1 ABSTRACT This experiment was conducted to study the effect of fat tail docking on Awassi lamb sheep’s meat in comparison with thin-tail Lacaune sheep’s meat (imported breed in Lebanon). Twenty seven ram lambs were divided into three groups, intact fat-tail Awassi (IA), docked fat-tail Awassi (DA), and imported thin-tail Lacaune (IL). Docking was performed at one week of age, by applying tight rubber rings on the tail. Animals having the same body weight were slaughtered at one year of age. Three samples of muscles were excised from each carcass; Biceps Femoris (Bf), Longissimus Dorsii (Ld) and Gluteus Medius (Gm). Samples were wrapped in an oxygen permeable film and stored at 4°C and - 30°C for the assessment of pH, and meat quality traits. The ultimate pH was significantly higher (P<0.01) in Lacaune breed as compared to both docked and intact Awassi breed. DA animals had significantly higher (P<0.01) fat content in Ld muscle than IA and IL lambs. Both Awassi groups presented higher L* values than Lacaune animals (P< 0.05). In addition for Awassi breed, L* values of Bf and Gm muscles were significantly greater (P< 0.05) than that of Ld muscle. b* values were significantly greater (P< 0.05) in Gm of all animals under study. Lacaune group had lower drip loss values than Awassi groups (P< 0.05 in Bf and Gm muscles and P< 0.01 in Ld muscle). However for Awassi breed, the drip loss in Ld muscle of DA animals was significantly lower (P<0.01) than IA ones. Furthermore, thawing and cooking losses were neither affected by breed nor by docking. Regarding the PND values, the Ld muscle of DA group presented higher values (P< 0.05) than Bf and Gm muscles of both intact groups. In addition, cooked meat PND values were significantly higher (P< 0.05) in Ld muscle of DA when compared to intact groups. Due to the scarcity of information in this area of research, further investigations are needed.

Selection potential for meat quality of economically important loin (longissimus) and ham muscles (adductor, semimembranosus, biceps femoris) has been assessed. Ultimate pH (pHu), meat colour (lightness, redness and yellowness), drip loss and two visually scored colour traits were recorded from 483 Finnish Landrace and 494 Finnish Large White station test pigs in a half-sib design. A univariate restricted maximum likelihood procedure was used to estimate variance components. The statistical model contained age at beginning of test, sex and time lapse from slaughter to dissection as fixed effects and slaughter batch, common environment of littermates and additive genetic effect of the animal as random effects. The average pHu values in adductor and semispinalis were between 5.6 and 6.1. The pHu were on average 5.4 and 5.5 in longissimus and semimembranosus respectively, with the latter two being lower than optimum values of 5.6 to 5.9. Lightness for semimembranosus turned to be clearly lighter (62) than for other muscles. Lightness for longissimus (56) was slightly lighter than optimum (from 48 to 54). The heritability varied from zero to 0.45 for pHu, from 0.02 to 0.34 for lightness, from 0.17 to 0.56 for redness, from zero to 0.28 for yellowness and from 0.05 to 0.16 for drip loss. Heritability for redness values was considerably higher than heritability for other meat quality traits. The heritability of quality traits spoke for possibilities for genetic improvement of meat quality. Genetic correlations between quality traits (pHu and lightness) and average daily gain varied strongly among breeds and muscles. Genetic correlations between meat-% and pHu were in most cases high and unfavourable (rg from –0.36 to –0.68 except in longissimus, where it was 0.11). Genetic correlations between meat-% and lightness were unfavourable in Finnish Large White (from 0.47 to 0.92) but in Finnish Landrace estimates varied among muscles (from –0.40 to 0.47). Due to these results, the ham quality (pHu and lightness for semimembranosus) was included in the selection criteria for pork quality in the Finnish pig improvement programme.;

