Different roughage:concentrate ratios and water supplies to feedlot lambs: carcass characteristics and meat chemical composition

AbstractThe current study evaluated the effects of dietary roughage:concentrate (R:C) ratios and water supply on the carcass characteristics and yield of lambs. Forty Santa Inês crossbred lambs with an average body weight (BW) of 19 ± 2.8 kg were evaluated in a completely randomized design with a 2 × 2 factorial arrangement consisting of two proportions of roughage and concentrate (30:70 and 70:30) and two levels of water supply (ad libitum and restricted to 0.5). The animals were slaughtered at an average weight of 28 ± 31 kg. Centesimal composition, colour parameters (L*, a* and b*), shear force, cooking losses and pH were determined on the Longissimus lumborum muscle. There was no interaction effect between the R:C ratio and water supply on the evaluated variables. Total BW gain, average daily gain and final BW were affected by water restriction and R:C ratio. Water restriction reduced total BW gain, average daily gain and final BW. No effect of water restriction was detected on slaughter weight, centesimal composition, colour variations, shear force, pH, weight or yield of carcass. No effect of water restriction and diets was observed on the cuts, except for neck weight. Carcass weight and yield were affected by the R:C ratios. Restricting the water supply to 0.5 does not affect the carcass weight or yield of Santa Inês crossbred lambs or their meat quality characteristics (centesimal composition, colour, shear force and pH measurements). A higher proportion of concentrate in the diet results in heavier hot and cold carcass weights.

Thirty-two double-muscled Belgian White-blue bulls, within a liveweight range of 542 (± 37) to 722 (± 31) kg, daily received 0 or 60 μg cimaterol kg−1 liveweight in a corn silage diet for 136 (± 29) d. Cimaterol slightly improved average daily gain from 1.28 to 1.38 kg (P > 0.05). Cold carcass weight and dressing were increased by cimaterol from 497.0 to 514.6 kg (P < 0.05) and from 71.0 to 72.9% (P < 0.001), respectively. Even in extremely meaty animals, cimaterol exerted a significant repartitioning effect towards more meat and less fat, both in the carcass and in the longissimus thoracis muscle. Cimaterol increased the shear force value from 37.1 to 52.7 N (P < 0.001) but had no effect on other organoleptical traits. Key words: Cimaterol, double-muscled bulls, growth, carcass, meat quality

The effects of nutritional management regimen and breed on growth performance, carcass attributes, and meat quality were evaluated in 68 British (BRIT) and Continental (CONT) crossbred steers, managed on one of three nutritional regimens: (1) ad libitum access to a 77% corn diet (ALGRAIN), (2) limit feeding initially of the 77% corn diet, followed by ad libitum access to the 77% corn diet (LFGRAIN), and (3) limit feeding initially of a 90% haylage diet, followed by ad libitum access to the 77% corn diet (LFHAYL). Nutritional regimen by breed interactions (P<0.02) were present for average daily gain, dry matter intake (DMI), gain to feed, and shear force. LFHAYL regimen decreased gains to a greater extent for BRIT steers than CONT steers managed on ALGRAIN or LFGRAIN. Feed intakes were similar across nutritional regimens for CONT steers, while DMI was depressed in BRIT on LFHAYL as compared with steers started on ALGRAIN or LFGRAIN. Gain to feed was greater in BRIT cattle on LFGRAIN vs. ALGRAIN, while gain to feed was similar in CONT started on grain (ALGRAIN, LFGRAIN). Shear force was lower for beef from LFHAYL BRIT vs. beef from BRIT on ALGRAIN or LFGRAIN, while the converse was true for CONT. Limit feeding of a high-energy diet may be appropriate for cattle of British background to reduce feed input costs, while ensuring tenderness.

