Total Phenolic Compounds of Fruit and Vegetable Powders in Thailand

Fruits and vegetables pack with various antioxidant compounds which are known as an essential constituent for maintaining health. Unfortunately, the shelf life of fresh produces is short after harvesting. As a result, a dehydration process by converting freshly harvested parts into powders can be an alternative to extend the storage period. The powder delivers not only nutrients, flavor, color, and texture, but the dehydrated form is also easy for storage, transportation, and is used as an ingredient in healthy products. However, the loss of essential nutrients can besides occur during the dehydration process. In order to develop superfoods, choosing the type of fruits and vegetables which can maintain the highest both favor and nutritional is the most crucial consideration to gain the highest phytonutrients after the preservative process. This study was designed to explore and evaluate the potential of tropical Thai’s fruit and vegetable powders on antioxidant activity based on total phenolic compound (TPC) compared with the commercial superfoods outside the country. The TPC was assessed based on the Folin–Ciocalteu reagent (FCR), correlating with antioxidant capacities. Gallic acid equivalents (GAE) in milligrams per gram dry of the sample was expressed. The highest GAE of the imported product (from a total of nine samples) was found to be 11.32+0.09 mg whereas the highest level of the total polyphenols was found in Thai’s veggies (Teaw) and fruit (Emblica) at 152.16+11.10 and 134.82+2.27, respectively. These GAE values are higher than the GAE values of selected imported fruits and veggies, which are well known as superfood constituents.

Purpose This paper aims to examine the bioactive compounds and texture properties of cereal bars formulated with banana peel flour during storage. Design/methodology/approach Seven cereal bars were produced and stored during 11 months, under vacuum and protected from the light. The total phenolic compounds, the activity antioxidant by ABTS [2,2′-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid)] method, the DPPH (2,2-diphenyl-1-picryl-hydrazyl-hydrate) method expressed as EC50 (concentration required to reduce the original amount of free radicals by 50 per cent) and texture properties were evaluated over the storage period. Findings In general, total phenolic compounds decreased during storage (from 4.19 to 1.11 mg GAE. g-1f.w.). Although the total antioxidant activity (ABTS method) increased during the fifth month, it reduced during storage (from 3.41 to 0.30 µmol TE.g-1f.w.); and the EC50 was not modified in many formulations, though it decreased in other formulations during storage period (from 3913 to 19221 g fruit.g-1 DPPH). The force of rupture began to increase in the fourth month (reaching 62.4 N), and hardness began to increase in the ninth month (reaching 444 N). The formulation and time factors influenced the total phenolic compounds, total antioxidant activity (ABTS method), force of rupture and hardness, while EC50 was only influenced by the formulation (p-value = 0.001). A principal component analysis showed that time had little effect on the most important characteristics considered in description of the cereal bars. Originality/value Cereal bars can be consumed up to the third month of storage, considering the texture of the products. Moreover, the presence of bioactive compounds in cereal bars depends on the addition of banana peel flour, which it contributes to the insertion of total phenolic compounds and total antioxidant activity in cereal bars, aggregating functional properties in these products.

<p><em>Brazil has a very large surface area and therefore is not always possible the people to have access to all varieties of fruit. Considering this fact, the consumption of frozen fruit pulp has been increase. The aim of this study was to evaluate the content of total phenolics, flavonoids and antioxidant activity of nine commercial frozen fruit pulps. The antioxidant activity was evaluated by the ability to scavenging the 2.2-diphenyl-1-picryl-hydrazil (DPPH) radical, while the phenolic analysis was performed by spectrophotometry. The pulps showed levels of total phenolic compounds ranged from 14.97 mgEAG.100g<sup>-1</sup> (lemon) to 112.40 mgEAG.100g<sup>-1</sup> (orange). The highest content of flavonoids was observed for the raspberry pulp (35.09 mgEQ.100g<sup>-1</sup>). The orange pulp showed higher antioxidant capacity, with sequestration percentage of 108.79%, followed by kiwi, peach and tamarind. The results of this study demonstrated that the frozen fruits pulp are good sources of antioxidant compounds and their use should be encouraged among the population.</em></p><p>DOI: 10.14685/rebrapa.v5i3.143</p><p>&nbsp;</p><p><em><br /></em></p>

