AbstractWhile crossing of specialized sire and dam breeds can be biologically efficient overall, a by-product is produced in the form of (crossbred) males of the dam line that are unwanted for breeding. In the UK sheep industry, most commercial females are first crosses between males of ‘longwool’ crossing sire breeds, predominantly the Bluefaced Leicester, and females of hill breeds. Genetic improvement of carcass quality in longwool breeds would benefit the surplus F1 males as well as filter through to the terminal sire cross lambs produced by the F1 ewes. As a first step, this paper aims to describe the growth and carcass characteristics of crossbred ‘Mule’ wether offspring of Bluefaced Leicester sires and Scottish Blackface and Hardy Speckled Face dams, and relate the crossbred performance to the ‘lean’ index and live conformation score of the sires and the breed of the dams. In each of 3 years, 1500 hill ewes divided over three sites were mated to 15 ram lambs, selected using an elliptical design to best represent the full spectrum of lean index (designed to improve muscle and decrease fat content while keeping live weight unchanged) and live conformation score present in the Penglas Bluefaced Leicester Group Breeding Scheme. Full growth and slaughter records were available on 2192 Mule wether lambs slaughtered after reaching finished condition, defined as the borderline between MLC fat class 2 and 3L. Measurements included live weight, ultrasonic muscle and fat depth, live conformation score, carcass hot and cold weight, MLC fat score (on the standard seven-point scale) and conformation score (EUROP and 15-point scale) and a visual estimation of subcutaneous fat cover. Nearly 800 carcasses were dissected; 20% had a full side and 80% a shoulder dissection. In part-dissected carcasses, shoulder dissection results were used to predict the fat and lean content of the other joints. Fat and lean percentages and absolute weights were then regressed on the lean index and the residual live conformation score of the sire. At the same finished condition, Scottish Blackface offspring were heavier, older, and had less fat and more lean based both on ultrasound and on carcass dissection measurements compared with Hardy Speckled Face offspring. The index score of the sire had a positive effect on the lean content and a negative effect on fat content of all joints. Conformation of the sire did not have a significant effect on any of the carcass composition measurements, but most conformation traits measured on the animal itself (live or on the carcass) were positively related to fat and negatively to lean content in the carcass. When taking into account differences in visually assessed subcutaneous fat percentage, the carcass conformation traits persisted only in having a positive effect on carcass fat content; none of the conformation traits had an effect on carcass lean content. The results show that selection of sires on lean index is an effective way to improve carcass composition in Mule wethers, but selection on conformation is ineffective.

AbstractThis study investigated the effects of the percentage of Texel or Rouge de l’Ouest (Rouge) genes in lambs (0, 50, 75 or 100%; the remainder being Greyface (Border Leicester × Scottish Blackface)) on lamb carcass characteristics and meat quality. Ewe lambs were slaughtered at 34, 40, 46 and 52 kg and ram lambs were slaughtered at 40, 46, 52 and 58 kg live weight. Dressing proportion increased (P < 0·001) by 0·53 and 0·27 g carcass weight per kg live weight for each 1% increase in Texel or Rouge genes respectively. Carcass conformation classification increased (P < 0·001) by 0·016 and 0·007 units (on a five-point scale) for each 1% increase in Texel or Rouge genes respectively. Carcass fat depth measures were reduced by Texel and Rouge genes such that at a constant fat depth end point, carcass weight could be increased by 0·029 and 0·023 kg for each 1% increase in Texel or Rouge genes. Carcass lean content increased (P < 0·001) by 0·99 and 0·27 g/kg for each 1% increase in Texel or Rouge genes. Subcutaneous fat content was reduced (P < 0·001) by 0·36 and 0·29 g/kg for each 1% increase in Texel or Rouge genes. Intermuscular fat content was reduced (P < 0·01) by 0·38 g/kg per 1% increase in Texel genes, whereas Rouge genes had no effect. Similarly, bone content was reduced (P < 0·01) by Texel genes only (0·31 g/kg per 1% increase in Texel genes). Warner-Bratzler shear force values showed a quadratic effect with increasing Texel and Rouge genes, with an initial decrease from 0 to 50% followed by an increase to 100%. Cooking loss increased (P = 0·05) as the percentage of Rouge genes in lambs increased. Increasing the percentage of Texel or Rouge genes significantly increased L* values (P < 0·01 and P < 0·05 respectively), b* values (P = 0·05 and P< 0·05 respectively) and H° values (P < 0·001).

