<p>The post-harvest fungi is one of the greatest cause of various diseases. Particularly, in fungus that infects seeds, the toxic substance called aflatoxin is found. This has caused us to wonder: Has fungi been pathogenic fungi since the beginning of creation? The purpose of this research is to study: 1) The Place of Fungi in God’s Original Creation and the Origin of Pathogenic Fungi, 2) Characterization of post-harvest fungus on corn seeds, 3) Aspergillus sp.’s Structure as Proof of God’s Wonderful Original Creation and Providence, and 4) The factors that contribute to the growth of fungi in post-harvest corn seeds and our responsibility. We conclude that in the beginning, fungi were a part of God’s originally good and perfect creation. These fungi were created by God with the structure and function to support its operation in fulfilling God’s creative purpose. The complex structure of Aspergillus niger and Aspergillus flavus that infected the corn seeds showed God’s providence after the Fall. Pathogenic fungi were the result of the Fall of man into sin. Their growth is caused by the failure to give proper care to the crops. But this should not discourage us since the Bible tells us that God is continually working to restore His creation. Therefore, we are called to be stewards of His creation, to develop and preserve whatever is entrusted in our hands, including the crops for God’s glory and under His authority until He has fully renewed and restored everything.</p><p><strong>BAHASA INDONESIA ABSTRACT:</strong> Jamur pasca panen merupakan salah satu penyebab terbesar timbulnya berbagai penyakit, khususnya disebabkan oleh jamur yang menginfeksi biji-bijian dan menghasilkan substansi beracun disebut dengan aflatoksin. Keadaan ini menimbulkan pertanyaan apakah jamur patogenik ada sejak awal penciptaan? Penelitian ini bertujuan untuk mempelajari: 1) Posisi jamur patogenik di awal penciptaan dan asal mula jamur patogenik, 2) karakteristik jamur pasca panen pada biji jagung, 3) struktur <em>Aspergillus</em> sp sebagai bukti dari providensi Allah akan ciptaanNya yang sangat luar biasa, 4) faktor-faktor yang berkontribusi terhadap pertumbuhan jamur pasca panen biji jagung dan Tanggung jawab kita. Dari hasil penelitian ini disimpulkan bahwa pada mulanya, jamur merupakan bagian ciptaan Allah yang sungguh amat baik dan sempurna. Struktur yang kompleks dari <em>Aspergillus niger</em> dan <em>Aspergillus flavus </em>yang menginfeksi biji jagung menunjukkan providensi Allah setelah kejatuhan dosa. Pertumbuhan jamur patogenik merupakan gambaran kejatuhan manusia ke dalam dosa yaitu kegagalan manusia untuk memberikan pemeliharaan yang memadahi pada biji-bijian pasca panen. Namun demikian, keadaan ini tidak mematahkan semangat kita karena Alkitab mengatakan bahwa Allah masih terus bekerja untuk memulihkan ciptaanNya. Oleh karena itu, diharapkan kita semua menjadi pelayan atas ciptaanNya untuk mengembangkan dan menjaga apa yang dipercayakan kepada kita di bawah otoritasNya termasuk biji-bijian untuk memuliakan Allah hingga Dia secara penuh memperbaharui dan memulihkan segala sesuatu</p>

Vegetables are important in human diets as a side dish eaten either cooked or raw as in salads. They are important for their nutritional contribution as major sources of minerals, vitamins, nine essential amino acids, beneficial phytochemicals, fibre and interesting colour from an aesthetic point of view. Despite the immerse health benefits offered by vegetables there are challenges encountered in their post-harvest handling and storage up to consumption. Challenges include post-harvest losses due to diseases. Some losses occur even at household level when vegetables are not stored appropriately when stored under the sink where humidity can be high leading to an environment which promotes diseases. Diseases in the post-harvest chain are caused by bacteria and opportunistic pathogenic fungi. Post-harvest losses of vegetables are not only a threat to nutritional security but a threat to food security as well. The aim of this research study was to document major post-harvest diseases of vegetables found in the Kingdom of Eswatini and to suggest appropriate management strategies or ways of alleviating them.

BACKGROUND: Melatonin (MT) is an endogenous indoleamine that regulates senescence progression and stress response in plants. OBJECTIVE: Here, we investigated the effect of MT on the shelf-life and postharvest quality of table grapes (Vitis labrusca L. cv. ‘Fengzao’). METHODS: After harvesting, ‘Fengzao’ grapes were immersed in MT solution at various concentrations (0 [as control], 0.05, 0.1, 0.5 and 1.0 mM for 2 h and stored at 24±1 for 15 days. Physiological indicators including weight loss rate, firmness, contents of total soluble solids (TSSs), ascorbic acid (AsA), malondialdehyde (MDA), hydrogen peroxide (H2O2), and activities of catalase (CAT), ascorbate peroxidase (APX), and superoxide dismutase (SOD) were investigated. Additionally, the DNA methylation rate of ‘Fengzao’ grapes were measured using the methylation-sensitive amplification polymorphism (MSAP) technique. RESULTS: Application of MT effectively delayed grape senescence in all treatment groups compared with the control, with the longest delay observed in the 0.5 mM treatment. Additionally, the rate of DNA methylation decreased in all the 0.5 mM MT treatment groups, indicating a potential role of MT in demethylation. CONCLUSIONS: Our results suggest that the exogenous application of MT can delay the senescence of grapes during postharvest.

Table grapes cvs. Flame Seedless, Black Monukka and Canadice were fumigated with 2 levels of Deccodione smoke tablets for 30 minutes. Grapes were packed in TKV lugs with Botrytis inoculum planted among the clusters and stored at 0° C for up to 9 weeks. Size of smoke particles was determined. Fruit was evaluated at weekly intervals for decay and quality parameters. Deccodione residues on fruit were determined and found to be within acceptable limits set for this chemical. It was possible to store the grapes for up to 4 weeks at 0° C in good condition. Beyond this period effect of fumigation was lost. There was no bleaching of pigments around the capstem as is seen with sulfur dioxide fumigation. Storage for prolonged periods will necessitate increasing the dose of Deccodione tables and/or repeating the fumigation.

Fungal growth in table grapes (Vitis vinifera cv. beauty seedless) is triggered by Botrytis cinerea, Penicillium sp., Aspergillus sp., and Rhizopus stolonifera during post-harvest storage. Due to the safety aspects, this research aimed to develop antifungal packaging embedded with essential oils (EOs) to alleviate the fungal decay of table grapes (TG). The various levels of EOs (0.5–5%, v/v) from clove, cinnamon, thyme, peppermint, lemon, bergamot, ginger, spearmint, and lemongrass were tested against Aspergillus sp. The results attained in radial growth, disk diffusion method, minimal inhibitory concentration, and minimal fungicidal concentration revealed that 1% clove essential oil (CEO) showed higher efficacy against Aspergillus sp. compared to the untreated control and other treatments. CEO at the 1% level exhibited a pleasant odor intensity in TG than the other EOs. The active polyvinyl alcohol (7% PVA) film with 1% CEO resulted in lower weight loss, disease severity, and TG berry drop than the control and other treated samples. Additionally, the acceptance score in the TG sample wrapped with a PVA film containing 1% CEO was augmented. Therefore, the PVA film with 1% CEO retarded the fungal growth and prolonged the shelf life of TG during storage of 21 days at 13 °C and 75% relative humidity (RH).
