SUMMARYTwo experiments were carried out to compare the performance and carcass quality of pigs given diets based on barley, wheat or maize meal, and another two experiments comparing these cereals, flaked maize and sorghum. In general, differences in the utilization of feed for live-weight gain could be related to differences in the digestible energy content of the cereals used in the diet, although in some experiments pigs behaved atypically on individual diets. Flaked maize was consistently inferior to the other cereals in the efficiency of conversion of its digestible energy, possibly because of its poorer amino acid balance and its low levels of lysine and tryptophan in relation to energy. Differences between experiments in the performance of pigs fed on the various diets are also discussed. Differences between treatments in killing-out percentage and predicted lean percentage were small, and carcasses of pigs from all treatments were acceptable for bacon curing.

1. A test was carried out simultaneously in Shinfield, Reading, England, and Columbus, Ohio, USA, using typical British and American rations for growing pigs. The rations were compounded in their country of origin; half of each consignment was used at the home station and the other half shipped to the overseas station. 2. Both restricted feeding and ad lib. feeding methods were used at each station. 3. A similar pattern of results was obtained at Shinfield and Columbus. Pigs receiving the American ration, which was higher in energy content, grew faster and required less feed per kg live-weight gain than pigs receiving the British ration. The higher energy content of the ration was probably responsible also for the poorer carcass quality of the pigs receiving the American ration, particularly the high fat content. The comparison between restricted feeding and ad lib. feeding was not affected by the type of ration. Restricted feeding resulted in slower growth rate, slightly better efficiency of feed conversion and considerably better carcass quality.

The study investigated the effects of lamb genotype produced from hill flocks on feed efficiency, carcass characteristics and meat quality in animals finished on either a high forage:concentrate ratio diet (HFC) or a low forage:concentrate ratio diet (LFC). Purebred Scottish Blackface (BXB) lambs were compared with Blue-Faced Leicester×Scottish Blackface (BLXB) and Texel×Scottish Blackface (TXB) lambs. Purebred Cheviot (CXC), Suffolk×Cheviot (SXC) and Texel×Cheviot (TXC) lambs were also investigated. Lambs on the LFC diet were offered grass silage and concentrates mixed in the proportion of 0·80 silage and 0·20 concentrates on a dry matter basis. The LFC diet consisted of 0·20 grass silage and 0·80 concentrates on a dry matter basis. Representative lambs were slaughtered at the start of the experiment and on reaching 38 and 46 kg live weight. Averaged over the two slaughter weights, within the Blackface cross lambs, BXB had a lower liveweight gain (P < 0·01) than either BLXB or TXB (138, 207 and 203 (S.E. 11·1) g/day, respectively). Within the Cheviot cross lambs, CXC had a lower liveweight gain (P < 0·05) than SXC (188 v. 220 (S.E. 11·1) g/day), while SXC and TXC (204 g/day) had similar liveweight gains. Lambs on the LFC diet had a higher dressing proportion (P < 0·001) compared with lambs finished on the HFC diet (0·466 v. 0·434 (S.E. 0·0018) kg carcass per kg live weight). Averaged over the two slaughter weights BXB lambs had a lower (P < 0·05) dressing proportion than the other genotypes. Carcass conformation classification (assessed on a five-point scale) was higher (P < 0·001) in lambs finished on the LFC diet (3·0 v. 2·4 (S.E. 0·04)). Conformation classification was higher in lambs produced from Cheviot compared with Blackface ewes (P < 0·05). Within the Blackface cross lambs, BXB and BLXB lambs had a lower conformation classification (P < 0·001) than TXB lambs (2·4, 2·4 and 2·9 (S.E. 0·08) respectively). Within the Cheviot ewes, TXC lambs had a higher (P < 0·001) classification than either CXC or SXC (3·1, 2·7 and 2·7 (S.E. 0·08) respectively). Lambs finished on the LFC diet had a higher fat classification score compared with lambs on the HFC diet (P < 0·001) (3·4 v. 2·8 (S.E. 0·04)). Fat classification was similar across all genotypes. Lambs finished on the LFC diet had a lower ash content in the carcass than lambs finished on a HFC diet (P < 0·01) (44 v. 47 (S.E. 0·8) g/kg). Lamb genotype and dietary forage:concentrate ratio had no significant effect on cooking loss, sarcomere length, Warner–Bratzler shear force and L* values. Ultimate pH (pHU) was not influenced by dietary forage:concentrate ratio, but was significantly (P < 0·01) higher in BXB lambs compared with BLXB, TXB, CXC and TXC lambs. Lambs offered the LFC diet during the finishing period had significantly higher values for a* (P < 0·05), b* (P < 0·001), C* (P < 0·001) and H0 (P < 0·05) than lambs offered a HFC diet. Of these parameters only b* was significantly affected by lamb genotype, with BXB lambs having a lower value (P < 0·05) than the other genotypes.

