Effects of genotype and dietary forage to concentrate ratio during the finishing period on carcass characteristics and meat quality of lambs from hill sheep systems

The study investigated the effects of lamb genotype produced from hill flocks on feed efficiency, carcass characteristics and meat quality in animals finished on either a high forage:concentrate ratio diet (HFC) or a low forage:concentrate ratio diet (LFC). Purebred Scottish Blackface (BXB) lambs were compared with Blue-Faced Leicester×Scottish Blackface (BLXB) and Texel×Scottish Blackface (TXB) lambs. Purebred Cheviot (CXC), Suffolk×Cheviot (SXC) and Texel×Cheviot (TXC) lambs were also investigated. Lambs on the LFC diet were offered grass silage and concentrates mixed in the proportion of 0·80 silage and 0·20 concentrates on a dry matter basis. The LFC diet consisted of 0·20 grass silage and 0·80 concentrates on a dry matter basis. Representative lambs were slaughtered at the start of the experiment and on reaching 38 and 46 kg live weight. Averaged over the two slaughter weights, within the Blackface cross lambs, BXB had a lower liveweight gain (P < 0·01) than either BLXB or TXB (138, 207 and 203 (S.E. 11·1) g/day, respectively). Within the Cheviot cross lambs, CXC had a lower liveweight gain (P < 0·05) than SXC (188 v. 220 (S.E. 11·1) g/day), while SXC and TXC (204 g/day) had similar liveweight gains. Lambs on the LFC diet had a higher dressing proportion (P < 0·001) compared with lambs finished on the HFC diet (0·466 v. 0·434 (S.E. 0·0018) kg carcass per kg live weight). Averaged over the two slaughter weights BXB lambs had a lower (P < 0·05) dressing proportion than the other genotypes. Carcass conformation classification (assessed on a five-point scale) was higher (P < 0·001) in lambs finished on the LFC diet (3·0 v. 2·4 (S.E. 0·04)). Conformation classification was higher in lambs produced from Cheviot compared with Blackface ewes (P < 0·05). Within the Blackface cross lambs, BXB and BLXB lambs had a lower conformation classification (P < 0·001) than TXB lambs (2·4, 2·4 and 2·9 (S.E. 0·08) respectively). Within the Cheviot ewes, TXC lambs had a higher (P < 0·001) classification than either CXC or SXC (3·1, 2·7 and 2·7 (S.E. 0·08) respectively). Lambs finished on the LFC diet had a higher fat classification score compared with lambs on the HFC diet (P < 0·001) (3·4 v. 2·8 (S.E. 0·04)). Fat classification was similar across all genotypes. Lambs finished on the LFC diet had a lower ash content in the carcass than lambs finished on a HFC diet (P < 0·01) (44 v. 47 (S.E. 0·8) g/kg). Lamb genotype and dietary forage:concentrate ratio had no significant effect on cooking loss, sarcomere length, Warner–Bratzler shear force and L* values. Ultimate pH (pHU) was not influenced by dietary forage:concentrate ratio, but was significantly (P < 0·01) higher in BXB lambs compared with BLXB, TXB, CXC and TXC lambs. Lambs offered the LFC diet during the finishing period had significantly higher values for a* (P < 0·05), b* (P < 0·001), C* (P < 0·001) and H0 (P < 0·05) than lambs offered a HFC diet. Of these parameters only b* was significantly affected by lamb genotype, with BXB lambs having a lower value (P < 0·05) than the other genotypes.

The objectives of this experiment with Hereford (Hf) and Charolais (Ch) bulls offered grass silage-based diets were to determine the effects on performance, carcass traits and meat quality of the proportion of concentrate in the diet, and the inclusion of rapeseed meal (RSM) in the barley-based concentrate. The two concentrate proportions were 200 and 500 g kg-1 dry matter, fed without or with RSM. The Ch bulls tended to achieve higher gain, produced less fat, had a higher percentage of meat from high-priced joints and had a lower degree of marbling in their meat compared to the Hf bulls. Dry matter and energy intakes, growth performance and carcass conformation improved with increasing concentrate level. Intake parameters and conformation improved more with the Ch bulls than with the Hf bulls as a consequence of increased concentrate allowance. RSM had only limited effects on the performance, carcass traits or meat quality.

