Sulfur dioxide (SO2) is widely the most used enological additive with reductive, antiseptic and dissolving properties. According to increasing health concerns and the gradual decrease in total SO2 concentrations allowed in wine, alternative and supplementary agents for preservation are being investigated. For this reason, the current study was focused on the impact of different commercial reductive agents on white wine antioxidant activity and chemical composition. The effect of additives that combine sulfites, ascorbic acid and enological tannins were compared against standard 5% sulfurous acid (H2SO3) during the pre-fermentative treatments of Sauvignon Blanc must (Vitis vinifera L.). The basic parameters of quality, free amino-nitrogen and total polyphenoliccompounds in must were analyzed. Gas chromatography and spectrophotometric methods were used to investigate the overall volatile composition, antioxidant and chromatic parameters in wines. The obtained results undoubtedly pointed out the positive effect of sulfuric acid on the fermentation dynamics. Furthermore, application of combined reducing additives with potassium metabisulfite, L-ascorbic acid, gallotannins and ellagitannins, resulted in a higher antioxidant capacity and increased concentration of aromatic compounds and their odor activity values in Sauvignon Blanc wine.

<p style="text-align: justify;"><strong>Aims</strong>: It is well known that vine nitrogen deficiency can negatively impact on aroma in white wines. Soil nitrogen fertilization enhances aroma expression, but it also increases vine vigour and susceptibility to grey rot. The aim of this work was to investigate the impact of foliar nitrogen as well as foliar nitrogen and sulphur applications on aromatic expression, vigour and susceptibility to grey rot of Vitis vinifera L. cv. Sauvignon blanc.</p><p style="text-align: justify;"><strong>Methods and results</strong>: The impact of foliar nitrogen (N) and sulphur (S) application on aromatic expression of Vitis vinifera L. cv. Sauvignon blanc has been investigated. On a plot where vine nitrogen status is naturally low and water availability not limiting, foliar nitrogen and sulphur fertilization (10 kg/ha of N and 5 kg/ha of S) increased yeast available nitrogen content. Vine vigour and maturity level of grapes were not modified compared to the control. The wines produced from N+S vines contained more volatile thiols and glutathione. These results were confirmed by a tasting of wines produced with grapes from the experimental plots. Foliar nitrogen fertilization alone (10 kg/ha of N) also increased Sauvignon blanc aromatic expression, but less so than the N + S treatment.</p><p style="text-align: justify;"><strong>Conclusions</strong>: Foliar N and foliar N + S applications can enhance aromatic expression in Vitis vinifera L. cv. Sauvignon blanc wines without increasing vine vigour and infestation by grey rot.</p><p style="text-align: justify;"><strong>Significance and impact of the study</strong>: Vine nitrogen deficiency can negatively impact on grape aroma potential. Soil nitrogen application can increase vine nitrogen status, but it has several drawbacks: it increases vigour and enhances Botrytis susceptibility. This study shows that foliar N and foliar N + S applications can improve vine nitrogen status and enhance aroma expression in Sauvignon blanc wines without the negative impact on vigour and Botrytis susceptibility. Although this study was carried out on Sauvignon blanc vines, it is likely that foliar N or foliar N + S applications will have similar effects on other grapevine varieties containing volatile thiols (Colombard, Riesling, Petit Manseng and Sémillon).</p>

