Introduction. Maintaining health and job longevity and decrease in the Russian working population’s occupational morbidity rate remains a current trend in public policy in health care. The purpose of the research was to evaluate the effectiveness of a new specialized food item with the following definition: “Fruit and vegetable Nectar, enriched with dietary fiber, pectin and vitamins” (from now on “Nectar”) as being healthy nutrition for individuals of auxiliary workshops of the copper industry. Materials and methods. Thirty-four workers participated in the research. The questionnaire, clinical and laboratory as well as statistical methods were applied. Results. Workers’ diet involved a high proportion of fats (44.6% of the total dietary calories) and insufficient food items sources of ascorbic acid. The share of individuals with an inadequate nutritional supply of vitamins A, C, B1, B2, and PP was 32.6%, 46.9%, 75.5%, 81.6%, and 79.6%, respectively. Low concentration of ascorbic acid in the blood serum (in 32.7% of workers) and normal concentration of vitamin A and B1 in blood were demonstrated in surveyed workers in the winter. The effectiveness of course consumption of Nectar specialized drink was shown in workers. Resulting from its consumption for three or more weeks, statistically significant positive alterations were observed in vitamin status (vitamin A and C), antioxidant defense system (in terms of peroxidase and MDA), together with a subjective health assessment in terms of work capacity and fatigue. Consumption of Nectar reduced cadmium content to environmentally safe level** in workers with high level of cadmium in blood. Conclusion. Nectar may be used as a therapeutic and prophylactic food item for workers exposed to heavy metals.

Consumption of fermented products rich in antioxidants, anti-inflammatory, anti-diabetes, anti-obesity and anti-carcinogenic compounds is growing into a key strategy to fortify antioxidant defense system. Cabbage products produced by lactic-acid fermentation are chosen via their special microbiota. Considering these special medical properties of fermented-cabbage products as pickled cabbage, sauerkraut and kimchi were produced and evaluated. The data demonstrated that pickled cabbage (109.89±4.74 mg ascorbic acid/100 g d.w.) and its brine (208.14±17.29 mg ascorbic acid/100 g d.w.) exhibited the highest vitamin C content, followed by kimchi (77.42±2.87 mg ascorbic acid/100 g d.w.). The highest total phenolic content was detected in kimchi and sauerkraut with 869.64±70.16 and 438.257±25.05 mg gallic acid equivalents/100 g fresh weight (f.w.), respectively. 50% of the scavenging effect (EC50) values of free radical scavenging activity (DPPH) in kimchi 14.6 mg/ml, followed by sauerkraut (15.52 mg/ml) and pickled cabbage (18.88 mg/ml). Results demonstrated that fermented cabbage products have a great potential with content of bioactive compounds, high antioxidant features promising high beneficial impacts.

Present study was directed to analyze and compare the bioactive compounds (total phenols, total anthocyanins), vitamins (ascorbic acid, β-carotene, vitamin A), minerals including Ca, Mg, Na, P, K, Fe, Cu, Zn, Co, Mn and heavy metals (Cd, Hg, Pb) of freeze-dried (lyophilized) phalsa pulp and seed powder. In lyophilized pulp powder (LPP) higher amount of total phenols (78.11 mg/100g), total anthocyanin (82.94 mg/100g), ascorbic acid (5.21 mg/100g), β-carotene (0.54 µg/100g), vitamin A (0.89 I.U.) were observed than lyophilized seed powder (LSP). Na, K, Mg and Co (0.41, 0.39, 1.08, 0.46 mg/100g, respectively) were higher in LPP as compared to LSP (0.29, 0.11, 0.76 and 0.40 mg/100g, respectively) whereas, Ca, P and Cu were detected more in LSP. This study opens the prospect of using dry phalsa powder in the preparation of various nutraceutical and functional foods for their therapeutic as well as prophylactic purposes.

The current study was conducted to estimate the effect of soil and growth climatic conditions on the vitamin content of red clover (Trifolium pratense L.). Further, in vitamins, the content of ascorbic acid and vitamin A (provitamin – carotene) was estimated from the aerial parts of the clover. Ascorbic acid is a powerful antioxidant, antiviral, and antitumor vitamin while vitamin A is a useful vitamin for eyesight. Ascorbic acid content in the red clover tissues was determining potassium hexacyanoferrate method while Provitamin A and total carotenoid was estimated by spectrophotometric method. Results of the study revealed that the highest content of vitamins C was found in the plant grown under the climatic conditions of the southern taiga subzone of the Atninsky and in the zone of deciduous forests (Apastovsky and Kamsko-Ustinsky districts) while the plant is grown under the coniferous-deciduous forests (Zelenodolsky district) climatic conditions are a rich source of vitamin A. From the results of the study, it can conclude the soil and growing conditions especially temperature regime and soil moisture affected the level of vitamins in red clover.

The effectiveness of visible and UV light screens, compounded in polyethylene dairy resin to protect vitamins in milk from photodegradation, was investigated. Three pigments and three UV absorbers were chosen for testing on the basis of their commercial availability, FDA approval for contact with food, and advertised compatibility with polyolefins. In this study, vitamin decomposition was accelerated over what would be experienced in a commercial milk container in order to expedite the testing program and exaggerate differences in effectiveness of the various light screens. Good protection of vitamin A and riboflavin was provided by 0.3 wt % FD&C yellow #5. Protection of ascorbic acid was marginal. Two of the UV absorbers, Cyasorb 531 and Tinuvin 326, afforded protection of vitamin A, but not riboflavin or ascorbic acid. Visible and UV spectra are presented for the vitamins and light screens used in this work.

The effect of administration of ascorbic acid to normal or vitamin A-deficient rats was studied in relation to hepatic levels of ubiquinones and sterols. Similar studies were made on tissues from guinea pigs deficient in vitamin C, vitamin A, or both. Vitamin A deficiency increased the concentration of liver ubiquinones in the rat. Administration of ascorbate did not influence tissue levels of ubiquinones or sterols. Vitamin C deficiency increased the concentration of sterols but not of ubiquinones in the liver of the guinea pig. Vitamin A deficiency did not increase ubiquinones nor did a combined deficiency of vitamins A and C. A secondary effect of vitamin C deficiency in the vitamin A-deficient rat is not the cause of increased ubiquinone levels.
