Изучены рост и развитие бычков — помесей красной степной с казахской белоголовой породой в равнинной провинции Дагестана. Установлено, что помесный молодняк, по сравнению с чистопородным скотом красной степной породы, имеет более высокую живую массу при рождении на 1,8 кг, или 7,3%. При отъеме в 8-месячном возрасте помеси имели живую массу 210 кг против 187,6 кг у красного степного молодняка, что на 22,4 кг, или 11,9% выше. В 12-, 15- и 18-месячном возрасте живая масса помесных бычков равнялась 291,8 кг, 359,7 и 436,6 кг, соответственно, или на 28 кг, 36 и 45,8 кг больше по сравнению с красным степным скотом. Среднесуточные приросты помесных бычков за период выращивания и откорма составили 760 г, что выше на 12,1% по сравнению с чистопородным красным степным молодняком. После заключительного откорма и убоя помесные бычки дали тяжеловесные туши с хорошим поливом. По массе парной туши они превосходили чистопородных аналогов на 31,3 кг, или 15,6% с преимуществом выхода туши на 2,4%. Убойный выход у бычков опытной группы составил 58,7%, контрольной — 55,8%. От помесных бычков были получены тяжеловесные шкуры массой 27,1 кг, от чистопородных — 21,6 кг, преимущество по этому показателю имели помесные животные 5,5 кг, или 25,4%. Для увеличения производства говядины в равнинной провинции Дагестана рекомендуем скрещивание коров красной степной породы с быками казахской белоголовой породы. The growth and development of bulls of red steppe crossbreeds with the Kazakh white-headed breed in the flat province of Dagestan were studied. It was found that young crossbreed animals in comparison with purebred red steppe cattle have a higher live weight at birth by 1,8 kg or 7,3%. When weaning at 8 months of age, cross-bred bulls had a live weight of 210 kg against 187,6 kg in red steppe young, which is 22,4 kg, or 11,9% higher. At 12, 15 and 18 months of age, the live weight of crossbred bulls was 291,8 kg, 359,7 and 436,6 kg, respectively, or 28 kg, 36 and 45,8 kg more than the red steppe cattle. The average daily growth of cross-bred bulls during the growing and fattening period was 760 g compared to 678 g, that is, they were 12,1% higher compared to purebred red steppe young. After the final fattening and slaughter, the cross-bred bulls gave heavy carcasses with good watering. By weight of the paired carcass, they were superior to purebred counterparts by 31,3 kg or 15,6% with an advantage of 2,4% carcass yield. The slaughter yield of bulls in the experimental group was 58,7%, 55,8% in the control group, respectively, with an advantage in favor of crossbreeds of 2,9%. Heavy skins weighing 27,1 kg were obtained from crossbreed bulls, 21,6 kg from purebred ones, and crossbreed animals of 5,5 kg or 25,4% had an advantage in this indicator. Studies have shown that in order to increase beef production in the lowland province of Dagestan, it is necessary to use crossbreeding of the breeding stock of the red steppe breed with bulls of the Kazakh white-headed breed.

ABSTRACT The aim of this study was to determine the influence of gender on pre-weaning growth, yield and weight of primal cuts of the carcass of Blackbelly x Pelibuey lambs. 16 twin lambs were used. The lamb gender was the fixed factor. The variables evaluated were: body weight at birth and at weaning, average daily weight gain, weight and yield of carcass and primal cuts: neck, arm, thorax, abdomen and leg. Gender did not affect (P>0.05) body weight at birth. However, the pre-weaning average daily weight gain and body weight at weaning were affected (P<0.05) by the gender. Hot carcass yield and weight and primal cuts were not affected (P>0.05) by the gender of the lamb. Nevertheless, the area of the Longissimus dorsi muscle and cavity fat were different between males and females (P<0.05) 11.5±0.73cm2 and 198±0.05 g vs 9.3±0.73cm2 and 282±0.05g, respectively. In conclusion, in twin lambs Blackbelly x Pelibuey males had greater average daily weight gain and body weight at weaning than females. Carcass yield and weight and primal cuts were not affected by the gender of the lamb. However, males had greater area of the L. dorsi muscle than females and these in turn had a greater amount of cavity fat than males.

The objective of this work was to evaluate the quantitative characteristics of carcasses of Moxotó and Canindé goats finished in feedlots and fed diets of two levels of energy. It was used 40 castrated young goats, 20 from Moxotó breed and 20 from Canindé breed, each one with an average body weight of 15.2 kg. The animals were fed with diets containing 2.20 and 2.71 (Mcal/kg DM). The experimental period lasted 86 days. There was no difference among the barometric measures of Moxotó and Canindé kids. Canindé goats showed higher final weight, higher weight after fasting and higher hot and cold carcass weights when compared to the Moxotó animals. Animals that consumed diets with higher energy level had higher final weight and conformation as well as higher carcass yield. Considering the percentage values of the commercial meat cuts, no difference among treatments was observed. The diet was the factor that most influenced the non-constituent components of the carcass of Moxotó and Canindé goats. In general, animals belonging to the Canindé breed presented higher quantitative characteristics than the Moxotó breed. Supply of diets with higher energetic level (2.71 Mcal/kg DM) for goats from Moxotó and Canindé breeds, in feedlots, favors the production of carcass with higher yields and heavier commercial meat cuts.

The study was conducted with the objectives to understand the effect of age of native Pabna bulls on feed conversion ratio (FCR), digestibility and carcass yield characteristics. Fifteen Pabna bulls having five  in each age groups of 6 to12, 13 to 24 and 25 to 36 months  were fed   ad libitum mix silages of Splendida (Setaria splendida) and Andrpogan (Andropogon gyunus) grasses (1:1 fresh) and supplemented with a concentrate mixture at 1% of live weight (LW) for a period of 72 days. With the increase of age, and subsequently LW (initial LW: 98.2, 182.6 and 288 kg, respectively), there was significant decrease in dry matter (DM) intake as % LW (<0.05; 2.94, 2.61 and 2.36, respectively) and increased daily gain (<0.01; 294, 519 and 597 g/d, respectively). However, the feed conversion ratio (FCR) (>0.05; 10.88, 10.10 and 12.24, respectively) and DM digestibility (>0.05; 51.0, 48.1 and 49.1 %, respectively) of bulls were remained unchanged. In case of carcass yield characteristics, significantly lower yield grade (<0.01; 1.79, 1.27 and 0.20, respectively) of bulls of 25 to 36 years produced higher closely trimmed boneless retail cuts (CTBRC) (<0.01; 50.47, 51.64 and 54.14 %, respectively), retail cut (<0.01; 76.14, 78.55 and 83.48 %, respectively) and meat quality index (MQI) (<0.01; 67.28, 67.89 and 69.07, respectively) compared to younger bulls. It may, therefore, be recommended that beef cattle farming with native Pabna bulls of 24 to 36 months will give more daily LW gain and produce more CTBRC at a similar FCR compared to younger ones.Bang.
