Sensing nostalgia through traditional food: an insight from Croatia

Purpose – Due to the growing trend of consuming healthy food, which reproduces the ideal of the food the authors tried in their childhood, an increasing number of researchers have brought together the values of tradition, nostalgia and food. The purpose of this paper is to explore the relationship between food and nostalgia in order to find out in which way they affect each other. Design/methodology/approach – In order to explore the perspectives of traditional food in re-collecting and re-experiencing positive past experiences, both qualitative and quantitative techniques were used in two stages. First, focus group interviews were conducted with ten restaurant chefs in three different regions of Croatia. Then, a survey was carried out with 362 Croatian consumers. Findings – Focus group results show that although traditional food creates new opportunities for differentiation, finding the right ingredients and time for cooking traditional food is still a problem. There is a low interest in traditional food in restaurants, as domestic patrons mostly worry about the high prices, while foreign ones do not know anything about such foods due to the inadequate promotion of Croatian gastronomic offer. Survey results indicate that consumers are familiar with traditional Croatian food, eat it regularly at home and consider it as food with high-quality aspects that reminds them of their childhood and positive past experiences. Practical implications – The results presented in this paper give some directions for subjects involved in the manufacturing industry, tourism, the restaurant industry, etc. to devise ways of reminding their customers of childhood memories, family ties, etc. Originality/value – A relatively small number of food-centred studies are directly concerned with nostalgia. Many more studies investigate food in social changes, related to ethnic elements, etc. Considering an extensive literature review, and the analysis of data in the qualitative and quantitative study, this paper addresses two multidimensional and complex concepts which are powerful predictors of customer satisfaction.

PurposeThe digital transformation towards Industry 4.0 (I4.0) has become imperative for manufacturers, as it makes them more flexible, agile and responsive to customers. This study aims to identify the factors influencing the manufacturing firms’ decision to adopt I4.0 and develop a triadic conceptual model that explains this phenomenon.Design/methodology/approachThis study used a qualitative exploratory study design based on multiple case studies (n = 15) from the manufacturing industry in Malaysia by conducting face-to-face interviews. The data were analysed using NVivo. The conceptual model was developed based on grounded theory and deductive thematic analysis.FindingsResults demonstrate that driving, facilitating and impeding factors play influential roles in a firms’ decision-making to adopt I4.0. The major driving factors identified are expected benefits, market opportunities, labour problem, customer requirements, competition and quality image. Furthermore, resources, skills and support are identified as facilitating factors and getting the right people, lack of funding, lack of knowledge, technical challenges, training the operators and changing the mindset of operators to accept new digital technologies are identified as impeding factors.Research limitations/implicationsDue to its qualitative design and limited sample size, the findings of this study need to be supplemented by quantitative studies for enhanced generalizability of the proposed model.Practical implicationsKnowledge of the I4.0 decision factors identified would help manufacturers in their decision to invest in I4.0, as they can be applied to balancing advantages and disadvantages, understanding benefits, identifying required skills and support and which challenges to expect. For policymakers, our findings identify important aspects of the ecosystem in need of improvement and how manufacturers can be motivated to adopt I4.0.Originality/valueThis study lays the theoretical groundwork for an alternative approach for conceptualizing I4.0 adoption beyond UTAUT (Unified Theory of Acceptance and Use of Technology). Integrating positive and negative factors enriches the understanding of decision-making factors for I4.0 adoption.

