Washington State University's apple breeding program (WABP) was initiated in 1994 to select new apple cultivars with improved eating quality, appearance, and storability that are suitable for production in the main growing regions of the state. Fruit quality is phenotyped using various instrumental measures, such as penetrometers (texture), titrator (acidity), and refractometer (soluble solids concentration; SSC), as well as sensory assessment. The selection regime of WABP occurs in three sequential phases: phase one (P1)—single, unreplicated seedlings at one site, phase two (P2)—replicated selections at three geographically diverse sites, and phase three (P3)—highly replicated elite selections at one to two grower sites. Most of the data collection of WABP occurs in P2. Knowledge of trends/changes associated with advancing selections is essential for understanding the selection criteria and progress of WABP throughout the changing compositions of advancing and culling selections. For each post-harvest trait, P2 data from harvest years 2005 to 2019 were split across sites, and between selections and reference cultivars (e.g., Cripps Pink, Gala, and Honeycrisp). Means of instrumental crispness (Cn) and inner cortex firmness for the advancing selections increased gradually over this period and were significantly higher than those for cultivars. Means of outer cortex firmness measurements were stable for selections but significantly higher than those for cultivars. The average fruit acidity of selections increased marginally over this period and was higher than that of the cultivars. Meanwhile, the average fruit SSCs of selections and cultivars were statistically indistinguishable. These 15-year trends indicate that WABP has been selecting apples with improved eating quality and storability through increased crispness and inner cortex firmness, respectively.

Selecting for crispness instrumentally in fruit from apple (Malus ×domestica) breeding programs is notoriously difficult. Most breeders rely on sensory assessment for this important characteristic. Following the 2009 harvest, we used a computerized penetrometer to assess firmness and texture of apple selections from the Washington State University's apple breeding program and 16 standard reference varieties. Data were compared with sensory data from the apple breeding team. In addition to the expected high correlations between the various firmness measures of the computerized penetrometer and the sensory firmness values, our data also show a significant correlation between the computerized penetrometer crispness value and the sensory crispness value, thus demonstrating the benefit from using this equipment rather than the industry standard Magness–Taylor penetrometer.

Netted muskmelon [Cucumis melo L. (Reticulatus Group)] fruit quality (ascorbic acid, β-carotene, total free sugars, and soluble solids concentration (SSC)) is directly related to plant potassium (K) concentration during fruit growth and maturation. During reproductive development, soil K fertilization alone is often inadequate due to poor root uptake and competitive uptake inhibition from calcium and magnesium. Foliar applications of glycine-complexed K during muskmelon fruit development has been shown to improve fruit quality, however, the influence of organic-complexed K vs. an inorganic salt form has not been determined. This glasshouse study investigated the effects of two K sources: a glycine-complexed K (potassium metalosate, KM) and potassium chloride (KCl) (both containing 800 mg K/L) with or without a non-ionic surfactant (Silwet L-77) on melon quality. Orange-flesh muskmelon `Cruiser' was grown in a glasshouse and fertilized throughout the study with soil-applied N–P–K fertilizer. Starting at 3 to 5 d after fruit set, and up to 3 to 5 d before fruit maturity at full slip, entire plants were sprayed weekly, including the fruit, with KM or KCl with or without a surfactant. Fruit from plants receiving supplemental foliar K had significantly higher K concentrations in the edible middle mesocarp fruit tissue compared to control untreated fruit. Fruit from treated plants were also firmer, both externally and internally, than those from non-treated control plants. Increased fruit tissue firmness was accompanied by higher tissue pressure potentials of K treated plants vs. control. In general, K treated fruit had significantly higher SSC, total sugars, total ascorbic acid, and β-carotene than control fruit. Fall-grown fruit generally had higher SSC, total sugars, total ascorbic acid and β-carotene concentrations than spring-grown fruit regardless of K treatment. The effects of surfactant were not consistent but in general, addition of a surfactant tended to affect higher SSC and β-carotene concentrations.

The effects of 1-methylcyclopropene (1-MCP), an inhibitor of ethylene action, on the ripening and quality of Fantasia nectarines were examined. Fruit were harvested from two commercial orchards and subsequently exposed to 1 μL L-1 of 1-MCP for 24 h at 0°C. Following treatment, fruit were held at 0°C for 0, 2, or 4 wk, and then assessed for quality during a ripening period at 23°C. 1-MCP treatment improved postharvest firmness retention in nectarines after 0 and 2 wk at 0°C plus 4 days at 23°C. Soluble solids concentration (SSC) was lower in nectarines treated with 1 MCP and held for 0 or 4 wk at 0°C, compared with similar non-treated fruit. The peel ground color change from green to yellow was also delayed by 1-MCP. Nectarines treated with 1-MCP exhibited less CO2 and hydrophobic volatile production during 14 days at 23°C, compared with non-treated fruit. The overall inhibition of fruit ripening by 1-MCP appears transitory in Fantasia nectarines. Chilling injury was observed after 4 wk of storage at 0°C and 1-MCP-treated fruit had less visual chilling-related injury but greater chilling-induced flesh hardening. Further research is needed to determine the effects of 1-MCP on different chilling injury symptoms in nectarines. Key words: 1-MCP, fruit quality, ripening, storage, shelf-life, Prunus persica

