Abstract The objectives of this trial were to evaluate the effects of levels of fiber in high-grain diets on carcass characteristics of feedlot lambs. Fifty-eight Dorper x Santa Inês ram lambs (initial BW 20.7 ± 1.19 kg and 75 ± 10.83 d old) were assigned to a randomized complete block design. The treatments were defined by the fiber (“Coastcross” hay) content in the diets (CP: 16,12% ± 0.92): 0F: no forage diet (NDF: 10.4%); 5F: 5% of forage (NDF: 12.1%); 10F: 10% of forage (NDF: 15.0%); 15F: 15% of forage (NDF: 15.5%); 20F: 20% of forage (NDF: 20.8%) and 25F: 25% of forage (NDF: 23.5%). The experiment lasted 89 days, at the end of this time, the animals were slaughtered (169 ± 10.83 d old) to evaluate carcass characteristics. There was a quadratic response for slaughter BW (0F: 46.3; 5F: 48.1; 10F: 49.4; 15F: 50.3; 20F: 48.5; 25F: 43.3 kg; P < 0.01), hot carcass weight (0F: 24.8; 5F: 25.6; 10F: 26.0; 15F: 25.7; 20F: 24.3; 25F: 21.8 kg; P = 0.01), cold carcass weight (0F: 24.3; 5F: 25.1; 10F: 25.4; 15F: 25.1; 20F: 23.8; 25F: 21.2 kg; P = 0.01) and longissimus dorsis area (0F: 16.3; 5F: 16.5; 10F: 17.4; 15F: 16.5; 20F: 16.0; 25F: 15.1 cm2; P = 0.04). There was a linear decrease in the hot carcass yield (0F: 53.0; 5F: 53.3; 10F: 52.5; 15F: 50.9; 20F: 50.1; 25F: 50.2%; P < 0.01), cold carcass yield (0F: 52.0; 5F: 52.2; 10F: 51.4; 15F: 49.8; 20F: 49.0; 25F: 48.9%; P < 0.01) and body wall thickness (0F: 16.2; 5F: 17.0; 10F: 16.3; 15F: 16.3; 20F: 15.1; 25F: 13.6 kg; P = 0.01). There was no effect on subcutaneous fat thickness. In conclusion, the diet with up to 5% of forage allowed higher carcass yield; however, the heavier carcasses were produced by the lambs that received 10F diet.

SUMMARY The aim of this study was to evaluate the effect of subcutaneous fat thickness (SFT) on slaughter in lambs ½ Dorper + ½ Santa Inês (DSI) on performance, carcass characteristics and commercial cuts. It was used twenty-four lambs, slaughtered with 2mm, 3mm and 4mm SFT. There was an effect of SFT on performance: for days of confinement (2mm = 51.38, 3mm = 66.50, 4mm = 91.63 days), age at slaughter (2mm = 139.38, 3mm = 159.88, 4mm = 171.00 days), final body weight (2mm = 33.50, 3mm = 42.81, 4mm = 46.19 kg), total weight gain (2mm = 18.75, 3mm = 25.08, 4mm = (2mm = 0.44, 3mm = 0.39, 4mm = 0.28kg), slaughter weight (2mm = 32.76, 3mm = 39.79, 4mm = 44.88 kg), body condition score (2mm = 2.97, 3mm = 3.13, 4mm = 3.56); for carcass characteristics: warm carcass weight (2mm = 15.33, 3mm = 19.16, 4mm = 21.90 kg) and cold (2mm = 15.03, 3mm = 18.75, 4mm = 21.47), cooling losses (2mm = 0.00234; 3mm = 0.00333; 4mm = 0.00201 kg), carcass yields: in the refrigerator (2mm=46,79; 3mm=48,30; 4mm=48,79%); commercial (2mm = 45.88, 3mm = 47.25, 4mm = 47.82%) and true (2mm = 52.93, 3mm = 54.51, 4mm = 55.67%); carcass compactness index (2mm= 0,250; 3mm=0,30; 4mm=0,33 kg/cm) for cut weights; neck (2mm=0,44; 3mm=0,55; 4mm=0,56 kg); palette (2mm=1,38; 3mm=1,61; 4mm=2,14 kg), flank steak (2mm=2,16; 3mm=2,73; 4mm=3,19 kg), loin (2mm=0,93; 3mm=1,14; 4mm=1,25 kg), and leg (2mm=2,68; 3mm=3,20, 4mm=3,76 kg). For the tissue composition of only the muscular cuts of the neck (2mm = 50.24, 3mm = 51.44, 4mm = 55.34%), bone of the neck (2mm = 30.24, 3mm = 29.63, 4mm = 25.91%), of the loin (2mm=15,05; 3mm=24,63; 4mm=24,71%) and the leg (2mm=11,38; 3mm=13,33; 4mm=13,13%), they presented differences between the SFT (p> 0.05). It is recommended to slaughter lambs ½ Dorper + ½ Santa Inês with 3mm of SFT.

