Cowpea (Vigna unguiculata) is a legume that is cultivated throughout Africa and contributes a significant amount of plant-based protein to human diets. There are many varieties of cowpeas, and these have varying seed characteristics such as shape, size, colour and nutritional properties. The compositional, physico-mechanical, and functional properties of two new cowpea seed varieties were investigated in order to determine their full food-use potentials as well as key parameters for their postharvest machinery for processing, handling, and storage. The proximate composition of the two cowpea cultivars was determined using standard methods. Physico-mechanical analyses carried out were the hundred-seed weight and volume, bulk density, true density, size, aspect ratio, surface area, equivalent diameter, porosity and angle of repose. Functional properties determined were cooking time and water uptake of the grain as well as water and oil absorption, foam capacity and stability, and emulsion capacity and stability of the flour. The Padi-Tuya variety was longer, broader and thicker than Wang Kae. The results showed both varieties to be useful sources of macronutrients. The moisture, fat and fibre in Wang Kae were significantly higher (p<0.05) than Padi-Tuya. However, both cowpea varieties had comparable protein levels of 17.7 g/100 g. The cooking time, hydration capacities and indices of the two varieties were also significantly different (p<0.05), but their swelling capacities, swelling and water uptake indices were comparable. Cooking times were 40 and 62 min for Padi-Tuya and Wang Kae, respectively. The water and oil absorption capacities, as well as the swelling indices, were similar, but their emulsion capacities and stabilities were significantly different (p<0.05) for the flour. Padi-Tuya had a higher foam capacity, but was less stable, than Wang Kae. The physico-mechanical properties determined would aid in the design of cleaning, handling and other processing machinery as well as storage facilities for the new cowpeas. The functional and the compositional parameters would assist in the food formulations.

This comparative study investigated some physical, milling and cooking properties of four new rice varieties (FARO 44, FARO 52, FARO 60 and FARO 61) in Nigeria. The varieties were processed into white rice and their properties analyzed separately using standard procedures. Results showed that paddy length, paddy-length-to-width-ratio, equivalent diameter, sphericity, grain volume, aspect ratio, thousand paddy grain weight, milled rice length, milled rice width, milled rice length to width ratio, milling recovery, head milled rice, broken milled rice, L*, a*, b*, elongation ratio, cooked-rice-length-to-breadth-ratio, water uptake ratio and cooking time were significantly different (p<0.05) for all the varieties. Milling recovery was found to vary from 65.3 to 68.33%; with FARO 60 having the highest head milled rice. It was observed that FARO 44 had the longest cooking time, elongation ratio and cooked rice length/breadth ratio while FARO 61 was found to have the highest water uptake ratio. There was significant positive correlation (r = 0.824) between percentage head milled rice and milling recovery while negative correlation existed between cooking time and L* (r= - 0.711). This information could be exploited by rice processors in the post-harvest processing of the varieties.

Com este trabalho foi possível estabelecer relações entre a quantidade de água aplicada e produtividade de grãos, para três variedades de feijão caupi submetidas a diferentes lâminas de água. Para caracterização das lâminas de água foi utilizado um sistema de irrigação por aspersão convencional em linha. O controle da irrigação foi realizado a partir de tensiômetros instalados à 15 cm de profundidade. Os resultados mostraram que: i) a cultivar João Paulo II apresentou melhores resultados de produtividade para as lâminas de água aplicadas que variaram de T1 = 291,8 mm a T5 = 141,2 mm; ii) sob condições de reduzida disponibilidade de água, ou seja, menor lâmina aplicada, não ocorreu diferença estatística  para a produtividade entre as cultivares estudadas; e iii) para as condições do estudo, a cultivar Setentão apresentou a menor taxa de redução do produto marginal.       UNITERMOS: caupi, irrigação, função de produção       LIMA, G. Responses OF cowpea cultivars (Vigna unguiculata L Walp) at differents irrigation deficits     2 ABSTRACT       The caupi is one of the most traditional cultivation of the north and northeast - Brazil, constituting a basic food in these areas. With this work it was possible to establish relationships between the amount of water applied and productivity of grains, for three caupi varieties submitted to different irrigation sheets. To diferentiate water depths in the irrigation system, the aspersion in line was used. The control of the irrigation was accomplished using tensiometers installed to 15 cm of depth. The results showed that: i) the João Paulo II variety presented better productivity for the applied water depths; ii) under reduced conditions of water avai lability for study conditions, these was no significant difference in the productivity reached among the cultivars studied; and iii) for the conditions of the study, the variety Setentão presented the smallest rate of reduction of the marginal product.       KEYWORDS: cowpea, irrigation, production function