Aim: This study evaluate the agronomic and quality characteristics of grape (Vitis vinifera L.) varieties in a non-traditional region of the Agreste of Pernambuco States. Study Design: The experiment was conducted in a randomized block design with five replications and eight plants per plot. Place and Duration of Study: Was carried out in the municipality of Brejão, PE, at the Experimental Station of the Agronomic Institute of the Pernambuco. The vines were implanted on September, 2013, whose pruning was performed on August and harvesting began on December, 2016 to January, 2017. Methodology: Ten treatments represented by the varieties of European vines: Cabernet Sauvignon, Malbec, Merlot Noir, Petit Verdot, Pinot Noir and Syrah for producing of red wines and Chardonnay, Muscat Petit Grain, Sauvignon Blanc and Viogner for producing of white wines, grafted on the Paulsen 1103 rootstock were evaluated. The vineyard was conducted in espalier vine-tying system in double short pruning type, with spacing 3 m x 1 m. The characterization of the phenological stages was made using as reference the phenological scale. The thermal requirement of the crop per period was estimated. Agronomic characteristics were also evaluated, such as: fertility of gems, budding (%), production, productivity, number of bunches per plant, length and width of bunch, bunch weight, soluble solids, titratable acidity, hydrogen ionic potential, SS / TA ratio, volume of 100 berries, yield of must, mass of the husks and seeds. The data were submitted to two selection indices: Classic Index and Distance Genotype-Ideotype Index. Results: Sprouting varied from 13.68% (Petit Verdot) to 81.6% (Sauvignon Blanc) and the fertility of gems from 0.1 bunch.bud-1 (Chardonnay) to 0.67 bunch.bud-1 (Sauvignon Blanc). The pruning cycle and Day Degrees (DD) cumulated ranged from 133 days and 1,684 DD (Muscat Petit Grain) to 167 days and 2,070 DD (Merlot Noir). The number of bunches ranged from five (Merlot Noir) to 29 bunches.plant-1 (Sauvignon Blanc). Muscat Petit Grain stood out for bunch weight, not differing from Syrah and Malbec. The varieties showed no difference in length and width of bunches. In the volume of 100 berries, Muscat Petit Grain (213.6 ml) and Malbec (216.0 ml) stood out. For the yield of must, Sauvignon Blanc (70.87%) stood out, not differing from Malbec (64.31%), Viognier (69.79%), Muscat Petit Grain (70.22%). Muscat Petit Grain, Sauvignon Blanc and Viognier (white wine), Cabernet Sauvignon, Malbec, Merlot Noir and Syrah obtained acceptable values for soluble solids (SS), titratable acidity (TA), SS/TA ratio and pH. From the selection index analyzes, the Muscat Petit Grain, Cabernet Sauvignon and Syrah varieties were indicated for the selection by the highest Mulamba and Mock index and by the Genotype-Ideotype distance index. Conclusion: The cycle of grapevine varieties evaluated in the Garanhuns, PE, Microregion is longer than that observed in the sub Medio of the São Francisco Valley, similar to those in the South Region of Brazil. In the evaluated cycle the varieties produced grapes with characteristics suitable for the production of quality fine wines, showing to be promising for this non-traditional microregion in the production of fine grapes. From the selection index analyzes, the Muscat Petit Grain, Syrah and Cabernet Sauvignon varieties were indicated for selection by the highest Mulamba and Mock index and Genotype-Ideotype distance index.

Ecoclimatic conditions have a great influence on grapevine growth and development. Favourable conditions (solar radiation, temperature, humidity etc.) are important and have a positive effect on the growth and fruition. Critical conditions have negative influences resulting in low grape production and wine quality. The purpose of this research was to analyse the quality of wine obtained from eight grapevine varieties (four Romanian autochthonous varieties: ‘Feteasca regala’, ‘Feteasca alba’, ‘Babeasca gri’, ‘Sarba’, and four world-wide varieties: ‘Aligoté’, ‘Sauvignon Blanc’, ‘Muscat Ottonel’, and ‘Italian Riesling’). The wine samples were obtained from micro-wine production under local weather conditions of Dealu Bujoruluivineyard, Romania. The physico-chemical analysis of young wines showed that the highest alcohol content was recorded at the ‘Sauvignon blanc’ variety (14.35% vol.) followed by ‘Sarba’ (14.10% vol.). The highest level of acidity was registered to ‘Babeasca gri’ (5.90 g/L C4H6O6) and the lowest acidity in the ‘Muscat Ottonel’ wine (4.40 g/L C4H6O6). The pH values were between limits of 3.62 (‘Feteasca alba’) and 3.27 (‘Aligote’). In order to get a wider perspective about the wine quality, another 11 parameters were examined at these varieties, using spectrophotometric methods (acetic acid, potassium, calcium, free amino nitrogen, tartaric acid, copper, L-lactic acid, iron, L-malic acid, D-gluconic acid and glycerol). The results showed the suitability of ecoclimatic conditions and the proper growth and development of the tested varieties for obtaining wines withsuperiors quality.

The subject of the research is the approach to the possibility of using the Solow model to perform the regression analysis on the example of the Ukrainian economy model. The purpose of writing this article is to investigate the notion of regres- sion analysis, Solow’s economy model, algorithm for performing regression analy- sis on the example of Ukraine’s economy model. This model can be adapted for the economy of enterprises. Methodology. The research methodology is system-struc- tural and comparative analyzes (to study the structure of GDP); monograph (when studying methods of regression analysis on the example of the Ukrainian economy); economic analysis (when assessing the impact of factors on Ukraine’s GDP). The scientific novelty consists the features of the use of the Solow model on the ex- ample of Ukrainian economy are determined. An algorithm for calculating the basic parameters of a model using the Excel application package is disclosed. The main recommendations on the development of the national economy and economic growth through the use of macroeconomic instruments are given. Conclusions. The use of the Solow model enables forecasting and analysis. The results obtained re- vealed the problem of low resource return of capital as a resource, along with the means of macroeconomic regulation of the investment process, using which can improve the situation. A special place in these funds belongs to the accelerated depreciation and interest rate policies.

