The Lake Lindu is one of the potential water resources in Central Sulawesi with various species of fish and one of the most commonly found fish are species mujair fish. Mujair fish processing wastes such as offal can be polluted the environment if not managed properly. The study aim is to determine the contents of NPK nutrients in the liquid organic fertilizer by adding MOL banana weevil. The contents of nitrogen (N), phosphorus (P), and potassium (K) was determined by using spectro direct. The NPK contents in the liquid organic fertilizer of mujair fish waste from Lake Lindu reached the maximum NPK contents of nitrogen (N) of 0.311% by addition 100 mL MOL banana weevil, phosphorus (P) 0.167% by addition 150 mL of MOL banana weevil, and potassium (K) of 0.037% by addition 150 mL MOL banana weevil.

Abstract Fish processing generates a lot of wastes which are discarded resulting in environmental problems. However, this material represents a significant source of high-value bioproducts with potential biotechnological applications. The objective of this study was to characterize and to compare specific activities of acid and alkaline proteases recovered from the viscera of Merluccius hubbsi (Mh), Percophis brasiliensis (Pb), Urophyis brasiliensis (Ub), and Cynoscion guatucupa (Cg) under different pH and temperature conditions. Stomach proteinases from four species had a higher activity at pH 2, with stability in the range of pH 2-4. Optimum pH from intestinal enzymes of Cg was 11.5, while for the crude extract of Mh, Pb, and Ub catalytic activity was registered over a wide pH range range from 7 to 11.5. Stomach proteinases from four studied species had a higher activity at 30 °C and 50 °C, with stability at 10 °C and 30 °C. Optimum temperature from intestinal enzymes of the four tested species was 50 °C with high stability at 10 °C and 30 °C. Alkaline proteinase from all species and acid proteinases from Cg was inactivated at 70ºC, while stomach enzymes of Mh, Pb, and Ub had a residual activity lower than 5% at 80 °C after 5, 10 y 20 minutes of pre-incubation, respectively. Digestive proteinases recovered in this study could be used as biocatalysts in industrial processes, reducing costs, adding value to the fishery waste, and contributing to the reduction of environmental pollution.

Knowing the potential of fish waste for the preparation of pâtés, there is the possibility of adding greater sustainability to the aquaculture sector. The aim was to prepare pâtés from fish processing residues with the inclusion of smoked fishmeal and evaluate their sensory, microbiological, physicochemical, and shelf-life characteristics. Three treatments were used: pâté without fishmeal inclusion (PSF), with smoked salmon carcass meal inclusion (PFSD), and smoked tilapia carcass meal (PFTD). The inclusion of the flours reduced the moisture, carbohydrate, and water activity. However, they increased the ash, salt, and collagen content. The lipid content was higher for the PFSD. The PSF showed peak oxidation at 15 days and the PFSD and PFTD around 45 days over the course of the 90-day shelf-life. The luminosity and b* coordinate were lower for PFTD, while the a* coordinate was higher for PFSD. Only the b* coordinate showed changes in PSF and PFSD throughout the 30 days of shelf-life, and its color tended to yellow at 15 days. The sensory analysis did not differ statistically between treatments (p > 0.05) for all attributes, except color, where the highest score was attributed to PSF. As for the overall impression, PSF also obtained the highest score, which may be associated with its color. By including fish flours, the nutritional composition and color of the tilapia-trimmed pâtés are changed, achieving an average acceptance level of 67%.

This study investigated waste minimization opportunities and implementation strategy at the fish processing industry. This study used quantitative approach with field observation and open list of questionnare method to identify resources saving. The result of this study showed that fish processing industry (Company XYZ) was not implemented a waste minimization approach. The water resources saving reached 89.76 m3 or 27.2% from fresh water per a week of the production process and water consumption saving for washing process reached 30%. The utilization of solid waste can generate economic potential reached 26% of raw material, while liquid waste reached 51% of water consumption. The waste minimization approach hopefully would assist interested the company and bring both increase environmental performance and competitive advantage in the whole fish processing industry, especially in Indonesia.

The article presents the research of kinetics and intensity of convective-radiation foam drying of gelatin broth from ordinary fish processing wastes in the Astrakhan region. Approximating dependences of dry gelatin removal from the unit area of the working surface per unit time on the varied factors have been obtained. The rational modes of the process, in which the maximum specific removal of the dry product is achieved, have been determined. It has been found that using only radiation energy supply makes the process of foaming gelatin broth difficult due to the uncontrolled sharp increase of temperature of the product and, as a consequence, the subsequent melting and destruction of the foam. Putting radiation energy supply into the process of convective foam drying of the gelatinized broth under rational conditions increases the specific productivity of the process by three times.

Fish processed waste is an environmental problem for fish processing business in Kuala Secapah village, Mempawah Regency, West Kalimantan. This activity is an integration between the handling of fish processing waste into poultry feed and liquid organic fertilizer and efforts to improve nutrition and income of fish processors and marketers. Implementation of activities includes several stages: socialization, training, mentoring and monitoring evaluation. The indicator of the success of the activity can be seen from (1) the high entrepreneurial spirit for the fish processing and marketing group, (2) increased sales turnover through the management of production systems. The long-term goal of this activity is to become a model of eco friendly fish processing business and become a model of community development for related institutions.

Around Lake Tana, there are different types of fish processing cooperatives. These cooperatives simply dump the fish wastes (offal) to the Lake Tana which results environmental pollution for the marine ecosystems. In this study three cleaner production options such as biodiesel, biogas and animal feeding were investigated experimentally for the utilization of fishery wastes around Lake Tana. The study showed that fish species (labeobarbus, tilapia and catfish) wastes have oil yield of 28.65%, 16.35% and 5.63 % and free fatty acid content of 10.5%, 7.5% and 6.03% respectively. In the treatment of the oil, only 3.5% of sulfuric acid was consumed to lower the FFA to the required level (2.5%). In the biodiesel experiment, 6:1 ration of methanol to oil and 1hr of reaction retention time were found to be the optimum operating parameters. The yield of biogas was 0.016ml /gram of fish waste. Nutritional composition of fish wastes were 33.4% protein, 0.007% fiber, 1.26% ash, 44% moisture and 21.367% carbohydrate. The study concluded that biodiesel is the possible cleaner production option among the other for the utilization of fishery wastes around Lake Tana.
