The purpose of this research was to study the effect of temperature and relative humidity on the equilibrium moisture content of cassava pulp. In experiments, cassava pulp was tested with a static method that controlled the temperature at 30, 50 and 70°C and controlled relative humidity in a range 10–90% with standard saturated salt solutions as LiCl, MgCl2, NaBr, NaCl and KNO3. Five equations of equilibrium moisture isotherm were analysed to predict the equilibrium moisture content, which was a guideline to develop a new isotherm equation. The experimental results showed that the equilibrium moisture content was increased with increased relative humidity whereas it decreased with increased drying temperature. Therefore, the drying process and storage method of cassava pulp must control temperature and relative humidity of no more than 50°C and 60%, respectively. The analysis of isotherm equations revealed that the new isotherm equation has high accuracy to predict the equilibrium moisture content of cassava pulp and higher R2 correlation with the experimental data than five isotherm equations.

Dried fig is susceptible to infection by Aspergillus flavus, the major producer of the carcinogenic mycotoxins. This fruit may be contaminated by the fungus throughout the entire chain production, especially during natural sun-drying, post-harvest, industrial processing, storage, and fruit retailing. Correct management of such critical stages is necessary to prevent mould growth and mycotoxin accumulation, with temperature being one of the main factors associated with these problems. The effect of different temperatures (5, 16, 25, 30, and 37 °C) related to dried-fig processing on growth, one of the regulatory genes of aflatoxin pathway (aflR) and mycotoxin production by A. flavus, was assessed. Firstly, growth and aflatoxin production of 11 A. flavus strains were checked before selecting two strains (M30 and M144) for in-depth studies. Findings showed that there were enormous differences in aflatoxin amounts and related-gene expression between the two selected strains. Based on the results, mild temperatures, and changes in temperature during drying and storage of dried figs should be avoided. Drying should be conducted at temperatures >30 °C and close to 37 °C, while industry processing, storage, and retailing of dried figs are advisable to perform at refrigeration temperatures (<10 °C) to avoid mycotoxin production.

Abstract Background: The effects of temperature and humidity on the epidemic growth of coronavirus disease 2019 (COVID-19)remains unclear.Methods: Daily scatter plots between the epidemic growth rate (GR) and average temperature (AT) or average relative humidity (ARH) were presented with curve fitting through the “loess” method. The heterogeneity across days and provinces were calculated to assess the necessity of using a longitudinal model. Fixed effect models with polynomial terms were developed to quantify the relationship between variations in the GR and AT or ARH.Results: An increased AT dramatically reduced the GR when the AT was lower than −5°C, the GR was moderately reduced when the AT ranged from −5°C to 15°C, and the GR increased when the AT exceeded 15°C. An increasedARH increased theGR when the ARH was lower than 72% and reduced theGR when the ARH exceeded 72%.Conclusions: High temperatures and low humidity may reduce the GR of the COVID-19 epidemic. The temperature and humidity curves were not linearly associated with the COVID-19 GR.