Two groups of Wagyu × Hereford steers grown slowly (slow preweaning group, n = 14, mean average daily gain = 631 g/day) or rapidly (rapid preweaning group, n = 15, mean average daily gain = 979 g/day) from birth to weaning were backgrounded on improved, temperate pasture to equivalent group liveweights (543 v. 548 kg, s.e. = 8.8 kg), then finished in a feedlot for 120 days. At weaning, the slow preweaning group was 79 kg lighter than the rapid preweaning group. They required an additional 43 days of backgrounding to reach the same feedlot entry weight as the rapid preweaning group. The slow preweaning group grew more rapidly during backgrounding (630 v. 549 g/day, s.e. = 13.7 g/day) but tended to grow more slowly during feedlotting (1798 v. 1982 g/day, s.e. = 74.9 g/day) than their rapid preweaning counterparts, with overall growth rates from weaning to feedlot exit not differing between the 2 groups (rapid 763 g/day v. slow 772 g/day, s.e. = 17.5 g/day). At slaughter, following the feedlot phase, carcass weights of the 2 groups did not differ significantly (rapid 430 kg v. slow 417 kg, s.e. = 7.2 kg). There was a tendency for the steers grown slowly to weaning to have a higher dressing percentage (57.6 v. 56.6%, s.e. = 0.33%), but there were no significant differences in carcass compositional characteristics between the 2 groups. The slow preweaning steers did have a greater eye muscle area than the rapid preweaning steers (106.6 v. 98.9 cm2, s.e. = 1.87) when carcass weight was used as a covariate. These findings demonstrate that cattle grown slowly to weaning have similar composition at slaughter as those grown rapidly during the same period when backgrounded on pasture to the same feedlot entry weight. Furthermore, marbling was not adversely affected by slow growth to weaning.

ABSTRACT The objective of this study was to apply multivariate analysis techniques such as principal component and canonical discriminant analyses to a set of performance and carcass data of Santa Inês sheep, to identify the relationships and select the variables that best explain the total variation of the data, in addition to quantifying an association between performance and carcass characteristics. The main components generated were efficient in reducing a cumulative total variation of 25 original variables correlated to four linear combinations, which together explained 80% of the total variation of the data. The first two principal components together explained approximately 65% of the total variation of the variables analyzed. In the first two linear combinations, the characteristics with the highest factor loading coefficients were cold carcass weight (CCW), hot carcass weight (HCW), empty body weight (EBW), average weight (AW), croup width (CW), cold carcass yield (CCY), and hot carcass yield (HCY). The variables selected in the canonical discriminant analysis, in order of importance, were total carbohydrate intake (TCI), total digestible nitrogen intake (TDNI), dry matter intake (DMI), non-fibrous carbohydrate intake (NFI), and fiber detergent neutral intake (NDFI). The first canonical root shows a correlation coefficient of approximately 0.82, showing a high association between the performance variables. The classification errors in the discriminant analysis were less than 5%, which were probably due to the similarity between individuals for the studied traits. The multivariate techniques were adequate and efficient in simplifying the sample space and classifying the animals in their original groups.

This study evaluated the performance, carcass characteristics, and centesimal composition of the meat of intact and castrated lambs of the Santa Inês breed and of the crossbred animals: one-half Santa Inês × one-half Texel. Thirty-four lambs were used, nine intact and nine castrated males of the Santa Inês breed, and seven intact and nine castrated crossbred males, all aged between 6 and 7 mo and with an average live weight of 18.2 kg. The design was completely randomized in a 2 × 2 factorial (two crossing and two sexual conditions), with statistical analyses performed in the STAT version 9.4 program. There was a significant difference the Santa Inês and the Texel and Santa Inês crossbred animals in feed conversion and average daily gain, with superiority of the latter group. Castration of animals aged <12 mo had no significant effect on the performance and on the carcass traits of the Texel and Santa Inês crossbred animals, whereas the genotype had a great influence on weight gain and on subjective and quantitative carcass characteristics, demonstrating that crosses in sheep are needed to explore the complementarity of breeds, and heterosis is needed to achieve better performances and carcass characteristics.