Abstract Genetic selection for improved meat quality traits has been successfully implemented in many livestock species. The objective of this study was to estimate the heritability of several meat quality traits to assess their selection potential in turkeys. Pedigree toms (n = 1,033) were processed at a commercial facility and live weight, breast meat yield (as a percentage of live weight), ultimate pH, color (CIELAB values), drip loss, cooking loss, and shear force were recorded on M. pectoralis superficialis (fillet). White striping was also rated on a 1–4 scale. Heritabilities were estimated using univariate animal models in ASReml version 4.1. Hatch week and age at slaughter were included as fixed effects in the mode,l and 32 generations of pedigree records were used. Breast meat yield (h2 = 0.62; SE = 0.090) showed the highest heritability and was higher compared to previous estimates, probably due to the smaller sample size. Live weight (h2 = 0.31; SE = 0.078), ultimate pH (h2 = 0.36; SE = 0.087), lightness (h2 = 0.28; SE = 0.086), redness (h2 = 0.22; SE = 0.075), and white striping score (h2 = 0.27; SE = 0.085) all had moderate heritabilities. The estimate for ultimate pH was similar to previous studies in broilers but was high compared to previous studies in turkeys. Estimates for color were similar to those found in previous studies involving turkeys. Drip loss and cooking loss had similar heritability estimates of 0.13 (SE = 0.071) and 0.10 (SE = 0.064), respectively, which were akin to previous estimates in pork. Shear force (h2 = 0.02; SE = 0.056) was found to have a very low heritability. In conclusion, the heritability estimates provided in this study show great potential for the inclusion of meat quality traits in selection programs of turkeys. This study is part of a larger project working towards the implementation of genomic information in the selection of turkeys for improved meat quality.

The aim of this study was to analyse the polymorphisms in the two promoter regions, P1 and P2, of the porcine Insulin-like Growth Factor 2 (IGF2) gene and to investigate the effect of IGF2 genotypes on meat quality traits in the Italian autochthonous Suino Nero Lucano pig. Three polymorphic sites were analysed and only two of the eight potential haplotypes were observed in the Suino Nero Lucano pig population: A haplotype (–366A – –225G – –182C), and B haplotype (–366G – –225C – –182T). Muscle mass and meat quality characteristics were analysed in 30 castrated pigs (10 for each of the three IGF2 genotypes: A/A, A/B, and B/B). According to the results, B/B animals, at the same carcass weight, showed the highest Longissimus lumborum and Psoas weight (P < 0.05), whereas A/A animals showed a higher intramuscular fat percentage and lower Warner–Bratzler shear force, drip loss, and polyunsaturated fatty acids content. Meat from B/B animals showed also a higher L* value and myoglobin and deoxymyoglobin percentage compared with meat from A/A ones (P < 0.05).

ObjectivesThe objective was to evaluate the effect of supplementing α- and γ-tocopherol vitamin E isoforms with corn oil and tallow on carcass characteristics and meat quality of pigs grown to heavier weights (>150 kg).Materials and MethodsIndividually fed pigs (n = 72; 36 barrows, 36 gilts; 28.55 ± 1.16 kg) were randomly assigned to 12 dietary treatments in a 2 × 6 factorial arrangement. Fat treatments were tallow and corn oil (5?). The vitamin E treatments included four levels of α-tocopheryl-acetate (ATA; 11, 40, 100, and 200 ppm) and two levels of mixed tocopherols (primarily γ-tocopherol; 40 and 100 ppm). Pigs were humanely slaughtered at approximately 150 kg. 45 min pH was taken at the 10th rib. After 24 h chill (4°C), carcass measurements were taken (carcass length, backfat depth at first rib, last rib, 10th rib and last lumbar, loin muscle area, and 24 h pH at the 10th rib). In addition, wholesale weights from the Boston butt (IMPS #406), shoulder picnic (IMPS #405), loin (IMPS #412), and belly (IMPS #408) and spareribs were recorded. Furthermore, bellies were divided into eight sections and the average depth was taken at each section and the vertical and lateral belly flex was measured. Drip loss was determined by suspending a 1.3cm chop at 4°C for 48 h and purge loss was determined from approximately 2kg vacuum packaged loin muscle sections at 0, 7, 14, and 30d. Objective (Hunter Lab Colorimeter XE Plus) and subjective (NPPC color, marbling and firmness scores) measurements were taken at the 10th rib. Data analysis were performed in SAS by least squares analysis of variance using the generalized linear model as a randomized complete block design. The individual pig served as the experimental unit and results were reported as least square means.ResultsThere were no differences in dressing percentage, 24 h pH, backfat depth, loin muscle area, primal cuts, purge loss, and drip loss between the two vitamin E isoforms. Fat treatments did not affect dressing percentage, 45 min and 24 h pH, backfat depth, loin muscle area, primal cuts, purge loss, drip loss as well as objective and subjective color. Although not significant (P = 0.07), pork from the γ-tocopherol pigs had a lower pH than the ATA treatment. The γ-tocopherol supplementation tended to have a lighter subjective color (P = 0.06) as well as increased L*, decreased a*, and increased the hue angle calculations at 7d shelf-life. The belly depth was greater (P = 0.01) along with higher lateral (P < 0.01) and a lower vertical (P < 0.01) flex for pigs fed tallow.ConclusionIn conclusion, feeding tallow to heavy weight pigs (150 kg) could improve belly firmness. Also, α-tocopherol did not improve shelf-life stability and γ-tocopherol could negatively affect subject and objective pork loin color.