ABSTRACTCarcass evaluation data from two breed-comparison trials were used to examine the value of conformation as an indicator of carcass composition when used in addition to carcass weight and different measures of fatness. One trial involved 1478 crossbred lambs out of three ewe types by Border Leicester, Dorset Down, Ile-de-France, North Country Cheviot, Oxford Down, Southdown, Suffolk, Texel and Wensleydale sires. The other trial involved 920 crossbred lambs out of two dam types by Dorset Down, Ile-de-France, Oldenburg, Oxford Down, Suffolk and Texel sires. Each trial extended over 3 years.Conformation contributed little to the prediction of carcass lean percentage or proportion of lean in the higher-priced joints, although the additional precision was often significant at P<0·01. When conformation was used in association with dissected subcutaneous fat percentage, it was positively associated with carcass lean content; used with a visual assessment of external fat cover on a five-point scale, which provided a less effective control of fatness variation, it tended to be negatively related to carcass lean content.Conformation was slightly more valuable for the prediction of lean to bone ratio and m. longissimus depth. The addition of sire-breed effect to weight and fat class provided an important increase in the precision of prediction of percentage lean in carcass and lean to bone ratio. Texel progeny had higher lean to bone ratios and more lean in the carcass than progeny of other sire breeds, but they did not have sufficiently high conformation scores to clearly identify this advantage.

One hundred and fifty crossbred pigs (Camborough × Canabrid, equal numbers of gilts and barrows) at an average live weight of 64.2 kg were randomly assigned to diets containing 17 or 20% crude protein (with 0.8 or 1.1% lysine, respectively) and 0 or 20 ppm ractopamine. Pigs were slaughtered at an average live weight of 102.2 kg. Supplementation of ractopamine in pig diets significantly increased average daily gain (P < 0.005) and decreased feed to gain ratio (P < 0.001), with no effect on daily feed intake. Ractopamine feeding increased total lean (P < 0.001) and decreased total bone (P < 0.05) and total fat content (P < 0.001) of carcasses. The decreased fat content was largely due to the reduction of subcutaneous fat (P < 0.001). Cartilage visual scores and cartilage uronic acid concentrations of weight-bearing areas of humeral and femoral condyles were not affected by feeding ractopamine. Correlations between visual scores and uronic acid concentrations of joint cartilage and performance parameters and carcass characteristics were not significant. These results demonstrated that feeding ractopamine can increase pig growth rate and carcass leanness without detrimental effect on joint cartilage. AbstractThe effects of dietary protein content and level of feeding on carcass characteristics and organ weights were studied in castrated male Iberian pigs growing from 50 to 100 kg live weight (LW). Animals were offered four diets providing 145, 120, 95 and 70 g ideal crude protein (CP) per kg dry matter (DM) and 13·94, 14·29, 14·56 and 14·83 MJ metabolizable energy (ME) per kg DM, respectively. Three levels of feeding were assayed: 0·60, 0·80 and 0·95 of ad libitum intake. The pigs were slaughtered at 100 kg LW. Daily gain in carcass (carcass gain, g/day) and protein deposition (PD, g/day) in this component attained 76·2% and 78·8% of whole-body average daily gain and PD, respectively. Carcass gain improved with each decrease in dietary CP from 145 up to 120 g/kg DM and then levelled off. A small but significant effect of dietary CP on carcass composition was observed, due to an enhanced fat deposition in pigs fed the lowest protein content diet. Mean values of protein, fat, ash and water contents in the carcass were 101·8, 522·7, 27·6 and 353·7 g/kg respectively. PD in the eviscerated carcass was not affected significantly by dietary protein level but tended to reach a maximum value with the diet that provided 95 g CP per kg DM: 55·7 g/day at the highest feeding level assayed. Carcass energy retention (MJ/day) increased significantly (P<0·001) with decreasing dietary protein supply and on increasing level of feeding. Raising feed intake resulted in a significant decrease for carcass and a concomitant increase for viscera, as proportions of empty body weight (P<0·05 andP<0·001, respectively). Proportional weights of shoulder and ham were not affected either by dietary CP content or feeding level. Proportionate weights of dissectable fat in the shoulder and intermuscular and subcutaneous fat in the ham were not affected by CP content of the diet. In contrast, intermuscular fat content of ham was increased by feeding level (P<0·05), likely with implications for the quality of the cured meat product.