Purpose The purpose of this paper is to establish the structural relationships between the environmental sustainability enablers (ESEs) for the steel supply chain in India and also to classify them on the basis of driving and dependence power with an objective of achieving enhanced environmental sustainability performance. Design/methodology/approach The ESEs were identified through extensive literature review and discussion held with experts from the Indian steel industry. The interpretative structural modeling (ISM) approach was applied to an Indian steel supply chain to arrange these 12 ESEs in different hierarchies of the structural framework on the basis of their driver dependence power and also diagraph was developed to classify them. Findings The water pollution control system, air pollution control system and soil pollution control system were found to be in the bottom hierarchy of the ISM framework and these enablers were also observed in the driving quadrant of the diagraph. These driving enablers should be given priority for its full-scale development, management and monitoring to sustain and enhance the environmental sustainability in the Indian steel supply chain, whereas top management commitment, environment compliance certification and government regulation and incentives are the antecedents for carrying out the sustainability program. Research limitations/implications The outcomes of the current study are limited to the Indian steel manufacturing company in specific but the results will not change significantly for the steel sectors in India. However, an empirical analysis can be used to explore and validate the structural framework for its acceptability. Practical implications The outcomes from the methodology provide the basis for an Indian steel manufacturing industry to develop the right strategy in their quest for environmental sustainability. Originality/value Although the study on ESEs of various industries was reported in the literature, the comprehensive study to identify the significant ESEs related to the Indian steel supply chain for environmental sustainability in specific have been hardly carried out. The current study will definitely be a valuable addition to environmental sustainability literature in general and steel supply chain environmental sustainability in specific.

Purpose The purpose of this paper is to assess the quality practices of European pharmaceutical manufacturers to determine the level of readiness of this industrial sector to implement and/or sustain lean manufacturing (LM). Design/methodology/approach An assessment framework developed by Al-Najem et al. (2013) was adapted to evaluate how ready European pharmaceutical manufacturers are to implement and/or sustain LM. Therefore, the lean readiness (LR) level of these organisations was assessed through six quality practices related to LM. These included: processes, planning and control, human resources, top management and leadership, customer relations, and supplier relations. One research question and three hypotheses were formulated and tested using a combination of descriptive statistics and non-parametric Mann-Whitney tests. Data were collected through a survey questionnaire distributed to 310 European pharmaceutical manufacturers and responded by 37 of these organisations. Findings Overall, the results of this study indicate an inadequate level of LR for the participating firms. Simultaneously, it was concluded that factors such as company size, type of relationships with suppliers and ISO 9000 certification do not have an effect on the quality practices, and hence LR level, of European pharmaceutical manufacturing organisations. Practical implications This study provides crucial information regarding the LR level of European pharmaceutical manufacturers, which can now be aware of the areas in their practices that require further improvement towards a successful lean journey. Simultaneously, organisations in the pharmaceutical sector that intend to implement LM can consider the results of this study and evaluate their readiness level. Managers can, therefore, refer to this research and use it as a platform to take better decisions regarding what quality aspects of their operations need to be enhanced to successfully deploy or sustain a lean strategy. Originality/value This research is one of the very few studies that have focussed on evaluating whether the European pharmaceutical manufacturing industry is ready to successfully implement or sustain LM. Therefore, this research expands the limited existent body of knowledge of LM in this industry.

Purpose The purpose of this paper is to identify, rank, classify and establish the structural relationships between the preferred customer enablers (PCEs). This analysis would assist a manufacturer in selectively exercising the PCEs and effectively run-through the concept of reverse marketing in the buyer-supplier relationships. Design/methodology/approach In the current study, the interpretive structure modelling and Fuzzy Matriced’ Impacts Croisés Appliquée á un Classement methods are used to analyze and structurally relate the PCEs for Indian automotive component manufacturing industry. Furthermore, the structural relationships among the PCEs were confirmed by applying a Student’s t-test. Findings The classification of PCEs through driver dependence diagrams, structural digraphs of PCEs and statistical significance of the relationships between the PCEs are the main outcomes of this study. Further, certain PCEs (under supplier interest and common interest domains) were recommended in the Indian manufacturing environment to broadly control and monitor for achieving the preferred customer status (PCS). Research limitations/implications The current study provides certain basis for a manufacturer to selectively emphasize and monitor the right PCEs and in turn effectively achieve the PCS from its key suppliers. The findings from the current analysis are more applicable in the context of Indian automotive component manufacturing industry. Practical implications The outcomes from the methodology would provide a basis for a manufacturer to develop the right strategies to become a preferred supply chain partner. Originality/value Even though the concept of PCS or reverse marketing can make remarkable impact on the business practices, it has been an ignored topic of research and its practice has been passively prophesied. In this regard, the current study could be a worthy addition toward the practice of preferred customer concept.