The effects of sex and age of castration of males on growth rate, feed efficiency and carcass characteristics in bacon type swine were measured using 16 pigs each as gilts, entire boars, and boars castrated at birth, 6, 12, 16, and 20 weeks of age. Castration at 20 weeks was too late since some pigs reached 200 pounds live weight before that age. Boars consumed less feed daily than barrows and gilts, were thinner in loin fat, and yielded a higher percentage of shoulder than gilts. The carcasses of boars and gilts were longer, had less fat covering over the shoulder and back, a larger area of loin, and a higher iodine number than those castrated late. Acceptability tests showed that sex or age of castration did not affect the flavour, odour, or tenderness of the meat.Purebred breeders can delay castration for better selection of boars without any serious effect on growth, physical carcass characteristics, and feed requirements. Although the market discriminates against boars, it appears questionable whether castration is necessary when boars are slaughtered at 200 pounds before they reach the age of 150 days.

1. At two centres, Hillsborough and Shinfield, forty-eight pigs in four groups were fattened on rations containing Australian sorghum. The control ration consisted of 30%, wheatfeed, 30% barley meal, 30% maize meal and 10% fish meal. In the three experimental rations either barley meal or maize meal or both were replaced by sorghum.2. The rations containing 30% of sorghum proved to be equal to the control ration as far as live-weight gain of the pigs and the efficiency with which they utilized food was concerned. When 60% of the ration consisted of sorghum there were indications that both rate of gain and food utilization suffered.3. Some aspects of carcass quality suffered when either sorghum alone or sorghum plus maize formed 60% of the ration. The quality of the control carcasses, although quite good by present-day standards, would not qualify for first grade when commercial grading is re-introduced.4. Bacon produced on rations containing up to 60% sorghum had no off-taste or unpleasant flavour.5. In general, the value of sorghum in the ration of fattening pigs was found to be about equal to that of maize.

ABSTRACTCarcass characteristics of 246 bulls and steers by Dairy Shorthorn (DS), Red Friesian (RF), Red Holstein (RH), Danish Red (DR), Meuse-Rhine-Yssel (MR), Simmental (SM) and North Devon (BB) bulls were recorded as part of a breed improvement programme. Carcasses of animals on grass-feeding systems were older, had lower fat and conformation scores and higher estimated lean yield than on intensive cereal systems, BB were fatter, and MR and SM leaner, than the remaining breed groups which were similar to DS and SM progeny had high conformation scores. Estimated lean in the live weight (g/kg) relative to DS was RF +5, RH −3, DR +5, MR +16, SM +16 and BB +6 with an average standard error of 3.

SUMMARYThe effects of three diets on the performance and carcass quality of lambs of the Makui and Moghani breeds of sheep were studied. Thirty-two Makui and 33 Moghani lambs, 6 to 7 mo of age, were kept on feedlots and given three diets for 77 days. The diets each contained a barley, alfalfa meal and corn silage base plus different levels of urea, molasses and dried beet pulp.The average daily live-weight gains (ADG) of lambs fed on diets I (no urea), II (0·8% urea) and III (1·4% urea) were 218, 208 and 204 g respectively, while feed conversion ratios (FCR) were 6·3, 6·6 and 6·8 respectively. The overall ADG for Makui and Moghani lambs were 213·6 and 206·6 g respectively and the FCR were 6·4 and 6·9 respectively. None of these differences was statistically significant. The mean dressing percentages of lambs fed on diets I, II and III were 52·5, 52·7 and 53·9 respectively, and those of Makui (53·1) and Moghani lambs (53·3) were similar. There were only minor differences between the carcass characteristics of the two breeds and these were not influenced by the different diets.

A TOTAL of 70 weaner pigs were used in these studies designed to study the effects of feeding graded levels of wheat offals and groundnut shells in the diets of pigs on their performance characteristics, carcass quality and nutrient utilization abilities. They were all of the Yorkshire and Yorkshire x Landrace crosses, and were reared from about 25 kg to approximately 92 kg liveweight on diets containing 5, 10 and 15% of wheat offals or groundnut shells compared with the control diet which contained neither of these. All the diets were roughly iso nitrogenous, containing about 20% protein.  All pigs on the graded levels of the fibre sources gained more than those on the control diet, consumed more feed and higher digestible energy daily and had inconsistently better feed/gain ratios, but the differences were not significant. Pigs on the ground nut shell diets also gained more weight daily, consumed more feed and digestible energy, but had poorer efficiencies of feed and energy utilization than those on the wheat offals diets, but the differences were also not significant for the three weight categories covered. Generally, feed intake slightly increased, digestible energy intake slightly decreased, while the other response parameters were not consistently affected by the increases in the levels of fibre inclusion. The carcass measurements were not significantly influenced by the levels of fibre inclusion, and there were no definite trends in nearly all the carcass measurements as the fibre levels increased, but there were significant differences due to sources in most of the carcass parameters. Most of the nutrients were significantly depressed in their utilization by the fibre levels and sources.