The objective was to evaluate the effect of the substitution (0, 33, 66 and 100%) of corn by cassava wastewater dregs on carcass characteristics and non-carcass components of crossbred Santa Inês lambs. Forty male sheep, uncastrated with an average initial body weight of 20 ± 1.87 kg and five months of age, were used. These were housed in individual pens in a randomized block design with four treatments and ten repetitions and slaughtered after 70 days of confinement. Quadratic effect (P < 0.05) was observed for the empty body weight (EBW), hot carcass weight (HCW) and cold carcass weight (CCW) and carcass compactness index (CCI), with maximum points of 36.14, 19.45, 20.20 and 0.31 kg cm-1 for the replacement level of corn for cassava wastewater dregs, 50.0, 53.84, 54.04 and 45.45% respectively. There was also an effect (P < 0.05) on the weights of the rumen and “Buchada”, with maximum points of 0.909 and 6.25 kg per replacement level, 49.11 and 51.29% respectively. As for retail cuts, only the efficiency of the leg was altered (P < 0.05), having a linear increase while the other variables were not affected. Cassava wastewater dregs can be used in full as an alternative food in the diet of feedlot lambs without harming the main carcass characteristics and non-carcass components.

Abstract The objective of this study was to determinate the effects of narasin on carcass characteristics of lambs fed a diet containing different levels. Forty-four lambs were allotted in a randomized complete block design, defined by initial body weight (BW), in a 2x2 factorial arrangement. The first factor was forage (coastcross hay) inclusion (10 or 20%, DM basis) and the second factor was narasin (0 or 13 ppm). The experimental diets were isonitrogenous (17.4%, DM basis). The experiment lasted 112 days. At the end of the experiment, the lambs were slaughtered to evaluate the carcass characteristics and meat composition. Data were analyzed using the MIXED procedure of SAS and the LSMEANS option was used to obtain the means. The effects were considered significant when P < 0.05. There was no interaction between forage levels and narasin inclusion. The experimental diets did not affect the slaughter BW (54.8 ± 1.6 kg), hot carcass weight (29.3 ± 0.96 kg), dressing percentage (53.5 ± 0.67%) and LM area (18.8 ± 0.89 cm2). The inclusion of narasin increased 12th-rib fat (2.10 vs 2.75 mm; P < 0.01) and BW thickness (16.9 vs 20.2 mm; P < 0.01). The inclusion of 20% of hay decreased BW thickness (19.21 vs 17.9 mm; P = 0.03). The experimental diets did not affect the moisture (74.2 ± 0.53%) and ash content in meat (1.27 ± 0.04%). Narasin inclusion increased the fat (2.81 vs 3.62%; P < 0.01) and decreased the CP (21.3 vs 20.7%; P = 0.02) in meat composition. The inclusion of 10% of hay increased the fat in meat (3.5 vs 2.9%; P = 0.03), however, did not affect the CP content. In conclusion, the narasin inclusion and levels of hay improve the carcass characteristics and change the meat composition.

