In this study, traceability in pork profile information with ex-ante quality assurance and ex-post traceability are constructed. Consumers’ willingness to pay (WTP) for traceability information is investigated in Wuxi, China, by combining the Multiple Price Lists method and the Becker–DeGroot–Marschak (BDM) experimental auction. The main factors affecting consumers’ WTP are also analyzed using a Tobit model. The results demonstrate that consumers have higher WTP for ex-ante quality assurance than for ex-post traceability. The highest WTP is for the ex-ante quality assurance attribute of pork quality inspection. Consumers’ WTP for traceability information is influenced by their individual characteristics, including age, education and income, as well as their concern and satisfaction about food safety and confidence in food safety labeling. The contribution of this paper is that it improves the meaning of traceable food information attributes and measures the significance of attributes to consumers. Furthermore, this paper introduces a Becker–DeGroot–Marschak experimental auction method which amends the measurement deviation of hypothetical experiments.

Using the contingent valuation method, we estimate residents’ ex ante and ex post willingness to pay (WTP) for hosting a large international sport event: The “big start” of the 2016 Giro d’Italia, which was held in the Gelderland region of the Netherlands. The percentage of residents with a positive WTP changed from 29.7% before the event to 39.3% immediately after the event, while average WTP increased significantly from €3.58 to €4.45, leading to an increase of residents’ valuation from €5.8 million to €7.1 million. Additionally, following the event in the media and attending the event play an important role in explaining residents’ WTP.

Research on consumer needs for safe foods under the willingness to pay (WTP) approach based on consumer behavior has been performed widely and has contributed greatly to the development of safe foods, assisted enterprises’ decision-making processes in improving agricultural and food products, and provided orientation to policymakers in improving public health as well as in fostering sustainable economic growth. Some of the methods used for measuring WTP for safe foods, such as contingent value (CV), choice experiment (CE), and auction experiment (AE), have made significant contributions to the evaluation of consumers’ WTP for food safety. Moreover, the application of these models has helped to estimate the effects of many factors such as demography, consumer habits, continuation of food safety, individual characteristics, promotion, and product attributes, etc., on the WTP for food safety. The trend of safe food consumption in Vietnam has distinct characteristics, some of which come from national cultural identities; therefore, Vietnamese researchers may approach the empirical studies on this issue all over the world in order to find proper methods for studying consumer needs for safe foods in Vietnam.

This paper analyzes whether the perception of traditional wine brings value to millennials. Based on survey data and experimental auctions (165 participants), this study identifies the main factors affecting this consumer groups’ willingness to pay for traditional wine through a Tobit model methodology. The results suggest that millennials are willing to pay a higher price depending on demographic factors such as monthly disposable income, on wine involvement variables such as consumption frequency, and on nourishing and health aspects and product availability at points of sale, both of which are wine purchase decision criteria. The investigation has significant marketing and policy implications.

Frequent occurrence of food safety incidents in recent years has made analyzing safety of agricultural product in view of contract theory become academic research focus. Based on incentive theory, in this paper we establish a static game under the condition of asymmetric information and analyze how the “company + farmer” contract is influenced by a complete quality tracing system composed of ex-ante inspection and ex-post traceability. Meanwhile, we find out that a complete quality tracing system can increase the safety level of agricultural product and that ex-ante inspection and ex-post traceability can replace each other in the process. Finally, we put forward policy suggestion for the policy-maker to solve the problem of food safety.

It is of great value to study consumer demand for safe foods in promoting the development of a safe food market system and the reduction of food safety risks, as well as foodborne diseases in China. This paper takes traceable pork as an example and constructs food safety information attributes with ex ante quality verification and ex post traceability. Interactions between safety information attributes and the consumer’s response to cost-driven price changes were investigated for 345 consumers in Wuxi City, Jiangsu Province, China, using a menu-based choice (MBC) experiment and multivariate probit (MVP) model as analysis tools. The results suggest that food safety information attributes are important to consumers, as the consumers preferred pork quality inspection attributes to pre-incident quality assurance functions. Therefore, it is beneficial to include pork quality inspection attributes in the traceable pork attribute systems during the initial construction of traceable pork markets in China. Attribute price was an important factor that affected consumers’ choice of information attributes. When customization cannot be achieved, a profile composed of elastic pork quality inspection attribute and supply chain–internal traceability attribute would be the most preferred traceable pork product in the market based on the need of building a fully functional traceable food system and reducing food safety risks. In addition, there was a strong substitution relationship between different information attributes, and there was heterogeneity in consumers’ choice of information attributes. Therefore, the government should support manufacturers in producing multi-level safe food to meet diverse consumer demand.

Consumers’ willingness to pay for postharvest-processed (PHP) raw oysters—oysters without health risks—is studied in experimental auction markets. The experimental design decomposes the effects of taste, objective risk information, and information on four PHP technologies on consumer valuations. Results show that relatively uninformed consumers are willing to pay equivalent amounts for PHP and traditional raw oysters. However, after a blind taste test, consumers are willing to pay a significant premium for traditional raw oysters, and the premium persists after objective information on risk and processing technologies is provided. The results are robust across PHP technologies.