Fruit quality and consumer acceptance were measured in 14 plum cultivars. In 2015, six cultivars of asian plum (Prunus salicina) and one cultivar of american plum (Prunus americana) were harvested partially ripe and tree-ripe. In 2016, three types of plums, asian, american, and european (Prunus domestica), were harvested tree-ripe. Within most cultivars in 2015, partially ripe fruit were rated as highly as tree-ripe fruit using a hedonic rating from 1 to 9 with 1 being dislike extremely and 9 being like extremely. ‘Obilnya’ and ‘Abundance’ were rated higher than ‘Shiro’ and ‘Methley’ at both stages of ripeness and higher than ‘Vanier’ at the partially ripe stage. ‘Early Golden’ and ‘Spring Satin’ were rated higher than ‘Shiro’ and ‘Methley’ at the tree-ripe stage. In 2016, seven cultivars (Obilnya, Kahinta, Superior, Toka, Castleton, Early Italian, and Rosy Gage) were scored at the desired consumer acceptance level. ‘Shiro’ and ‘Caçak’s Best’ received overall acceptability scores below the level of acceptability. Plum type had minimal effect on scores for texture, sweetness, sourness, and overall liking. European cultivars received lower color scores than american and asian plums. Soluble solids concentration (SSC) ranged from 6.7% to 13.6% in asian plums, from 14.8% to 19.8% in american plums, and from 15.3% to 22.1% in european plums. Overall consumer acceptance of american and european cultivars was as good as for asian cultivars.

High populations of melon aphid (aphis gossypii) reduce cantaloupe plant growth and yield; effects on subsequent fruit quality are unknown. The purpose of this study was to evaluate fruit quality from plants with high and low aphid populations. Up to 50% of melons from plants having high aphid populations were unmarketable due to surface sooty mold. Melons from plants with high or low aphid populations, but not cultivars, were similar in flesh quality. The internal color of `Perlita' and `Sweet Surprise' was a more yellow hue while that of `TAM Uvalde' was more orange. `Sweet Surprise' melons were lower in percent soluble solids concentration and titratable acidity, but were higher in mg fructose/ml juice compared to the other cultivars. A trained taste panel of 30 people evaluated melons from 2 cultivars showing little damage from melon aphid infestations and from 2 cultivars exhibiting high damage. All melons had similar taste qualities with acceptable sweetness, flavor, odor and texture. These results show that high aphid populations deleteriously affect cosmetic appearance, but not flesh quality, of melons.

Inventory control of trees and fruit samples in the Washington State University apple breeding program has been simplified by the use of bar codes. Tree labels incorporate individual bar-coded identities that can be scanned in the field when taking measurements or collecting samples. Bar codes on fruit sample labels also simplify data recording as well as improve the efficiency of the program by greatly reducing the risk of errors. The interface of bar-code identities with data organization and statistical software makes data analysis more straightforward.

The globalization of the economy, increased ethnic diversity, and a greater demand for healthy and more diverse food products have opened a window of opportunity for the commercial production and marketing of tropical fruit, including rambutan (Nephelium lappaceum). There is a lack of formal experimentation to determine yield performance and fruit quality traits of rambutan cultivars. Eight rambutan cultivars (Benjai, Gula Batu, Jitlee, R-134, R-156Y, R-162, R-167, and Rongren) grown on an Ultisol and an Oxisol soils were evaluated for 5 years at Corozal and Isabela, PR, respectively. There was a significant difference in the number and weight of fruit per hectare between locations, averaging 415,103 fruit/ha and 13,826 kg·ha−1, respectively, at Corozal and 167,504 fruit/ha and 5149 kg·ha−1, respectively, at Isabela. At Corozal, ‘R162’ had the highest 5-year mean for number and weight of fruit per hectare, but this cultivar was not significantly different from the rest except for ‘Benjai’ and ‘R-156Y’, which had significantly lower values. At Isabela, cultivars Gula Batu and R-162 had significantly higher number of fruit per hectare but the latter was not different from ‘Benjai’. Overall, there were no differences in soluble solids concentration except for cultivars Gula Batu and R-156Y, which had significantly lower values at both locations. Cultivar R-162 had higher number and weight of fruit per hectare and high soluble solids concentration at both locations, making it suitable for planting in various agroenvironments particularly on Ultisols typical of the humid tropics.

