Abstract In the course of the study, it was determined that the chemical composition and nutritional value of the Viburnum vulgaris is explained by a group of substances of different nature. Their qualitative and quantitative component depends, first of all, on the growing region. The national economic value of viburnum is great—from culinary delights to medicines. The article presents the biochemical composition of the leaves of the viburnum of various varieties, which indicates the possibility of using viburnum leaves in the production of food, including a functional orientation.

Abstract Berunok has been a commodity with low economic value, so it is necessary to use Berunok which has high nutritional value. This study aims to determine the proximate content of P. australis. Parameters measured were yield value and proximate analysis of berunok flour. This study consisted of two stages, namely sample preparation and manufacture of berunok flour, analysis of the chemical composition of berunok flour. The research design used a completely randomized design (CRD). The results showed that berunok flour had a dry texture, very smooth, and brownish in color. While the chemical composition contained in Berunok flour is water content of 8.19%, ash content of 37.21% (db), protein content of 48.78% (db ), fat content of 3.44% (db), and carbohydrate content by a difference of 10.57% (db). The average yield value of 83.34%.

Recently, the use of biostimulants as natural and eco-friendly fertilizers has received increasing attention because of their efficiency in terms of improving crops’ qualitative and quantitative parameters, i.e., growth, yield, and chemical composition. We studied the effect of four biostimulants—humic acid (20 g/L), vermicompost tea (15 mL/L), moringa leaf extract (1:30 v/v), and yeast extract (5 g/L), with tap water as a control treatment—on the qualitative and quantitative characteristics of snap beans. The experiment was designed using a complete randomized block with triplicates. The results showed a significant improvement in treated plant performance (growth and yield), chlorophyll, and chemical composition compared to untreated plants. Using moringa leaf extract increased the plant height, number of leaves and branches/plant, and fresh and dry weight. Additionally, the diameter of the treated plant stems and the quality of the crop and pods were also significantly higher than those of plants treated with vermicompost or humic acid extract. It is also noted that the profile of amino acids was improved using all tested biostimulants. This leads to the conclusion that the addition of moringa leaf extract and vermicompost tea not only positively affects the qualitative and quantitative properties of snap bean but is also reflected in its nutritional value as a plant-based food.

The aryicle presents the results of a comparative study of the biochemical composition of earthworms of dendrobene and prospector rocks, the peculiarities of their cultivation and their use for feeding when growing juvenile tilapia and clary catfish. The experience of cultivating earthworms of two breeds using the improved methods of foreign authors is described. The results of a study of the biochemical composition of cultivated objects that determine their nutritional value for feeding fish are presented. The fish-breeding and biological indicators of juvenile tilapia and clary catfish, obtained during the cultivation of dendrobene and prospector in fish farming in the Almaty region (VI fish-breeding zone) during worm feeding, are analyzed. A comprehensive analysis of the studied indicators made it possible to assign a certain rating place to each worm breed in relation to its use as fish feed.

Non-alcoholic fatty liver disease (NAFLD) has become of major interest worldwide, it is estimated that more than 20% of the general population suffer from liver steatosis. NAFLD is highly associated with metabolic risk factors like type 2 diabetes mellitus, obesity and dyslipidemia, the patients diagnosed with NAFLD should adopt a high fiber low calorie diet, with reduced saturated fat and carbohydrates content, leading to weight loss and improvement of metabolic profile. Our study is aiming to shape the profile of the patient interested in being informed related to food quality and chemical composition and to evaluate the aspects on the food products label which are important for the customer. Between June 2017 and December 2017, 83 patients diagnosed with NASH were included in the study, representing the study group, while 33 subjects, without metabolic syndrome or digestive diseases, selected from patient list belonging to two general practitioners, constituted the control group. Related to the interest of being informed about the chemical composition and nutritional value of the products bought, the study showed a low interest for the provided information on nutritional value. lack of confidence in the provided information and complexity of the information are understandable, the high number of subject reasoning through lack of immediate clinical benefit is surprising. Among the healthy population the willingness to pay attention to this aspect is extremely low.
