Abstract The aim of this paper was to assess the influence of savory on colour, odour and taste of vacuum-packed frankfurters during 28 days of storage. Powdered, dried savory (0.1%, 0.3% and 0.5%) was added to frankfurters, while control frankfurters were produced without herbs or spices. Assessment of colour, odour and taste acceptability of the frankfurters was performed by a panel of five assessors using a quantitative descriptive test, and the results of the ranking test were analysed statistically. When used at the levels of 0.1% and 0.3% in the sausages, savory did not have a negative influence on frankfurter colour, while quantities of 0.5% adversely affected frankfurter colour. Savory in the smaller amounts of 0.1% and 0.3% stimulated development of a pleasant odour and taste in the frankfurters, while 0.5% savory had an undesirable effect on these sensory attributes.

SENSORY QUALITY OF YELLOW PASSION FRUIT JUICE (Passiflora edulis var. flavicarpa) UNDER PASTEURIZATION AND STORAGE Abstract Quantitative descriptive analysis (QDA) was used to evaluate the sensory characteristics of yellow passion fruit juice ( Passiflora edulis flavicarpa) submitted to three pasteurization binomial (85oC/27s, 80oC/41s, 75oC/60s) and stored for 120 days under two different temperatures (25±5oC e 5±1oC). The sensory characteristics (color homogeneity, orange color, typical aroma, floral aroma, sweet aroma, typical flavor, off flavor, oxidized flavor, cooked flavor and sweet and bitter tastes) are presented by sensory profiles with the description of sensory attributes and reference definitions to train the judges. The results show that the pasteurization had different effects on the juice sensory attributes. However, it was not found significant differences for most of the sensory characteristics when the different time-temperature binomial of the juice pasteurization were compared. During the storage, the passion fruit juice pasteurized at 85oC/27s presented the lowest changes on the sensory attributes. The pasteurization at 75oC/60s was harmful mainly to the color characteristics, sweet aroma, characteristic aroma, floral aroma and typical flavor. Storage under refrigeration tended to keep the best juice quality characteristics.

In this work a methodology to evaluate the sensory properties of honeys has been developed. The sensory analysis was carried out by means of a quantitative descriptive analysis (QDA) method, based on several reference scales, for the coverage of the designed range for each descriptor. The peculiarity of this sensory analysis is that the reference scales have been constituted by common foodstuffs agreed upon by consensus of the panel. The main sensory attributes evaluated in the analyses were: adhesiveness, viscosity, bitterness, aroma, sweetness, acidity, color and granularity. Both the intensity and persistence of honey aromas have also been estimated, together with the classification of the identified aromatic attributes into different groups. The method was applied to 55 artisanal honeys from Madrid (Spain) with the following results: (i) the developed sensory profile sheet allowed a satisfactory description of Madrid honeys; (ii) correlations between sensory attributes of three broad groups of Madrid honeys were obtained and (iii) aroma persistence, sweetness, bitterness, color and granularity appeared as the main sensorial characteristics of honey with discrimination power between floral and honeydew honeys.

There are >52,000 cultivars of daylilies (Hemerocallis spp.), some of which the ancient Chinese used for nutritional and medicinal purposes. Daylilies have tremendous potential in foodservice due to the range of color, fragrance, flavor, and textural varieties. The objective was to quantify by descriptive analysis the attribute descriptors for two edible daylily cultivars; that is, `Rosie Meyer' and `Siloam Powder Pink,' and to provide data indicating the optimum month for consumption of these two cultivars of daylilies. Blooms were harvested during early morning hours over 5 months (May through September). Six panelists were trained to use Quantitative Descriptive Analysis for 6 months on the sensory attributes of `Rosie Meyer' and `Siloam Powder Pink' cultivars. Training consisted of determining attribute categories as well as intensity ratings for references. Attribute categories included appearance, odor/scent, handfelt texture, oral texture, basic taste(s), flavor, mouthfeel factors, and chew rate. Results showed attribute categories with descriptors for `Siloam Powder Pink' as odor/scent, flavor, mouthfeel factors, and oral texture as having a significant difference (P < 0.05) for the evaluation months. `Rosie Meyer' demonstrated significant differences (P < 0.05) for the evaluation months in attribute categories for appearance, odor/scent, flavor, oral texture, and mouthfeel factors. The optimum month for consumption of `Rosie Meyer] was September (P < 0.05); for `Siloam Powder Pink,' it was July (P < 0.05). These results provide a descriptive language for daylily cultivars `Rosie Meyer' and `Siloam Powder Pink.' The optimum month for consumption to obtain the fullest range of desirable attributes will provide the food and horticultural industries with added information by which to market these cultivars.

The financial statements serve as a benchmark in assessing the financial performance of the company as the basis for making business decisions. The motivation in conducting this research is to support previous research to see the development condition of one of the oil palm plantation companies. The purpose of this study is to assess the financial performance by using financial ratio analysis and horizontal analysis. The method used in this research is Quantitative Descriptive with analysis design using Term series Analysis. The result of the research based on financial ratio analysis shows the liquidity ratio and solvency ratio in good condition, while the activity ratio and profitability ratio are not good because it is below the industry average of similar companies. Based on horizontal analysis, financial performance fluctuated and influenced internal and external factors such as operational performance and the average price of world palm oil. The limitations of this study are using only two analytical tools and financial statements analyzed only the balance sheet and income statement.

The paper presents the analysis of the data received from the survey of heads of industrial enterprises and also experts-researchers in 2003-2004. The data describe the economic state of enterprises and their position in competitive, administrative, intermediary, financial etc. environment. The assumption of essential heterogeneity of the set of industrial enterprises, including enterprises of the same sector or the same territorial formation is confirmed. It is shown that Russian industrial enterprises as a rule do not feel influence of the stock market situation while the condition of the currency market influences the majority of enterprises. The sensitivity of enterprises depends on their economic situation: the better is the state, the stronger is the influence. Weak influence of the investment and administrative environment on the state of enterprises and negative influence of the activity of intermediary organizations are registered. More than 2/3 of the respondents consider important strengthening of the responsibility of large proprietors for inefficient activity of their enterprises. Lack of the strategic approach in the activity of authorities of all levels is ascertained and the necessity of development and realization of industrial policy at all administrative levels, including the municipal one, is shown.

In this paper the author presents a case of a narcissistic adolescent boy with crippling anxieties and multiple inhibitions, where the contributing intergenerational history of self-difficulties had infiltrated the parental couple's "selfdyad" in a way that could not be adequately contained. Having lost much of the capacity for the mutual selfobject relatedness that is required for a good enough selfdyad regulation, the parents' introjects were then split off and re-projected into their child. The author demonstrates a way of working in the treatment with the use of multiple psychoanalytic therapies, individual, couple, and family modalities. Furthermore, he elaborates a rationale for such a format, especially for those cases in which the intergenerational family projection-linking functions are especially salient and continue to exert a negative influence on the identified patient.
