Feedlot performance, carcass composition and meat quality of free-range reared pigs

The effects of the housing system (confinement versus free-range) and season (summer versus winter) on growth performance, carcass composition and meat quality were determined from commercial pigs with known NN genotype at the halothane locus. Free-range-housed pigs reared from 25 to 105 kg required 16 ± 1.2 (SEM) more days to reach market weight compared with confinement-housed pigs. Housing did not affect feed requirements during the summer, but food consumption increased by 13.7% for free-range pigs during the winter. Confinement-reared pigs had a 0.75 ± 0.28 kg heavier commercial carcass weight than free-range-reared pigs. While there was no difference in carcass fat thickness, muscle depth was 2.4 ± 1.02 mm greater in free-range-reared pigs with increased predicted lean yield from 59.1 ± 0.24% to 59.8 ± 24%. Free-range-reared pigs had heavier butts, loins and hams, and lighter bellies, which increased their wholesale carcass value by 2.9%. Furthermore, they had greater dissected lean in the picnic (2.0%) butt (4.0%), loin (4.5%) and ham (2.0%) with no compromise to pork quality. If the wholesale price is adjusted for the increased lean content of each cut by an additive or multiplicative model, apparent value was further increased to 5.7 or 8.1%. While these results suggest a beneficial effect on carcass merit when rearing hogs in outdoor facilities, they further suggest potential benefits to carcass grading using developing technologies that recognize differences in carcass conformation. Abstract. The study was carried out to investigate the effects of two housing systems on the growth performance, carcass traits, and meat quality of growing rabbits during the terminal fattening period. The rabbits were lodged in conventional cages between 35 and 59 days of age (growing period). At this age, they were moved into two different housing systems until they were 87 days of age (fattening period). During the fattening period, 48 rabbits were housed in 12 wire cages (0.5×0.6×0.35 m) and 48 rabbits were housed in one open-air pasture pen (20×9 m). At 87 days, 12 rabbits per treatment were slaughtered and the carcass characteristics and meat quality were evaluated. During the fattening period, the rabbits reared in cages had significantly higher live weights (3 062 vs. 2 705 g), weight gains (45.9 vs. 34.2 g·d−1) and feed intakes (163.4 vs. 110.2 g·d−1) than those reared in pens. The rabbits in the open-air group had a lower percentage of dissectible fat (1.35 vs. 4.19 %), a higher proportion of hind part (34.9 vs. 33.1 %), and less hind leg muscle (79.3 vs. 81.9 %) than caged rabbits. The m. biceps femoris of the rabbits in the open-air group had a higher cooking loss (3.64 vs. 3.02 %), Warner-Bratzler Shear Force (4.26 vs. 3.29 kg·cm−2), and myoglobin concentration (0.41 vs. 0.32 mg·g−1) than caged rabbits. The housing system had no effect on the dressing out percentage, viscera proportion, and ultimate pH. Open-air housing system reduces the growth of rabbits and the fat content of carcasses and increases the redness colour of meat.