Purpose Knowledge management (KM) is crucial to ensure construction organisations effectively take advantage of existing expertise, engendering faster and more effective decision-making. Most importantly, it helps organisations to learn from past experiences. Despite its increasing academic attention, the implementation of KM is still relatively slow across the construction industry. Therefore, the purpose of this study is to gain a renewed understanding of the extent of KM practices in construction. Design/methodology/approach Quantitative approach using a questionnaire survey was used to prioritise the 15 critical factors and 9 enables of knowledge creation. Finally, an exploratory factor analysis is used to determine the principal elements of successful KM implementation in construction. Findings KM in a construction organisation is significantly influenced by knowledge sharing, collaboration, learning from mistakes, employee training and knowledge strategy. On the other hand, knowledge is created mostly through project mistakes, individual constant self-improvement, challenging barrier, review session and brainstorming discussion. With factor analysis technique, three underlying factors impacting KM practices are capacity and capability improvement, long-term commitment and innovation and synergetic working culture. Research limitations/implications Questionnaire survey was used as the single data collection instrument. The findings of the current study shed light on the salient issues affecting KM practices in construction but may not generalise to organisations operating in other industries. Practical implications These findings can support first-order KM implementation decision-making and enable the exploitation of existing knowledge assets towards achieving sustainable development and competitive advantage. Originality/value Effective KM practices are about finding the best ways to deliver the right knowledge to the right person at the right time, enabling informed decision-making and improving operational efficiencies. The contribution of this study is built upon the examination of the underlying factors of KM implementation; the findings provide insights into the core aspects of KM practices, facilitating managers in prioritising KM strategies that are really going to make a difference.

Purpose – Much previous research has explored the impact of group work on the therapist. The purpose of this paper is to examine how group members tolerate the powerful material discussed in groups in a prison-based therapeutic community. The authors briefly describe the regime at HMP Grendon and previous research into the impact of group work on therapists. Design/methodology/approach – A qualitative approach using a focus group was used to explore the impact of group work from the perspective of the group members. Themes emerging from the focus group were analysed using thematic analysis (Braun and Clarke, 2006). Participants included adult male violent and sexual offenders (n=10). The focus group was facilitated by two therapists, both based within HMP Grendon. Findings – Overarching themes emerged from the data which included – the type of material that has an impact on residents; the impact of this material on group members; and how residents manage it. A series of subthemes within these were identified, with salient themes including: the difficulty in listening to others offence histories and past experiences, managing the feelings of guilt and shame which can be overwhelming, feeling vulnerable/exposed, experiencing positive feelings for the first time as well as the benefits of therapy in eliciting change. Research limitations/implications – Uniquely the current study explores the impact of group therapy from the perspective of the group members. This is a previously unexplored area of research. As the study was conducted on a prison sample, it is unclear how well the findings would generalise to other populations. As such it is recommended that further research be conducted to validate the findings here. Practical implications – The present study indicates that group members process transference and counter-transference similar to therapists. It is suggested that therapists can use these findings to build resilience in group members. Originality/value – Previous research has described the impact of group work on therapists, uniquely this paper goes on to describe how group members process the material they are exposed to and how they manage their heightened emotions rather than acting on them. This should help therapists consider how best to develop resilience in group members.

Purpose A graduate must be qualified in order to be successful in the labor market. Hence, embedding employability into higher education is a priority of policymakers and universities. The purpose of this paper is to promote students’ employability skills deal with the issue. Design/methodology/approach This paper is accomplished in three phases, and qualitative and quantitative approaches were conducted. Data were collected from 14 entrepreneurs and experts in the field of business and 150 faculty members from the main academic categories (including: engineering, humanities, agriculture and veterinary, science, and art). Findings The findings revealed that employability skills of students could be totally classified in three categories (basic, intermediate and advance) and five levels. Also, factor analysis regarding university activities to develop students’ employability skills showed five activities including: support, cultural, informing, research and educational activities. Practical implications The results can be beneficial for universities’ plan activities and offer proper services that enhance students’ skills for their future career. Also, the findings can be fruitful for higher education policymakers to find the right way to foster employability issues at universities. Mechanisms such as employers’ participation in curriculum development and work-based learning are useful in ensuring a good match between the supply of skills and the demand for skills. Originality/value This study classified graduates’ employability skills in basic, intermediate and advance categories. Another important contribution of this study was the proposed paths for improving each level of employability skills, enabling universities to be aware of the proper activities for each skills enhancement.