Building a unique USP sales argument (unique selling proposition) through various forms of in-store communication comes to the fore in a challenging competitive environment. Scent as a means to influence the purchase of goods or services has a long history, however, aromachology as field of in-store communication is a matter of the present. This new trend, the importance and use of which has grown in recent years, is the subject of a wide range of research. In order to increase the efficiency of these elements, it is necessary to familiarise ourselves with the factors that affect the customer, whether that be consciously or unconsciously. Consumer neuroscience is addressed in this area. This paper deals with the comprehensive interdisciplinary investigation of the impact of selected aromatic compounds on consumer cognitive and affective processes as well as assessing the effectiveness of their implementation in food retail operations. At the end of the paper, we recommend options for the effective selection and implementation of aromatisation of different premises, by which the retailer can achieve not only a successful form of in-store communication, but also an increase the retail turnover of the store.

Specialty malts are commonly used in brewing to provide flavor, aroma, and color to wort and beer. The use of specialty malts contributes to the variety of beer products; therefore, it is important to understand their effect on the characteristics of wort and beer. This study investigates the impact of various specialty malts on wort and beer properties. A control beer was prepared with 100% base malt, and four beer treatments were prepared with the addition of kilned, roasted, and caramel specialty malts. For each treatment, 20% of the base malt was substituted with the various specialty malts when preparing the wort. The fermentable sugars and free amino nitrogen (FAN) content for each wort were analyzed. Alcohol by volume (ABV), international bitterness units (IBU), diacetyl, and polyphenol content of each prepared beers were subsequently analyzed. Results showed that wort prepared with the addition of roasted and caramel malts contained a lower concentration of fermentable sugars and FAN than wort prepared with the base and kilned malts. Beers prepared with the addition of roasted and caramel malts exhibited the lowest levels of ABV, as well as the lowest levels of diacetyl. These beers also exhibited higher levels of total phenolic compounds compared to the other beer samples. No change was observed in IBU levels as a result of brewing with the different specialty malts. This study illustrates how the use of specialty malts impacts wort and beer properties, providing useful information to aid in the production of quality beer products.

Different components of the mixed function oxidase (MFO) system and the levels of fluorescent aromatic compounds in bile (FACs) were measured in Cathorops spixii in order to assess the impact of polycyclic aromatic hydrocarbons (PAHs). Fish were sampled in an estuary (Santos/São Vicente) with a history of contamination by PAHs, mainly due to the presence of the industrial complex of Cubatão city and of another of low anthropogenic influence (Cananéia) on the Brazilian coast. FACs were higher in fish from the polluted site, and the PAH 5 and 6-ring metabolites were the most frequent - with 14% and 15%, respectively. Levels of the different components of the MFO system showed the same variation profile as the FACs for both estuaries. Therefore, the values found for somatic indexes and biomarkers with data of bile PAH metabolites indicate the presence of organic contaminants, especially in the area subject to the influence of the industrial complex on the Santos/São Vicente estuary.

Ascorbic acid (AA) has been reported for the management of diarrhea. The anti-diarrheal potential and modulatory activities of AA on some commonly used anti-diarrheal drugs were investigated. For this purpose, the activities of AA on castor oil-induced diarrhea in Swiss mice were examined. As standard anti-diarrheal agents, we used prazosin, propranolol, loperamide, and nifedipine with or without AA. The results revealed that AA at 25 mg/kg (i.p.) and all other standard drugs exhibited significant (p < 0.05) diarrheal attenuating activities in mice. However, the impact was more pronounced in the loperamide and propranolol groups. AA administrated with prazosin and propranolol had a higher rate of latent periods and a lower rate of diarrheic secretion during the study period (4 h) than that of the other single or mixed groups. Furthermore, a molecular docking study illustrated that AA displayed good binding affinities with (α1) (–5.2 Kcal/mol), α2b (–5.4 Kcal/mol), α2c (-5.6 Kcal/mol), β1(–5.3 Kcal/mol) and β2(–6.4 Kcal/mol) adrenoceptors. Of note, AA exerted a significant anti-diarrheal effect and it was seen to modulate the anti-diarrheal effects of α- and β-adrenergic receptor blocking agents in Swiss mice.
