The European legislation set the new hygiene standards in food chain with the purpose to ensure high levels of public health protection in relation to food production. In order to guarantee excellent hygiene standards in food chain, particular attention must be paid to the presence of foreign matter, like light solid impurities of mineral, vegetable or animal origin. The light filth test is a suitable method used to detect and count light solid impurities applicable to different foodstuffs. We report the results of the analysis of 93 foodstuffs official samples investigated for the presence of foreign matter at the Institute for Experimental Veterinary Medicine of Sardinia, from 2012 to 2013. Insect fragments were found in a sample of semolina and in a sample of canned tomato; plastic fragments were found in a sample of grated bread.

The consumer demands that to be provided with a sufficient quantity of articles of animal origin that meet the requirements of sanitary hygiene and are available at acceptable prices. Food articles of animal origin that are safe for human consumption can be obtained only from healthy animals. Veterinarians are daily concerned with the health of animals and are taking measures to prevent the transmission of pathogenic microorganisms from animals to humans. The knowledge of epizootiology, microbiology, the sources and pathways of contamination of food articles of animal origin by microbiological and chemical pollutants, the procedures in the process of producing food articles in which such pollutants can be eliminated or reduced to an acceptable level, and the connection between these factors and human health, give veterinarians the key position in the securing of sanitary hygiene of articles of animal origin. The safety of articles of animal origin is a specialized field in the area of veterinary medicine that links all the activities of a veterinarian. In partnership with other professions, engaged in the chain of food production, veterinarians guarantee that food articles are safe for the health of consumers.

Salmonellosis remains one of the most frequent foodborne zoonosis, constituting a worldwide major public health concern. The most frequent sources of human infections are food products of animal origin, being pork meat one of the most relevant. Currently, particular pig food production well-adapted and persistent Salmonella enterica serotypes (e.g., Salmonella Typhimurium, Salmonella 1,4,[5],12:i:-, Salmonella Derby and Salmonella Rissen) are frequently reported associated with human infections in diverse industrialized countries. The dissemination of those clinically-relevant Salmonella serotypes/clones has been related to the intensification of pig production chain and to an increase in the international trade of pigs and pork meat. Those changes that occurred over the years along the food chain may act as food chain drivers leading to new problems and challenges, compromising the successful control of Salmonella. Among those, the emergence of antibiotic resistance in non-typhoidal Salmonella associated with antimicrobials use in the pig production chain is of special concern for public health. The transmission of pig-related multidrug-resistant Salmonella serotypes, clones and/or genetic elements carrying clinically-relevant antibiotic resistance genes, frequently associated with metal tolerance genes, from pigs and pork meat to humans, has been reported and highlights the contribution of different drivers to the antibiotic resistance burden. Gathered data strengthen the need for global mandatory interventions and strategies for effective Salmonella control and surveillance across the pig production chain. The purpose of this review was to provide an overview of the role of pig and pork meat in human salmonellosis at a global scale, highlighting the main factors contributing to the persistence and dissemination of clinically-relevant pig-related Salmonella serotypes and clones.

In this article, I explore how Buddhist charity workers in Vietnam interpret rising cancer rates through understandings of karma. Rather than framing cancer as a primarily physical or medical phenomenon, volunteers state that cancer is a product of collective moral failure. Corruption in public food production is both caused by and perpetuates bad karma, which negatively impacts global existence. Conversely, charity work creates merit, which can improve collective karma and benefit all living beings. I argue that through such interpretations of karma, Buddhist volunteers understand their charity at cancer hospitals as an affective and ethical form of public health intervention.

Plant-based diets (PBDs) are increasingly consumed by the Italian population and around the world. In particular, among PBDs, the vegan diet is a food pattern characterized by the exclusion of all animal-origin foods. What drives people to adopt this model are mainly ethical, health and environmental reasons. A vegan diet, if well-balanced and varied, can help in achieving and maintaining an optimal state of health. However, this nutritional approach, if not well-balanced, can cause deficiencies in proteins, ω-3 fatty acids, iron, vitamin D and calcium, zinc, iodine and, above all, vitamin B12. Oral food supplements especially fortified foods are recommended in these cases to restore the nutritional deficiencies. A vegan diet generally reduces the risk of developing chronic non-communicable degenerative diseases, such as metabolic syndrome (MetS) and, in addition, requires fewer natural resources for food production than an omnivorous diet. The aim of this review is to analyze the possible impact of the vegan diet on MetS onset and its treatment.

The authors review the literature on the subject of how women's work along the food chain may affect their nutritional status and other aspects of their lives. They point out the discrimination against women in food and work allocation: women often work harder and have greater energy expenditures than men but get less food. Bennett makes this point in her article too, and McGuire touches on it as well.
