This study investigated the prevalence of inadequate micronutrient intake and the proportion of subjects who exceed Tolerable Upper Intake Levels a) with food only, and b) with food+supplements, in a population of French regular supplement users (n = 259). Assessment tools were seven-day records for supplements, three-day records for food intake, and a questionnaire about supplement use. Most subjects were recruited in retail outlets that sold supplements. They were recent users of vitamin/mineral supplements, aged over 15 years, and normo-energy reporters. The prevalence (%) of inadequate intake decreased with the inclusion of mean annual supplements, from 68.0 to 54.8 for magnesium, 55.9 to 40.7 for vitamin C, 53.4 to 43.9 for folic acid, 37.5 to 27.5 for iron, and 40.1 to 29.7 for pantothenic acid. Few subjects exceeded upper intake levels when mean annual intake of supplements was considered. When supplement consumption was considered during the studied week only, the proportion of subjects who were in excess of the upper intake levels was higher (maximum: 9.6% for magnesium). Supplement use brought a nutritional benefit for some targeted nutrients. It was not associated with excessive intake in this study, but could become hazardous if the annual frequency of use were to increase.

Excessive intake of zinc is a known but often forgotten cause of copper deficiency, and its consequences in the context of end-stage renal disease (ESRD) are not widely discussed. Zinc-induced copper deficiency (ZICD) can result in erythropoietin (EPO)-resistant anemia and may not be considered as a possible etiology when conducting the work-up. We present a case wherein an ESRD patient had been receiving excess zinc for several months and subsequently experienced EPO-resistant anemia. Our patient’s GI work-up was negative, and increased doses of iron and EPO-stimulating agent were ineffective. She underwent a bone marrow biopsy and more serological testing. She was ultimately diagnosed with ZICD, and cessation of her zinc supplement and initiation of copper replacement proved effective in restoring EPO responsiveness. Awareness of ZICD as a possible factor in EPO-resistant anemia could lead to an expedited diagnosis and avoid an unnecessary and extensive work-up.

AbstractObjectiveTo measure mineral intakes and the contribution of different food groups to mineral intakes in adults aged 18–64 years in Ireland. Intakes are reported for Ca, Mg, P, Fe, Cu and Zn. The adequacy of mineral intakes in the population and the risk of occurrence of excessive intakes are also assessed.DesignFood consumption was estimated using a 7-day food diary for a representative sample (n = 1379; 662 men, 717 women) of 18–64-year-old adults in the Republic of Ireland and Northern Ireland selected randomly from the electoral register. Mineral intakes (Ca, Mg, P, Fe, Cu and Zn) were estimated using tables of food composition.ResultsMean nutrient density of intakes was higher for women than men for Ca and Fe and increased with age for all minerals, except Ca for men and Fe for women. Meat and meat products were the major contributor to mean daily intakes of Zn (38%), P (23%), Fe (18%), Cu (15%) and Mg (13%); dairy products (milk, yoghurt and cheese) to Ca (44%), P (22%), Zn (14%) and Mg (11%); bread and rolls to Fe (21%), Cu (18%), Ca and Mg (17%), Zn (13%) and P (12%); potatoes and potato products to Cu (16%), Mg (14%) and Fe (10%); and breakfast cereals to Fe (13%). In women of all ages nutritional supplements contributed 7.6%, 4.4%, 3.6% and 2.2% of mean daily intake of Fe, Zn, Cu and Ca, respectively, while in men of all ages, nutritional supplements contributed 2.7%, 2.3%, 1.7% and 0.6%, respectively, to mean daily intakes of Fe, Zn, Cu and Ca. Adequacy of minerals intakes in population groups was assessed using the average requirement (AR) as a cut-off value. A significant prevalence of intakes below the AR was observed for Ca, Fe, Cu and Zn but not P. A higher proportion of women than men had intakes below the AR for all minerals. Almost 50% of 18–50-year-old females had intakes below the AR for Fe, while 23%, 23% and 15% of women of all ages had intakes below the AR for Ca, Cu and Zn, respectively. For men of all ages, 11%, 8% and 13% had intakes below the AR for Ca, Cu and Zn, respectively. There appears to be little risk of excessive intake of Ca, Mg, P, Cu or Zn in any age/sex category. However, 2.9% of women of all ages had intakes above the tolerable upper intake level for Fe (45 mg) due to supplement use.ConclusionAlmost 50% of women aged 18–50 years had Fe intakes below the AR and relatively high proportions of women of all ages had intakes below the AR for Ca, Cu and Zn. With the possible exception of iron intake from supplements in women, there appears to be little risk of excessive intake of minerals in the adult population. ABSTRACT: The objective of this paper is to report the epidemiological, clinical, and pathological aspects of a case of rumenitis due to the ingestion of soybean oil in a bovine. The ox had access to barrels that stored soybean oil and ingested an indeterminate amount of the product. After consuming it, the animal presented hiporexia; liquid, brownish, and greasy feces; severe dehydration (12%); apathy; sternal recumbency; and death with a clinical evolution of 4 days. At necropsy, the rumen was filled with voluminous food and moderate amount of white-gray liquid with a greasy appearance. Upon microscopic examination, hydropic degeneration of the epithelium and areas of mucosal necrosis were observed in the rumen and reticulum. From these findings, we concluded that the bovine developed a state of acidosis and acute rumenitis due to excessive intake of lipids.

