A rapid and nondestructive method is greatly important for the classification of aflatoxin B1 (AFB1) concentration of single maize kernel to satisfy the ever-growing needs of consumers for food safety. A novel method for classification of AFB1 concentration of single maize kernel was developed on the basis of the near-infrared (NIR) hyperspectral imaging (1100–2000 nm). Four groups of AFB1 samples with different concentrations (10, 20, 50, and 100 ppb) and one group of control samples were prepared, which were preprocessed with Savitzky–Golay (SG) smoothing and first derivative (FD) algorithms for their raw NIR spectra. A key wavelength selection method, combining the variance and order of average spectral intensity, was proposed on the basis of pretreated spectra. Moreover, principal component analysis (PCA) was conducted to reduce the dimensionality of hyperspectral data. Finally, a classification model for AFB1 concentrations was developed through linear discriminant analysis (LDA), combined with five key wavelengths and the first three PCs. The results show that the proposed method achieved an ideal performance for classifying AFB1 concentrations in a single maize kernel with overall accuracy, with an F1-score and Kappa values of 95.56%, 0.9554, and 0.9444, respectively, as well as the test accuracy yield of 88.67% for independent validation samples. The combinations of variance and order of average spectral intensity can be used for key wavelength selection which, combined with PCA, can achieve an ideal dimensionality reduction effect for model development. The findings of this study have positive significance for the classification of AFB1 concentration of maize kernels.

(1) Background: The general use of food-processing facilities in the agro-food industry has increased the risk of unexpected material contamination. For instance, grain flours have similar colors and shapes, making their detection and isolation from each other difficult. Therefore, this study is aimed at verifying the feasibility of detecting and isolating grain flours by using hyperspectral imaging technology and developing a classification model of grain flours. (2) Methods: Multiple hyperspectral images were acquired through line scanning methods from reflectance of visible and near-infrared wavelength (400–1000 nm), reflectance of shortwave infrared wavelength (900–1700 nm), and fluorescence (400–700 nm) by 365 nm ultraviolet (UV) excitation. Eight varieties of grain flours were prepared (rice: 4, starch: 4), and the particle size and starch damage content were measured. To develop the classification model, four multivariate analysis methods (linear discriminant analysis (LDA), partial least-square discriminant analysis, support vector machine, and classification and regression tree) were implemented with several pre-processing methods, and their classification results were compared with respect to accuracy and Cohen’s kappa coefficient obtained from confusion matrices. (3) Results: The highest accuracy was achieved as 97.43% through short-wavelength infrared with normalization in the spectral domain. The submission of the developed classification model to the hyperspectral images showed that the fluorescence method achieves the highest accuracy of 81% using LDA. (4) Conclusions: In this study, the potential of non-destructive classification of rice and starch flours using multiple hyperspectral modalities and chemometric methods were demonstrated.

Fourier transform near infrared (FT-NIR) spectroscopy, in combination with principal component-linear discriminant analysis (PC-LDA), was used for tracing the geographical origin of durum wheat samples. The classification model PC-LDA was applied to discriminate durum wheat samples originating from Northern, Central, and Southern Italy (n = 181), and to differentiate Italian durum wheat samples from those cultivated in other countries across the world (n = 134). Developed models were validated on a separated set of wheat samples. Different pre-treatments of spectral data and different spectral regions were selected and compared in terms of overall discrimination (OD) rates obtained in validation. The LDA models were able to correctly discriminate durum Italian wheat samples according to their geographical origin (i.e., North, Central, and South) with OD rates of up of 96.7%. Better results were obtained when LDA models were applied to the discrimination of Italian durum wheat samples from those originating from other countries across the world, having OD rates of up to 100%. The excellent results obtained herein clearly indicate the potential of FT-NIR spectroscopy to be used for the discrimination of durum wheat samples according to their geographical origin.

This paper proposes the use of Near Infrared Hyperspectral Imaging (NIR-HSI) as a new strategy for fast and non-destructive classification of cotton seeds with respect to variety.