The aim of this study was to evaluate the effects of various dietary energy levels on the carcass and meat characteristics of feedlot-finished steers. A total of 27 purebred and crossbred Charolais and Nellore steers were used, with a mean initial age of 22 months and weight of 253 kg. The animals were allotted to a completely randomized design with three treatments and nine replicates each. Dietary treatments were arranged so that the average forage to concentrate ratio (FCR) was equivalent to that of a constant FCR treatment. The treatments consisted of CT (constant FCR at 60 to 40), CT5 (starting with 70: 30 FCR and finishing with 50: 50 FCR, that is, a mean overall FCR of 60: 40), and CT10 (starting with 80: 20 FCR and finishing with 40: 60, that is, a mean overall FCR of 60: 40). The dietary treatments did not affect slaughter weight, carcass weight, carcass conformation, physiological maturity, subcutaneous fat thickness, ribeye area, marbling score, and carcass measurements or the yield of commercial cuts. Chilling loss was higher in CT10 steers (2.41%) than in CT (2.26%) and CT5 (2.15%).

This paper aimed to identify and evaluate the effects of sire breed on temperament and productive traits of different cross-breeds between Nellore (NE), Tabapua (TB), and Brahman (BR) bulls mated with Angus cows (AN), as well as the relationship between temperament and productive traits. The productive traits measured in this study include slaughter weight and post weaning weight gain. Temperament was assessed by flight-speed (FS). Carcass data collected in this study include hot carcass weight, hot carcass percentage, cold dressing percentage, carcass length, initial pH, ultimate pH, subcutaneous fat thickness and carcass longissimus muscle area. The sire breed effect was greater for slaughter weight. Hot carcass weight was not affected by the sire breed. The longissimus muscle area was larger for AN x TB and AN x NE crossbreeds than for AN x BR crossbreeds. Subcutaneous fat thickness and cold dressing percentage were not affected by sire breed. The offspring of NE, TB, and BR sires mated with AN cows had similar carcass measurements, except for the longissimus muscle area, which was smaller for offspring sired by the Brahman breed. The temperament trait was not influenced by sire breed.

The aim of this study was to assess the influence of different finishing systems on the in vivo measurements, quantitative and qualitative carcass characteristics, commercial cut ratio, and shoulder tissue composition of lambs. Thirty-two male lambs were distributed in four finishing systems with eight replications each, as follows: suckling lambs on pasture; suckling lambs in confinement, with access to creep-feeding containing corn bran and soybean meal; weaned lambs fed roughage, characterized by ad libitum supply of alfalfa hay; and weaned lambs fed concentrate, composed of oat grain and soybean meal. The lambs were slaughtered as they reached the pre-set live weight at slaughtering of 30 kg. Most of the in vivo biometry variables were not significant (P > 0.05) when comparing the finishing systems, except for hindlimb height and thoracic perimeter. Regarding the quantitative carcass characteristics, all variables differed (P < 0.05) between systems, except for carcass length, leg width, and subcutaneous fat thickness. For the qualitative carcass characteristics, only the fatness and carcass conformation presented significant differences (P < 0.05). Most in vivo measurements and the proportion of carcass cuts were not influenced by finishing systems. Weaned lambs fed an exclusive concentrate diet presented leaner carcasses with an inferior conformation when compared to the other finishing systems. Suckling lambs in confinement presented shoulders with a higher fat deposition when compared to those weaned. Suckling lambs both on pasture and in confinement presented a superiority in the quantitative carcass characteristics when compared to weaned lambs.

ABSTRACT: The objective of this research was to examine the effect of subcutaneous fat thickness (SFT) on carcass characteristics and meat quality in 24-month-old British and crossbred British steers finished in feedlot systems. It was assessed using meta-analysis performed on data that was extracted from 46 published studies and comprising a total of 2,695 experimental units. We found that SFT was influenced by and increased linearly with hot carcass weights (HCWs) and cold carcass weights (CCWs) and their yields; moreover, the bone fraction decreased whereas the muscle and fat fractions increased with higher levels of SFT. No significant differences were detected in meat quality variables. Thus, SFT appeared to have a direct influence on HCW, CCW, and the weight and yield of bone, muscle, and fat of castrated steers. A uniform fat thickness level of 6.0 mm SFT was determined to be the standard of quality of carcasses and meat products for consumers.