Abstract Growth-promoting technologies such as implants, ionophores, and β-agonists improve feedlot performance, efficiency, and carcass characteristics of cattle. The objective of this experiment was to determine the effects of dose and duration of ractopamine hydrochloride (RH) on feedlot performance and carcass characteristics when fed to Holstein steers. A randomized complete block design was used with a 3 × 3 factorial arrangement of treatments with 3 RH doses (0, 300, or 400 mg∙steer−1∙d−1) fed for 3 durations (28, 35, or 42 d). Holstein steers (n = 855; initial body weight [BW] = 448 ± 37 kg) were blocked by BW and randomly allocated to 1 of 9 pens (15 blocks; 9 dose × duration treatment combinations) approximately 72 d before harvest. Weekly pen weights, chute temperament scores, and animal mobility were determined during the RH feeding period. At harvest, carcass data were collected on all steers, and tenderness was measured on steaks from 3 or 4 randomly selected steers from each pen and slice shear force (SSF) was determined on one steak selected from each side of the carcass after aging for 14 or 21 d. For feedlot performance, carcass characteristics, and SSF, no dose × duration interactions were observed (P ≥ 0.11). With increasing RH dose, average daily gain (ADG) and gain-to-feed ratio (G:F) increased linearly (P ≤ 0.01), whereas BW gain increased linearly with RH dose and duration (P ≤ 0.01). Hot carcass weight (P = 0.02) and longissimus muscle (LM) area (P ≤ 0.01) increased linearly with increasing RH dose. The percentage of carcasses in the USDA Yield Grade 2 category increased linearly (P ≤ 0.01) and percentage of carcasses in the USDA Yield Grade 4 category tended (P = 0.08) to decrease linearly as RH dose increased. In the 14-d aged steaks, the percentage of steaks with SSF ≤ 15.3 kg decreased linearly (P ≤ 0.01), whereas the percentage of steaks with ≥20.0 kg SSF increased linearly (P ≤ 0.01) with increasing RH dose. After 21-d aging, there was a tendency (P = 0.06) for a greater percentage of steaks from steers fed RH to have SSF ≥ 20.0 kg (2% of total steaks), but no difference (P ≥ 0.12) in the percentage of steaks with SSF ≤ 19.9 kg. Final chute temperament (P ≥ 0.45) and animal mobility (P ≥ 0.67) scores were not affected by feeding RH. Increasing the dose of RH (300 or 400 mg∙steer−1∙d−1) fed for 28 to 42 d before harvest increased ADG, G:F, hot carcass weight, and LM area when fed to Holstein steers with no negative effects on behavior or mobility. The percentage of steaks classified as not tender improved when steaks were aged for 21 d from steers treated with RH.

Two growth performance trials were conducted to evaluate the effects of grain source (corn vs. barley), corn silage level (15 vs. 50%) and body weight (BW) at slaughter on growth performance, carcass characteristics, and beef quality. Gains were greater ( P < 0.01) feeding corn vs. barley to Angus cattle slaughtered at 550 or 600 kg, most likely due to greater (P < 0.02) feed intakes for corn-fed cattle. Despite greater dry matter intake (DMI; P < 0.01) and feed to gain ratios (P < 0.08) with 50% silage diets, cost of production was lower (P < 0.01) feeding 50 vs. 15% silage diets. Grain source by BW endpoint interactions (P < 0.06) were present for Angus steers due to greater average daily gain (ADG) and lower feed to gain and cost of production in corn-fed cattle slaughtered at 600 versus 550 kg, while the converse was the case for barley-fed cattle. Carcass characteristics and palatability attributes were generally not affected (P > 0.05) by grain source or silage level in the diet. Grain source by silage level by slaughter endpoint interactions (P < 0.08) were present for measures of tenderness (shear force and taste panel assessment of tenderness, chewiness, and rate of breakdown). Gains were not affected (P > 0.27) by grain source for Charolais cattle, while barley feeding decreased (P < 0.10) DMI, feed to gain, and costs of production versus corn feeding. Silage level in the diet did not affect (P > 0.10) any growth performance trait in Charolais cattle. Grain source generally did not affect (P > 0.10) most carcass characteristics and shear force with the Charolais steers. The feeding of the 15% silage diet decreased (P < 0.10) measures of leanness and muscling. Many carcass characteristics were affected (P < 0.02) by slaughter endpoint in Charolais steers, with values changing as BW at slaughter increased from 600 to 700 kg. Abstract: The objective of this work was to evaluate the performance of young Nellore bulls and of young dual-purpose dairy bulls fed proportions of 'Mulato II' grass silage (400 and 100 g kg-1), in diets with high levels of concentrate, as well as to evaluate the cost of this feed. Sixteen young Nellore bulls and 16 young dairy crossbred bulls were used, with initial average weight of 380.69±10.45 and 376.94±17.16 kg, respectively, and average initial age of 24 months. A completely randomized experimental design was carried out in a 2x2 factorial arrangement. The highest silage proportion caused a 13% increase in dry matter intake (percentage of body weight) and a 19.7% decrease in dry matter digestibility of the diet, but it did not alter the intake of total digestible nutrients, nor the average daily gain or carcass characteristics. Nutrient intake and digestibility, average daily gain, and carcass characteristics (except conformation) did not change due to the genetic group of animals. Feed conversion was 18.3% better in young dairy bulls. In diets with high levels of concentrate, the proportion of 400 g kg-1 of 'Mulato II' grass silage, in comparison with that of 100 g kg-1, does not affect the productive performance, nor the main carcass characteristics of economic interest of confined young bulls, but reduces feeding costs.