SUMMARYCarcass data for 1053 steers from the Meat and Livestock Commission's beef breed evaluation programme were used to examine the prediction of carcass composition from conformation-related characteristics corrected to equal fatness. The data were from four trials and comprised both dairy-bred and suckler-bred cattle by a wide range of sire breeds.When used with carcass weight (W) and a visual assessment of carcass subcutaneous fat percentage (SFe) (the most precise simple assessment of carcass lean percentage, residual S.d. = 2·28), m. longissimus area (MLA) at the 10th rib was the most effective conformation-related assessment (residual S.d. = 2·10). Precision was improved by the further addition of a visual conformation assessment (C15) on a 15-point scale (residual S.d. = 2·06). The use of equations combining W, SFe, MLA, C15 and other simple assessments of fatness improved the precision further (residual S.d. = 1·94).The measurement combinations above also provided a significant prediction of the percentage of total carcass lean distributed in the higher-priced joints. Residual S.d.s were: W + SFe, (1·12); W + SFe + MLA (1·07); W + SFe + MLA + C15 (1·06).When the equations were applied to the breed means, there was substantial bias (predicted – actual carcass lean percentage). Bias ranged from approximately + 1·5 (purebred Canadian Holsteins and Luings ) to – 1·6 (Limousin crosses). The accuracy of carcass lean prediction was not improved by the addition of bone measurements to the equations but there was some improvement in the prediction of lean to bone ratio: cattle with light, thin bones tended to have higher ratios.Similar combinations of independent variables were found to provide the most precise prediction within breed.

Half-carcasses of 108 wether and ewe lambs from six genotypes, slaughtered at 34, 44 and 54 kg liveweight, were dissected into subcutaneous fat, intermuscular fat, muscle, bone and connective tissue. The six genotypes were the progeny of Dorset Horn and Border Leicester rams mated to Merino, Corriedale and Border Leicester x Merino first-cross ewes. As carcass weight increased, the proportion of subcutaneous and intermuscular fat increased (b > 1 ; P < 0.05) and the proportion of muscle and bone decreased (b < 1; P < 0.05). Lambs sired by Border Leicester rams had more subcutaneous fat (12.7%), more intermuscular fat (7.6%) and more bone (5.7%) than lambs sired by Dorset Horn rams at the same carcass weight (P< 0.05). Similarly, lambs sired by Dorset Horn rams had more muscle (7.2%) than lambs sired by Border Leicester rams at the same carcass weight (P < 0.05). Breed of dam had no effect on carcass composition. Wether lambs had a greater proportion of bone (5.7%) than ewe lambs at the same carcass weight (P < 0.05). The breed of sire effect and the lack of a breed of dam effect on carcass composition, in conjunction with estimated mature weights for the breeds, suggest possible differences between sire and dam breeds in the partitioning of fat between the carcass and non-carcass depots. ____________________ *Part I, Aust. SUMMARYTwo experiments were conducted to compare the milk-producing value of dried forages in the form of cobs and pellets as replacements for a standard dairy concentrate. Four levels (0·33, 0·44, 0·55 and 0·66 kg/kg milk) of dried forage or standard dairy concentrate were offered in addition to a basal ration of 6 kg hay and 2 kg standard dairy concentrate. In both experiments the rate of eating by the cows of cobs was significantly slower (P<0·05) than that of pellets. No significant difference was found between the cobs and pellets in either experiment in their value for milk production. In Experiment 2 the standard dairy concentrate had a non-significantly higher (P>0·05) milk-producing value than the dried lucerne. Level of feeding had a significant positive effect on the milk yield (P< 0·001) of cows offered the dried grass and lucerne and on the milk solids- not-fat content (P<0·05) and live weight (P<0·01) of cows offered the dried grass, lucerne and standard dairy concentrate.