Water is the most common compound of hydrogen and oxygen in the nature. It is a universal solvent of many substances, and therefore chemically pure water does not exist in the nature. The water contained in the body is qualitatively different from ordinary water as it is structured water. Such crystalline structures of water are the matrix of life. Their presence gives possibility of the occurrence of important biophysical processes and biochemical reactions. Insufficient intake of water into the body or its excessive loss leads to dehydration, which is accompanied by thickening of the blood and impairing hemodynamics. Excessive intake of water into the body causes water intoxication. Purpose – to conduct a bibliosemantic analysis of the sources of the literature on the medical and biological functions of water. Research methods – bibliosemantic, analytical, logical methods and generalizion method. Water is the structural basis of cells necessary to maintain their optimal volume. It determines the spatial structure and function of biomolecules. Insufficient intake of water into the body or its excessive loss leads to an impaired hemodynamics. Excessive intake of water into the body causes water intoxication. All disoders of water-salt balance in the body can be divided into two groups: dehydration and hyperhydration. In each group, there are disorders with a decrease, increase, and no change in osmotic pressure (hypotonic, hypertonic, and isotonic disorders, respectively). Water is used in medical and pharmaceutical practice as an excipient, and for the manufacture of allopathic, homeopathic and anthroposophic medicines. The State Pharmacopoeia of Ukraine includes several articles on the use of water depending on the purpose and regulates water quality: 1) highly purified water, water for injections «in bulk» water and sterilised water for injections; 2) purified water: water «in bulk» and water in containers. Cosmetics are presented on the Ukrainian market, the main biologically active compound of which is water, in particular, natural, thermal and micellar. They are widely used in cosmetology. The biomedical function of water in the body is to preserve cell volume, provide turgor to the cells and save the body from temperature fluctuations. Disruption of water-salt balance leads to dehydration or hyperhydration. There are changes with a decrease, increase, and no change in osmotic pressure (hypotonic, hypertonic, and isotonic disorders, respectively). They cause disruption of the life of the whole organism. In pharmaceutical practice, water is widely used for the manufacture of allopathic, homeopathic and anthroposophic medicines. It can be obtained in various ways, but its quality is regulated by the relevant government regulations. In cosmetic practice, water is used not only as a basic solvent, but in the form of natural, micellar and thermal water, where it is a biologically active compound.

Salt is an indispensable nutrient, but excessive amount of salt intake becomes harmful. In order to prevent excessive intake of salt, there is a mechanism to feel high concentration salt as an aversive taste. In recent years, it has clarified that high concentration salt stimulates different taste buds from those sensed by low concentration of salt. In this study, we analyzed relationship between inter-individual difference in sensitivity of aversive salt taste and amounts of daily salt intake. After obtained written informed consent, 1,254 individuals who came annual health checkups were recruited for this study. To test aversive salt taste, five different saline solutions (0.25%, 0.5%, 1%, 1.5%, 2%) were prepared. They started drinking of salt solution from low to high concentration of solutions. In each trial of drinking the salt solution, they were asked whether they were capable of drinking it. When they felt to avoid drinking the salt solution, salt concentration of the solution was recorded as sensitivity of aversive salt taste. Amount of daily salt intake was estimated by using spot urine and by dietary questionnaire. As a result, 784(63%) and 267(21 %) of individuals felt up to the 1.5% and 2% of salt solution as aversive salt taste, respectively. Hence, their sensitivities of aversive salt taste were 1.5% or 2% of salt solutions, respectively. However, resting 203(16%) of individuals showed capability to drink 2% of salt solution. Although we compared sensitivities of aversive salt taste of each individual and daily salt intake that estimated by urine, there were no difference between them. However, daily salt intake that estimated by dietary questionnaire showed clear relationship, in which individuals with the high sensitivities of aversive salt taste consumed the more amount of salt.