Cherry tomato (Solanum lycopersicum var. cerasiforme) plants were grown hydroponically with three different regimes of electrical conductivity (EC) of the nutrient solution to develop an effective EC management method to enhance the fruit quality. The EC treatments examined were 1) continuous high EC [4.7 dS·m−1 (HE)], 2) continuous low EC [2.8 dS·m−1 (LE)], and 3) high EC combined with midday (1030–1530 hr) low EC [midday reduction of high EC (MDR)]. The research was conducted to obtain preliminary information on the effect of EC treatments on the yield and fruit quality for 15 weeks of harvest under semiarid greenhouse conditions. Harvested fruit were sorted to several quality grades, including the “premium” grade based on fruit size, color, and total soluble solids. The number of fruit per truss was significantly higher in cultivar L308 than in cultivar L907 and in the LE treatment than in the HE or MDR treatment. The fruit size decreased over time regardless of EC treatment and cultivar. Cumulative yield of 15 weeks was greater in the LE treatment (26.3 kg·m−2) than in the HE treatment (22.1 kg·m−2) for ‘L907’, and there were no significant differences between the three EC treatments for ‘L308’ (24.1–28.1 kg·m−2). The cumulative yield in the MDR treatment was similar to that in the LE treatment regardless of cultivar. When quality attributes such as total soluble solids concentration measured for randomly sampled fruit were considered, cumulative premium-grade yield was the greatest for the HE treatment (12.9 or 17.6 kg·m−2) and was the smallest for the LE treatment (1.4 or 12.1 kg·m−2), regardless of cultivar. The cumulative yield of premium-grade cherry tomatoes in the MDR treatment was not significantly different from that in the HE treatment for ‘L308’ but was 11% less than that in the HE treatment for ‘L907’. Therefore, together with cultivar selection, the MDR treatment may be a potential alternative to a more commonly practiced continuously high EC treatment in semiarid greenhouses with limited environmental control capacity in which increasing the nutrient EC to increase quality is desired without significantly decreasing yield.

New fresh-cut melon products prepared from orange-fleshed honeydews have recently become available in retail markets. We compared fresh-cut chunks of orange-fleshed honeydew (`Temptation' and four breeding lines), green-fleshed honeydew (`Honey Brew'), and cantaloupe (`Cruiser'). All genotypes had similar respiration and ethylene production rates and soluble solids contents: genotype means for soluble solids contents were between 9.4% and 10.1 %. Five hundred untrained consumers preferred the flavor, texture, and overall eating quality of the orange honeydews to the green cultivar, with `Temptation' scoring highest. `Temptation' chunks were less firm at the time of processing and after 12 days storage than chunks prepared from all other genotypes. The color of orange-fleshed honeydew chunks was intermediate between that of cantaloupe and green-fleshed honeydew and the color was maintained during 12 days storage. Total aromatic volatiles from juice extracts of orange-fleshed honeydew chunks was 1.2 to 4.7 times higher than that of green-fleshed honeydew extracts and volatiles from cantaloupe was >4.8 fold greater than extracts from `Temptation' and >9.3 fold higher than that of other honeydew extracts. Many individual volatiles were identical in cantaloupe and honeydews; however, honeydew genotypes, particularly the orange-pigmented types, were distinctive from cantaloupe in having relatively high levels of various nonenyl and nonadienyl acetates of uncharacterized aromas. The results indicate that `Temptation' and other orange-fleshed honeydews are a promising new melon type for fresh-cut processing.

In consumer-harvested marketing, crop management practices and production systems directly affect the experience of the customer. An experiment was designed to compare overall consumer preference and fruit quality characteristics among three perennial cold-climate strawberry (Fragaria ×ananassa) production systems: conventional matted row (CMR), advanced matted row (AMR), and cold-climate plasticulture (CCP). Replicate plots of each system were maintained for two harvest seasons. Volunteers harvested subplots in each system and completed a survey to evaluate pick-your-own consumer preferences. The CCP system was preferred by a majority of consumers in the first year, whereas the AMR system was rated highest in the second year. Preferences were positively correlated with ease of harvest and fruit appearance and negatively correlated with the percentage of fruit unfit for harvest. Fruit quality measurements made on marketable fruit in the second harvest season indicated that there were no treatment differences in titratable acidity or soluble solids concentration, but significantly lower fruit firmness in the CCP treatment compared with CMR and AMR.
