Families with low incomes face barriers to preparing healthy meals, including decreased food access and limited time, and may turn to fast, low-quality, and inexpensive foods. Affordable and accessible meal kits may reduce these barriers. The objective of this study was to explore the cooking, eating, and shopping behaviors of African American (AA) and Hispanic participants living in the United States with low incomes and determine the knowledge of and preferences for a culturally appropriate meal kit intervention. Trained researchers conducted focus groups using a semi-structured questionnaire with AA and Hispanic food preparers with low incomes. Participant cooking, eating, and shopping behaviors and knowledge of and preferences for a culturally appropriate meal kit intervention were evaluated using thematic analysis. AA participants (N = 16) reported cooking on average 2 to 3 days per week and more often on weekends. Hispanic participants (N = 15) reported cooking 5 days per week and more often during the week. Both groups identified cost as the number one consideration when shopping. Most were unfamiliar with meal kits but indicated they would try an affordable meal kit. AA and Hispanic participants differed in their cooking, eating, and shopping behaviors but were equally interested in trying meal kits if affordable and culturally appropriate.

The rate of obesity within the United States is dropping, yet the prevalence of obesity among young African American women continues to increase. This increase, in part, may be attributable to weight beliefs. The relationship between beliefs about personal weight and body mass index (BMI) was examined among 150 African American women, 18 to 40 years of age using weight descriptive characteristics, causal attributions, consequences, and calculated BMI. Key results show that the majority of participants described their weight as attractive, healthy, and normal despite a sample mean BMI in the obese category. Key beliefs about the causes of personal weight that were associated and predictive of BMI were unhealthy eating behaviors, limited physical activity, weight left from pregnancy, and not knowing how to maintain a healthy weight. Beliefs about the consequences of personal weight were not predictive of BMI. A discussion of study findings provides important implications for clinical practice.

African American women are more likely to be classified as overweight or obese than European American women and little is known about this phenomenon. The purpose of this qualitative study was to explore the lived experiences of overweight and obese African American older women living in the southern regions of the United States. Semistructured, audiotaped interviews were conducted to elicit narratives from nine participants. Interview data were transcribed verbatim and then coded and analyzed using Colaizzi’s phenomenological analysis framework. Three major categories emerged: impact of health conditions, incongruent perceptions, and the desire for independence. The focus of culturally appropriate interventions aimed at increasing physical activity for this group should incorporate activities that will help them remain independent, because weight loss is not a primary motivator.

This chapter explores the history of humanism within African American communities. It positions humanist thinking and humanism-inspired activism as a significant way in which people of African descent in the United States have addressed issues of racial injustice. Beginning with critiques of theism found within the blues, moving through developments such as the literature produced by Richard Wright, Lorraine Hansberry, and others, to political activists such as W. E. B. DuBois and A. Philip Randolph, to organized humanism in the form of African American involvement in the Unitarian Universalist Association, African Americans for Humanism, and so on, this chapter presents the historical and institutional development of African American humanism.

Purpose: Examine if Historically Black Colleges and Universities (HBCUs) are more likely to be located in low food access area (LFA) census tracts compared to public non-HBCUs. Design: ArcGIS Pro was utilized to capture food environments and census tract sociodemographic data. Setting: The sample included 98 HBCUs and 777 public non-HBCUs within the United States. 28.9% of study census tracts were classified as LFA tracts. Measures: University data were gathered from the National Center for Education Statistics. Census tract-level LFA classification was informed by the United States Department of Agriculture’s Food Access Research Atlas. Covariates included population density and neighborhood socioeconomic status of census tracts containing subject universities. Analysis: Multilevel logistic regression was employed to examine the relationship between university type and LFA classification. Results: A higher percentage of HBCUs (46.9%) than public non-HBCUs (26.6%) were located in LFAs. After adjusting for population density and neighborhood socioeconomic status, university type was significantly associated with food access classification (B=0.71;p=.0036). The odds of an HBCU being located in LFA tracts were 104% greater than for a public non-HBCU (OR=2.04;95% CI=1.26,3.29). Conclusion: Findings underscore the need for policy interventions tailored to HBCU students to promote food security, environmental justice, and public health.

People receiving haemodialysis have considerable and complex dietary and healthcare needs, including co-morbidities. A recent New Zealand study has shown that few patients on haemodialysis are able to meet nutritional requirements for haemodialysis. This study aims to describe the perspectives and experiences of dietary management among patients on haemodialysis in New Zealand. This exploratory qualitative study used in-depth semi-structured interviews. Purposive sampling was used to recruit participants from different ethnic groups. Forty interviews were conducted, audio-recorded and transcribed verbatim. An inductive approach was taken using thematic analysis. Forty participants were interviewed. Participants spoke of major disruption to their lives as a result of their chronic kidney disease and being on haemodialysis, including loss of employment, financial challenges, loss of independence, social isolation and increased reliance on extended family. Most had received adequate dietary information, although some felt that more culturally appropriate support would have enabled a healthier diet. These findings show that further support to make the recommended dietary changes while on haemodialysis should focus on socio-cultural factors, in addition to the information already provided.

Environmental crises caused by our changing global environment evoke intense and difficult emotions, particularly the paralysis that often results from despair. Understanding how people who are deeply engaged in environmental activism deal with their emotions can help in emotionally equipping people to address the climate crisis. Ecofeminist spirituality directly addresses these issues through an environmental stewardship that offers hope and healing for the world. This study includes 14 interviews with workers at an ecojustice center founded by an order of Catholic sisters in the United States. We used thematic analysis to identify three main themes that collectively describe the participants’ perspectives on (a) experiences of difficult feelings, (b) strategies for coping with those feelings, and (c) perspectives on cultivating hope. Participants shared how they were able to cope with difficult emotions and cultivate hope that the work they are doing matters, which was essential to sustaining their ecojustice work. As social workers respond to the changing environment, understanding how to sustain environmental work at the macro-level is essential to addressing largescale problems while also attending to difficult emotions at the microlevel. Further implications for social work practice include the importance of intergenerational organizing, living in “right relationship,” incorporating spirituality, and reinhabiting the profession.