Essential oil (EO) from Brazilian red pepper fruit contains compounds with antimicrobial activity, and could be possible substitutes for the antibiotics commonly used in ruminant nutrition. Te objectives of the present study were to evaluate the efects of the Brazilian red pepper fruit EO (Schinus terebinthifolius) as a substitute for monensin on performance, carcass characteristics and meat of lambs fed high concentrate diets. Forty-eight lambs were used, 24 males (20 ½ Dorper × ½ Santa Inês and 4 Santa Inês) and 24 females (24 ½ Dorper × ½ Santa Inês), with 21.54 ± 0.88 kg of initial body weight (BW) and 78 ± 2.4 days of age, in a randomized complete block design. Te experiment lasted 56 days, divided into 2 periods of 28 days each. Te treatments were defned by the inclusion in diets of 8 ppm of monensin (MON), and the doses 0.14% (14EO), 0.28% (28EO) and 0.42% (42EO) of red pepper fruit EO. Te additives were included in a base diet with a 10:90 of forage to concentrate ratio. At the end of 56 days, 32 animals were slaughtered for the measurement of carcass parameters and meat composition. Tere was no interaction among treatments and periods for average daily gain (P = 0.08), DM intake (P = 0.36), feed efciency (P = 0.24) and oocyst of Eimeria ssp. in feces (P = 0.46). Te treatments did not afect (P > 0.05) the average daily gain (ADG), dry matter intake (DMI) and feed efciency. Lambs fed diets containing monensin had less (P < 0.01) oocyst/g compared with the diet 14EO. Tere was no efect of diets on carcass characteristics. Te treatments with higher doses of the Brazilian red pepper fruit EO had reduced mineral content of meat compared to monensin. Te red pepper fruit EO demonstrated the potential to replace monensin in feedlot lambs fed high concentrate diets, maintaining performance and carcass characteristics. However, the monensin has greater capacity to control coccidiosis in feedlot lambs.

Abstract Four hundred and thirty-two beef steers (346.3 ± 63.7 kg BW) were used to determine the effects of Zn source on feedlot cattle fed ractopamine hydrochloride. Cattle were blocked in groups of 54 by BW and housed in 48 pens containing 9 steers per pen. Pens within a weight block were randomly assigned to treatments in a 2 x 3 factorial arrangement, with factors being: 1) 0 or 30.1 mg of ractopamine HCl/kg DM fed during the final 29 days on feed; and 2) Zn source: 90 mg of supplemental Zn/kg DM from ZnSO4; Zn sulfate (67%) + Zn methionine (33%); and Zn from Zn hydroxychloride, fed through the entire feeding period. Cattle were fed a high concentrate finishing diet for 154 d and slaughtered at a commercial abattoir. Average daily gain, DMI, feed efficiency and carcass characteristics were determined after slaughter. Zinc source had no impact on live animal performance. Cattle fed ractopamine HCl had greater (P &lt; 0.01) final BW, greater (P &lt; 0.001) ADG, improved (P &lt; 0.001) G:F, heavier (P &lt; 0.01) HCW, and larger (P &lt; 0.05) longissimus muscle compared to non-ractopamine supplemented steers. There was a Zn source by ractopamine interaction (P &lt; 0.01) for dressing percentage. Cattle receiving ractopamine HCl with Zn hydroxychloride had a greater dressing percentage (P &lt; 0.05) when compared to ractopamine HCl cattle fed other Zn sources. Cattle receiving ractopamine HCl with Zn sulfate had a lesser dressing percentage (P &lt; 0.05) when compared to ractopamine HCl cattle fed other Zn sources. Additional Zn source by ractopamine HCl interactions were not significant. These data indicate that Zn source has minimal impacts on feedlot steer performance and carcass characteristics when supplemented to cattle receiving 0.0 or 30.1 mg of ractopamine HCl/kg DM.
