Potassium as an Index of Fruit Content in Baby Food Products. Part I. Banana-Containing and Apricot-Containing Products

Abstract Percentage ingredient labeling has been proposed for baby foods. We determined whether or not the potassium content of baby foods could be used to verify the quantity of fruit when the characterizing ingredients were apricots or bananas, fruits rich in potassium. Official values for potassium in fruit (USDA Handbook No. 8-9) did not agree well with actual analyses. The potassium levels of products of known composition were accurately predicted from analyses of the actual ingredients used to make the foods. For banana-containing monofruit products of variable or unknown composition, potassium analysis led to fruit level estimates consistent with either the known composition or the label declaration. For products of unknown composition made with apricot concentrate, however, potassium analysis led to fruit level estimates lower than the probable fruit content. The quantity of fruit in baby foods made with potassium-rich fruits can be estimated from the potassium content if the potassium value for the fruit is representative of the actual ingredients used to make the product, if potassium analysis is to be used to verify compliance with percentage ingredient labeling, there must be statutory specification of the singlestrength fruit level for fruit reconstituted from concentrate.

The article analyzes the state registration of specialized food products, using the example of food products for children from three years old. The research process involves certificates issued on the website of the «Unified register of state registration certificates’ in the period from 2014 to 2019. During the analysis, the main groups of specialized baby food were identified, and the number of registered certificates in dynamics was determined. The data obtained indicate that the demand for state registration of children’s specialty food increased by 2018 and amounted to more than 30% compared to the previous period. The most popular products on the market of baby food for children three years old: juice-containing beverages, including vegetable raw materials, vegetable nectars, fruit juices.

Организация искусственного вскармливания детей включает использование специализированных продуктов детского питания. Основными принципами создания адаптированных детских молочных смесей является приближение их к составу и свойствам женского молока и соответствие особенностям пищеварения и метаболизма ребенка. Немаловажным моментом при этом является адаптация углеводного компонента. В современных формулах детских адаптированных смесей часть лактозы заменена на мальтодекстрин. Целью настоящих исследований являлось изучение пищевой ценности, показателей безопасности отечественного углеводного ингредиента мальтодекстрина и возможности его применения в специализированной пищевой продукции для детского питания. Результаты исследований органолептических, физико-химических и микробиологических показателей опытного образца мальтодекстрина подтвердили соответствие требованиям, предъявляемым к углеводным ингредиентам для производства продуктов детского питания. При исследовании возможности использования отечественного мальтодекстрина в производстве адаптированных продуктов детского питания подтверждена его целесообразность для оптимизации углеводного состава готового продукта. The organization of artificial feeding of children includes the use of specialized baby food products. The main principles of creating adapted infant formula are to approach the composition and properties of human milk and to match the characteristics of the child's digestion and metabolism. An important point in this case is the adaptation of the carbohydrate component. In modern formulas of children's adapted mixtures, part of the lactose is replaced with maltodextrin. The purpose of these studies was to study the nutritional value, safety indicators of the domestic carbohydrate ingredient-maltodextrin and the possibility of its use in specialized food products for baby food. The results of studies of the organoleptic, physico-chemical and microbiological parameters of the maltodextrin prototype confirmed compliance with the requirements for carbohydrate ingredients for the production of baby food. When studying the possibility of using domestic maltodextrin in the production of adapted baby products, its expediency for optimizing the carbohydrate composition of the finished product was confirmed.

The safety of baby foods is key to a child’s health, which, in turn, is one of the prioritized national goals. As they grow, children get exposed to numerous negative environmental impacts. Chemical contamination of baby foods can increase pediatric morbidity. The aim of this study was to investigate possible correlations between baby food contamination and primary pediatric morbidity using data on 65 Russian regions collected in 2012–2017 by the Russian Federal Information Public Health Surveillance Foundation. The data were processed in Microsoft Word 2010 and Microsoft Excel 2010. Of 67,940 samples of baby foods analyzed for chemical contamination, priority pollutants (toxic element) were detected in 14.1%. The most contaminated were fruit and vegetable purees (47.1%), followed by milk formulas and cultured dairy products (19.9%). We also analyzed 32,914 indicators of pediatric morbidity. The Pearson correlation analysis detected reliable correlations between baby food contamination and the primary incidence of endocrine disorders in infants, as well as the primary incidence of obesity, diabetes mellitus and cancer in children aged 0 to 14 years.

This paper describes methods for processing an instant baby food made from rice and almonds. Commercial production of ready-to-serve baby foods in Iran is limited, and imported baby foods are expensive. Since home preparation is time-consuming and often neglected, a ready-to-serve local product is desirable. The resultant product was acceptable and caused no digestive disturbance when fed to children for three months.

This article presents the results of the study of problematic issues of organisational-and-economic character concerning the provision of children with baby food products in Ukraine and European Union countries. It is established that the marketing feature of baby food products in Ukraine is its sales from pharmacies. It has been proved that the cost of baby food products in EU countries and in Ukraine have no price gradation depending on the degree of economic development of the country. The dynamics of development of the Ukrainian market of baby food products, as well as the dynamics of the cost of baby food products in Ukraine, depending on their dispensing place, have been analysed. It is established that the cost of baby food products is somewhat lower in pharmacies.
