Through an agency called Volunteers for Overseas Cooperative Assistance (VOCA), funded primarily by the U.S. Agency for International Development (USAID), professionals from many disciplines are recruited to assist less-developed countries (LDCs) with establishing new industries and/or improving management practices in existing businesses. We were recruited to evaluate the causes of postharvest losses of horticultural products in Russia. These losses historically have been high due to the limited availability of mechanical refrigeration and poor postharvest management practices. This paper reports on the success of an extension demonstration project in Russia where traditional storage and handling systems for carrots were compared to systems using improvements in grading and prestorage sanitation. An evaluation of storage facilities and recommendations for improvements are discussed.

Spatial-frequency domain imaging (SFDI) is a wide-field, noncontact, and label-free imaging modality that is currently being explored as a new means for estimating optical absorption and scattering properties of two-layered turbid materials. The accuracy of SFDI for optical property estimation, however, depends on light transfer model and inverse algorithm. This study was therefore aimed at providing theoretical analyses of the diffusion model and inverse algorithm through numerical simulation, so as to evaluate the potential for estimating optical absorption and reduced scattering coefficients of two-layered horticultural products. The effect of varying optical properties on reflectance prediction was first simulated, which indicated that there is good separation in diffuse reflectance over a large range of spatial frequencies for different reduced scattering values in the top layer, whereas there is less separation in diffuse reflectance for different values of absorption in the top layer, and even less separation for optical properties in the bottom layer. To implement the nonlinear least-square method for extracting the optical properties of two-layered samples from Monte Carlo-generated reflectance, five curve fitting strategies with different constrained parameters were conducted and compared. The results confirmed that estimation accuracy improved as fewer variables were to be estimated each time. A stepwise method was thus suggested for estimating optical properties of two-layered samples. Four factors influencing optical property estimation of the top layer, which is the basis for accurately implementing the stepwise method, were investigated by generating absolute error contour maps. Finally, the relationship between light penetration depth and spatial frequency was studied. The results showed that penetration depth decreased with the increased spatial frequency and also optical properties, suggesting that appropriate selection of spatial frequencies for a stepwise method to estimate optical properties from two-layered samples provides potential for estimation accuracy improvement. This work lays a foundation for improving optical property estimation of two-layered horticultural products using SFDI.

When minimally processed vegetables reach their expiration date, expose an increased microbial load. This includes mainly spoilage microorganisms but also foodborne pathogens, thus affecting the quality and safety of highly consumed ready-to-eat salads. A total of 144 ready-to-eat salads from the Cypriot market were analyzed in an attempt to determine the effects of the expiration date on the microbial load and plant metabolic variables of the salads. Possible correlations between them were also investigated for the first time. Furthermore, the impacts of the season (winter, summer), salad producing companies and type of salad and/or their interactions with the tested parameters were investigated. Results revealed that the microbial load (mainly spoilage microorganisms, such as Pseudomonas spp., yeasts and molds) increased towards the end of the shelf life. The microbial load was differentiated among the five salad producers and/or the salad types, highlighting the importance of a common and safe sanitation-processing chain in the preparation of ready-to-eat salads. Summer was the season in which Escherichia coli counts were found to be higher for plain lettuce, while Staphylococcus spp. was increased numbers for the lettuce+endive/radicchio, lettuce+rocket and lettuce+chives type of salads. Additionally, an increased Staphylococcus spp. was observed for plain rocket salads in winter. All samples examined were found negative for Salmonella enterica and Listeria monocytogenes. Moreover, carbon dioxide production and damage indexes (hydrogen peroxide and lipid peroxidation) increased on expiration date on both winter and summer seasons, indicating plant tissue stress at the end of shelf life. These findings indicate that the expiration date and relevant shelf life of processed vegetables are important parameters to be considered when postharvest management is applied to these products, ensuring safety and quality.

The interest for natural antimicrobial compounds has increased due to alterations in consumer positions towards the use of chemical preservatives in foodstuff and food processing surfaces. Bacteriophages fit in the class of natural antimicrobial and their effectiveness in controlling bacterial pathogens in agro-food industry has led to the development of different phage products already approved by USFDA and USDA. The majority of these products are to be used in farm animals or animal products such as carcasses, meats and also in agricultural and horticultural products. Treatment with specific phages in the food industry can prevent the decay of products and the spread of bacterial diseases and ultimately promote safe environments in animal and plant food production, processing, and handling. This is an overview of recent work carried out with phages as tools to promote food safety, starting with a general introduction describing the prevalence of foodborne pathogens and bacteriophages and a more detailed discussion on the use of phage therapy to prevent and treat experimentally induced infections of animals against the most common foodborne pathogens, the use of phages as biocontrol agents in foods, and also their use as biosanitizers of food contact surfaces.