The objective of this study was to determine the effects of silage plant species (faba bean and field pea based whole crop legume-cereals vs. grass) on performance and meat quality of growing Aberdeen Angus (AA) and Nordic Red (NR) bulls. A 2×3 factorial design was used. The experiment comprised 30 AA and 30 NR bulls. Both breeds were randomly allotted to the three feeding treatments. The compositions (g kg-1 dry matter) of diets were: 1) grass silage (650) plus rolled barley (350), 2) faba bean-wheat silage (650) plus rolled barley (350) and 3) pea-wheat silage (650) plus rolled barley (350). The experimental diets were offered as total mixed rations ad libitum. The AA bulls grew faster, had better feed conversion rates and superior dressing proportion and carcass conformation compared to the NR bulls. Replacing grass silage by whole crop legume-cereal silages in the diet did not have remarkable effects on animal performance, carcass characteristics or meat quality.

AbstractThe viability of conventional goat farms, such as the native Payoya dairy goat, could be improved by switching to organic production, but product quality needs to be ensured. The present work assesses the carcass and meat quality of Payoya kids raised under conventional and organic grazing-based systems. Twenty-four kids (12 males, 12 females) were selected from each system (n = 48). The slaughter live weight (8.52 vs. 8.28 kg), cold carcass weight (4.44 vs. 4.29 kg) and farm dressing percentage (51.7 vs. 50%) of the conventionally raised kids were significantly higher than those of the organic kids. The shoulder (first category) (21.7 vs. 22.3%) and long leg (32 vs. 32.9%) percentages were lower in the conventional than in the organic kids. The percentage contribution of the intermuscular fat (10.70 vs. 8.11%) to the shoulder weight was greater in the conventional kids, while the percentages of muscle (59.7 vs. 57.2%) and bone (24.7 vs. 22.8%) were higher in the organic kids. For the chemical composition, there were only differences between the two sexes in the percentage of fat (6.64 and 7.99% on dry matter, for male and female, respectively). For rheological variables, only differences were found in the water holding capacity (% water expelled), the meat of the organic females had a higher value (17%) than that of the conventional females (14%). For the meat colour, the conventional male kids returned the highest values for C* and Hº (14.32 and 64.34, respectively). Farms following conventional grazing-based management could easily switch to organic production. Most of the meat and carcass quality variables studied were very similar across the systems.

SUMMARY1. Seventy-two individually fed pigs on six treatments were used to determine the effects on performance and in particular on carcass quality of (a) giving quantities of liquid skim-milk (preserved with formalin) in excess of those normally recommended; (b) replacing meal by skim-milk in the ration on a calculated dry-matter basis (1 gal. skim-milk equivalent to 1 · 1 lb. meal) as compared with a calculated energy basis (1 gal. skim-milk equivalent to 1 · 3 lb. meal) and (c) giving skim-milk for only a part of the growing period instead of throughout. The experimental period continued from 9–10 weeks of age until slaughter at an average live-weight of 135 lb.2. Extensive carcass measurements were taken and in addition assessment of the carcasses was made by a representative of the County Quality Pork Association and by an expert pork butcher.3. Carcasses from pigs given an all-meal diet were comparable in all respects with those from pigs given skim-milk throughout up to a maximum of either 5¼ or 10½ pints per pig per day.4. Carcasses from pigs given the highest level of skim-milk (maximum of 15¾ pints per pig per day) were superior in many respects to those on any of the other treatments, but the possibility that this was due to their slower rate of growth rather than to the high level of milk per se, is discussed.5. Pigs given skim-milk as replacement of part of their meal allowance on a calculated dry matter basis grew significantly faster than those in which the replacement was made on a calculated energy basis or than those given an all-meal diet. The importance is stressed of ensuring that in assessing the value of skim-milk for pigs the caloric value of the rations being compared is similar. The need for experiments based on actual determinations of the caloric value of the rations used is also emphasised.6. While the performance of pigs given skim-milk up to 75 lb. live-weight only was similar to that of pigs given skim-milk throughout, evidence was obtained that the quality of their carcasses was slightly inferior.7. There was some suggestion that as the level of skim-milk in the diet increased an eye muscle of a rather paler colour was produced.

