Enzyme supplementation in diets based on corn and soybean meal can improve the productive performance of broilers. Thus, we aimed to evaluate the effect of the inclusion of different levels of an enzyme complex consisting of phytase, protease, xylanase, ?-glucanase, cellulase, amylase, and pectinase, for diets based on corn and soybean meal, on the parameters of carcass yield and meat quality of broilers. Six hundred broiler chicks were used, and the animals were females with one day of age, from the Cobb 500 strain, and distributed in a completely randomized design, with five levels of inclusion of the enzyme complex (0, 100, 200, 300 and 400), and six repetitions, with twenty animals each. The carcass yield and meat quality were evaluated at 35 and 42 days of age. We evaluated the characteristics of weight loss by cooking (WLC), shear force (SF), water holding capacity (WHC), pH, lightness (L*) and color (a* and b*). The parameters of performance, carcass yield and carcass parts, and meat quality were not affected by the enzyme supplementation of diets fed to broiler chickens (P >0.05), except for the performance characteristics of the breast and the wings at 42 days of age (P < 0.05).

SUMMARY The aimed of the study was to evaluate the effect of the inclusion of different levels of an enzyme complex consisting of phytase, protease, xylanase, β-glucanase, cellulase, amylase, and pectinase on the parameters of performance, carcass yield and meat quality of broilers. Six hundred broiler chicks were used, and the animals were females with one day of age, from the Cobb 500 strain, and distributed in a completely randomized design, with five levels of inclusion of the enzyme complex (0, 100, 200, 300 and 400g/ton), and six repetitions, with twenty animals each. The weight gain, feed conversion ratio, feed intake and production viability were assessed in stages between 1 to 21, 1 to 35 and 1 to 42 days of age. The carcass yield and meat quality were evaluated at 35 and 42 days of age. We evaluated the characteristics of weight loss by cooking, shear force, water holding capacity, pH, lightness and color. The parameters of performance, carcass yield and carcass parts, and meat quality were not affected by the enzyme supplementation of diets fed to broiler chickens (P>0.05), except for the performance characteristics of the breast and the wings at 42 days of age (P<0.05).

The objective of this study was to evaluate the inclusion of dry residue of cassava (DRC) with or without supplementation of carbohydrases on performance, carcass yield, cuts and organs, blood parameters and meat quality of broiler chickens. Birds were distributed in a completely randomised design in a 2 x 5 factorial scheme, with or without addition of carbohydrases and five levels of DRC inclusion, resulting in 10 treatments with 5 replicates of 22 birds each. At 21 days of age, two birds of each treatment were fasted for 6 hours for blood brachial puncture. At 42 days, four birds per pen were slaughtered to determine carcass yield, cuts, organs, percentage of abdominal fat and meat quality. Between 1-21 days of age, there was an interaction (P < 0.05) between carbohydrase and DRC supplementation on weight gain (WG) and feed intake, which showed a decreasing linear effect without the inclusion of carbohydrases. In the period from 1 to 42 days, there was an interaction (P < 0.05) between carbohydrase supplementation and DRC inclusion on the variables WG and feed conversion. Carbohydrase inclusion provided an increase (P < 0.05) in the concentrations of cholesterol, triglycerides, creatinine, gamma GT and blood glucose. Concentrations of gamma GT were increased and levels of alanine aminotransferase and creatinine were decreased (P < 0.05) with DRC inclusion. At 24 hours post mortem, there was a significant interaction (P < 0.05) for breast meat between carbohydrase supplementation and DRC inclusion for the variable L. The analysed values of pH, water holding capacity and shear force of the breast meat were not affected (P > 0.05) by DRC inclusion and carbohydrase addition. However, cooking loss was influenced (P < 0.05) by levels of inclusion of DRC. The L and a* variable and the feet of broiler chickens were not affected (P > 0.05) by DRC levels and carbohydrase addition. The colour variable b* showed a decrease (P < 0.05) from 5% level of inclusion. The results of this study show that DRC can be used in the diets of broiler chickens from 1 to 21 days old to the assessed level of 10%, provided that carbohydrase is added.

