The perception of milk has changed over the past 25 years from one of being the ideal food to one of being detrimental nutritionally, mainly due to the fatty acid composition of its fat component. Now however, it has been discovered that milk contains a number of compounds, which may have positive nutritional benefits. It also appears that the association between saturated fatty acids in milk and effects on cholesterol may have been an oversimplification. It is accepted that the hypercholesterolaemic saturated fatty acids in milk fat are confined to lauric (C12:0), myristic (C14:0) and palmitic acid (C16:0) with the shorter chain saturated fatty acids and stearic acid having no cholesterol raising effect. Indeed bovine milk fat contains two fatty acids which may have important beneficial effects on human health, namely conjugated linoleic acid (cis- 9, trans- 11 linoleic acids – C18:2, CLA) and butyric acid (C4:0). Also monounsaturated fatty acids have been shown to be beneficial in altering the proportions of LDL and HDL cholesterol and it is possible to increase the concentration in milk of the principal monounsaturated fatty acid, oleic acid (C18:1), by optimising the diet of the cow. This paper will discuss nutritional strategies to optimise milk fat composition with particular reference to work from my own Research Centre in relation to oleic acid and CLA.

It is well established that the proportion of saturated fatty acids in cows milk fat can be reduced by dietary inclusion of fats containing a large proportion of C18 fatty acids. Regardless of the individual C18 acids added to the diet, because unsaturated C18 fatty acids are biohydrogenated in the rumen it is principally the amount of 18:0 absorbed by the animal which is increased. This leads to increased mammary uptake and desaturation of 18:0 and to the secretion in milk of greater amounts of 18:0 and 18:1 fatty acids. Intramammary synthesis of 6:0-16:0 fatty acids is concurrently reduced. Of the cereals grown in the UK, oats contain relatively large amounts of C18 fatty acids. For this reason we have examined the potential of dietary inclusion of oats as a simple and inexpensive means of manipulating milk fat composition. In a previous experiment in which hay-based diets were given replacement of barley with oats reduced the saturated (6:0-18:0) fatty acids in milk fat from 753 to 619 g/kg and increased the monounsaturated fatty acids from 211 to 344 g/kg milk fat.

Ten Czech Pied cows in the mid-lactation stage were fed diets based on grass silage and maize silage. The composition of milk fats differed. The proportions of even-chain saturated fatty acids (SFAs) up to C<sub>14:0</sub> were insignificant and the content of C<sub>16:0</sub> was significantly higher (<i>P</i> < 0.05) when feeding a diet based on maize silage, while the proportions of the individual polyunsaturated fatty acids (PUFAs) were significantly (except for C<sub>18:2</sub>) higher when feeding a diet based on grass silage. The total SFA proportions were 67.60 and 62.93% (<i>P</i> < 0.05) of maize and grass silages, respectively, while an opposite relation was observed for the sum of PUFAs (3.56 and 4.74%; <i>P</i> < 0.001). Feeding of grass silage resulted in a significantly lower proportion of hypercholesterolaemic fatty acids C<sub>12:0</sub>, C<sub>14:0</sub> and C<sub>16:0</sub> (49.38 and 44.98%, respectively; <i>P</i> < 0.05) and in lower values of the atherogenic index (3.03 and 2.44; <i>P</i> < 0.05). Thus, the results could be used for the improvement of milk fat composition.

Decreasing saturated fatty acids and increasing monounsaturated fatty acids are desirable to improve oil for food. Seed oil content and fatty acid composition are affected by genotype and environment. Therefore, we systematically analyzed the agronomic traits and fatty acid metabolic profiling of Brassica napus (B. napus) seeds at different developmental stages in high level of oleic acid (HOA), medium level of oleic acid (MOA), and low level of oleic acid (LOA) B. napus cultivars, both sown in winter and summer. The results showed that all winter-sown cultivars produced 20% more seed yield than the summer-sown crop. The longer growing period of winter-sown B. napus resulted in higher biomass production. However, the fatty acid metabolism of individual cultivars was different between winter-sown rape (WAT) and summer-sown rape (SAT). The absolute fatty acid content of LOA and MOA cultivars in WAT were significantly higher than that in SAT, but that of HOA was opposite. Importantly, the levels of monounsaturated fatty acids (18:1; 20:1) in SAT were far more than those in WAT. These data indicate the quality of oil from the HOA in SAT is more suitable for human consumption than that in WAT.

Objective: Wild indigenous fruits are believed to be extremely nutritious, contributing a great deal to the general health of the tribal and rural population. To validate this claim, systematic studies are required to estimate their nutritional composition. The objective of the study was to analyze the fatty acid composition of Syzygium zeylanicum (L.) DC. var. zeylanicum.Methods: The fatty acid composition of S. zeylanicum var. zeylanicum fruits were analysed by GC-MS/MS.Results: The major fatty acids were cis-oleic acid (43.47±0.62 %) and linoleic acid (31.14±0.35%). Total monounsaturated fatty acids in the sample was 44.21%. Omega-6, omega-7 and omega-9 fatty acids were detected. The polyunsaturated fatty acids in thefruits were linoleic acid (31.14±0.35 %) and arachidonic acid (0.15±0.22 %), whereas 24.51 % of the total fatty acids were saturated. The ratio of unsaturated to saturated fatty acids was approximately 3:1. The order of abundance of fatty acids, in some of the healthiest oils, viz. olive, canola, peanut oils is, Oleic acid>Linoleic acid>Palmitic acid>Stearic acid and the same order was observed in the present study.Conclusion: Fruits of S. zeylanicum var. zeylanicum too shows a healthy balance between unsaturated and saturated fats.

