A comprehensive study into the potential of bioprocessing techniques (sprouting and sourdough fermentation) for improving the technological and nutritional properties of wheat breads produced using barley and lentil grains was undertaken. Dextran biosynthesis in situ during fermentation of native or sprouted barley flour (B or SB) alone or by mixing SB flour with native or sprouted lentil flour (SB-L or SB-SL) by Weissella paramesenteroides SLA5, Weissella confusa SLA4, Leuconostoc pseudomesenteroides DSM 20193 or Weissella confusa DSM 20194 was assessed. The acidification and the viscosity increase during 24 h of fermentation with and without 16% sucrose (on flour weight), to promote the dextran synthesis, were followed. After the selection of the fermentation parameters, the bioprocessing was carried out by using Leuconostoc pseudomesenteroides DSM 20193 (the best LAB dextran producer, up to 2.7% of flour weight) and a mixture of SB-SL (30:70% w/w) grains, enabling also the decrease in the raffinose family oligosaccharides. Then, the SB-SL sourdoughs containing dextran or control were mixed with the wheat flour (30% of the final dough) and leavened with baker’s yeast before baking. The use of dextran-containing sourdough allowed the production of bread with structural improvements, compared to the control sourdough bread. Compared to a baker’s yeast bread, it also markedly reduced the predicted glycemic index, increased the soluble (1.26% of dry matter) and total fibers (3.76% of dry matter) content, giving peculiar and appreciable sensory attributes.

Background. The disadvantage of the two-product technology of alcohol and baker’s yeast from molasses is the need to limit the concentration of dry matter of the source medium to 22% and, accordingly, the level of alcohol accumulation in mature malt not more than 8.0% vol. to prevent deterioration of baker’s yeast. The consequence of this is the high specific cost of steam for bragorectification and increase the specific yield of post-alcohol molasses bard in comparison with single-product technology (obtaining only alcohol). Materials and methods. Raw materials, intermediates and final products were analyzed according to the methods adopted in science and practice of molasses alcohol technology. The dry matter content; pH of the medium; the content of alcohol in the brew, yeast biomass and unfermented sugars; the lifting power of yeast and their color in the resulting products were determined. Results. The possibility of reducing the volume of post-alcoholic molasses bard by returning it for the preparation of molasses bard without deteriorating the quality of baker’s yeast and alcohol yield, as well as by increasing the dry matter concentration of fermented wort from 22 (traditional technology) to 27% and accumulation of alcohol in mature brew up to 10–11% vol. has been experimentally proven. Conclusion. The presented research results provide grounds for the development of energy-saving low-waste two-stage technology of alcohol and baking yeast from mo­lasses, which can be used to obtain high-quality baking yeast to increase the con­centration of alcohol in mature malt by more than 10% vol. This will significantly reduce the steam for bragorectification of alcohol and the volume of contaminated and difficult to dispose of production waste – post-alcohol molasses bard. The implementation of such technology will be the next step in the greening of the joint production of alcohol and baker’s yeast from molasses.

Chromosome 5 of onion carries major quantitative trait loci (QTL) that control dry-matter content, pungency and storability of bulbs, amounts and types of epicuticular waxes, and resistances to abiotic factors, all of which are of interest to breeders. SNPs, SSRs, and RFLPs in expressed regions of the onion genome have been genetically mapped, and we used these clones and sequences from the NCBI database to develop DNA probes for in situ hybridization to integrate the genetic and physical maps of onion chromosome 5. We produced genomic amplicons from expressed regions of the onion genome that carried both exons and introns in order to increase the hybridization specificity of the probes and to enlarge the target DNA sizes. Tyramide-FISH technique was used to increase the detection sensitivity of relatively short target DNA regions, which range from 950 to 2100 bp. Through the integration of genetic and chromosomal maps, we were able to estimate the distribution of recombination events along onion chromosome 5. We demonstrated the efficiency of chromosomal in situ mapping of exon–intron genomic clones for the extremely large genome of onion.

The objective was to determine chemical composition and in situ degradability for silages of dual-purpose sorghum hybrids. Twenty-five hybrids of double-purpose sorghum were investigated in a randomized block design with three replicates. Ammoniacal nitrogen (NH3-N), pH, chemical composition of the silage and in situ degradability were determined. Silage of the hybrids 9929012, 947216, 947030, 947254, 947072, 947252, 12F042066, 1141570 and 1141562 presented greater dry matter content, ranging from 402.9 to 470.7 g kg-1. The greatest crude protein content was presented by silages from the hybrids 9929036, 9929030, 12F042224, FEPAGRO19, FEPAGRO11, 9929026, 947030, 947072, 947252, 12F042226 and BRS Ponta Negra. The silage of hybrid 1141562 exhibited the lowest neutral detergent fiber content (588 g kg-1). The highest values of dry matter and crude protein degradability were observed in the silages of the hybrids 9929030, 947252, 947072, 12F042066 and 12F042226. The use of ensilage of the 9929030 and 12F042226 hybrids is recommended because these silages present a better chemical composition of dry matter, crude protein and neutral detergent fiber and better dry matter and crude protein degradability.