AbstractFifty-one Churra da Terra Quente ewes (4–7 years old) were used to analyse the potential of real-time ultrasound (RTU) to predict the amount of internal adipose depots, in addition to carcass fat (CF). The prediction models were developed from live weight (LW) and RTU measurements taken at eight different locations. After correlation and multiple linear regression analysis, the prediction models were evaluated by k-fold cross-validation and through the ratio of prediction to deviation (RPD). All prediction models included at least one RTU measurement as an independent variable. Prediction models for the absolute weight of the different adipose depots showed higher accuracy than prediction models for fat content per kg of LW. The former showed to be very good or excellent (2.4 ⩽ RPD ⩽ 3.8) for all adipose depots except mesenteric fat (MesF) and thoracic fat, with the model for MesF still providing useful information (RPD = 1.8). Prediction models for fat content per kg of LW were also very good or excellent for subcutaneous fat, intermuscular fat, CF and body fat (2.6 ⩽ RPD ⩽ 3.2), while the best prediction models for omental fat, kidney knob, channel fat and internal fat still provided useful information. Despite some loss in the accuracy of the estimates obtained, there was a similar pattern in terms of RPD for models developed from LW and RTU measurements taken just at the level of the 11th thoracic vertebra. In vivo RTU measurements showed the potential to monitor changes in ewe internal fat reserves as well as in CF.

Forty male lambs of the mountain Greek breed were used to evaluate the effect of age at slaughter on carcass characteristics and composition. The slaughter of lambs was carried out at the age of 30, 45, 60, 75 and 90 days. The slaughter procedure, carcass dissection and carcass composition were realized according to the standard method of CIHEAM-AGRIMED programme. The results of this work showed that the lambs of different age groups did not differ in dressing percentage significantly. The proportion of muscles showed a tendency of increase with the increasing slaughter age but the differences were not significant. The proportion of total fat in carcass increased with the increasing slaughter age from 20.84 to 23.59% for the age group of 30 and 90 days, respectively (P &lt; 0.05). On the contrary, as the age at slaughter increased, the proportion of bones decreased (P &lt; 0.05). Subcutaneous, intermuscular, perinephric and pelvic fats increased with the slaughter age, but only the subcutaneous fat was influenced significantly (P &lt; 0.05). Among the different commercial cuts proportions of long leg, first 5 ribs and shoulder decreased, while those of last 8 ribs-loin and breast-flank increased (P &lt; 0.05). The overall results suggest that the slaughter age of lambs of the mountain Greek breed should be increased from the present ~45 days to more advanced age of 75 or 90 days in order to improve the farmers&rsquo; profits without serious negative effects on the quality of carcasses or meat of lambs. &nbsp; &nbsp;

Breed effects on live weight gain, slaughter characteristics and carcass composition were compared in Aberdeen Angus, Charolais, Hereford and Simmental bulls. The experiment extended over 2 years and involved totally 96 animals. The target slaughter live weights were determined 550 kg for earlier maturing breeds Aberdeen Angus and Hereford and 630 kg for later maturing breeds Charolais and Simmental. Charolais and Simmental gained more rapidly (P &lt; 0.05) than Aberdeen Angus while Hereford were intermediate. Hereford had lower (P &lt; 0.05) dressing percentage than the other breeds. Percentages of grade I meat were significantly higher (P &lt; 0.05) in Charolais and Simmental. The highest percentage of separable fat was recorded in Hereford (P &lt; 0.05). Charolais and Simmental had lower (P &lt; 0.05) thickness of subcutaneous fat over MLLT than Aberdeen Angus andHereford. The later maturing bulls generally tended to achieve higher live weight gains during the experiment, produced less fat and had higher percentage of meat from high priced joints in comparison with earlier maturing animals. &nbsp;