The effects on average daily gain of a 12 mg. implant of diethylstilboestrol has been tested in male suckling lambs and in male hoggets. In both types stilboestrol produced some mammary stimulation. One case of rectal prolapse was encountered in the hoggets. In suckling lambs, treatment did not significantly increase rate of gain nor significantly affect any of several carcass characteristics studied. In hoggets, treatment produced a highly significant increase in rate of gain (33%), a highly significant increase in pelt weight and a highly significant decrease in the percentage of fat in the last rib section. It produced a non-significant increase in muscle and bone in the last rib section. Carcass score and dressing percentage were not significantly affected by treatment.The oral administration of L-thyroxine to suckling female lambs from 30–70 lb. live-weight did not significantly affect the rate of gain or the carcass characteristics studied.

SUMMARYTwo feeding trials involving 105 pigs weighing approximately 14·5 kg were carried out to investigate the effects of palm oil, groundnut oil, locally produced lard, and beef tallow at 2·5% and 5% of the diet, on performance characteristics and carcass quality. The pigs were of the Yorkshire and Yorkshire × Landrace crosses, and of both sexes. The 23% protein basal diet had no oil added, and the other eight diets were made from the basal diet by the weight-for-weight substitution of the maize with the 2·5% or 5% levels of the four oil types. The results of the two trials were combined and considered as a 2 × 4 factorial experiment (2 levels and 4 types of oil) with the basal diet serving as the control. Only the pigs in the second trial were slaughtered and their carcasses graded at the average live weight of 57±1 kg. Correlation and regression analyses were made on some performance and carcass characteristics, on the average daily digestible energy intake. Results showed no significant treatment differences in the average daily gains, average daily feed intake, and average daily digestible energy intake, but there were highly significant treatment differences in feed consumed/kg of gain and average digestible energy (DE) consumed/kg of gain (P<0·01). None of the carcass quality parameters showed any significant treatment differences. Both the correlation and the regression coefficients for the average daily gain on DE intake were highly significant for all the oil types and levels, but the relationships were low and non-significant when the feed/gain ratio, average backfat thickness and the average percentage of lean cuts were regressed on the daily DE intake.

SUMMARY1. Seventy-two individually fed pigs on six treatments were used to determine the effects on performance and in particular on carcass quality of (a) giving quantities of liquid skim-milk (preserved with formalin) in excess of those normally recommended; (b) replacing meal by skim-milk in the ration on a calculated dry-matter basis (1 gal. skim-milk equivalent to 1 · 1 lb. meal) as compared with a calculated energy basis (1 gal. skim-milk equivalent to 1 · 3 lb. meal) and (c) giving skim-milk for only a part of the growing period instead of throughout. The experimental period continued from 9–10 weeks of age until slaughter at an average live-weight of 135 lb.2. Extensive carcass measurements were taken and in addition assessment of the carcasses was made by a representative of the County Quality Pork Association and by an expert pork butcher.3. Carcasses from pigs given an all-meal diet were comparable in all respects with those from pigs given skim-milk throughout up to a maximum of either 5¼ or 10½ pints per pig per day.4. Carcasses from pigs given the highest level of skim-milk (maximum of 15¾ pints per pig per day) were superior in many respects to those on any of the other treatments, but the possibility that this was due to their slower rate of growth rather than to the high level of milk per se, is discussed.5. Pigs given skim-milk as replacement of part of their meal allowance on a calculated dry matter basis grew significantly faster than those in which the replacement was made on a calculated energy basis or than those given an all-meal diet. The importance is stressed of ensuring that in assessing the value of skim-milk for pigs the caloric value of the rations being compared is similar. The need for experiments based on actual determinations of the caloric value of the rations used is also emphasised.6. While the performance of pigs given skim-milk up to 75 lb. live-weight only was similar to that of pigs given skim-milk throughout, evidence was obtained that the quality of their carcasses was slightly inferior.7. There was some suggestion that as the level of skim-milk in the diet increased an eye muscle of a rather paler colour was produced.