Several species of nematodes are known to cause losses to cowpea (Vigna unguiculata) throughout the world. In Brazil, Aphelenchoides besseyi was recently described causing damages on soybean, cotton, and common bean, but no report was found about the parasitism of this nematode in cowpea. The present study aimed to verify the host reaction of cowpea cultivars to A. besseyi. The experiment was conducted under greenhouse conditions, using as inoculum two A. besseyi populations, obtained from symptomatic soybean and cotton plants collected in naturally infested fields. Cultivars ‘Imponente’, ‘Aracê’, ‘Guariba’, ‘Tumucumaque’, ‘Nova Era’, and ‘Tracuateua’ were inoculated with 500 A. besseyi of each population, separately, into soil and after 30 days from the inoculation nematodes were extracted from shoot systems. Both populations were able to parasitize all the cowpea cultivars. Independently of the cultivar, cowpea plants exhibited symptoms of leaf deformation similar to those described for soybean, cotton, and common bean and, in addition, severe brooming was observed and the interior of the stems was porous and necrotic. To our knowledge, this is the first report of parasitism by A. besseyi of cowpea in Brazil, under greenhouse conditions, increasing the list of hosts of this nematode.

This study aimed to determine the proximate compositions and functional properties of sweet potato flour from different varieties cultivated in Sabah, Malaysia, namely Jepun, Kairot and Kaladi. The results showed that the moisture content of all flour samples was below 14%. The fat and protein content of Jepun sweet potato variety were significantly different (p<0.05) as compared with Kairot and Kaladi sweet potato varieties. The ash and dietary fibre content of Kairot sweet potato flour were higher (p<0.05) compared to Jepun and Kaladi flours. In addition, Kaladi sweet potato had the highest carbohydrate content (82%). There were significant differences (p<0.05) in the values of L*, a* and b* for all sweet potato flours. The Jepun sweet potato flour had the highest foaming capacity, water absorption capacity, oil absorption capacity, swelling power and viscosity. Rapid Visco analyser revealed that significant differences were observed for pasting parameters such as peak viscosity, trough viscosity, breakdown viscosity, final viscosity and setback viscosity. The gelatinisation properties showed that Kairot sweet potato flour had the highest onset temperature, conclusion temperature and enthalpy while Kaladi sweet potato flour had the highest peak temperature.

Abstract. Evaluation of the postharvest properties of nine proso millet cultivars was carried out to determine their physical and engineering properties, which are very useful for designing appropriate systems for process operations such as sorting, drying, heating, cooling, and milling. Nine cultivars of proso millet comprising waxy and non-waxy types, namely Cope, Earlybird, Huntsman, Minco, Plateau, Sunrise, Rise, Dawn, and Panhandle, were obtained from the Panhandle Research and Extension Center, University of Nebraska, Scottsbluff. Results showed significant (p &lt; 0.05) differences in their physical properties, such as sphericity, volume, bulk density, porosity, and angle of repose, which ranged from 0.86 to 0.91, from 3.94 to 5.14 mm3, from 765.49 to 809.67 kg m-3, from 42.49% to 44.20%, and from 22.98° to 25.74°, respectively. The cultivars were also evaluated for their pasting and gelatinization properties, and high correlation was found between amylose content and onset temperature (r = -0.94), peak gelatinization temperature (r = -0.92), peak viscosity (r = 0.84), final viscosity (r = 0.91), and setback viscosity (r = 0.90). The understanding of these basic physical and functional properties of proso millet cultivars will form the foundation for processing them into value-added products. In West Africa, cowpea is processed into several end-products among which the most consumed in Mali is a steamed granulated product known as cowpea couscous or Shô basi, in Bambara. Organoleptic properties ofShô basi are variable, probably as a consequence of the diversity of the practices of production. This study aims at determining these practices, their constraints and the physico-chemical characteristics of Shô basi as sold on Malian markets. A survey using focus group discussions, and involving eighteen (18) Shô basi production cooperatives, each gathering 8 to 32 members, was conducted in South Mali. The information collected was related to cowpea varieties used for production, flow diagrams, constraints of production, and quality criteria of the end-products. Eighteen (18) Shô basi samples were collected from the interviewed groups and used for the determination of the physical and chemical properties of Shô basi. Results showed that most of the processors were married, non or moderately literate and aged between 20 and 59 years women. The main cowpea varieties used for the production are sangaraka and wilibali, both from the species Vigna unguiculata. Both varieties of cowpea are characterized by a white or cream color. Shô basi is produced using a single process with two major technological variants. One involves a wet total dehulling (VDT), whereas the second involves a dry partial dehulling (VDP) of cowpea seeds. Regardless of the technological variant and cowpea variety used, interviewees indicated that a good qualityShô basi must have a light color, a soft mouthfeel texture, a homogeneous granule size and lacking beany flavor. Protein(25,0g/100g) and polyphenol (24,3mg/100g)contents as well as swelling level were similar for Shô basi from both variants. However, Shô basi from technology involving partial dehulling (VDP) was less bright, richer in fiber and minerals, and contained more fine granules thanShô basi involving whole dehulling(VDT). Cowpea dehulling, flour granulation, steam cooking and drying are the mean constraints for quality standardization and large-scale production of Shô basi in Mali.
