Zinc deficiency is a major public health problem in vulnerable populations of Latin America and the Caribbean. Biofortification of rice (Oryza sativa L.) with zinc has the potential to alleviate zinc deficiencies. However, as plant breeding processes can alter grain culinary quality and favorable sensory attributes, grain quality and consumer acceptability need to be assessed prior to releasing a variety to the public. A grain quality characterization and a sensory acceptability analysis were carried out with two varieties of zinc biofortified rice and a local control both in Bolivia and Colombia. The aim of this study was to evaluate the physicochemical parameters that are significant in consumer acceptance and to determine the acceptability of zinc biofortified rice by consumers. Results of physicochemical parameters were analyzed using ANOVA. The sensory acceptability was evaluated in 243 adults utilizing a 7-point hedonic scale and a Wilcoxon’s signed rank test was used to determine the overall acceptability of the varieties. Biofortified rice variety T2-11 and MAC-18 -control 1- were equally accepted by consumers in Bolivia with no significant differences (p<0.05). The grain quality analysis reported that both presented long and slender rice grains (L>7.5 mm and L/B>3), an intermediate to high amylose content (>25%) and a similar level of chalkiness. In Colombia, the biofortified variety 035 presented a higher score in overall acceptance in comparison to biofortified variety 021 and the local variety CICA4 -control 2-. However, no significant differences were observed (p<0.05). Conversely to the other two varieties, the biofortified variety 035 presented the largest size grain (L/B = 2.97), a lower chalkiness and an amylose content above 25%. This study shows that the grain quality properties of rice have an influence on acceptability and that zinc biofortified rice varieties are accepted by consumers.

Quality of rice is an important criterion for the choice and demand by rice consumers and it is determined by physicochemical parameters. The objective of this research was to screen the physical, gelatinization, cooking and textural properties of an improved rice variety cultivated in Cameroon (TOX 3145). Three differently processed samples of TOX 3145: non-parboiled (NP), traditional parboiled (TP) and IRAD parboiled (IRAD) were involved in this study. The result revealed the grain dimension of samples as long and slender shape. The degree of redness among cooked and uncooked grains varied from -0.8 to -1.0 and 0.3 to 1.5, respectively while yellowness parameter ranged between 0.4 to 4.0 and 7.6 to 8.4, respectively. Lightness parameter (L*) varied from 59.4 to 61.8 in cooked samples. Minimum cooking time among samples was between 17.9-19.7 min. Highest elastic modulus and hardness (43.3 N/mm and 36.8 N, respectively) was found in TP sample. The NP sample had lowest adhesiveness (-0.76 J) and highest gumminess (6.40 J). Water uptake was positively correlated with amylose content (r = 0.84; P &lt; 0.05) and lightness parameter (r = 0.92; P &lt; 0.05).

India is a developing nation and is dependent on its natural resources for growth and development. Water, being one of the vital natural resource, must be used judicially for the sustainable development. Present study focuses on the analysis of physicochemical parameters (pH, Turbidity, Alkalinity, Total Hardness, Total dissolved solids, Conductivity, Chloride, Sulfate, Fluoride contents) of ground water and surface water in Kota City (Rajasthan). The study shows the adverse impact of exploitation and urbanization on water resources of Kota City (Rajasthan). Some physicochemical parameters exceed the desirable limits as defined by WHO and Indian Standards in the selected sites. The level of pollution in ground water and surface water of Kota City is increasing due to urbanization.

Grain yield stabilization of lowland rice over cropping seasons was explored using different compositions of inorganic fertilizers (NPK, NPKCa, NPKMg, NPKZn, NPKCaMg, NPKCaZn and NPKCaMgZn) and straw incorporation (3, 6, 9, 12 and 15 tha-1 ). No fertilizer and no straw amended plot was the control in a split-plot design with three replications laid in a Fluvisol of Guinea savanna in Centre Cote d’Ivoire. Three weeks old nursery rice variety NERICA L19 was transplanted. No significant difference of grain yield was observed between the different treatments excluding the highest yields recorded for treatments NPKMg (5.09 tha-1 ), NPKZn (5.15 tha-1 ) and NPKCaéMg (5.31 tha-1 ) compared with 12 (3.95 tha1 ) and 15 tha-1 (4.14 tha-1 ) as straw rates respectively. Grain yield declining trend was more pronounced for mineral fertilizer treatments showing twice greater depressive effect of cropping cycle compared with the straw especially, for treatments characterized by highest grain yield in the first cropping season and similar grain yields were recorded for both sources of nutrient in the third cropping cycle. Of slowness of nutrients releasing by straw, highest grain yield was expected for this soil amender within a longer period of cultivation whereas, unbalance soil micronutrients should be relevant to studious declining yield under inorganic fertilizer effect. Nevertheless, the straw rate of 12 tha-1 supplying 0.58% of NPK as mineral fertilizer equivalent can be recommended for sustaining lowland rice production in the studied agro-ecosystems unless for three cropping seasons.

The sensory and functional properties of rice are predominantly associated with its amylose content. Granule-bound starch synthase (GBSS) encoded by the Waxy (Wx) gene determines the synthesis of amylose, while starch branching enzymes encoded by Sbe genes are involved in the formation of amylopectin. Some studies have demonstrated that Wx gene is the major controller of amylose content but there are one or more modifying genes affecting the amylose content. Three markers,  microsatellite, Single – nucleotide – polymorphism (G/T SNP) in Wx gene and Single – nucleotide – polymorphism (T/C SNP) in Sbe1 gene, were tested for their association with amylose content using sixty-nine  rice accessions from twenty countries. Of the three markers, two markers in Wx gene are significantly associated with amylose content. The combination of two markers in Wx gene (haplotypes) explained 83.8% of the variation in amylose content and discriminated the three market classes of glutinous, low, intermediate and high amylose content of rice from each other. And T/C SNP in Sbe1 locus was not a suitable marker for amylose content. Keywords: marker, amylose content, Waxy gene.

Aims: Diabetes rates are especially high in China. Risk of Type 2 diabetes increases with high intakes of white rice, a staple food of Chinese people. Ethnic differences in postprandial glycaemia have been reported. We compared glycaemic responses to glucose and five rice varieties in people of European and Chinese ethnicity and examined possible determinants of ethnic differences in postprandial glycaemia. Methods: Self-identified Chinese (n = 32) and European (n = 31) healthy volunteers attended on eight occasions for studies following ingestion of glucose and jasmine, basmati, brown, Doongara® and parboiled rice. In addition to measuring glycaemic response, we investigated physical activity levels, extent of chewing of rice and salivary α-amylase activity to determine whether these measures explained any differences in postprandial glycaemia. Results: Glycaemic response, measured by incremental area under the glucose curve, was over 60% greater for the five rice varieties (P < 0.001) and 39% greater for glucose (P < 0.004) amongst Chinese compared with Europeans. The calculated glycaemic index was approximately 20% greater for rice varieties other than basmati (P = 0.01 to 0.05). Ethnicity [adjusted risk ratio 1.4 (1.2-1.8) P < 0.001] and rice variety were the only important determinants of incremental area under the glucose curve. Conclusions: Glycaemic responses following ingestion of glucose and several rice varieties are appreciably greater in Chinese compared with Europeans, suggesting the need to review recommendations regarding dietary carbohydrate amongst rice-eating populations at high risk of diabetes. © 2012 Diabetes UK.