The dry matter and moisture contents of the aboveground vegetative organs and kernels of four maize hybrids were studied in Martonvásár at five harvest dates, with four replications per hybrid. The dry matter yield per hectare of the kernels and other plant organs were investigated in order to obtain data on the optimum date of harvest for the purposes of biogas and silage production.It was found that the dry mass of the aboveground vegetative organs, both individually and in total, did not increase after silking. During the last third of the ripening period, however, a significant reduction in the dry matter content was sometimes observed as a function of the length of the vegetation period. The data suggest that, with the exception of extreme weather conditions or an extremely long vegetation period, the maximum dry matter yield could be expected to range from 22–42%, depending on the vegetation period of the variety. The harvest date should be chosen to give a kernel moisture content of above 35% for biogas production and below 35% for silage production. In this phenophase most varieties mature when the stalks are still green, so it is unlikely that transport costs can be reduced by waiting for the vegetative mass to dry.

Цель исследований – дать оценку сохраняемости и болезнеустойчивости современных сортов и гибридов моркови столовой и определить корреляционные зависимости влияния биохимических показателей качества на сохраняемость и степень поражения моркови столовой различными видами болезней в процессе хранения. Исследования проводились в 2011–2016 годах во ВНИИО – филиале ФГБНУ ФНЦО по общепринятым методикам. В биохимической лаборатории отдела земледелия и агрохимии содержание сухого вещества определяли высушиванием до абсолютно сухого веса, общего сахара – по Бертрану, аскорбиновой кислоты – по Мурри, нитраты – ионоселективным методом. При характеристике моркови столовой важнейший показатель, определяющий его качество – количество сухого вещества и сахаров. В процессе хранения были выявлены следующие болезни моркови: серая гниль (Botrytis cinerea Pers. ex Fr.), белая гниль (Sclerotinia sclerotiorum (Lib.)), белая парша (Rhizoctonia carotae Rad.), альтернариоз (Alternaria radicina M., Dr. et E.). В большей степени сортообразцы моркови столовой поражались серой гнилью. Лучшими по сохраняемости сортообразцами были Корсар (94,6%), F1Берлин (94,5%), Берликум Роял (94,1%) и F1 Звезда (94%). Сохраняемость у зарубежных сортов и гибридов моркови столовой была немного выше, чем у отечественных (на 0,4%) как за счет меньшей величины убыли массы (6,3% против 6,4%), так и потерь от болезней (1,6% против 1,9%). Сохраняемость корнеплодов моркови находится в прямой корреляционной зависимости от содержания сухого вещества (r=+0,41), каротиноидов (r=+0,39), моносахаров (r­=+0,30) и суммы сахаров (r=+0,27). Проявление серой гнили находится в обратной корреляционной связи с содержанием сухого вещества и каротиноидов (r=-0,37 и r=-0,35 соответственно), белой парши – в прямой корреляции с содержанием сухого вещества , моносахаров и дисахаров (r= +0,21; r= +0,39; r= -0,41 соответственно), белой гнили в обратной корреляционной связи с содержанием сухого вещества, моносахаров и дисахаров. The purpose of the research is to assess the persistence and disease resistance of modern varieties and hybrids of carrots and to determine the correlation between the influence of biochemical quality indicators on the persistence and degree of damage to carrots by various types of diseases during storage. The research was conducted in 2011–2016 at ARRIVG – branch of FSBSI FSVC, according to generally accepted methods. In the biochemical laboratory of the Department of Agriculture and Agrochemistry, the dry matter content was determined by drying to absolutely dry weight, total sugar – by Bertran, ascorbic acid – by Murri, nitrates – by the ion-selective method. When describing carrots, the most important indicator that determines its quality is the amount of dry matter and sugars. During storage, the following diseases of carrots were detected: gray rot (Botrytis cinerea Pers. ex Fr.), white rot (Sclerotinia sclerotiorum (Lib.), white scab (Rhizoctonia carotae Rad.), alternariasis (Alternaria radicina M., Dr. et E.). To a greater extent, varieties of table carrots were affected by gray rot. The best preserved varieties were Corsar (94.6%), F1 Berlin (94.5%), Berlicum Royal (94.1%) and F1 Zvezda (94%). The persistence of foreign varieties and hybrids of table carrots was slightly higher than that of domestic ones by 0.4%. both due to a smaller amount of weight loss (6.3% vs. 6.4%) and losses from diseases (1.6% vs. 1.9%). The persistence of carrot root crops is directly correlated with the content of dry matter (r=+0.41), carotenoids (r=+0.39), monosaccharides (r=+0.30) and the amount of sugars (r=+0.27). The manifestation of gray rot is in inverse correlation with the content of dry matter and carotenoids (r=-0.37 and r=-0.35, respectively), white scab is in direct correlation with the content of dry matter (r= +0.21; r= +0.39; r= –0.41, respectively), white rot is in inverse correlation with the content of dry matter, monosaccharides and disaccharides.