Fruits and vegetables are considered a good source of antioxidants, which are beneficial in protecting the human body against damage induced by free radicals and other reactive oxygen (ROS) and nitrogen (RNS) species. In this work, we aimed to evaluate the integral antioxidant activity (AOA) and determine individual polyphenols in fruits and vegetables of frequent consumption. For this purpose, an innovative and high throughput analytical approach based on original QuEChERS assisted by ultrasound extraction (USAE), instead of the manual agitation used in the classical procedure, was optimized and implemented for the isolation of polyphenols. The total phenolic content (TPC), flavonoids, anthocyanins, and betalains were evaluated using different spectrophotometric assays. In addition, free radical scavenging by methods 2,2’-azinobis-(3-ethylbenzothiazoline-6-sulfonate) (ABTS) and 2,2′-diphenyl-1-picrylhydrazyl (DPPH) and ferric reducing antioxidant power (FRAP) were used to estimate the AOA of the investigated fruit and vegetable extracts. Red onion, tamarillo, and beetroot were the samples with the highest AOA. The quantification and identification of free low molecular weight polyphenols from QuEChERS-USAE extracts was carried out by ultra-high-pressure liquid chromatography equipped with a photodiode array detection system (UHPLC-PDA). Catechin was the most abundant polyphenol, followed by gentisic and ferulic acids, mainly in the watercress sample. In relation to flavonols, quercetin and kaempferol were found mostly in onion samples, and in small quantities in tomato and watercress. The improved analytical approach, QuEChERS-USAE/UHPLC-PDA, offers an attractive alternative for the analysis of polyphenols from fruit and vegetable samples, providing several advantages over traditional extraction techniques, in terms of reproducibility, simplicity, low cost, analysis speed, and analytical performance.

Pigmen content, total phenolic compound and antioxidant activity Sargassum sp.   Sargassum sp. contains secondary metabolites which potentially act as natural source of antioxidant. The purpose of this study was to determine bioactive contents (pigments, total phenolic compounds), and antioxidant activities of Sargassum sp. The method of this research is descriptive-explorative.  Sample was extracted with methanol, while pigments extraction with aseton 80%.  Chlorophyll a, b and carotenoids were carried out with spectrophotometer method. The total phenolic compounds were analyzed by spectrophotometer method using Follin-Ciocalteu reagent, and antioxidant activities were measured using DPPH (1,1-diphenyl-2- picrylhidrazyl) method. The result of this research showed that methanol extract of Sargassum sp. had the presence of chlorophyll a 2.84 mg/g, chlorophyll b 1.15 mg/g, and carotenoids 2.63 μmol/g sample. The total phenolic compounds of methanol extract were 57.97 mg GAE/g sample. Methanol extract of Sargassum sp. was showing a strong antioxidant activity that could be seen in IC50 value (69,27 ppm) in less than 100 ppm concentration. Sargassum sp. mengandung beberapa metabolit sekunder yang berpotensi sebagai sumber antioksidan alami. Tujuan dari penelitian ini adalah mengkaji komponen bioaktif (pigmen, total fenolik) dan aktivitas antioksidan dari rumput laut Sargassum sp. Metoda penelitian ini adalah diskriptif eksploratif.  Sampel Sargassum sp. basah diekstraksi dengan cara maserasi dengan pelarut  metanol, sedangkan ekstraksi pigmen menggunakan aseton 80%. Penentuan kadar pigmen (klorofil a, b, karotenoid ), total fenolik dan aktivitas antioksidan berdasarkan metode spektrofotometri. Total fenolik diukur berdasarkan uji Follin-Ciocalteu, dan   aktivitas antioksidan  berdasarkan uji DPPH (1,1-diphenyl-2- picrylhidrazyl). Hasil penelitian menunjukan bahwa ekstrak metanol Sargassum sp.  mengandung pigmen klorofil a sebesar 2,84 mg/g, klorofil b sebesar 1,15 mg/g, dan karotenoid sebesar 2,63 μmol/g. Kadar total fenolik ekstrak metanol adalah 57,97 mgGAE/g, sementara aktivitas antioksidannya  (IC50) sebesar 69,27 ppm.  Berdasarkan nilai IC50nya, ekstrak metanol Sargassum sp berpotensi sebagai antioksidan kuat (kurang dari 100 ppm).

Germander (Teucrium, Lamiaceae) is a genus commonly used as a medicinal herb in the middle east. The aim of this study was to estimate total polyphenols and antioxidant activity of different extracts from two Syrian Teucrium species (Teucrium polium and Teucrium creticum). Total polyphenols content was measured using Folin-Ciocalteu assay and the antioxidant activity was evaluated in vitro by DPPH assay (free radical scavenging activity against 1, 1 –diphenyl-2-picrylhydrazyl). The total polyphenols content and antioxidant activity of T. creticum extracts were higher than T. polium ones. Phenols contents ranged from 16.388 to 105.672 mg GA E/ g dry weight extract. The extracts showed significant scavenging activity against DPPH, with IC50 values ranging between 0.195 and 0.710 mg/ml. The methanolic extracts show higher antioxidant activity from the two species. A good correlation between DPPH scavenging activities and contents of polyphenols was found. These results show that Syrian Teucrium species, especially T. creticum least Known among all, is a rich source of phenols and natural antioxidant compounds, that can be used as a natural food preservative.

