Occurrence of Nitrate, Nitrite and Volatile Nitrosamines in Certain Feedstuffs and Animal Products

Nitrate, nitrite and nitrosamines were analysed in poultry feeds, meat and eggs. The poultry meat was boiled and roasted while the eggs were raw and boiled, and the effects of these processing treatments on the level of these compounds were investigated. Nitrate levels in the meat samples were significantly (P < 0.05) reduced by boiling and roasting, with boiling being more effective. Nitrite levels were also reduced significantly by processing (P < 0.05). The feed samples contained levels of nitrate which were significantly different (P < 0.05) from one producer to another. Nitrite levels were generally low in all feed samples. Nitrosamines were not detected in any of the feed samples and in the meat samples except in two samples of boiled meat which contained 0.001 g/kg each.

Antibiotic residues in livestock products are the burning issue in animal production as well as public health sector. Imprudent use of antibiotics in poultry production increases the risk of antibiotic resistance thus increasing risk in both animals and humans. To determine the trend of antibiotic residues presence in poultry meat, a study was conducted from June 2016 to May 2017 in Kathmandu, Kaski, and Chitwan districts of Nepal. A total of 92 breast samples of broilers ( Kathmandu-30, Kaski-40 and Chitwan-22) were collected randomly from different selling outlets of the study areas and tested for residues of commonly used antibiotic viz. Enrofloxacin (EX), Ciprofloxacin (CIP), Streptomycin (STR) and Chloramphenicol (CHL) using the Enzyme Linked Immunosorbent Assay (ELISA) technique. Out of 92 samples, 57 (62%) samples were found positive for antibiotics residue of which 38% samples were positive for STR residue, 15.2% for CIP and 8.7% for EX. However, none of the samples showed positivity for CHL residue. The level of STR was determined to be higher in all districts in comparison to other antibiotics. The meat samples from Kaski were found to contain higher level of STR (56.1%) while highest percentage of CIP (16.1%) was detected in Kathmandu. Also, presence of EX was found highest in Kathmandu compared to other districts. The study concluded that antibiotics residues have been abundantly found in poultry meat which can have serious effect in human health. Hence, to mitigate this, routine antibiotics residues monitoring and surveillance programmes in food animal products should be conducted to ensure the consumer safety.

The problem of the uncontrolled use of antibiotics currently remains unresolved. Step-by-step monitoring of meat using modern methods will reduce the risk of using contaminated meat raw materials for food production. Qualitative monitoring will identify samples containing residual antimicrobial substances. The use of methods for identifying groups of antibiotics will help narrow the search for antibiotics by expensive chromatographic methods. A study was carried out of beef, pork and poultry meat, which is used in meat processing plants in the production of raw smoked sausages, using two methods. At the first stage, using a qualitative microbiological method, the raw meat was evaluated for the presence of antimicrobial substances, then their group was determined using a NovoCyte flow cytometer. According to the results of a study on a flow cytometer, it was found that out of 10 groups of antibiotics that can be determined by the tested method, the group of lincosamides was not found in all meat samples. The most common groups of chemotherapy drugs in pork were sulfonamides – 29.6 %, tetracycline group – 18.5 % and beta-lactams – 14.8 %, and in beef aminoglycosides – 36.7 %, phenicols – 30 % and beta-lactams – 13.3 %. In poultry meat samples, the most common were sulfonamides – 23.2 %, fenicols – 23.2 %, and beta-lactams – 16 %. Five groups of antibiotics were found in all studied types of meat: fenicols, β-lactams, macrolides, polypeptide antibiotics, and quinolones. This indicates their widespread use in animal husbandry and poultry farming.

Identification of chicken quality parameters is often inconsistent, time-consuming, and laborious. Near-infrared (NIR) spectroscopy has been used as a powerful tool for food quality assessment. However, the near-infrared (NIR) spectra comprise a large number of redundant information. Determining wavelengths relevance and selecting subsets for classification and prediction models are mandatory for the development of multispectral systems. A combination of both attribute and wavelength selection for NIR spectral information of chicken meat samples was investigated. Decision Trees and Decision Table predictors exploit these optimal wavelengths for classification tasks according to different quality grades of poultry meat. The proposed methodology was conducted with a support vector machine algorithm (SVM) to compare the precision of the proposed model. Experiments were performed on NIR spectral information (1050 wavelengths), colour (CIEL∗a∗b∗, chroma, and hue), water holding capacity (WHC), and pH of each sample analyzed. Results show that the best method was the REPTree based on 12 wavelengths, allowing for classification of poultry samples according to quality grades with 77.2% precision. The selected wavelengths could lead to potential simple multispectral acquisition devices.

Backyard chicken farming is as an effective tool for poverty reduction in rural areas, by providing living to resource poor communities; it is an important source of extra cash income other than eggs and meat for family consumption. The present study was carried out to assess the role of backyard poultry farming in supplementing household economy of rural farmers dwelling in district Quetta, Pakistan. Information from ninety-nine randomly selected female backyard poultry farmers were gathered during November 2016 to March 2017. Owing to previous government and non-government interventions backyard poultry keeping was found as an established practice. Women were found the main custodian of backyard poultry birds and consequently were the main beneficiary of the activity. Poultry birds of Fayoumi and Golden / Rhode Island Red (RIR) breeds were the main types. Majority of the farmers reared these birds under scavenging conditions in combination with feeding on household left over dry bread (52%); most of the respondents (62%) were taking care of the birds by themselves which resulted in overall low production cost. Income included the earning received from sale of birds, eggs and the home consumption of poultry meat and eggs. Net income per annum per household was estimated as Pakistani Rupee (PKR) 79290/- (US$ 566). The estimated Rank Based Quotients (R.B.Q) based on farmers perception disclosed backyard poultry keeping as an important domestic source of meat and eggs with almost no or very little capital investment, ranked (I, 80%) followed by a substantial source of supplementary income and was ranked (II, 79%). Amongst the problems, disease outbreaks were the most prevailing problem (I, 90%) followed by unavailability of vaccines (II, 85%). The backyard poultry farming generated subsistence income and provided high quality valuable food that improved household nutrition.

Since 1963 651 outbreaks of human salmonellosis have been reported to the Center for Disease Control. The vehicle of transmission was identified in 463 (71%) of the reported outbreaks. The three most important vehicles have been poultry, meat, and eggs, which accounted for 99 (21%), 69 (15%), and 53 (11%) of the outbreaks respectively. Egg-associated outbreaks decreased markedly during the study period while meat-associated outbreaks (particularly beef) gradually increased and poultry-associated outbreaks showed no constant trend.
