The purpose of the study is to assess the effect of the use of mono probiotic culture and mixed cultures of Lactobacillus plantarum  and Lactobacillus rhamnosus  on the physicochemical properties and its viability during storage. The soft cheeses were made through three treatments: (1) the use of Lactobacilllus rhamnosus culture, (2) the use of Lactobacillus plantarum  culture and (3) the use of mixed cultures (Lactobacillus rhamnosus  and Lactobacillus plantarum). The variables measured were the cheese texture (firmness and stickiness), proximate, pH of the product, and the number of LAB. The results showed that cheese firmness ranged from 10.78 to 47.75 gf, cheese stickiness was -8.23 to -11.53 gs, cheese pH was 4.70 - 5.60; number of cheese LAB was 8:59 - 9.69 log cfu/g. The content of protein, fat, and ash were 13.65-16.54%, 15:28-20:03%, and 2.7-3.39%, respectively. The conclusion of this study was that the soft cheeses with mixed cultures of L.rhamnosus  and L.plantarum are potentially good to be developed as a probiotic food.

Aim: The research was conducted to determine the effect of temperature and storage duration on the physicochemical, lipolytic, microbiological, and proteolytic characteristics of goat cheese made using Lactobacillus plantarum TW14 and Lactobacillus rhamnosus TW2 bacteria. Materials and Methods: The cheese was stored at 4°C and −20°C for 0, 15, 30, 45, and 60 days. Observations were made on its physicochemical, lipolysis, and microbiological characteristics. The proteolysis pattern was measured with sodium dodecyl sulfate-polyacrylamide gel electrophoresis. Results: The protein, fat, ash and total solids levels of cold-stored cheese were higher than the frozen-stored one. The frozen-stored cheese's free fatty acids (FFA) and acid degree value (ADV) levels are lower than those of the cold-stored cheese as indicated by the partial lipolysis event. The total yeast in the frozen-stored cheese is lower than that in the frozen-stored cheese. Finally, the electrophoresis profile indicates that proteolysis of the frozen-stored cheese is formed since there have been detected αs1-casein, αs2-casein, β-casein, and κ-casein in the casein breakdown during the 60-day storage. Conclusion: The physicochemical characteristics of cold-stored cheese are better than the cheese stored at frozen temperature. However, frozen-stored cheese produces lower FFA and ADV than cold-stored cheese and lipolysis occurs only partially.


Rumen ciliates still have mysterious secrets and influences in ruminants. This study investigated the effect of transfaunation of pure and mixed cultures of rumen ciliates on physical clinical examination, selected serum parameters and milk profile in defaunated lactating dairy goats. A number of 8 Baladi native breed goats were randomly classified into two groups each one containing 4 goats. Pure culture group was transfaunated with 6 ml of pure culture of Holotricha spp., while mixed culture group was transfaunated with 6 ml of mixed culture of 81.85% Holotricha and 18.15% Ophryoscolex spp. once weekly for three consecutive weeks, after defaunation of both groups using 30 ml of 8% SLS for two consecutive days. Serum and milk samples were collected weekly for three successive weeks to study effect of type of ciliate culture, duration of transfaunation and their interaction. Results revealed that transfaunation of pure and mixed cultures of rumen ciliates had no effect on physical examination with minimal non-significant improvement of calcium, inorganic phosphorous, total protein and globulin in serum of defaunated goats. Transfaunation of pure or mixed cultures of rumen ciliates within three weeks could not improve significantly decreased milk fat % of defaunated goats without any effect on other measured milk profile parameters. It is concluded that further investigations on transfaunation without prior defaunation should be performed using different pure and mixed cultures of rumen ciliates for therapeutic and productive purposes.

A study was made of nitrogen-fixation byAzotobacter chroococcumalone in a medium containing dextrose (which it can utilize) and in mixture with a coliform organism on a medium containing no carbohydrate except starch, whichAzotobactercannot utilize unless it be hydrolysed by the coliform organism or some other agency.2. The amount of nitrogen fixed in the mixed cultures was found to be maximal at two temperatures, and a discussion is given of the causes thought to be operative in producing the double maximum.

The effect of two species of lactobacilli, Lactobacillus casei CRL 431 and Lactobacillus rhamnosus CRL 1224, on growth of different Aspergillus flavus strains was determined. A. flavus strains (Ap, TR2,or CF80) were grown in LAPTg broth at 37°C for 7 days as a single culture and in association with L. casei CRL 431 or L. rhamnosus CRL 1224 at initial inoculum ratios of 1:1, 1:10, and 1:100. In most cases, the mixed cultures had a lower fungal growth and a lower pH than the control cultures. Mycelial dry weight was reduced to 73 and 85% using L. casei CRL 431 and L. rhamnosus CRL 1224, respectively. The pH decrease in mixed cultures when the fungal mycelial dry weight is reduced may play an important role in inhibition. The number of viable bacteria was variably affected by fungal growth. These results indicate that L. casei CRL 431 and L. rhamnosus CRL 1224 may be useful as potential biocontrol agent against A. flavus

The ability of intravenous injections of single and mixed cultures of streptococci of types A, C, D, E, G, and N, of S. viridans and of E. rhusiopathiae of serotypes A and B, to cause endocarditis in rats was tested. A mixed culture of three strains of Erysipelothrix was particularly effective, especially in male rats, whereas in all the other experiments, bacterial endocarditis seldom occurred. The endocarditis was a consequence of vasculitis and myocarditis. In most cases of valvular endocarditis subendothelial edema caused detachment of endothelial cells and provided the environment for bacterial colonisation of the valves.
