as food secure, low food secure, or very low food secure, with the latter two categories defined as “food insecure.” I next discuss the extent of food insecurity in the United States across various dimensions, the key determinants of food insecurity, and the multiple negative consequences associated with food insecurity. Two of the key policy tools used to address food insecurity are the Supplemental Nutrition Assistance Program (formerly known as the Food Stamp Program) and the National School Lunch Program. A brief overview and definition of the eligibility criteria for each program is provided along with a discussion of their respective impacts on food insecurity. This chapter concludes with four major current challenges pertaining to food insecurity and food assistance programs.

Background and Significance: Food insecurity is an emerging issue among college students. It impacts the lives of many university students due to financial reasons. There is limited information about factors that affect food insecurity in that population. This cross-sectional study aimed to examine factors associated with food insecurity and food assistance program participation among college students. Methods: Food security status was determined using the short form of the USDA’s Food Security Survey Module. Results: Out of 116 students, 50 students (43.1%) were food insecure. Food insecurity was inversely associated with self-reported cumulative grade point averages. Only 24% of food insecure students participated in food assistance programs. Students who were involved in campus activities were significantly more likely to participate in food assistance programs. University-level policies and programs that help students combat food insecurity need to be considered. Conclusion: The inverse association between food insecurity and academic success indicates the importance of addressing food insecurity issues to foster their academic and professional success among university students. More research on strategies for promoting food assistance programs to college students is warranted. © 2018 Californian Journal of Health Promotion. All rights reserved.

An estimated 5.3 million seniors in the United States are currently food insecure (Ziliak & Gunderson, 2020). Over the next few decades, these senior populations are projected to increase dramatically, which will only exacerbate this issue (Mather & Kilduff, 2020). Community giving gardens are an emerging strategy to increase food access and offer a solution to fight food insecurity locally (Chicago Community Gardeners Associa­tion, 2014; Furness & Gallaher 2018; Sutphen, 2018). This research seeks to answer questions related to rural, senior food insecurity through a case study of a long-term community giving garden project in Orono, Maine. Based on survey data and personal interviews, this study analyzes senior participation in the Orono Community Garden (OCG) program, the impact on participants’ food security status, and senior participants’ perceptions of the experience. The results indicate that the OCG program functioned to increase food access by providing fresh food deliveries directly to senior households in need, alongside a constellation of local food assistance programs located in Orono. Participants also viewed the OCG program as a source of destigmatized and socially acceptable food access, in contrast to other food assistance programs. Community giving gardens, like the OCG program, can be an effective tool to combat senior food insecurity by providing nutritionally adequate, destigmatized food access while building local food economies.