Purpose The demand for Saudi Arabian real (SAR) is very high in the pilgrimage (hajj) season while the authority, unfortunately, does not hedge the hajj funds. As such, the hajj funds are potentially exposed to exchange rate risk, which can impact the value of hajj funds and generate extra cost to the pilgrims. The purpose of this paper is to conduct simulations of Islamic hedging for pilgrimage funds to: mitigate and minimize exchange rate risk, identify and recommend the ideal time, amount and tenors of Islamic hedging for hajj funds, estimate cost saving by pursuing Islamic hedging and propose technical and general recommendations for the authority. Design/methodology/approach Forward transaction mechanism is adopted to compute Islamic forward between SAR and Rupiah (Indonesian currency) or IDR. Findings – based on simulations, the paper finds that: the longer the Islamic hedging tenors, the better is the result of Islamic hedging, the decreasing of IDR/USD is the right time to hedge the hajj funds and, on the other hand, the IDR/SAR appreciation is not the right time to hedge the hajj funds. Findings Based on simulations, the paper finds that: the longer the Islamic hedging tenors, the better is the result of Islamic hedging, the decreasing of IDR/USD is the right time to hedge the hajj funds and, on the other hand, the IDR/SAR appreciation is not the right time to hedge the hajj funds. Research limitations/implications The research suggests the authority to (and not to) hedge the hajj fund, depending on economic conditions and market indicators. Even though the assessment is for the Indonesian case, other countries maintaining hajj funds might also learn from this paper. Originality/value To the best of author’s knowledge, this is the first paper in Indonesia that attempts to simulate the optimal hedging of hajj funds.

PurposeWicked problems require collaborative innovation approaches. Understanding the problem from the users' perspective is essential. Based on a complex and ill-defined case, the purpose of the current paper is to identify some critical success factors in defining the “right problem” to be addressed.Design/methodology/approachAn empirical research study was carried out in a low-density municipality (case study). Extensive data were collected from official databases, individual semi-structured interviews and a focus group involving citizens, local authorities, civil servants and other relevant stakeholders.FindingsAs defined by the central government, the problem to be addressed by the research team was to identify which justice services should be made available locally to a small- and low-density community. The problem was initially formulated using top-down reasoning. In-depth contact with citizens and key local players revealed that the lack of justice services was not “the issue” for that community. Mobility constraints and the shortage of economic opportunities had a considerable impact on the lack of demand for justice services. By using a bottom-up perspective, it was possible to reframe the problem to be addressed and suggest a new concept to be tested at later stages.Social implicationsThe approach followed called attention to the importance of listening to citizens and local organisations with a profound knowledge of the territory to effectively identify and circumscribe a local problem in the justice field.Originality/valueThe paper highlights the limitations of traditional rational problem-solving approaches and contributes to expanding the voice-of-the-customer principle showing how it can lead to a substantially new definition of the problem to be addressed.

Purpose With the increase of state capital, corporate total factor productivity (TFP) has a tendency to jump up at first and then slowly decrease. Generally, no significant “productivity paradox” can be observed in China’s manufacturing industry. With the increase of export density, corporate TFP also shows a trend of initial jump growth and subsequent slow decline. This paper aims to discuss these issues. Design/methodology/approach Using the 1996–2013 China Industrial Enterprise Database, this paper studies the monopolistic behavior of Chinese manufacturing enterprises through the measurement of TFP and corporate monopoly power. Findings Results show that China’s manufacturing monopoly enterprises are generally innovation-oriented rather than rent-seeking. However, there are certain differences between diversified types of monopoly enterprises: the ones with state capital are more inclined to innovate than those without, whereas the ones with export delivery value are more inclined to seek rent than those without. Originality/value Therefore, the government should implement differentiated policies for diversified types of monopoly enterprises, and do so in a targeted manner fully reflecting the containment of rent-seeking and the encouragement of innovation.
