Abstract Today, scientific schools have been formed to improve the recipe and technology of mayonnaise. In the present study, a byproduct of an oilseed source, namely sesame cake, containing unique antioxidant compounds, such as lignans, is studied as a biologically active additive that can be used in the place of starch and synthetic antioxidants in mayonnaise. Sesame seed purchased from local markets. Sesamol standard was obtained from Sigma Chemical Company (USA). The experimental results have shown that regarding the taste, color, mouthfeel, and overall acceptability, the samples containing 10% sesame cake powder obtained the highest score. It is therefore recommended to use sesame cake powder at the concentration of 8-10% in mayonnaise formulation. The findings of this research could be useful for food industries to improve their products qualitatively.

Abstract Research is devoted to the study of the feasibility of using a natural antioxidant of plant origin as a biologically active additive to the basic diet and assessing the effectiveness of its use to increase the meat productivity of broiler chickens. In our work we examined the broiler chickens productivity and quality when using the drug ‘Dihydroquercetin’ (LLC’Kakhor’, Zima, Irkutsk region, Russia) in diets and established the amount of feed consumed and its costs per unit of production. Based on the studies, the addition of the preparation enables to increase the safety of broiler chickens by 20…30%, live mass - by 12…33%, mass of ripped carcass - by 15…38%, muscle tissue - by 3%, thoracic muscles - by 0.3…2%, and edible parts of carcass -by 2…6%. Moreover, the additive reduces the feed consumption by a head during the fattening period by an average of 46.09 g compared to the control.

Abstract The article deals with the issues of deep processing of non-traditional plant raw materials – amaranth. The authors found that amaranth seeds of various types are a source of starch and protein, balanced in amino acid composition. A comparative assessment of the main nutrients and mineral composition of amaranth seeds with traditional crops showed that amaranth seeds are unique as raw materials for the production of biologically active additives. It is proved that a fine powder of whole-ground flour is possible to obtain by double mechanical processing of amaranth seeds with mandatory heat treatment before introduction into the recipe. It was experimentally revealed that the developed biologically active additive has a high nutritional value and functional properties, which are formed due to squalene content, essential amino acids and plant phospholipids.

The experiment was conducted on the basis of the agricultural production cooperative kolkhoz "Iskra" (Kirov region) in 40 highly productive cows of black-motley Holstein zed breed, which were divided by the method of paired analogues into 4 groups of 10 heads. The influence of the biologically active additive Lamarin Saldonum on the reproductive function and the milk productivity of cows was studied. The animals of the experimental groups were given the additive daily in doses of 0.1, 0.2 and 0.3 g per 1 kg of live weight for 30 days before calving during 60 days. It has been established that Lamarin Saldonum does not negatively affect the duration of pregnancy, while it helps to reduce the number of generic and postpartum diseases. In cows of the experimental groups retention of placenta was registered 10-20 % less often and the development of postpartum endometritis was observed 10-30 % less often. It was also found that in the animals of the experimental groups the indifferent period was reduced by 8.13-14.49 %, the number of days from calving to fruitful insemination was decreased by 30.51-53.82 days, the number of days of infertility was reduced by 33.63-59.37 % compared to intact animals. The cows of the second experimental group showed the best milk productivity, where the gross milk yield exceeded the values of the control group in the first month of lactation by 19.63 %, in the second - by 13.43 %, in the third - by 39.87 %. The need for additional studies to determine the effective dose of the additive Lamarin Saldonum, which will have a stimulating effect on the reproductive function of high-productive cows, has been established.

The work presents the results of testing new eco-oils in elastomeric materials based on nitrile butadiene rubber (NBR). The influence of eco-oils grade and content on the rubber mixes based on NBR 2665 processing was studied. It is established that Phytonorman 212 acts as a technologically active additive that improves the rheological and relaxation characteristics of rubber mixes. Phytonorman 213 acts as an activator of the vulcanization process when eco-oils content is 2 phr. To maintain the complex of physical, mechanical and working performances, so as to prevent the slowdown of the vulcanization process at 7 phr eco-oil content it is recommended to adjust vulcanizing group component content and filler grade.

The object of research is the technology of functional fruit and vegetable juice products enriched with collagen. The subject of research is various types of collagen, formulations and parameters of technological operations for the production of functional juice drinks. The research is aimed at the develop technology, recipes for a new assortment of fruit and vegetable drinks enriched with collagen. Also it is aimed at the preserve the functional properties of collagen in canned juice products after high-temperature processing and create food products for everyday consumption to solve age-related and other problems associated with human health. In the course of the study, standard methods were used to determine the organoleptic indicators of various types of collagen, juice products, as well as to determine the mass fraction of moisture, carbohydrates, fats, proteins in the developed fruit and vegetable drinks enriched with collagen. Also, to confirm the presence and preservation of collagen in finished products, the electrophoresis method was used to determine the atomic mass unit of the constituent substances after complete drying of the samples. The proposed methods make it possible to assess the quality of the developed collagen-enriched drinks, prove the presence and preservation of a biologically active additive in the finished product after using the sterilization mode parameters – temperature and time, when receiving canned products. The developed formulations and technology make it possible to consider functional fruit and vegetable juice-containing products enriched with a biologically active additive collagen as effective and useful. An easily digestible food product for everyday consumption is proposed for solving age-related and other problems related to human health, with regulation of the pH value for effective use of the beneficial properties of this additive. In contrast to existing functional juice products, the proposed formulations and technology make it possible to obtain juice-containing fruit and vegetable blended products with a biologically active additive collagen. The technology minimizes the impact of collagen on the organoleptic characteristics of the developed recipe compositions of finished products and preserves its beneficial biologically active properties in the finished canned product after heat sterilization.

В статье проведено определение антиоксидантной активности образцов различной природы 2 методами. Выявлено, что среди исследованных образцов индивидуальных антиоксидантов наибольшей активностью обладают биологически активная добавка «Pomegranate» и аскорбиновая кислота, наименьшей - глутатион. Среди антиоксидантного сырья наибольшей активностью обладает прополис, имеющий гораздо большую антиоксидантную активность, чем все другие образцы, далее следуют перегородки и кожура граната. Наименьшей активностью из исследованных видов сырья обладает боярышник. In the article, antioxidant activity of samples of different nature was determined by 2 methods. It was revealed that among the examined samples of individual antioxidants, the biologically active additive «Pomegranate» and ascorbic acid have the greatest activity, the smallest is glutathione. Among antioxidant raw materials, propolis has the greatest activity, having a much greater antioxidant activity than all other samples, followed by pomegranate partitions and peels. Hawthorn has the least activity from the raw materials studied.