Two hundred and twenty-four crossbred male pigs (Large White × Landrace, initial bodyweight 27.2 kg ± 0.22) were used to determine the influence of dietary Australian sweet lupin (ASL) inclusion level and enzyme supplementation on growth performance, carcass composition and meat quality. The experiment was a 4 × 2 factorial design with the respective factors being ASL inclusion level (Lupinus angustifolius L., cv. Mandelup; 200, 250, 300 and 350 g/kg, in replacement of soybean meal) and enzyme supplementation (without or with supplemental enzyme; Allzyme SSF). Pigs (7 pigs per pen × 4 replicates per treatment = 28 pigs per enzyme by lupin-level combination) were fed grower diets between 27 and 50 kg, finisher diets between 50 and 75 kg and pre-sale diets between 75 and 107 kg, and daily gain and feed intake were measured weekly. At ~107 kg liveweight, the pigs were slaughtered at a commercial abattoir and carcass composition was measured. Meat quality (pH, surface exudate, drip loss, cooking loss, meat colour and shear force) was measured from selected pigs (n = 18) fed the lowest and highest lupin diets without enzyme supplementation. Increasing the ASL inclusion level to 350 g/kg did not alter (P > 0.05) growth performance of pigs and did not influence (P > 0.05) carcass composition and meat quality. Likewise, addition of supplemental enzyme had no effect (P > 0.05) on growth performance and carcass composition. Lack of performance response to added enzyme complex is likely due either to the use of enzyme complex that was not substrate-specific for the lupin non-starch polysaccharides or to the high specification of the experimental diets, which was inevitable when increasing inclusion levels of lupins. The results show that a current variety (Mandelup) of ASL can be used in grower/finisher diets up to 350 g/kg without compromising growth, carcass composition or meat quality of pigs.

The study examined the effect of dietary antioxidant supplementation on the performance and meat quality of broiler chickens. Namely, 300 one-day-old Arbor Acres broiler chicks were fed a starter diet from 1 to 4 weeks and a finisher diet for the last 4 weeks. Birds were randomly assigned to treatments based on antioxidant supplementation in drinking water at 0.02% butylated hydroxyanisole (BHA), ordinary water (OW), 0.02% sweet orange peel extract (SOPE), 0.02% shaddock peel extract (SHPE) and 0.02% lemon peel extract (LMPE) per litre of water in a completely randomized design experiment. Feed intake and body weight gain were recorded on a weekly basis. Three birds were selected in each treatment and slaughtered for meat quality determination. BHA and LMPE treatments had the best weight gain and feed conversion efficiency at the significance level (p<0.05). There were significant differences (p<0.05) in the shear force (force peak and yield) in the dietary antioxidants fed to the birds. Sensory parameters (taste, aroma and overall acceptability) show significant differences (p<0.05) amongst the treatments. However, there were no significant differences (p>0.05) in appearance and texture perception amongst treatments. Finally, significant differences (p<0.05) in the lightness (L*) and redness (a*) of the meat samples were observed amongst the treatments. There were no significant differences (p>0.05) in the yellowness (b*) amongst the treatments. It can be concluded that broiler birds fed SOPE, SHPE and LMPE treatments performed better and that these treatments enhanced the meat quality of the birds when compared to BHA and OW treatments.

This article assessed the performance, carcass yield, and meat quality of finishing broilers fed increasing levels of hydroethanolic extract of guavira fruit peel (HEGP) were assessed. A total of 480, three-weeks-old male broilers were randomly allocated to dietary levels of HEGP (0, 100, 200, 300, 400, and 500 mg/kg), with five replicates and 16 birds each. There was a quadratic effect of HEGP inclusion on weight gain (WG) and feed conversion ratio (FCR), with the greatest WG and FCR being calculated at levels of 314 and 219 mg/kg HEGP, respectively. Broilers fed diets containing the extract had better performance than those fed an extract-free diet. There was no effect of extract inclusion on carcass yield and cuts. There was a quadratic effect of HEGP inclusion on a* (redness) of thigh meat at 15 min post-mortem, and on water-holding capacity (WHC), with the lowest and highest values being calculated at 270 mg/kg and 263 mg/kg HEGP, respectively. There was a quadratic influence of HEGP inclusion on the malonaldehyde content at 30-day storage, with highest value being calculated at 218 mg/kg HEGP. Dietary inclusion of 219 mg/kg of HEGP resulted in better FCR for broilers in the finishing phase but without improvement in meat quality.