A total of 60 female and 54 castrated male progeny of commercial Landrace × Large White F1 sows, backcrossed to Landrace or Large White boars, were slaughtered at an average liveweight of 102 kg. Four same-sex pigs were penned together. Large White sires were homozygous normal (NN) but Landrace sires were heterozygous carriers (Nn), at the halothane locus. Progeny genotypes at the halothane locus were determined by a DNA probe. Barrows grew 136 g d−1 faster (P < 0.0001), reaching market weight 13 d sooner (P < 0.0001) but with 3.2 mm more average back-fat (P < 0.0001) than gilts. Both sexes had similar feed requirements (P = 0.1221). Landrace and Large White-sired pigs had similar growth rate (P = 0.6458) and feed requirements (P = 0.9354), but Large White-sired pigs had 1.33 mm less grade fat thickness (P = 0.0131) and 1.72 more muscle depth (P = 0.0218) than Landrace-sired pigs. Nn pigs required 7 d longer (P < 0.0001) and 22 kg (P = 0.0393) more total feed to reach market weight than NN pigs, but they had 2.6 mm greater muscle depth (P = 0.0008) and had 1% greater commercial lean yield (P = 0.0291). However, meat quality of Nn pigs was reduced when compared with NN pigs. For example, colour reflectance and drip loss were higher (P < 0.0001) and soluble protein was lower (P < 0.0001) among the Nn pigs which also had less intrasmuscular fat (P = 0.0184). The results emphasize that the increased value of the carcass from Nn pigs may be offset by reduced feedlot performance and reduced meat quality, and questions the merit of the use of halothane gene to improve production efficiency in the commercial market. There is a growing demand by the modern consumer for meat containing less fat and lower levels of saturated fatty acids, which are considered to increase the risk of coronary heart disease. In southern Italy, the Gentile di Puglia breed is one of the most common on farms, and the light lambs are often consumed. The study evaluates the effect of a diet containing extruded linseed (Linum usitatissimum) on growth performances, carcass traits, and meat quality in Gentile di Puglia light lambs. Thirty-six male lambs are weaned at about 20 days of age, and divided into three groups—each group is either fed a control diet (C), a diet containing 3% extruded linseed (L), or a diet containing 3% extruded linseed and 0.6% oregano (Origanum vulgare) (L + O). The lambs’ growth performances and the slaughtering and dissection data did not differ between groups. Dietary treatments have no significant effect on the quality and chemical composition of Longissimus lumborum (Ll). The mount of linoleic acid in Ll meat is significantly higher in the L group, and this positively affected the total content of n-3 Polyunsaturated Fatty Acid, as well as the n-6/n-3 ratio. The good results obtained concerning the sensory traits meet the requirements of the market’s consumer.

SUMMARYTwenty-four Friesian steers, initially 5 months of age, were involved in a 2 × 2 factorial experiment which spanned grazing and silage feeding periods of 22 weeks' duration. In the first period, cattle were stocked at a uniformly high density, with half of the group being fed 1·25 kg/head per day of supplementary barley. In the second period, the cattle were subdivided into four groups and fed varying levels of barley with silage. Finally all the animals received 3·65 kg/head per day of barley. Replicates of the four treatments were slaughtered at random after 5 to 11 weeks on this treatment. Whilst supplementary cereal feeding significantly increased the live-weight gains of steers at grass by 11%, this live-weight advantage was offset by their slower gains in the final weeks before slaughter. Feeding cereals to grazing cattle had little effect on carcass composition or the proportions of carcass joints, but their beef was considered, by a tasting panel, to be more tender than the meat from the control steers.Increasing the level of barley fed with silage only increased live-weight gains by 2%, and had little effect on carcass or meat quality.

SUMMARYTwo experiments concerning the effects, on the carcass and meat characteristics of 18-months-old Friesian steers, of variation in grazing intensity and the level of barley feeding with silage are reported.Groups of 12 steers were grazed at different intensities over 5-month grazing periods, such that live-weight differences of 38 kg and 16 kg were recorded at housing. No compensatory growth was recorded during the subsequent winter feeding period.Whilst the grazing treatments had little effect on carcass or meat quality, higher levels of barley feeding with silage over the winter period (710 v. 410 kg/steer) had significant effects on live-weight gain, and increased carcass weight by 21 kg at slaughter. The higher yield of carcass weight was reflected in significant differences in carcass composition, joint proportions and retail cut-out value. Sixty per cent of the carcass weight difference was removed as trim fat. Differences in carcass fatness were not associated with any differences in eating quality.

The aim of the present study was to investigate the effects of induction hypothyroidism by propylthiouracil (PTU) on the growth performance and meat quality of fat-tailed Lori-Bakhtiari lambs. Eighteen Lori-Bakhtiari male lambs were randomly assigned to one of three groups (n = 6) and received daily treatments (gavage) consisting of 0 (Control: C), 10 (Low: L) or 20 (High: H) mg PTU/kg bodyweight/day for 60 days. PTU decreased plasma triiodothyronine and thyroxine concentration in both L and H (P < 0.0001). Lambs treated with PTU (L and H) had lower feed intake (P < 0.004), feed conversion efficiency (P < 0.003), and greater intramuscular fat than C lambs (P < 0.035). Meat from the L and H lambs had lower cooking loss and shear force, and also higher L* (lightness) than C lambs (P < 0.004, P < 0.015 and P < 0.025, respectively). The meat of H and L lambs was more tender than C lambs (P < 0.032). However, the meat of H lambs required fewer chews before swallowing than C lambs (P < 0.041). Generally, induction of mild hypothyroidism appeared to improve feed conversion efficiency and meat quality of lambs.