Abstract Ilex paraguariensis, commonly known as yerba mate, is a tree species native to South America. Its commercial value is due to the manufacturing of teas, with potential also in the pharmacological and cosmetic industries. Vegetative propagation of yerba mate is considered an innovation to the traditional production systems based on sexual propagation. The present study aimed to evaluate the rhizogenic potential and chemical attributes of mini-cuttings from 15 yerba mate genotypes, as well as to verify the correlation between phytochemical and rooting-related variables. Mini-cuttings were collected from a pre-existing mini-clonal hedge and the experimental design was completely randomized, with 15 treatments (genotypes), four replications and 10 mini-cuttings per plot. After 120 days, mini-cuttings were assessed regarding rooting, mortality, callogenesis and leaf retention percentages, percentage of mini-cuttings with both calluses and roots, number of roots and average root length. At the time of collection, subsamples from each plot were used for phytochemical analyses including total phenolic compounds, protein, caffeine and theobromine contents and antioxidant activity. Rooting percentages ranged from 5 to 72.5%, with significant variation among genotypes. Adventitious rooting and phytochemical profile of yerba mate mini-cuttings are genotype-dependent. Leaf retention is a relevant factor in the rooting of yerba mate mini-cuttings and the levels of total phenolic compounds, antioxidants and theobromine present in mini-cuttings are negatively correlated components to Ilex paraguariensis adventitious rooting.

The brewing industry produces high quantities of solid and liquid waste, causing disposal issues. Brewing spent grains (BSGs) and brewing spent hop (BSH) are important by-products of the brewing industry and possess a high-value chemical composition. In this study, BSG and BSH, obtained from the production process of two different types of ale beer (Imperial red and Belgian strong beer) were characterized in terms of valuable components, including proteins, carbohydrates, fat, dietary fiber, β-glucans, arabinoxylans, polyphenols, and phenolic acids, and antioxidant activity (Ferric Reducing Antioxidant Power Assay (FRAP), 2,2-Diphenyl-1-picrylhydrazyl (DPPH) and 2,2′-Azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS)). Significant concentrations of total polyphenols were observed in both BSH and BSG samples (average of about 10 mg GAE/g of dry mass); however, about 1.5-fold higher levels were detected in by-products of Belgian strong ale beer compared with Imperial red. Free and bound phenolic acids were quantified using a validated chromatographic method. A much higher level of total phenolic acids (TPA) (about 16-fold higher) was found in BSG samples compared with BSHs. Finally, their antioxidant potential was verified. By-products of Belgian strong ale beer, both BSG and BSH, showed significantly higher antioxidative capacity (about 1.5-fold lower inhibitory concentration (IC50) values) compared with spent grains and hop from the brewing of Imperial red ale. In summary, BSG and BSH may be considered rich sources of protein, carbohydrates, fiber, and antioxidant compounds (polyphenols), and have the potential to be upcycled by transformation into value-added products.

Ten indeterminate tomato cultivars differing in fruit shape and typology, grown simultaneously in a greenhouse from Oltenia (Southwestern Romania) and harvested at red ripe stage, were investigated for the contents in ascorbic acid, lycopene, β-carotene, total phenolics, minerals (K, Na, Ca and Mg) and trace elements (Fe, Cu, Mn, Cr, Zn and B). In addition, their antioxidant activities were determined. Significant differences were found among tomato cultivars in all studied antioxidant compounds, as well as in the antioxidant activity. Ascorbic acid ranged from 91.9 to 329.7 mg kg-1 fw, lycopene ranged from 19.7 to 49.0 mg kg-1 fw, while total phenolic compounds varied between 300.2 and 557.8 mg kg-1 fw. Antioxidant activity ranged from 0.81 mmol Trolox kg-1 fw to 1.74 mmol Trolox kg-1 fw and it was significantly correlated to total phenolics content (r = 0.91; p< 0.05). The cocktail type cultivar ‘Tiger’ and the cherry type cultivar ‘Belle’ proved to be the most powerful in antioxidant activity and phenolic compounds while the rectangular plum shaped cultivar ‘Porto’ recorded the highest average lycopene content. A valuable cultivar proved to be the brownish red ‘Sacher’ which registered among the highest contents of phenolics, lycopene and ascorbic acid. Mineral and trace elements contents were also significantly affected by cultivars. Values recorded for K, Ca and Mg ranged from 2139.6 to 3056.9 mg kg-1, 137.7 to 325.8 mg kg-1 and 27.3 to 168.7 mg kg-1 respectively.