ABSTRACT An experiment was conducted to evaluate broiler chicken performance and carcass yield in response to carbohydrase supplementation (Xylanase and Betaglucanase; XB) and association of carbohydrase and phytase (PHY). A total of 1,920 day-old male broiler chicks (Cobb 500) were distributed in a completely randomized design with 8 treatments and 8 replicates each, allocated in 64 pens with 30 chicks each. The treatments were: Positive Control (PC); Negative Control (NC): reduced ME [-120kcal/kg (Starter) and -170kcal/kg (Finisher)]; NC + XB [50g/ton]; NC + XB [100g/ton]; NC + XB [150g/ton]; NC + XB [50g/ton] + PHY [100g/ton]; NC + XB [100g/ton] + PHY [100g/ton]; NC + XB [150g/ton] + PHY [100g/ton]. The inclusion of XB (150) and XB (50, 100, and 150) associated with phytase increased feed intake than positive control when considering the total rearing phase. The feed conversion ratio of all broilers fed diets with energy reduction were worse than positive control, even with the addition of enzymes, and did not differ between them. There was no significant effect of treatments on carcass parameters.

The usage of fermented soybean meal (FSBM) in poultry feed is limited due to the high cost. The present study was conducted to examine the carcass traits and meat quality of broiler chickens that were fed diets with partial replacement of soybean meal (SBM) with FSBM. The 336 one-day-old chicks were assigned to four groups with 0% (control), 2.5%, 5.0%, and 7.5% FSBM addition in corn-SBM-based diets. Compared with the control, 2.5% and 5.0% FSBM decreased leg muscle yield, breast drip loss, and cooking loss (p < 0.05). The 7.5% FSBM increased the ultimate pH of breast and thigh muscles, and all FSBM treatments decreased muscle lightness and breast malondialdehyde content (p < 0.05). The 2.5% FSBM increased breast total superoxide dismutase activity, while 7.5% FSBM reduced breast hydrogen peroxide level (p < 0.05). All FSBM treatments elevated breast contents of bitter and sour tasting amino acids, and 2.5% and 7.5% FSBM increased breast glutamic acid and total free amino acids (p < 0.05). The 5.0% and 7.5% FSBM elevated thigh isoleucine and leucine contents (p < 0.05). In conclusion, FSBM replacing SBM affected meat quality with the decrease of lightness and increase of pH, water-holding capacity, antioxidant properties, and free amino acids.

The study was conducted with an aim to investigate the effect of litter density on growth, leg health and litter quality of broiler chickens from d1-42 days. Day-old male broiler chicks (n=400; Cobb 500) were distributed randomly into four litter densities [T1, T2, T3 and T4] treatments, each treatment had 5 replicates with 20 birds per replicate cage in a completely randomized design. Wood shaving was used as litter materials to a thickness of 5 cm, 8 cm, 11 cm and 14 cm on the floor of the pen. Birds were reared on the litter floor open-sided housing condition with ad libitum feed and water throughout the trail period. Data on feed intake (FI), body weight (BW), feed conversion ratio (FCR) and mortality were measured weekly. Litter sample was collected on day 42 to assess the nitrogen content (N2 %), dry matter (DM%) and moisture level (%). Footpad dermatitis (FPD) and hock burn (HB) incidences were measured on day 42 to assess the leg quality of birds. Results demonstrated that litter thickness had no significant (P>0.05) effect on FI, BW, FCR and mortality of broilers from d1-42 days. The N2, DM or moisture levels (%) of litter were also unaffected (P>0.05) between treatment. Leg disorders such as HB and FPD were influenced (P<0.01) by treatment. The incidences of HB and FPD were higher (P<0.01) in T1 and T2 than other treatments. It can be inferred from our current study that, leg health may be deteriorated by using low density wood shaving without affecting growth and litter quality of broiler chickens. Bang. J. Anim.
