From food waste to wealth: valuing excess food in France and the USA

As bulking agents (BA) affect the composting process, this work examined the impact of combinations of different organic components in order to obtain an efficient co-substrate for food waste (FW) in-vessel composting. To boost the occurrence of microorganisms inhabiting the compost, mature compost was firstly coupled with wheat straw, added to FW, and considered as a control (BC0). Then, two trials (BC10, BC20) including 10% and 20% of biochar were monitored. The results indicated that the temperature of the amended bioreactors was notably increased compared to the unamended one. Thermophilic temperatures were achieved at 14, 34, and 78 h after the experimental setup for BC20, BC10, and BC0, which lasted for 14, 17, and 12 days, respectively. When it came to an assessment of maturity and stability, the quality of the compost was evaluated against several indicators and compared with the compost quality standards of the UK, France, Canada, the USA, Poland, and Germany. BC10 illustrated a high-quality product in relation to the heavy metal concentration, a C:N ratio which reached 14.97, an AT4 which was lower than 6 (4.36 mg O2/g TS), and a nitrification index of 2.61 (<3). Consequently, the addition of 10% of biochar as a co-substrate showed an improvement of the process evolution and the characteristics of the biofertilizer produced.

AbstractThe present study reviews previous published estimates as to the scale of food waste in the USA and its ecological toll (e.g., in terms of methane emissions and water usage to support the production of wasted food). The review further discusses recent public policy and private action designed to curb food waste or to apply wasted food toward hunger alleviation, biofuel production and soil nourishment. We further consider and expand upon previous estimates comparing the scale of food waste to the present scale of the US hunger problem. These estimates suggest that the recovery and redirection of an additional 15% of the present stock ofediblefood waste would meet 35% of the caloric needs of all Americans living in a food insecure household or very low food security household. Then, a modest to moderate proportional increase in edible food waste recovery could greatly reduce the US hunger problem in its present state. We estimate that the successful redirection of 15% of presently-wasted (edible) food in the USA would be sufficient to fully sustain 18.45 million individuals. Given available data, we cannot precisely assess the nutritional characteristics of this potential stock of food. The present study emphasizes the traditional and future importance of integrated public policy and private action at the municipal level, as food waste is typically disposed of or recovered at this level.

Purpose Despite the perfect nutritional value of imperfect “ugly” produce, they are either never harvested or discarded, resulting in escalating farm-to-fork food waste problems in the USA. The purpose of this paper is to investigate US consumers’ perceptions of imperfect “ugly” produce and their willingness to purchase and consume these foods in their households. Design/methodology/approach Four focus group sessions with at least five voluntary participants per session were conducted. Each session used structured interview questions and the discussions were led by the same moderator. All sessions were recorded, transcribed and analyzed based on published focus group guidelines and recommendations. Findings The research study has revealed two categories of potential consumers, Influencers and Learners, when it comes to an initial understanding of “ugly” produce consumption. The study also identified nine themes (i.e. food safety, price sensitivity, location of sale, product display, name/label, purpose of use, fun, targeted education and food waste) that consumers hold regarding imperfect “ugly” produce. Research limitations/implications Insights from this study provide strategies for sustainable food management that could help stakeholders along all points of the food chain save money, reduce hunger and diminish food waste in our communities. Originality/value This study serves to provide preliminary insights in approaching the issue of consumers’ perception of imperfect “ugly” fruits and vegetables from a research perspective. Although a limited number of real consumers from the local community participated, their rich and in-depth qualitative responses defined the scope and the defining questions that need further exploration.

Abstract. TV news are essentially cultural phenomena. Previous research suggests that the often-overlooked formal and implicit characteristics of newscasts may be systematically related to culture-specific characteristics. Investigating these characteristics by means of a frame-by-frame content analysis is identified as a particularly promising methodological approach. To examine the relationship between culture and selected formal characteristics of newscasts, we present an explorative study that compares material from the USA, the Arab world, and Germany. Results indicate that there are many significant differences, some of which are in line with expectations derived from cultural specifics. Specifically, we argue that the number of persons presented as well as the context in which they are presented can be interpreted as indicators of Individualism/Collectivism. The conclusions underline the validity of the chosen methodological approach, but also demonstrate the need for more comprehensive and theory-driven category schemes.

Abstract. The current study examines the item and scalar equivalence of an abbreviated school-based universal screener that was cross-culturally translated and adapted from English into German. The instrument was designed to assess student behavior problems that impact classroom learning. Participants were 1,346 K-6 grade students from the US (n = 390, Mage = 9.23, 38.5% female) and Germany (n = 956, Mage = 8.04, 40.1% female). Measurement invariance was tested by multigroup confirmatory factor analysis (CFA) across students from the US and Germany. Results support full scalar invariance between students from the US and Germany (df = 266, χ2 = 790.141, Δχ2 = 6.9, p < .001, CFI = 0.976, ΔCFI = 0.000, RMSEA = 0.052, ΔRMSEA = −0.003) indicating that the factor structure, the factor loadings, and the item thresholds are comparable across samples. This finding implies that a full cross-cultural comparison including latent factor means and structural coefficients between the US and the German version of the abbreviated screener is possible. Therefore, the tool can be used in German schools as well as for cross-cultural research purposes between the US and Germany.