1. A feeding trial is described including four groups of cattle fed on silage only, two mixtures of silage and roots, and roots, straw, hay and oats.2. The live-weight gains made are recorded together with the rate of dry-matter intake.3. The efficiency of the dry matter of the diets was calculated.4. Silage fed alone produced a significantly greater rate of fattening than the other three diets.5. Cattle receiving roots in the morning and silage at night consumed 10·78% more dry matter and made greater live-weight gains than cattle fed on silage in the morning and roots at night.6. Calculation of the starch values of the roots and silage showed that these are higher when fed together than when silage is fed alone or when roots are fed with straw, hay and oats.7. An experiment is described designed to determine the effect of the dry-matter percentage of the diet on dry-matter intake in ruminants and of sudden changes in dry-matter content on digestibility.8. Sheep receiving 19·46% dry-matter silage consumed 16·7% more dry matter and 19·8% more starch equivalent than sheep eating 15·85% dry-matter silage.9. When the dry-matter percentage of the silage fell from 19·46 to 15·77 the digestibility of the dry matter fell by over 10%.10. The starch equivalent of the silage when fed alone was determined from the results of a digestibility trial and according to the performance of the cattle in the feeding trial. The values found were 65·88 and 66·15% respectively.11. The losses suffered in silage-making in twentyfive silos are recorded and discussed. The loss of dry matter and crude protein both average approximately 40% of that ensiled. The need for finding methods of reducing these losses is again stressed.

SUMMARYTwo experiments were carried out to compare the performance and carcass quality of pigs given diets based on barley, wheat or maize meal, and another two experiments comparing these cereals, flaked maize and sorghum. In general, differences in the utilization of feed for live-weight gain could be related to differences in the digestible energy content of the cereals used in the diet, although in some experiments pigs behaved atypically on individual diets. Flaked maize was consistently inferior to the other cereals in the efficiency of conversion of its digestible energy, possibly because of its poorer amino acid balance and its low levels of lysine and tryptophan in relation to energy. Differences between experiments in the performance of pigs fed on the various diets are also discussed. Differences between treatments in killing-out percentage and predicted lean percentage were small, and carcasses of pigs from all treatments were acceptable for bacon curing.

SUMMARYThe feeding value of three forms of acid-treated moist barley, viz. 26 % moisture and either rolled or plate-milled, and 29 % moisture plate-milled, was compared with that of dried hammer-milled barley for growing pigs from 23 to 87 kg live weight. Two feeding experiments were undertaken, one in which individual pigs were given the same amount of dry matter from all the diets, while in the other, groups of pigs were fed ad libitum. Digestibility of the diet was determined in a third experiment.In both feeding experiments differences between treatments in efficiency of utilization of dry matter in the feed were significant (P<0·05), that for the diet containing dried barley being approximately 5% better than the other three. There were no significant differences between treatments in intake of dry matter, rate of growth and carcass quality of the pigs. However, pigs fed on dried barley apparently grew more rapidly than those given any of the acid-treated moist barleys. Differences in digestibility of the diets were very small and not significant except for crude protein. Differences in digestibility of protein (P<0·05), however, were not consistent with differences in efficiency of conversion of dry matter in the feed.

The objective was to study the effects of partial replacement of barley grain by rye grain on dry matter (DM) intake and growth performance of growing bulls. The experiment was conducted using 80 dairy bulls which were fed total mixed rations ad libitum. The rations included grass silage (500 g kg-1 DM) and concentrate (500 g kg-1 DM). Four different experimental concentrate mixtures included rye at 0, 150, 300 and 450 g kg-1 DM. The average daily DM and metabolisable energy intakes of the bulls were 10.9 kg d-1 and 127 MJ d-1, respectively. There were no differences in DM, energy or nutrient intakes among the treatments. The average live weight gain and carcass gain of the bulls were 1543 and 832 g d-1, respectively, and rye inclusion had no effects on growth. There were no significant differences in feed conversion or carcass characteristics among the treatments. It can be concluded that rye grain is a suitable energy supplement with good quality silage for growing dairy bulls.

This study evaluated the effects of different energy sources, as corn substitutes, on the carcass characteristics and meat quality of lambs. Twenty-four intact ram lambs were identified, weighed, and assigned to one of four dietary treatments: corn, citrus pulp, rice bran, and soybean hulls. The ram lambs were confined in feedlots, and when they reached 30 kg of live weight, they were slaughtered. A  completelyrandomized design with different replicates was used for the analysis, along with the Tukey-5% test. For hot and cold carcass weight, rice bran produced lower values than the other dietary treatments. For the red color content of the meat, citrus pulp presented superior values when compared to corn, whereas meat and fat color, loin eye area, and objective tenderness did not differ between treatments. Different energetic sources used to replace corn in ram lambs finishing diets did not affect the proximate composition and quality of the meat. Highlights:  • Addition of rice bran to the lambs' diet resulted in lower hot and cold carcass weight.• Animals fed soybean hulls presented the highest carcass compactness index values.• Rice bran extended the feedlot period of lambs in 59.33 days, been longer than the others energies sources.• Corn, rice bran, citrus pulp and soybean hulls did not change the quality of meat but the inclusion of rice bran should be carefully evaluated.