Tenderness has a prominent position on meat quality and is considered to be the sensory characteristic that most influences meat acceptance. Therefore, the aim of this study was to evaluate the accuracy and determine correlations among three different meat shear force techniques. Commercial samples of bovine Longissimus thoracis et lumborum (BLTL), Tensor fasciae latae (BTFL), Semitendinosus (BST), Psoas major (BPM), Biceps femoris (BBF) and swine Longissimus thoracis et lumborum (PLTL) were analyzed for pH, proximate composition, cooking loss and shear force with a classical Warner-Bratzler device and a TA-XT2 Texturometer equipped with shear blades 1 and 3 mm thick. The effect of different techniques in each studied muscle was statistically analyzed and regression curves were built. Results from the 1 mm blade were quite similar to the ones obtained with the Warner-Bratzler, however the results from 3 mm blade were overestimated (p<0.05). Significant correlation (p<0.01) among shear force technique using Warner-Bratzler and the ones using the Texturometer was observed (0.47 for 1 mm blade and 0.57 for the 3 mm blade). In conclusion, we found that the 1 mm blade and the Warner-Bratzler machine are reproducible for all tested muscles, while the 3 mm blade is not reproducible for the BTFL, BST, BPM, BBF, PLTL. There is a significant correlation between the results obtained by the classical Warner-Bratzler and the TA-XT2 Texturometer equipped with both blades. Therefore, TA-XT2 Texturometer equipped with the 1mm blade can perfectly replace the traditional Warner-Bratzler device.

Feeding systems and other factors associated with processing influence meat quality, and therefore sensory attributes. This study was conducted to assess the meat quality attributes of young grain-fed and older grass-fed steers that mostly affect consumer acceptability of beef. Eighty Bonsmara steers consisting of 20 each of A-age (0-tooth) grain-fed (AC) and grain-fed supplemented with zilpaterol (AZ), 20 each of grass-fed AB (1-2 teeth) and B-age (3 - 6 teeth) animals were used. This combination represented the typical feeding systems of South Africa and other countries using similar classification systems, therefore describes the typical feeding systems of the South African beef industry. The longissimus lumborum (LL), semitendinosus (ST), and biceps femoris (BF) muscles were tested for colour, moisture properties, lipid oxidation and sensory attributes. It was found that diet in combination with animal age influenced meat colour. Muscles of the older grass-fed steers were generally darker and duller (darker red) compared to muscles of young grain-fed animals. Moisture loss was consistently higher in zilpaterol supplemented meat samples compared to the feedlot controls, while muscles of the grass-fed animals had lower moisture loss. A sensory panel clearly distinguished between cuts of grain-fed (AZ and AC) and grass-fed carcasses (AB and B) on the grounds of flavour characteristic. The AB and B cuts scored higher for grassy, animal-like and rancid flavour overtones and lower for roasted flavour and sourness than AZ and AC grain-fed cuts. This indicated that typical flavours related to diet define expected eating quality. Keywords: age, grain, grass, meat quality, zilpaterol

