The authors developed composition and innovative technology of a new specialized product in the form of a biologically active additive to normalize metabolic processes in the case of the musculoskeletal system damage. They obtained specialized product through innovative tableting technology providing high consumer properties, components preservation and its active principles. The technological solutions innovativeness enables to separate composition ingredients considering its chemical and pharmacological incompatibility, and to deliver it sequentially to various sections of the gastrointestinal tract at a given speed. Glucosamine sulfate as a part of the vitamin and mineral complex combining with minerals (micro- and macro-nutrients) – manganese sulfate, calcium hydroxyapatate, cholecoleceferol, zinc and magnesium oxides – have unidirectional functional properties related to the metabolism correction in case of the musculoskeletal system damage. Clinical investigations confirmed the vitamin and mineral complex effectiveness. The diet for children 8- 14 years old has included one capsule of the specialized product additionally three times a day. Children (3-7 years old) with the long tubular bones fracture have received one capsule twice a day. Authors tested the recipe and technological production parameters at the enterprises of the company “Artlife” under the conditions of international and domestic standards including GMP and guaranteeing the quality indicators and competitiveness stability.

Разработана рецептура белкового модуля для производства биологически активной добавки, способствующей восстановлению функции сердечно-сосудистой системы в постамбулаторный период. Объектом исследований был белок, полученный из овсяной и миндальной муки и сухого обезжиренного молока. Соотношение ингредиентов белкового модуля, сбалансированного по основным эссенциальным аминокислотам, – миндальной и овсяной муки и сухого обезжиренного молока составило 1 : 1,6 : 2,6 соответственно. Определены индекс растворимости белкового модуля – 98,5% и его протеолитическая активность. Установлено, что показатель протеолиза белкового модуля ниже в 1,6 раза по сравнению с аналогичным показателем белка обезжиренного молока, но в 1,2 и 1,5 раза превышает аналогичные показатели белков овсяной и миндальной муки соответственно. Самый высокий показатель протеолиза белковых систем наблюдался в течение первого часа, затем он снижался, что свидетельствует о практически полном расщеплении белка в первый час ферментативного воздействия. Результаты исследований свидетельствуют о возможности использования белкового модуля в составе биологически активной добавки. The formulation of the protein module for the production of a biologically active additive that helps to restore the function of the cardiovascular system in the post-ambulatory period is developed. The protein obtained from oat and almond flour and skimmed milk powder was the object of research. The ratio of the ingredients of the protein module, balanced by the main essential amino acids, – almond and oat flour and skimmed milk powder was 1 : 1,6: 2,6 respectively. Solubility index of protein module is 98,5%. It is established that the indicator of proteolysis protein module below 1,6 times compared to the same indicator of the protein of skimmed milk, but in 1,2 and 1,5 times exceeds that of the protein of oat and almond flour, respectively. The highest indicator of proteolysis of protein systems was observed during the first hour, then it decreased, what demonstrates almost full proteolysis in the first hour of enzymatic influence. The results of the research indicate the possibility of using the protein module as part of a biologically active additive.

Abstract The article deals with the issues of deep processing of non-traditional plant raw materials – amaranth. The authors found that amaranth seeds of various types are a source of starch and protein, balanced in amino acid composition. A comparative assessment of the main nutrients and mineral composition of amaranth seeds with traditional crops showed that amaranth seeds are unique as raw materials for the production of biologically active additives. It is proved that a fine powder of whole-ground flour is possible to obtain by double mechanical processing of amaranth seeds with mandatory heat treatment before introduction into the recipe. It was experimentally revealed that the developed biologically active additive has a high nutritional value and functional properties, which are formed due to squalene content, essential amino acids and plant phospholipids.