Abstract The impact of different amounts of concentrate and stage of lactation on fatty acid profile in milk fat was measured in 30 lactating Nubian goats. The ration included medium-quality hay, grazed pasture and concentrate feed (mashed barley, oats and beet pulp at 1:1:1 wet weight ratios). Half of the goats (group A) received 1.2 kg whereas group B received 1.0 kg of concentrate daily. Milk samples were taken 3 times during lactation. The total amounts of saturated fatty acids (SFA) increased gradually during lactation while polyunsaturated (PUFA) and monounsaturated fatty acids (MUFA) decreased. Group A had lower SFA but higher concentrations of MUFAs and PUFAs at all 3 samplings. Nubian goats fed more concentrate had FA ratios presumably more suitable for consumers of milk and milk products.

The nutritional image of bovine milk fat has suffered for years because of the association of saturated fatty acids and coronary heart disease. Thus the alteration of fatty acid composition has been a long-term strategy. Forages, even though containing a relatively low level of lipids, are the cheapest and often the major source of beneficial unsaturated fatty acids in ruminant diets. Recent progress in the research of factors affecting fatty acid content and composition in fresh and preserved forages and the associations between feeding such forages and milk fat profile are reviewed. Milk from cows grazed or fed fresh forage, especially from species-rich grasslands or forage legumes, has a considerably higher ratio of unsaturated to saturated fatty acids and a higher content of nutritionally beneficial trans-fatty acids (e.g. CLA, vaccenic acid) than milk from cows fed silage or hay. Grass and legume silages seem to affect the fatty acid profile more propitiously than maize silage.

Of the cereals grown in the UK oats, and especially the recently developed naked oats, contain relatively large amounts of C18 fatty acids. Consistent with this, in a series of change-over type experiments substitution of oats or naked oats for barley in dairy cows’ rations reduced the proportion of saturated fatty acids and increased that of monounsaturated fatty acids in milk fat (Martin & Thomas, 1988a, b). These results indicated the inclusion of oats in cows’ diets to be a means of increasing the appeal of milk and milk products to the health-conscious consumer. The present experiment was conducted to assess the likely potential for dietary manipulation of milk fat composition using naked oats under commercial farming conditions.Thirty-two Friesian cows and heifers were used in a continuous design feeding trial which extended from week 3 to week 18 of lactation. The animals were paired on the basis of calving date, lactation number and pre-trial milk yield and, within pairs, were allocated at random to one of two diets.

The aim of this research was to determine fatty acid profiles in piglet brain, skin, and muscle, and in the milk of sows fed fat with different saturation grades during gestation and lactation. At 42 days of gestation, 50 multiparous sows were randomly allocated to one of two treatments, namely a diet containing pork lard (n = 25) and a diet containing soybean oil (n = 25). The fats were provided at 3.6% during gestation and at 4% during lactation. The experimental diets were offered through the weaning of the piglets. The fatty acid profile of the milk was determined fourteen days after parturition. At weaning (21 days postpartum) and seven days later, one of the piglets (n = 64) from 16 sows allocated to each treatment was selected at random to determine fatty acid profiles in brain, skin and muscle. Saturated and monounsaturated fatty acids were higher in the diet with pork lard than in that with soybean oil, in which the polyunsaturated fat content was higher. A higher saturation of fatty acids was found in milk from the sows that consumed pork lard, which contained more saturated fatty acids than the milk from sows that consumed soybean oil. The fatty acid profiles in muscle and skin of the piglets were affected by the diet of the sows. However, the fatty acid profile of the piglets’ brains was not affected by the diet of their mothers. Genetic parameters were estimated for fatty acid composition of subcutaneous beef fat of 1573 animals which were the progeny of 157 sires across seven breeds grown out on pasture and then finished on either grain or grass in northern New South Wales or in central Queensland. There was genetic variation in individual fatty acids with estimates of heritability for the proportions of C14 : 0, C14 : 1c9, C16 : 0, C16 : 1c9, C18 : 0 and C18 : 1c9 fatty acids in subcutaneous beef fat of the order of 0.4 or above. Also substantial correlations between some fatty acids were observed. Genetic correlations between fatty acids and fat depth at the P8 site suggested that much of the genetic variation in fatty acid composition was related to changes in fatness. Selection for decreased fatness resulted in decreased proportions of C18 : 1c9 with concomitant increases in C18 : 0, C14 : 0 and C16 : 0. This suggested that selection for decreased fatness at a given weight will result in a decrease in the proportions of monounsaturated fatty acids in the subcutaneous fat in the carcass with a corresponding increase in the proportions of saturated fatty acids.

Fatty acid profile and the related nutritional indices of the breast, thigh and drumstick muscles were studied at three farms, suppliers of ROSS 308 line of broilers, slaughtered at the age of 42 days. The proximate chemical composition of the commercial slaughter cuts revealed contents between 16.26�22.78% for proteins and 1.80�7.45% for total lipids, the breast having the highest protein and ash content and lowest values for fat and moisture. The obtained values were mainly affected by region (P[0.001). Meat fatty acid profile was affected (P[0.001) by commercial slaughter regions (CSR) and by the interactions between CSR and supplier farms (Farm A, B, and C) at different levels. The obvious findings highlighted that Farm B supplied broilers with a delivered higher content of beneficial fatty acids (LA, LNA, AA, EPA, and DHA) in breasts and drumstick, while for thigh, Farm C had the best results. The content of total saturated fatty acids (SFAs), monounsaturated fatty acids (MUFAs) and polyunsaturated fatty acids (MUFAs) had the highest level in the thigh (P[0.001).