Abstract Muscular dystrophies are hereditary diseases that lead to progressive degeneration of the skeletal musculature. Golden Retriever dogs are used as animal models because they show a hereditary muscle disease similar to muscular dystrophy in humans. Aims: To evaluate the immunostaining of M1 (CD68) and M2 (CD163) macrophages, MHC I, MHC II and, utrophin in muscles of Golden Retriever dogs affected by muscular dystrophy (GRMD). Methods: Samples from 17 male dogs affected by GRMD were divided into GI - dystrophic dogs up to one year of age; and GII - dystrophic dogs over one-year-old. Results: Immunostaining of CD163 was higher than CD68 in both GI and GII. CD68 showed no variation between groups of dystrophic animals. MHC class I immunostaining was most evident in the biceps femoris and triceps brachialis. MHC class II was expressed mildly in four dystrophic muscle types in GI and GII. Utrophin immunostaining was higher in GII. Conclusion: M2 macrophages were one of the main mononuclear inflammatory cells found in dystrophic muscles. The number of M2 in muscles of dogs with GRMD increases with age, linking this cell subtype to permanent muscle damage.

Abstract Background Intensive selection for faster growth rate and higher lean percentage led to increase in protein deposition but deterioration in meat quality of pigs, thus there is growing interest in exploring the nutritional strategies to improve meat quality. Methionine has been shown to activate mechanistic target of rapamycin complex 1 protein kinase that plays pivotal roles in the regulation of protein and lipid synthesis. However, few study reports are available regarding the effects of dietary methionine supplementation at levels beyond growth requirements on lipid and protein metabolism and thus on pork quality. The objective of this study was to assess whether pork quality was improved by increasing dietary digestible sulfur amino acids (SAA) levels, with pigs fed the control (100% SAA), DL-Methionine (125% SAA)- or OH-Methionine (125% SAA)-supplemented diets during 11–110 kg period. Results Increasing SAA above requirements did not significantly affect growth performance, whereas improved pork quality as indicated by the decreased drip loss and a tendency towards decrease in shear force of longissimus lumborum muscle. Moreover, fresh muscle from barrows fed OH-Methionine showed a higher lightness value compared with the control and DL-Methionine treatments. The relatively lower shear force might be explained by the decrease in crude protein and increase in glycolytic potential, while the decreased drip loss was associated with down-regulation of genes (like fast glycolytic IIx) regulating fiber types. The increased lightness value of fresh muscle from barrows fed OH-Met diets appeared to be associated with the increased lactate level, which can be further explained by the increased plasma short-chain fatty acids concentrations, up-regulated G-protein coupled receptor 43 activation and enhanced glucagon-like peptide 1 secretion. Conclusion Increased SAA consumption appeared to improve pork water-holding capacity and tenderness likely through regulation of energy and protein metabolism and muscle’s fiber profile, which provides new insights into the nutritional strategies to improve meat quality.

Effects of hormonal growth promotant (HGP) implantation on liveweight, carcass and meat quality measurements were examined using 80 Angus yearling cattle. After entry to the feedlot, 40 steers and 40 heifers were implanted with Revalor-S (28 mg oestradiol and 140 mg trenbolone acetate) and Revalor-H (20 mg oestradiol, 200 mg trenbolone acetate), respectively. Cattle were slaughtered after 55 and 65 days on feed. Samples from the Mm. longissimus dorsi, biceps femoris (the cap and body portions), gluteus medius (the eye and D portions), infraspinatus and triceps brachii were prepared for sensory testing after aging for 5 and 21 days after slaughter. A total of 854 muscle samples were cooked by grill (601) or roast (253) methods and served to consumers using the Meat Standards Australia taste panel protocols. When adjusted to the same initial liveweight, implantation with Revalor-H and Revalor-S resulted in a 4 and 7% increase in slaughter weight, respectively. Implantation resulted in an increased ossification score in steers (P < 0.05), but not in heifers. There was a significant interaction (P < 0.05) between HGP implantation and days aged for shear force. There was a small effect of HGP implants on compression (P < 0.05), but not on cook loss and intramuscular fat percentage. Muscles differed in their response to HGP implantation (P < 0.05) for tenderness, overall liking and palatability scores. Muscles also differed in their aging rates after slaughter (P < 0.05). The greatest response in sensory scores to HGP implantation was found in those muscles that had the highest aging rates. Possible mechanisms by which muscles differed in their response to HGP implantation are discussed.