The forage inclusion linear decreased ruminal concentration of propionate (0F: 45.4; 5F: 39.7; 10F: 41.5; 15F: 39.4; 20F: 35.3; 25F: 30.5 mM/100mM; P &lt; 0.01) and total SCFA (0F: 106.6; 5F: 96.4; 10F: 84.2; 15F: 90.6; 20F: 63.0; 25F: 71.2 mM; P = 0.01) and increased the ruminal concentration of acetate (0F: 43.4; 5F: 45.3; 10F: 47.8; 15F: 49.8: 20F: 51.8; 25F: 57.2 mM/100mM; P &lt; 0.01). However, there was a quadratic effect on ruminal pH (0F: 5.61; 5F: 5.66; 10F: 5.98; 15F: 6.27; 20F: 6.05; 25F: 5.74; P = 0.01). There was no effect of fiber levels on cecal concentration of acetate, propionate, butyrate and acetate:propionate ratio. Nevertheless, there was a linear decrease in cecal concentration of valerate (0F: 3.28; 5F: 2.35; 10F: 2.39; 15F: 2.64: 20F: 2.12; 25F: 1.80 mM/100mM; P &lt; 0.01) and total SCFA (0F: 173.9; 5F: 165.7; 10F: 153.2; 15F: 155.2; 20F: 139.9; 25F: 128.9 mM; P &lt; 0.01). Similarly to rumen, cecal pH presented a quadratic response (0F: 5.92; 5F: 6.12; 10F: 6.15; 15F: 6.23; 20F: 6.30; 25F: 5.83; P &lt; 0.01). In conclusion, cecal fermentation was different from rumen fermentation. However, pH variation was similar, with higher values for 15F diet.

The effect of sire breed on the growth and development of carcass characteristics was examined in 104 steer carcasses, over the weight range of c. 300 to 600 kg liveweight. The carcasses were obtained from 28 straightbred Hereford, 27 Brahman x Hereford, 23 Simmental x Hereford and 26 Friesian x Hereford steers, which were grown on pasture and slaughtered in four groups when the Herefords weighed c. 270, 370, 470 and 570 kg liveweight. Changes in carcass characteristics with weight were examined by using the linear form of the allometric equation (log10Y = log10A+blog10X). As liveweight increased, the proportion of carcass in the body increased (b = 1.152). At the same liveweight, Brahman cross steers had heavier carcasses than the Hereford steers, which were heavier than either the Simmental or Friesian cross steers (P < 0.05). Fat thickness at the 12th-13th rib site, and kidney and channel fat weight both increased at a proportionally faster rate than carcass weight (b = 1.511 and 1 567 respectively). At the same carcass weight, Hereford and Brahman cross carcasses had a greater fat thickness than Simmental and Friesian cross carcasses (P i 0.05). Differences between sire breeds in kidney and channel fat weight were not significant (P > 0.05). C:rcass length and eye muscle area increased at a proportionally slower rate than carcass weight (b = 0.268 and 0.466 respectively). At the same carcass weight, Friesian cross carcasses were longer, and Simmental cross carcasses had a larger eye muscle area than the other breed crosses (P < 0.05). As total side weight increased, the proportions of subcutaneous and intermuscular fatAincreased (b = 1.554 and 1.535 respectively), and the proportions of muscle and bone decreased (b = 0.938 and 0.676 respectively). At the same side weight, the Hereford and Brahman cross carcasses had more subcutaneous fat than the Simmental and Friesian cross carcasses (P < 0.05). The Hereford carcasses had more intermuscular fat than the Simmental cross carcasses, which had more muscle than the other breed crosses (P < 0.05). Friesian cross carcasses had more bone than the Simmental crosses, with Brahman cross and Hereford carcasses having the least bone (P < 0.05). Brahman cross carcasses had a higher conformation score than the Simmental cross and Hereford carcasses, the Friesian cross carcasses having the lowest (P < 0.05). Samples of the M. longissimus from Brahman cross carcasses had a higher Warner-Bratzler shear force than samples from the other breed crosses (P < 0.05).
